Abstract

During cooking, a complex series of physical and chemical changes takes place. These vary according to the commodity and cooking method but may include changes in moisture, fat content, flavour, texture, colour and nutrient composition. These changes depend on the temperature — time relation within the food, and this in turn depends on the transfer of heat to the food and within the food. Research into this topic has been carried out in the Department of Catering Studies, Huddersfield Polytechnic for some years. A series of papers have been or are about to be published, and in this article Roger Collison, brings together the results of this work.

Abstract

Safety precautions in the use of raw materials, in manufacturing and processing, marketing and enforcement of food and drug law on purity and quality may appear nowadays to be largely a matter of routine, with manufacturers as much involved and interested in maintaining a more or less settled equilibrium as the enforcement agencies. Occasionally the peace is shattered, eg, a search and recovery operation of canned goods of doubtful bacterial purity or containing excess metal contamination, seen very much as an isolated incident; or the recent very large enforcement enterprise in the marketing of horseflesh (and other substitutions) for beef. The nationwide sale and distribution of meat on such a vast scale, only possible by reason of marketing methods — frozen blocks of boneless meat, which even after thawing out is not easily distinguishable from the genuine even in the eye of the expert; this is in effect only a fraud always around in the long ago years built up into a massive illicit trade.

Abstract

First of two articles outlining the role of Internal Audit (IA) in acquisitions activity. The independence and objectivity of IA mean that it can contribute significantly to acquisitions activity, provided it has sufficient organizational status, and business awareness. In screening acquisition candidates, scrutiny of the business environment is as important as the analysis of results to date. The potential “fit” between the prospective parent and the subsidiary should be reviewed, as well as the suitability and readiness of the acquirer to manage diversified activities. Acquisitions provide a “high‐risk, high growth” path and IA should participate as early as possible in preparations for diversification.

Abstract

The second of two articles on the audit of acquisitions examines “good practice” in the review by internal audit of newly acquired subsidiaries. Control of acquisitions can be difficult to achieve due to resistance from the subsidiary, and diffidence from the parent. These barriers must be overcome to achieve improved corporate performance. The approach recommended is to create a post‐acquisition team in which internal audit should play a leading role. Three critical areas need to be addressed to ensure effective control. Business systems should be reviewed to verify that reliable management information is produced, and costs contained. Remedial restructuring may be needed to shorten communication lines, and create accountable business units. Human resource management should ensure that suitable people are appointed and motivated to run the company. Operational reviews should subsequently ensure that operations are fully integrated, and that original goals have been met.

Abstract

Despite a legacy of research that emphasizes contradictions and their role in explaining change, less is understood about their character or the mechanisms that support them. This gap is especially problematic when making causal claims about the sources of institutional change and our overall conceptions of how institutions matter in social meanings and organizational practices. If we treat contradictions as a persistent societal feature, then a primary analytic task is to distinguish their prevalence from their effects. We address this gap in the context of US electoral discourse and education through an analysis of presidential platforms. We ask how contradictions take hold, persist, and might be observed prior to, or independently of, their strategic use. Through a novel combination of content analysis and computational linguistics, we observe contradictions in qualitative differences in form and quantitative differences in degree. Whereas much work predicts that ideologies produce contradictions between groups, our analysis demonstrates that they actually support convergence in meaning between groups while promoting contradiction within groups.

Abstract

The popularity of television shows such as CSI:(insert appropriate city here) makes everyone think they are somehow a forensic expert. The portrayal of this kind of subject on radio is of course much more complicated as each observer has an image in their own head rather than in front of their eyes. This chapter seeks to inform The Archers listeners and other interested parties about the Blossom Hill Cottage crime scene examination — what they might expect to have seen from an evidential perspective and how the findings may inform the court as to what really occurred that fateful night. The chapter presents general information about different blood patterns that may be observed at crime scenes such as this and others, what they may (or may not) mean and a discussion about the strengths and limitations of this kind of scientific examination and interpretation. Whilst this can clearly be a serious subject, the intention is to inform and (probably) bust some televisual myths with a light-hearted edge from an Archers fan and fellow Tweetalonger, additionally considering online speculation about other potential evidence.

Abstract

Purpose

The aim of this study is to address the question of how to provide the appropriate learning environment and experience to foster an entrepreneurial attitude and capture the enthusiasm to shape the future change‐makers in enterprise, entrepreneurship and small business within the cost, resource and timing constraints of higher education in a changing, global and ethnically diverse world.

Design/methodology/approach

The methodology for this research on the learning environment is longitudinal action research over more that ten years in the form of a case study. Sources used include student feedback over a number of years at various stages of the learning cycle as well as curriculum and module developments, first destination information with external examiner's and tutor's reports.

Findings

One of the key criticisms of the Honey and Mumford approach is that thinking is treated as concluding not starting. In this model, which revises the Kolb and Honey and Mumford Models, it is suggested that the environment of the learner is integral to the development of the learner. This has formed the basis for a model, which outlines the three dimensions of enterprise in the forms of envisioning, energising, and expediting.

Research limitations/implications

There is further scope for research by widening the parameters of the research. This could be implemented at other institutions of higher education and gives a solution to one of the cost and resource problems currently besetting higher education globally.

Practical implications

The key elements of students initially working in teams widens the immediate networks on which they can draw and with the mix in the team they can gain a synergy of vision, energy and expediting. This revision of Kolb's learning cycle is challenging and engaging and makes the participants more fitted for the small and general business environment on graduation.

Originality/value

Reporting a longitudinal case study with a substantial reflective element, it provides a basis for sharing experience and practice.

I WAS perturbed by a ‘kite’ flown in a national newspaper recently that in its search for economies in public expenditure, the new Conservative government might wield its axe on the British Library's proposed erection in the Euston Road. The current cost of the new building is informally judged to have climbed to a total of £300m, but as this expenditure is to be deployed over a decade and more, abandonment is hardly likely to make serious inroads into government expenditure curently running at more than £50,000m annually.
