The proceedings from a recent CCFRA conference on the theme of Thermal processing: process and package innovations for convenience foods are now available. Containing a short summary of each presentation together with copies of many of the visual aids used on the day, the proceedings provide an overview of a range of developments of relevance to the heat sterilised foods sector. Topics covered range from the contributions of packaging innovations to product development and developments in process validation, through emerging pathogens and the role of HACCP in safety assurance, to novel processing and assembling technologies for use in combination with thermal processing.
