Abstract

Purpose

Pupils’ perspective should be better taken into account when developing nutrition education at school. The purpose of this paper is to explore Nordic children’s perspectives on the healthiness of meals in the context of school lunches.

Design/methodology/approach

In total, 78 focus group discussions were conducted with 10-11-year-old girls and boys (n=457) from schools in Finland, Iceland, Norway and Sweden, which were participating in the Nordic school meal project ProMeal during the school year 2013-2014. A flexible discussion guide and stimulus material in the form of 14 photographs displaying different school lunch contexts were used. The discussions were analyzed using thematic analysis.

Findings

These Nordic children seem to share the adult-set aim of healthy eating in the school context as a socio-cultural norm. Although healthy eating was constructed as a rational, normative and acceptable way to eat at school, unhealthy eating was emphasized as negotiably acceptable when eaten occasionally and under certain circumstances (e.g. at special occasions). Unhealthy eating also comprised emotionally laden descriptions such as enjoyment and disgust.

Practical implications

Children’s conceptualizations of healthy eating are connected to nutritional, socio-cultural, emotional and normative dimensions, which should be reflected also when developing nutrition education in school.

Originality/value

The need for research exploring children’s experiences of, and understandings about, school lunch motivated this unique multicenter study with a large number of participating children. In the focus groups a child-oriented, photo-elicitation method was used.

Abstract

Purpose

Polymorphisms in taste receptor genes may be associated with taste sensitivity and possibly with food consumption and body weight. Previous studies relating bitter taste sensitivity to body mass index (BMI) had inconsistent findings. This paper aims to investigate the weight and body composition indicators among the TAS2R38 bitter taste receptor genotype groups.

Design/methodology/approach

Adults participating in the STEPS study (steps to the healthy development and well-being of children) cohort in Southwest Finland have been investigated. DNA has been extracted from buccal cell samples, and alleles of the gene TAS2R38 have been determined. Measurements at the follow-up visit include weight and height to calculate BMI, waist circumference (WC) and body composition with bioimpedance (women n = 757, men n = 714).

Findings

The mean BMI was 25.3 (SD 5.4) kg/m2 among women and 26.7 (SD 3.9) kg/m2 among men. BMI, WC and body fat percentage did not differ significantly between the TAS2R38 genotype groups in either gender. The proportion of subjects classified as overweight (BMI ≥ 25) did not vary significantly between the genotype groups.

Originality/value

The TAS2R38 genotype is not associated with being overweight in this cohort. Determinants of body weight are complex, and the role of other taste genotypes and phenotypes should be investigated in the future.

Abstract

Purpose

The purpose of this paper is to explore what kinds of contract award procedures and award criteria are followed when the municipalities make public procurements in catering services in Finland.

Design/methodology/approach

The literary review is related to the concepts of public procurements and, subsequently, interrelated regulations are introduced. Moreover, the municipal catering services are illustrated. Empirical data were collected in the spring of 2009 from the Finnish public procurement journal and from HILMA internet websites concerning the contract notices and the contract award notices between 1 January 2007 and 14 May 2009. The objects of the contract, thresholds, contract award procedures, sectors of contract awards, as well as both the selection and the award criteria were analysed in the contract notices. A total of 34 contract notices were discovered, out of which 24 could be utilised.

Findings

The contract award procedures could be divided into either open procedures or restricted procedures. Maximum budgets in the contract notices consisted of both the types exceeding the EU thresholds or those remaining below it. Concerning the award criteria, the relative weightings (median) concerning the price amounted to 60 per cent, whereas the quality measured 40 per cent.

Practical implications

The results can be utilised when exploring the competitive tendering in catering services using larger data, and as a guidebook when public catering services are put out to tender.

Originality/value

The dimensions of quality found offer new ideas for procurement authorities as the award criteria.

Abstract

Purpose

The purpose of this paper is to explore and elucidate adolescents’ reasoning about risks related to food and eating.

Design/methodology/approach

Boys and girls aged 15-16 years participated in a focus group interview with role-playing as a stimulus for discussion and reflection. In all, 31 participants took part, divided into five groups. In the role-playing, the participants portrayed agents who they perceived to give messages about food. In the focus group they discussed their experience of carrying out the role-play, and how they usually cope with conflicting messages, preferences and needs regarding food and eating.

Findings

The findings suggested that there were two main themes of risk profiling related to eating. One concerned bodily risk related to the food ingested and included concerns both about not reaching health and performance due to the unfavourable intake of calories, nutrients, additives, bacteria, viruses and parasites, and threats to immediate well-being following consumption. The second main category concerned the risk of being conspicuous, or “sticking out”, which incorporated food-based gender norms and norms related to table manners. In practice, the risk of not displaying an appropriate image of themselves through their food and eating choices was more prominent than risk perceptions related to impacts of food choices on well-being and performance. Difficulties in classifying foods as “good” or “bad” enhanced their uncertainty.

Originality/value

The results suggest that health-promotion activities for young people should focus not only on how to feed their bodies but also on how to avoid feeding their anxieties.
