Abstract

Purpose

The purpose of this study was to create and validate a food safety survey for older adults.

Design/methodology/approach

The survey was designed to measure food handling and consumption behaviors related to high-risk foods. Survey questions were also designed to capture behavioral constructs from the health belief model (HBM). The first administration of the survey was completed by 349 participants, 55 years of age and older. Exploratory factor analysis was used to assess construct validity, and Cronbach’s alpha was used to assess the internal consistency of the subscales generated through factor analysis. Two weeks after the first administration, the survey was completed a second time by 149 participants from the original sample. The intraclass correlation coefficient was used to evaluate test-retest reliability.

Findings

Exploratory factor analysis yielded four factors related to the HBM (perceived susceptibility, perceived severity, perceived barriers and cues to action) and three factors related to food handling practices (handling of processed meats, food thermometer use with poultry and washing or rinsing poultry). Inclusion in a factor meant that the related questions measured the same underlying construct. Cronbach’s alpha for these factors ranged from 0.63 to 0.77. Modification of the survey following validation resulted in the development of a 44-question instrument that can be used with older adults.

Practical implications

This survey will next be administered to a representative sample of older adults to assess relationships between HBM constructs and food handling behaviors and is available for use by other researchers.

Originality/value

There are few validated tools that can be used with older adults to evaluate food safety risks.

Abstract

Purpose

The rising number of food recalls has raised concerns about complexity, globalization and weak governance in the food supply chain. This paper aims to investigate the recall of plant-based products with data from the US Food and Drug Administration.

Design/methodology/approach

Introducing the structural topic modeling method allowed us to test theories on recall in the context of sustainable food consumption, enhancing the understanding of food recall processes. This approach helps identify latent topics of product recalls and their interwoven relationships with various stakeholders.

Findings

The results answer a standing research call for empirical investigation in a nascent food industry to identify stakeholders’ engagements for food safety crisis management for corporate social responsibility practices. This finding provides novel insights on managing threats to food safety at an industry level to extend existing antecedents and consequences of product recall at a micro level.

Practical implications

For practitioners, this empirical finding may provide insights into stakeholder management and develop evidence-based strategies to prevent threats to food safety. For public policymakers, this analysis may help identify patterns of recalls and assist guidelines and alarm systems (e.g. EU’s Rapid Alert System for Food and Feed) on threats in the food supply chain.

Originality/value

Two detected clusters, such as opportunisms of market actors in the plant-based food system and food culture, from the analysis help understand corporate social responsibility and food safety in the plant-based food industry.

Abstract

Purpose

Ensuring high water quality is crucial for safeguarding public health, as contaminated water can pose significant risks to consumers’ well-being. This study aims to evaluate the microbiological and chemical quality of bottled water brands commonly consumed in Dodoma, Tanzania.

Design/methodology/approach

A total of 36 samples from 12 brands were collected between January and March 2023 and analyzed for microbiological and general water quality parameters.

Findings

Microbial analysis found that 42% of brands tested positive for coliform bacteria, while opportunistic pathogens Aeromonas hydrophila and Pseudomonas aeruginosa were detected in 25% and 17% of samples, respectively. For chemical composition, 42% of brands exceeded the World Health Organization guideline value of 1.5 mg/L for fluoride. However, no other parameters exceeded national drinking water standards. Statistical analysis revealed significantly higher measured fluoride levels compared to values declared on product labels (paired t-test, p = 0.003). A moderate positive correlation between fluoride and conductivity (r = 0.52, p = 0.045) indicated possible geological influences on water chemistry.

Research limitations/implications

To enhance the study’s comprehensiveness, exploring temporal and spatial variations among water brands, including samples from typically clean environments such as supermarkets, could have been beneficial in identifying underlying factors. Additionally, investigating the entire manufacturing process, from production to end-user, could have provided insights into unforeseen deviations in quality. Furthermore, the use of pour plating techniques at 37°C for microbial analysis, while suitable for resource-limited settings, may not have fully captured coliform diversity compared to membrane filtration and differential temperature incubation as per standard methods. This could partly explain the detection of heterotrophs without higher coliform counts in some samples.

Practical implications

This study provides baseline data on the bacteriological and inorganic chemical quality of bottled water in Dodoma. Detectable microbial contaminants and significant exceedances of fluoride guidelines in some products raise public health concerns.

Originality/value

While existing studies focus on bottled water quality at production facilities, this research highlights the overlooked risks at retail points, where consumers are directly affected.

This study examined the knowledge, attitudes and practices (KAP) regarding food safety and hygiene among street food vendors (SFVs) in Jordan, along with associated factors.

Abstract

Purpose

This study examined the knowledge, attitudes and practices (KAP) regarding food safety and hygiene among street food vendors (SFVs) in Jordan, along with associated factors.

Design/methodology/approach

This study utilized a cross-sectional design and targeted a sample of 405 SFVs in Jordan's two most densely populated cities. Data were collected through in-person interviews using a validated and reliable structured questionnaire. Descriptive analysis and linear regression were conducted using SPSS v.25 software to examine associations and predict outcomes.

Findings

The findings reveal that SFVs possess a moderate level of knowledge but exhibit negative attitudes and inadequate practices regarding food safety. Significant associations were identified between age, education level, work experience, marital status, gender and the vendors' KAP. Older SFVs tend to exhibit lower knowledge and attitudes, whereas those with more experience and higher education levels demonstrate better KAP. Marital status and gender also influence knowledge and attitudes.

Originality/value

This study fills a critical gap in the research landscape by comprehensively examining the knowledge, attitudes and practices of street food vendors regarding food safety, with a focus on Jordan. Its findings shed light on the challenges facing the street food vending industry and offer actionable recommendations for enhancing food safety practices. As such, the study's originality and significance lie in its potential to drive positive change within this vital culinary tradition, safeguarding public health and economic livelihoods.

Abstract

Purpose

Millets are underused crops that have the potential to withstand harsh environmental conditions. Recent research has proved immense nutritional benefits associated with millets which have increased their utilization to some extent but yet their sole potential is left to be exploited. Different millet varieties have exceptional nutritional and nutraceutical properties which can ameliorate even the deadly conditions of cancers. They have significant protein composition ranging from 10% to 12% which possess effective bioactive potential. Protein hydrolysates containing bioactive peptides have been evaluated for their therapeutic effects against a variety of diseases. This review aims to discuss the bioactive potential of different millet protein hydrolysates to encourage research for development of effective natural therapeutics.

Design/methodology/approach

The present article elaborates on effective studies on the therapeutic effects of millet protein hydrolysates.

Findings

Several effective millet peptides have been reported for their therapeutic effect against different diseases and their antioxidant, anti-inflammatory, anticancer, antimicrobial and antidiabetic effects have been investigated.

Originality/value

This review focuses on millet bioactive peptides and their significance in treating variety of diseases. Thus, will further encourage research to explore the novel therapeutic effects of millet proteins hydrolysates which can eventually result in the development of natural and safe therapeutics.

Abstract

Purpose

The efforts of researchers in the 21st century have been devoted to developing novel approaches to leave planet earth green for future generations. This study aims to report the synthesis of microcapsules from natural essential peppermint oil and their application to a bleached polyester and cotton (PC) blended fabric.

Design/methodology/approach

Microcapsules were prepared by a complex coacervation process and applied through the conventional pad-dry-cure method. The liquid suspension of the microcapsules was examined by optical microscopy to investigate the surface morphology of the microcapsules. Scanning electron microscopy was used to examine the surface morphology of the fabric after the application of the microcapsules. The finished fabric was checked for its mosquito repellent activity at the lab scale using a standard test protocol (cage test) by inserting a human arm and hand enfolded with microcapsules treated fabric.

Findings

PC fabric treated with 6% microencapsulated peppermint oil at zero wash showed 95.3% repellency against mosquitoes, and after 30 washes, the repellency was 85.8% which confirmed the durability of the developed finished fabric. The finished samples exhibited excellent air permeabilities and absorbencies.

Originality/value

This study successfully developed peppermint oil microencapsulated fabric with excellent efficacy against three mosquito species.
