Abstract

In an effort to understand the base differences between tourism and hospitality academic programmes, it is important to understand their philosophical relationships. Different types of philosophies will give rise to different orientations. The differential orientations often lead to conflicts. These conflicts are not usually understood in terms of basic philosophical differences, but are seen as a perceptual distinction. This translates to the real world in that many tourism and hospitality professionals have strong feelings about each other that lead to professional misunderstandings. These differences in philosophy also have important ramifications for curricula, course structure, or the instructional philosophies. The purpose of this article is to examine the philosophical relationships between tourism and hospitality academic programmes and their implications, especially for curricular design. This type of philosophical modelling will help obtain a better perspective on the design of courses that have a general thematic structure to improve the preparations programmes in tourism and hospitality.

Abstract

Purpose

Education can provide learners with the necessary awareness, values and skills to understand the complexity of sustainability. This study aims to analyse the extent to which sustainability concepts have been implemented in higher education programmes in the tourism and hospitality fields.

Design/methodology/approach

For the purpose of the current study, data on all tourism and hospitality programmes offered in Cyprus higher education institutions (HEIs) at the Bachelor level was obtained. Analysis was conducted on publicly available programme descriptions, learning outcomes, program content and syllabi and course descriptions.

Findings

The study finds that sustainability concept implementation in undergraduate hospitality and tourism degree programmes is at a developing stage. The majority of the HEI follow trends and offer sustainability courses either as compulsory or elective courses, but concept implementation in programme learning outcomes and programme descriptions is relatively limited.

Originality/value

This paper presents a review of data and evidence on sustainability concept implementation in tourism and hospitality education in Cyprus.

Abstract

Previous work has conceptually explored the value of the humanities for tourism education and has considered the pressures that likely serve as barriers to its greater inclusion in curricula. This chapter moves the debate from the conceptual level to the ground, reporting the results of a survey of tourism educators with regard to the role of the humanities in the programs in which they teach. The study explores the prevalence of the humanities as primary and supporting course content at the undergraduate and graduate levels, sheds light on barriers faculty members identify for incorporating more humanities content into their curricula, and offers examples of creative ways some educators are currently engaging with such content.

Abstract

Purpose

The paper reports on a research project undertaken for the North West Tourism Skills Network.

Design/methodology/approach

The project explored the provision of information technology within hospitality and tourism programmes in educational institutions in the region. Researchers conducted telephone interviews with key specialist staff in 80 per cent of the schools, colleges and universities delivering programmes for introductory, operational and managerial programmes.

Findings

Findings suggest that IT provision occurs in all programmes and can now be considered as a core basic skill along with literacy and numeracy. Provision was generally applied to the industry and the specific requirements of the programme. There were several examples of excellent educational practice. However, some smaller colleges and sixth‐form college providers found the high purchase price of industry software a barrier to on‐site resources. That said, many ensured familiarity with industry software through industry partnerships and industrial visits.

Practical implications

While research gathered responses from 85 per cent of hospitality and tourism providers in the North West region, the study needs to be replicated nationally because these interviews suggest that information technology skill development is a key requirement for those destined to work in hospitality and tourism occupations.

Originality/value

Highlights the importance of information technology in the curriculum.

Abstract

This chapter offers an experience-based report about the development of the first Scandinavian PhD program in tourism studies at Mid-Sweden University. This process is documented through a framework which, rather than having the coherence of a single clearly bounded discipline, focuses on tourism as a study area encompassing multiple disciplines. Tourism knowledge is derived through a synthesis of fact-oriented positivist methodologies and critical theory. The theoretical framework employed to develop the graduate program in tourism studies is presented by critically discussing its multidisciplinary base and briefly outlining future veins of further development.

Abstract

This chapter analyzes the importance and performance of values in tourism higher education and business as seen by the alumni of the European Master in Tourism Management. The students were exposed to the values-based education framework proposed by the Tourism Educational Future Initiative. This chapter empirically tests the relevance of its model for an ideal and real industry, and for the corresponding world of tourism education. Using importance performance analysis, results identify gaps between the importance and performance in the values. The findings have implications for the future development and implementation of experimental values-based education.

The aim of this paper is to present longitudinal data regarding the career progression of Irish tourism and hospitality management graduates.

Abstract

Purpose

The aim of this paper is to present longitudinal data regarding the career progression of Irish tourism and hospitality management graduates.

Design/methodology/approach

A survey instrument was designed to incorporate questions relating to current and previous employments, recent training/education and personal details. The original study was sent to graduates by their respective colleges and there were 444 respondents to the survey. The follow‐up questionnaire in the current study was sent to all those who had responded to the initial survey and who had provided addresses (374).

Findings

There is a significant drop‐out rate from employment in the tourism/hospitality industry in Ireland, which is particularly obvious amongst women. Those employed in the industry identified poor remuneration and unsuitable working hours as the major issues in need of redress. There is constant reference to work conditions within the tourism/hospitality industry throughout this study and, in particular, their apparent incompatibility with family life.

Research limitations/implications

Owing to the small sample size, results presented here are largely indicative. Nonetheless, some general trends are discernible.

Practical implications

The issues raised in this study have implications for those involved in the provision of tourism/hospitality programmes as well as tourism employers, particularly in an Irish context, where there is an ongoing shortage of skilled workers in the sector.

Originality/value

Tracking studies usually only attempt to monitor graduates' entry into the workforce and do not follow their career paths over time. The objective of this study, however, was to provide longitudinal data and unique insights regarding the career progression of Irish tourism and hospitality management graduates.

This chapter presents an innovative learning opportunity for tourism students, International Tourism and Hospitality Academy at Sea, that has been in operation for the last 10 years. The program could render itself as a case study of Kolb’s experiential learning theory according to which knowledge is created by transforming experience. Its uniqueness and complexity lie in its diversity. This program has involved between 80 and 130 tourism students yearly from four to six institutions from different countries participating in new scholarly inputs by non-resident professors and instructors.

Abstract

For the islands of the Caribbean, tourism is more than an industry to be managed. Significantly, it is a socioeconomic phenomenon that if managed effectively can address some of the challenges facing the region. Tourism higher education plays a critical role in preparing graduates to shape an improved Caribbean tourism society and in performing research. Over the years, its tourism education has been framed by “Western models” that have not taken sufficient account of the Caribbean reality. The focus of this chapter is to define Caribbean education and to propose a tourism higher education strategy for the implementation in part of this education.
