Abstract

Purpose

The purpose of this paper is to investigate information asymmetry in cattle supply transaction in Brazil. While the literature traditionally explores the seller’s information asymmetry advantages, the authors, in turn, draw attention to buyer’s role. This paper aims to show what farmer characteristics present negative correlation with slaughterhouses’ information asymmetry advantages. By slaughterhouses’ advantages, the authors refer to slaughterhouses’ opportunistic appropriation of value due to hidden information, such as quality measurement and remuneration of difficult-to-measure attributes. In doing so, this paper addresses the following research question: what are the farmer’s characteristics with negative correlation with slaughterhouses’ information asymmetry advantages?

Design/methodology/approach

This paper employs a logit model regression on a survey of 89 Brazilian cattle breeders. Drawing on transaction cost economics, this study empirically evaluates farmers’ technology level, level of education, family tradition, farm size and efforts to collect price information, to test which of these characteristics present negative correlation with slaughterhouses’ information asymmetry advantages.

Findings

The results illustrate that the cattle breeders’ level of education is negatively correlated with buyers’ information asymmetry advantages. Additionally, the authors find a controversial result presenting efforts to collect price information as positively correlated with this kind of information asymmetry advantages. Farmer’s farm size, family tradition and the level of technology were not influential. These findings suggest that a possible value appropriation from buyers’ information asymmetry is a problem for several types of producers, even varying size, family tradition in the activity or transaction costs to collect price information (e.g. lack of transparency). Initiatives should try to reduce this problem to these farmers to avoid value appropriation resulting from information asymmetry problems, especially in the lack of transparency.

Originality/value

This paper adopts a survey about information asymmetry in cattle supply transactions in Brazil, which is well known as one of the most relevant producer and consumer of meat. The main contribution is to shed light on the understanding of buyers’ information asymmetry advantages in farmer-slaughterhouse transactions to avoid potential conflicts. Given some singularities of the Brazilian cattle industry, the authors can empirically test buyers’, not sellers’, information asymmetry advantages.

Abstract

Purpose

Food manufacturing supply chain systems are the most relevant wheels of the world economy since they provide essential products supporting daily life. Nevertheless, various supply inefficiencies have been reported to compromise food safety in different regions. Sustainable supplier management and digitalization practices have become cornerstone activities in addressing these shortcomings. Therefore, this paper proposes an integrated method for sustainability management in digital manufacturing supply chain systems (DMSCS) from the food industry.

Design/methodology/approach

The Intuitionistic Fuzzy Analytic Hierarchy Process (IF-AHP) was used to weigh the criteria and subcriteria under uncertainty. Second, the Intuitionistic Fuzzy Decision-Making Trial and Evaluation Laboratory (IF-DEMATEL) was applied to determine the main DMSCS sustainability drivers whilst incorporating the expert's hesitancy. Finally, the Combined Compromise Solution (CoCoSo) was implemented to pinpoint the weaknesses hindering DMSCS sustainability. A case study from the pork supply chain was presented to validate this method.

Findings

The most important criterion for DMSCS sustainability management is “location” while “manufacturing capacity” is the most significant dispatcher.

Originality/value

This paper presents a novel approach integrating IF-AHP, IF-DEMATEL, and CoCoSo methods for sustainability management of DMSCS pillaring the food industry.

Abstract

Purpose

The aim of this study is to evaluate the food safety management system (HACCP – type system) implemented in Greek food businesses, examine the techno-managerial factors influencing its application according to enterprises' opinion and correlate these answers to the HACCP evaluation results.

Design/methodology/approach

The study involved 33 slaughterhouses located throughout Greece. Two types of questionnaires were used (IF questionnaire – for the influencing factors and HE questionnaire – for HACCP evaluation). Reliability or item analysis and principal component analysis were applied to the data obtained from the survey.

Findings

The results showed that the companies identifying the benefits of HACCP implementation as very important have fully understood possible problems and had the best results as regards HACCP evaluation. Companies not identifying the benefits as important had poor score in HACCP evaluation. Businesses with HACCP certification for longer periods and especially those that were certified according to more than one standard had better performance in HACCP evaluation. In addition, slaughterhouses involved in rearing of animals as well, especially those slaughtering only one animal species, and which do not provide services for others, seem to have better performance as regards HACCP evaluation.

Originality/value

The findings of this study correlate the results of the HACCP evaluation with the factors that affect the implementation of a food safety management system using the hierarchical cluster analysis (HCA) and canonical correlation analysis (CCA) statistical technique.

Abstract

Purpose

The value chain of the Norwegian meat production industry has recently been through major structural changes resulting in increased flows and transportation needs at all levels. The purpose of this paper is to present results of the initial stage of a five‐year research project between the Norwegian Meat Research Centre, Norwegian meat companies and Molde University College. The main goal of the project is to develop a decision support system for the transport of live animals to a slaughterhouse to reduce transportation costs while maintaining high level of livestock welfare and meat quality, as these are three main factors for the profitability of both farmers and industry.

Design/methodology/approach

The paper presents a mixed integer programming model that combines vehicle routing and inventory control. We introduce the possibility for multiple routes for a given vehicle on a given day in a multiple‐period planning perspective. Arrival times of the loaded vehicles to the slaughterhouse are controlled by production (slaughter) rate and inventory level at the abattoirs so that the supply of animals for slaughter is steady and production breaks are avoided. Livestock welfare is secured by the route duration constraints.

Findings

The model has been formulated and tested on small data sets. The major future challenge is to solve real‐life problems from the involved companies.

Research limitations/implications

The main limitation is the present inability to solve large cases.

Originality/value

The model combining transportation and inventory control in a setting of animal welfare constraints is original.

Abstract

Purpose

The purpose of this paper is to find solutions to improve the red meat sector in an emerging economy, Turkey, from the circular economy point of view, and taking sustainability approach. The need for circular management within the red meat sector in Turkey is emphasized by using Grey method. As theoretical contribution of this study, the investigation of the causes of losses at the slaughter stages of the red meat supply chain leads to proposals for sustainable and circular solutions.

Design/methodology/approach

Grey method is used to predict the number of slaughtered cattle and the amount of bone and blood waste in the slaughtering process between 2018 and 2020.

Findings

It is revealed that according to Grey prediction calculations, although the amount of slaughtered cattle, bone and blood waste seem have decreased between 2018 and 2020, there are still significant losses in Turkish red meat sector. For bone waste, this is expected to be 56,581,200 kg in 2018, 48,235,840 kg in 2019 and 41,121,380 kg in 2020. For blood waste, it is expected to be 24,754,275 kg in 2018, 21,103,180 kg in 2019 and 17,990,604 kg in 2020.

Social implications

The proposed model in the study will contribute on sector revitalization, increase in product safety, quality and hygiene, development in the management of training and education centers for farmers/labors and increase in employment.

Originality/value

This paper represents policymakers with a proposal for triple bottom line (TBL) based circular and central slaughterhouse model, based on TBL, which brings social, economic and environmental benefits for the red meat sector in Turkey.

Purpose

The objective of the present research was to carry out a scientific map about life cycle assessment (LCA) and triple bottom line (TBL) at slaughterhouse areas, looking for Cleaner Production practices aiming at recognizing strategic themes for maintaining the sustainability of productive systems, according to the development of sustainable practices and production evolution in slaughterhouse areas.

Design/methodology/approach

The literature analysis was based on general approach, with steps adapted of study phases and activities of preferred reporting items for systematic review and meta-analyses (PRISMA) recommendation guide to do systematic literature review. Activities were subdivided to discuss the results in two kinds of analysis: quantitative and qualitative.

Findings

The main findings of our study reinforce the LCA importance in slaughterhouses to promote Cleaner Production, so that the main measures suggested and/or adopted by different authors include the substitution of raw materials by feeding, with the adoption of grains, protein supplements with less environmental impact in the composition of the feed and changes in the processes seeking for better energy efficiency and optimization of water consumption in meat processing.

Research limitations/implications

There is another action of sustainability considering LCA and Cleaner Production practices in the industrial meat area that should also be considered. These actions are restricted to documents of business circulation, with limited access since they involve issues regarding innovations in economic and technological aspects of slaughterhouses, as well as industrial confidentiality. Furthermore, in patent bases it is possible to advance the studies looking for how the digital transformation has been carried out in this industrial branch, since the 4.0 transformation industry tends to use clean technologies.

Originality/value

There are LCA models with a systemic approach to measure the level of sustainability of a process, comprising analysis of impacts related to different areas: environmental, social and economic although in terms of the meat production chain, the impact analysis focuses mainly on the environmental area. So, future works should be developed in meat production chain to assess social and economic impacts, i.e. a sustainable LCA addressing the three areas to consolidate models and standardize metrics with a scientific basis.

Abstract

Purpose

The purpose of this paper was to evaluate food safety knowledge of among meat handlers in Serbian meat establishments along the meat chain, i.e. in slaughterhouses, meat processing plants and retail stores.

Design/methodology/approach

A structured, self-administrative questionnaire was designed and used to assess the level of food safety knowledge among handlers in different meat establishments. In total, of 352 meat handlers were involved in this study, with 110 handlers from slaughterhouses (31 per cent), 125 handlers from meat processing plants (36 per cent) and 116 handlers from retail stores (33 per cent). For each participant, the knowledge score was calculated by dividing the sum of correct answers by the total number of correct responses. Additionally, knowledge gaps among meat handlers were identified for each question across the three types of establishments (slaughterhouses, meat processing plants and retail stores).

Findings

The average knowledge score for all participants was 64 per cent, whereas handlers from slaughterhouses and meat processing plants obtained significantly better scores (65 per cent and 66 per cent, respectively) than handlers from retail (60 per cent, p < 0.05). The knowledge score among all meat handlers was significantly associated with the age, education and previous food safety trainings. Results indicated that 57.9 per cent meat handlers could identify that bacteria will readily multiply at 25 °C, but they do not understand the manifestation of bacterial growth and incidence in food, as only 5.5 per cent of all meat handlers knew that food contaminated with food poisoning bacteria cannot be recognized by visual, olfactory or taste checks.

Originality/value

This is the first research aimed to investigate the food safety knowledge among meat handlers in Serbia and also the first research performed to determine food safety knowledge among workers operating in different phases of the meat chain, namely meat handlers from slaughterhouses, meat processing plants and retail stores.

Abstract

Purpose

With recent shifts in market forces driven by food safety and quality concerns, managers in the Brazilian beef processing industry are forced to reevaluate their procurement arrangements with cattle producers. The purpose of this paper is to provide insight on the effect of live-weight (LW) and dead-weight (DW) procurement arrangements on farmers’ incentives to invest in cattle quality.

Design/methodology/approach

The research methods involve a conceptual model based on principal-agent framework and data from targeted interviews of cattle farmers and slaughterhouse managers in the Western Region of São Paulo state of Brazil.

Findings

Findings highlight the potential for adverse selection of low-quality cattle producers under LW arrangement and misaligned incentives for quality improvement, they also illustrate incentive compatibility of DW arrangement when the carcass yield is verifiable by producers. The evidence from field data was largely consistent with the predictions of the model and highlighted the important role of trust for a lasting procurement relationship under DW arrangement.

Research limitations/implications

Due to the lack of publicly available data and the challenges associated with the collection of primary field data, the sample is limited to 30 cattle producers and 5 processing firms.

Originality/value

This paper provides a theoretical and empirical platform for developing further research on coordination at the producer–processor interface of beef supply chain in Brazil and other countries with similar transaction characteristics. The findings will assist in designing more incentive compatible and self-enforcing arrangements between cattle farmers and slaughterhouses to enhance the product quality and the overall efficiency of the supply chain.

A hundred years ago the adulteration of food for fraudulent purposes was rife and public opinion demanded protection. The series of statutes which followed, including the Sale of Food and Drugs Act, 1875—a landmark in food legislation for upwards of half a century—virtually stamped out these practices. Today, there is as great an anxiety about the quality and purity of food used for human consumption. In 1951, Sir Edward Mellanby, speaking of the rising incidence of certain diseases in recent years, said he found it “difficult to avoid the conclusion that some at least of these increases in disease are due to errors in living recently introduced or greatly expanded in modern times”, and that “it may be that one of these errors is the ingestion of food treated by unnatural chemical substances”.

Abstract

Purpose

The purpose of this paper is to identify the risks to which agrifood supply chains are exposed and to analyze how these risks impact the degree of coordination of the chain.

Design/methodology/approach

The present investigation was executed in two steps. Initially, a literature review and interviews with slaughterhouse managers were carried out to identify the main risks to which agrifood supply chains are exposed. The second step consisted of a survey involving 66 Brazilian slaughterhouses to identify how the perception of risks influences the degree of coordination in the examined chains.

Findings

The study revealed that risks, transaction costs and creation of collaborative advantages are determining factors in defining the degree of coordination in the analyzed agrifood supply chains.

Practical implications

The results allow slaughterhouse managers to more easily recognize the risks to which the supply chains are exposed and evaluate in more detail strategies for relationships with their suppliers. These strategies may be able to avoid conflict and create value for the supplier by stimulating longer relationships and facilitating animal purchase transactions for slaughter. This can lead to quality improvements, lower costs and reduced risk.

Originality/value

Studies of risks in agrifood supply chains are rare in comparison with those developed in other sectors. The present investigation is innovative in identifying the main risks specific to agrifood supply chains and associating those risks with a degree of coordination that minimizes them.
