The usual definition of convenience foods is foods which are prepared or packaged by a manufacturer so that they need little or no further preparation before being used. There is nothing new in this concept of foods. For instance, take bread or cheese, or fruit and vegetables,all foods known to man for thousands of years. They are all ‘convenience foods’ for little further preparation is required except slicing or peeling. What are the reasons why convenience foods are so acceptable to caterers? And why is their use still so often a subject for discussion and even controversy?
