The views of more than 40 leading experts are presented by the Leatherhead Food Research Association in the form of a book which presents the proceedings of a major three-day conference held in The Netherlands Congress Centre in March 2000. The conference addressed specific health areas such as cardiovascular disease, cancer, bone health, gut health, immune function, oral health and performance. The market for functional foods is currently worth $2 billion and is estimated to be worth as much as $10 billion by 2005. Functional foods first appeared in Japan in the 1980s and is today forecast to be a highly dynamic one in Europe. Speakers considered the commercial, regulatory, strategic, investment and consumer issues likely to impact on the European market.
