Abstract

This chapter examines residents’ attitudes toward the use of local cuisine and culinary establishments in developing a destination brand. Analyses were based on a sample of residents in Taiwan. Three distinctive groups were identified: “indifferent,” “ambivalent,” and “supportive.” Residents belonging to the latter category had the most interest in being involved in promoting culinary cuisine to international tourists. The ambivalent group was conservative in making recommendations to international tourists about local food. The indifferent members had a low level of support for using culinary tourism. Generally, residents were likely to recommend snacks at local night markets and seafood-based cuisine at Chinese restaurants to international tourists. The chapter concludes with a discussion of implications for developing effective destination branding strategies through culinary tourism.

Abstract

The purpose of this study was to measure the economic benefits generated from equine camping and to increase awareness of tourism development in southern Illinois. A total of 370 survey questionnaires were collected at equine camping sites. Descriptive analysis revealed that most respondents had at least a high school education with an average annual household income of $64,000. The largest group of respondents by occupation was professionals. About 40% of respondents traveled to southern Illinois with five individuals in a group. The local expenditure model illustrated that non-local equine campers brought about 16 million dollars to southern Illinois in 2004. The economic benefits as measured suggested the potential of further developing equine camping as a major tourism activity in this area.

Abstract

The consumer behaviour literature is evolving towards the assumption that products are inherently experiential bundles, and after all, all businesses are operating within the experienced economy. Experiences are much more advantageous for the consumers because they advance happiness or enjoyment of life (instead of survival or maintenance). Experiential purchases lead to greater happiness levels compared to material purchases. Reliance on materialism and material purchases is shown to be the reason of low happiness levels in even the most affluent countries.

In this chapter, based on theoretical as well as empirical papers, I analyse experiences and the consumption of experiences in the Turkish context. The arguments are supported by up-to-date market analysis of related industries conducted by independent market research agencies. The first section looks at the rise of experientialism in retail industries, such as in the case of shopping malls. The following sections touch upon main experiential categories such as tourism, dining and sports. Finally, the social aspects of experiences are discussed in the context of third-place experiences, and some empirical findings are presented. The chapter concludes with some recommendations for practitioners, experience designers, service providers as well as researchers.

Abstract

Tourism is a key source of income to South Africa. Food and beverages is a key part of tourism and the literature reveals that tourists spend up to a quarter of their budget on cuisine. South Africa has, however, been rated as the least-prepared culinary travel destination and the travel destination with the greatest potential for growth. Therefore, a segmentation taxonomy based on culinary preferences of international tourists to South Africa is put forth which can be used to prepare South Africa as a culinary travel destination. The 627 international tourists surveyed were divided into five segments with the use of factor analyses, t-tests, Spearman rank correlations and analysis of variance. The segments were named conservationists, experience seekers, devotees, explorers and socialisers (CEDES taxonomy). Multiple results and implications are discussed in the paper.

Abstract

Consumer behavior in tourism (CBT) is an interdisciplinary field of study encompassing the basic behavioral and economic sciences (e.g., psychology, sociology, and economics) and applied fields of study (e.g., management, marketing, tourism, and hospitality) focusing on all aspects of discretionary travel. This chapter describes major issues and findings in the literature relating to CBT. The chapter directs the reader’s attention to some of the highly-cited studies in this literature – these studies provide a foundation of knowledge on the central topics, issues, methods, findings, and theoretical/practical contributions in research on CBT. Research studies in CBT focus on one-to-all five core theoretical issues in basic and applied fields of study: describe who is doing what, when, where, how, and the consequences of the activities; explain the meanings of activities and motivations of the actors; predict (model) what actions and outcomes will occur and the impacts of influence attempts before, during, and after engaging in tourist actions; control (influence) the beliefs, attitudes, behaviors, and assessments of tourists, local community members, and additional stakeholders; evaluate tourism service/product delivery, tourism management performance, and customer satisfaction. Survey research using verbal (written) responses to questions is pervasive and the most frequent method for data collection in CBT. Additional research genres in CBT include direct observations of tourism behavior with or without some oral questioning (unobtrusive studies, the long interview method (McCracken, 1988), use of “consumer culture theory”), participant observation including semester abroad and unpaid internships away from home, formal field experiments, and the study of secondary sources (e.g., photographs and writings in blogs and social media (e.g., TripAdvisor) reviews).

Abstract

This chapter addresses the emerging trends in Australia’s food destinations and analyzes different demands for this experience from a Korean tourism market perspective. Tourism Australia’s report on the international market research was analyzed, and the findings indicate that four main food experiences were sought by Koreans. A sense of landscapes plays an important role in enhancing their local food experiences. Multicultural food, health conscious markets, and food shopping are also crucial for developing Australia’s competitive advantage in this area. This chapter suggests marketing implications and directions for future research to explore cross-cultural gaps in food culture and behaviors from the perspectives of Asian tourism markets.

Abstract

Purpose

The purpose of this chapter is to show the multi-faceted nature of shopping behavior at North Market and to develop the concept of productive leisure as a way of examining and reframing Daniel Miller’s Theory of Shopping.

Methodology/approach

This chapter utilizes Daniel Miller’s Theory of Shopping as a starting point to understand the dimensions of shopping at North Market. It draws upon survey data collected by North Market, as well as participant observations and informal interviews conducted by the authors.

Findings

Much of the shopping at the market goes beyond simple provisioning, thrift, and treats, and instead fits into a hybrid category we call “productive leisure.” Productive leisure occurs when individuals complete productive tasks during their leisure time. It maximizes thrift-time by completing productive tasks during leisure and in response to or in connection with finding a reward (treat). In the case of shoppers at North Market, many customers are using their leisure time to provision.

Originality/value

This chapter presents a new way of thinking about shopping at public markets and could potentially serve to help public markets redefine their role in local food systems and in the greater community. More broadly, this chapter provides a unique insight into how and why people use public markets.
