Abstract
Purpose
The main aim of this study is to characterise and identify specific chemo-sensory profiles of ciders from the Canary Islands (Spain).
Design/methodology/approach
Commercial samples of Canary ciders were compared to ciders from the Basque Country and Asturias. In total, 18 samples were studied, six for each region. The analysis comprised their sensory profiling and chemical characterisation of their polyphenolic profile, volatile composition, conventional chemical parameters and CIELAB colour coordinates. In parallel, the sensory profile of the samples from the Canary Islands was first compared with their Basque and Asturian counterparts by labelled sorting task. Then, their specific aroma profile was characterised by flash profile. Further quantification of sensory-active compounds was performed by GC–MS and GC-FID to identify the volatile compounds involved in their aroma profile.
Findings
Results show that Canary ciders present a specific chemical profile characterised by higher levels of ethanol, and hydroxycinnamic acids, mainly t-ferulic, t-coumaric and neochologenic acids, and lower levels of volatile and total acidity than their Asturian and Basque counterparts. They also present a specific aroma profile characterised by fruity aroma, mainly fruit in syrup and confectionary, and sweet flavours related to their highest levels of vinylphenols formed by transformation of hydroxycinnamic acids.
Originality/value
An integrated strategy to explore the typicity of the currently existing Canary ciders in the market was developed. The results are important in that they will help other regions to identify specific typical chemo-sensory profiles and to promote the creation of certifications supporting regional typicity.

Abstract
Purpose
The aim of the study is to systematically map the articles published in the area of organic food value chain. Many articles have been published in various domains of organic food value chain, but no significant study has been found related to the systematic mapping of literature.
Design/methodology/approach
This study relies on secondary data. Articles from Scopus and Google Scholar databases between January 1, 1990, and July 10, 2021, have been considered. On the basis of inclusion criteria, 56 articles have been analysed in this systematic mapping study.
Findings
This study describes the geographical coverage, the methodologies used, sector/industry-specific context of the articles and scope the for future research. Five clusters were identified through co-occurrence analysis: (1) “organic agriculture and sustainable value chain” (2) “organic farming and food value chain,” (3) “organic value chain and sustainable development,” (4) “organic value chain and environmental impact” and (5) organic value chain and profitability.
Research limitations/implications
The study considers only articles published in Scopus and Google Scholar with some specific keywords related to the value chain and organic food industry. Future studies are encouraged by considering a wide range of keywords with a larger data set.
Originality/value
To the best of the author's knowledge, this study is the first to have a systematic mapping of literature on the organic food value chain.

Abstract
Purpose
This study aims to further develop the CLC stage/path’s identification model that distinguishes between path’s emergence (emergence stage), path’s development (growth stage), path’s sustainment (maturity stage), path’s decline (decline stage) and path’s transformation (renewal stage), and by applying it, define the current stage/path of the Demarcated Douro Region (DDR) cluster. The Port wine industry, which is the dominant industry of the DDR cluster, is at the maturity/decline stage – is the same for the cluster itself?
Design/methodology/approach
It is a case study with a longitudinal perspective based on the analysis of the dynamics of the parameters of cluster evolution using available secondary sources (cluster identity/brand; number of firms; number of employees; network; innovation; policies and regulations; and external markets – exports), especially addressing the past decade, that represent the stage of maturity/decline of the cluster’s dominant Port wine industry.
Findings
The conclusion is that since the 1990s the Demarcated Douro Region has gone through a “path transformation” where during the following 20 years new “anchors” for the cluster were gradually introduced, such as Doc Douro Wines, new forms of consumption of Port wine, tourism and olive oil. Since 2010 the cluster has entered a growth stage/(new) path’s development, where these “anchors” are in steady growth. The Douro brand is becoming more internationally recognized and established, the number of firms and employees is increasing, the network is restructuring with the creation of cluster-specific official institutions, innovation is especially reflected with increasing heterogeneity through diversification of the clusters into new activities and regulations and policies are supportive for expansion – all these parameters are indicating the rise of the new cycle for the cluster. Thus, the DDR cluster represents an attractive business environment and requires attention from regional policymakers to support the cluster’s development. Especially institutions have been highlighted as internal factors driving clusters growth, European integration as an external factor and firms’ strategies of diversification and internationalization as an appropriate de-locking mechanism for new path’s development.
Research limitations/implications
This research contributes to the CLC theory by further developing and applying a CLC stage/path identification model. It provides a better understanding of the dynamics of the DDR cluster that diverge from its dominant industry life cycle, which is relevant for regional policies and firms’ strategies. This study has its limitations. It provides an exploratory application of the theoretical framework proposed, and consequently, no general conclusions are possible yet. More empirical studies with different clusters in different stages are necessary to test the framework.
Practical implications
These findings are useful to policymakers when designing their policies for cluster development but also for clusters’ entities and actors when making their strategic decisions as it allows based on the verification of the established parameter of CLC to identify its current stage/path of development.
Originality/value
The paper presents a theoretically grounded model for CLC identification and for the first time to the best of the authors’ knowledge applies it to a cluster case – the DDR cluster. This case applies the proposed model and illustrates its usefulness. The model provides the tools for a better understanding of cluster dynamics.

Abstract
Purpose
This research finds out to what extent companies’ names are influenced by the place’s attributes versus the official branding policies of a place and, consequently, whether and how local companies “buy into” the place’s strategies put forth by official bodies.
Design/methodology/approach
This paper is both conceptual and empirical, as a mixed quantitative and interpretive approach is used. The companies’ names of a tourist industry (the tour and guiding companies) in three destinations are compared and pitched against the branding of these cities. The companies' names are classified into categories to ascertain whether they reflect (or diverge from) the official strategies. Finally, a conceptual model is developed to explain the findings: the strategic naming model (SNM).
Findings
Our main finding is that the overall business features of a place being stronger determinants to the naming strategies than tourist destination branding initiatives. The intrinsic features of a place seem thus to be “above” destination branding policies. The researched features account for different naming strategies, such as highly original names, flat names or non-strategic names.
Research limitations/implications
As the work is based on a convenience sample, it cannot claim strong representativity. The fact that each of the three data sets was processed by a different researcher might bring up personal biases.
Practical implications
This work is a call for a more intensive use of naming strategies to the companies’ advantages, as naming is found out to be strategy used to a very low degree. Thanks to this research, companies will understand the different naming possibilities and be able to apply them to their strategies by choosing names which express “uniqueness” or “belonging”. Practitioners will also be aware of whether they are communicating towards the industry or towards the market.
Originality/value
No works were found that empirically pursue our research goals. Therefore, this research might be considered as a novelty. The proposed SNM model explains and relates the most usual company naming techniques, which were unrelated up to date.

Purpose
No country is free from financial crime issues. Therefore, this paper aims to discover how to control financial crime from the perspective of national culture.
Design/methodology/approach
This study conducted a bibliometric approach and systematic literature review analysis of 47 publications in the Scopus database.
Findings
Bibliometric and content analyses show that national culture is more often associated with tax evasion, money laundering and corruption. The role of national culture is less investigated currently in the schemes of financial statement crime, workplace fraud and cybercrime. Overall, the study concludes financial crime can be prevented by developing a culture that supports anti-fraud measures. These include individualized country profiles, feminism, low power distance, tolerance for uncertainty, short-term orientation and restraint.
Originality/value
This research provides clear knowledge of the role of the six dimensions of national culture in fighting financial crime. Finally, this study is also valuable for decision-making in designing more effective financial crime prevention programs.

Abstract
Purpose
This study seeks to identify and highlight the factors that hinder or favor young farmers in the quest to abide in the agricultural profession and to draw policy directions and axes of action to address the problem.
Design/methodology/approach
The study used a triangulation research approach with quantitative and qualitative methodologies. In total, 222 structured questionnaires and 9 personal interviews constituted the survey's data collection tools.
Findings
The results revealed a distinctive distribution of competencies. On the one hand, personal and entrepreneurial competencies make up the “strengths” of young farmers, and on the other hand, the lack of cooperative organizations and the lack of entrepreneurial education and training combined with a series of situational factors complete the puzzle of “weaknesses” the farmers face in the local daily becoming.
Research limitations/implications
The findings of this study have academic and policy implications. Theoretically, this study contributes to the emerging literature that emphasizes the importance of farmers' competencies, collaboration, information and training in understanding the complex and different conditions that young farmers are called upon to manage.
Originality/value
The novelty of this study lies in the identification of both strengths and weaknesses that affect the abiding of young farmers in the agricultural profession.
