Abstract

Purpose

A healthy diet has been recognized as one of the most important factors associated with maintaining human health and helping in preventing the development of some chronic diseases. Therefore, this paper aims to study the perceptions of a sample of university people regarding a healthy diet.

Design/methodology/approach

It was undertaken a descriptive cross-sectional study on a non-probabilistic sample of 382 participants. The data were collected among a sample of Portuguese university people and measured whether people’s perceptions were compliant with a healthy diet.

Findings

The results revealed that the participants’ perceptions were, in general, compliant with a healthy diet (scores between 0.5 and 1.5, on a scale from −2 to +2). However, significant differences were found between age groups (p = 0.004), with a higher average score for young adults, and also between groups with different levels of education (p = 0.025), with a higher score for university degree. The variable chronic diseases also showed significant differences (p = 0.017), so that people who did not have any chronic diseases obtained a higher score.

Originality/value

This study is considered important because it provides evidences about the relation between nutrition knowledge and the perceptions towards a healthy diet. The study allowed concluding that the participants were aware about some nutritional aspects of their diets and, therefore, their perceptions were compliant with a healthy diet. This finding is very relevant because it could be a support for health policy initiatives directed at promoting healthy eating behaviours.

Abstract

Purpose

Food literacy is an emerging concept associated with the skills, capabilities and knowledge to prepare a healthy diet and make healthy food choices. This study aims to examine how a dietary gatekeeper’s intentions to prepare a healthy diet for their family, and the subsequent satisfaction that a healthy diet is achieved, is influenced by their food literacy and by barriers to healthy eating.

Design/methodology/approach

A two-stage cross-sectional study was undertaken with 756 dietary gatekeepers who completed a baseline (time 1) and a three-month follow-up (time 2) questionnaire. Partial least square-structural equation modeling was used to estimate relationships between gatekeeper food literacy, their demographic characteristics, socio-cognitive factors, time 1 satisfaction with the healthiness of the household diet and intention to provide a healthy family diet. The follow-up survey assessed subsequent satisfaction with the healthiness of the household diet and barriers to achieving it.

Findings

The results highlight the significance of the dietary gatekeeper’s food literacy in overcoming barriers to healthy eating and fostering increased satisfaction with the healthiness of the family diet. The research further highlights the influence of past satisfaction, attitude, subjective norms and perceived behavioural control. Several demographics factors are also highlighted as influential.

Research limitations/implications

The research offers new insights into the role of food literacy in the home environment including its influence on the dietary gatekeeper’s satisfaction with the family diet. The current model also provides strong evidence that food literacy can reduce the impact of barriers to healthy eating experienced by gatekeepers. The research has limitations associated with the socio-economic status of respondents and thus offers scope for research into different populations and their food literacy, younger and early formed cohabiting and the negotiation of food and dietary responsibility and on intergenerational food literacy.

Practical implications

The current findings regarding the impact of food literacy have significant implications for government agencies, non-profit agencies, educational institutions and other related stakeholders in their effort to curb obesity. Implications exist for micro-level programmes and actions designed to influence gatekeepers, family members and households and at the macro level for policies and programmes designed to influence the obesogenicity of the food environments.

Originality/value

The current study is one of the first to offer evidence on the role of food literacy in the home environment and its ability to overcome barriers to healthy eating. The research provides social marketers and public policymakers with novel insights regarding the need for increased food literacy and for developing interventions to improve food literacy in dietary gatekeepers.

Abstract

Outlines the numerous messages sent to consumers regarding healthy eating practices and indicates the problems involved in determining whether or not the British consumer has adopted a nutritious and healthy diet. Research was undertaken which measured individuals’ involvement in healthy eating issues and related this to several demographic characteristics. The research indicates some variation in involvement in healthy eating according to demographic variables but the results were not statistically significant. Group discussions were also conducted which confirmed that the healthy eating messages were widely received and understood; however, there was some confusion over their content, scepticism regarding the veracity and motivation of some sources and a growing resentment of boring and puritanical themes. In the future care must be taken to produce clear, simple and positive healthy eating messages to the public if trends towards a more nutritious diet are to continue.

Abstract

Purpose

This paper aims to test whether overall and specific healthy eating behaviors and intentions could be better predicted by expanding the theory of planned behavior (TPB) to include a healthy eater identity. Major health organizations suggest increasing consumption of fruits, vegetables and whole grains to address the growing number of overweight and obese individuals, yet researchers have questioned the degree to which existing behavioral intervention programs sufficiently explain healthy eating behaviors.

Design/methodology/approach

Adult women (N = 79) completed questionnaires related to TPB components and healthy eater identity. Participants then recorded food consumption for four days using food diaries and food frequency questionnaires.

Findings

Using hierarchical multiple regressions, the authors demonstrated that identity as a healthy eater was a significant predictor of healthy eating intentions beyond the TPB components and a significant predictor of fruit and low-fat dairy consumption and overall healthy eating behaviors.

Research limitations/implications

Despite the limitation of correlational data from a homogenous population, results support previous research and add to existing literature by demonstrating the unique contribution identity has in predicting specific healthy diet behaviors of fruit and low-fat dairy consumption.

Originality/value

Findings advance our understanding of how young women think about nutrition and underscore which healthy eating behaviors might need to be directly targeted in interventions if such behaviors fall outside of the scope of common conceptions of what it means to be a “healthy eater”.

Abstract

Purpose

The paper aims to investigate the relationship between meal choices of primary school children and their knowledge of balanced diet and healthy eating.

Design/methodology/approach

Using a questionnaire and food photo album (FPA), children combined the different food items in the FPA to form a “healthy Sunday lunch” (balanced meal containing all the six classes of food), a “favourite Sunday lunch” (what they would like for a Sunday lunch) and “last Sunday lunch” (what they had the previous Sunday for lunch). Overall, 110 questionnaires were returned and analyzed.

Findings

Participants' choice of a favourite Sunday lunch had a better representation of the various classes of a balanced healthy meal (X=71.8 and SD=24.0) compared with their ability to create a healthy Sunday lunch, which did not reflect adequately the six classes of food (X=59.8 and SD=36.9). Last Sunday lunch had a good representation of the various classes of food (X=70.7, SD=24.8). Girls had a better ability to plan a healthy Sunday lunch than boys.

Research limitations/implications

The study was carried out with year 6 pupils (n=110) in four primary schools in rural Mid‐Wales. Thus, the generality of these findings to children from other demographics is unclear.

Practical implications

There was no significant relationship between pupils' choice of food and their knowledge of balanced diet.

Originality/value

The results suggested that children will make “healthy choices” but need the knowledge underpinning these “healthy choices” in order to affect their attitude towards healthy eating.

Purpose

The chapter is an auto-ethnographic account of the self-management of a chronic illness within the context of a participatory research project on Mediterranean Diet (MD). A group of Italian women with type 2 diabetes is following a non-medical, personal interpretation of the Mediterranean-style diet. The research account is preceded by a critical appraisal of the scientific narratives of the MD.

Methodology/approach

Analysis of epidemiological research on MD examines some methodological aspects of gender blindness in its scientific approach. The ethnography concerns self-management of MD diet and redefinition of gender relations.

Findings

MD is analyzed as a case of transplantation of yesterday’s cultural and social capitals of the peasant classes, to today’s discourses on food considered as appropriate for affluent people suffering from satiety diseases. The ethnography highlights gender aspects of biographical work, examining in particular a “conversion” dietary model.

Research limitations

The ethnography must be amplified to include women and men from different social classes with various Mediterranean cooking habits, and family and gender patterns.

Practical implications

The chapter highlights cultural processes for women’s empowerment in self-managing type 2 diabetes.

Originality/value

This chapter may represent a seminal sociological work on chronic illness, gender and food studies in one of the “native” contexts of the Mediterranean-style diet.

Abstract

In this chapter the aim is to analyse the way the relationship between health and food has been changing at the same time as Spanish society itself. From the beginnings of the consumer society until the present day the modernization process has made its imprint on the guidelines public bodies have issued to the public on caring for their health and diet. Beginning in the 1960s with a welfare idea of a healthy diet, very typical of the decade, and meant for a population with nutritional problems, today we have guidelines for an overfed population. The social trends dominant in each historical moment are shown throughout this transformation process and the dietary recommendations have been part of the social change. However, the perceptions of the administration itself on what constitutes a healthy diet have also made their mark on the criteria. The modernizing nature of the paternalistic administration of the 1960s can be easily seen in contrast with the public bodies of the 1980s competing with the messages from the food and agricultural businesses. As the 20th century drew to a close, dietary advice was in keeping with a background dominated by considerations on the nature of social change and in which both public bodies and citizens trusted in the truths of science as a reference point for correct action. At the beginning of the 21st century, reflexivity and questioning of scientific power appear and also an increase in public preoccupation with food risks. Each stage is analysed relating historical background and dietary recommendations.

Purpose

The nutritional and anthropometric status can be essential in determining their immune response to vaccines. The purpose of this paper was to investigate the association between diet quality and anthropometric indices with the side effects of the Pfizer-BioNTech COVID-19 vaccine and the SARS-CoV-2 immunoglobulin G titer among Kurdish adults.

Design/methodology/approach

This cross-sectional survey-based study was conducted between December 2021 and February 2022. This paper included data on 115 adults, 20–89 years old, from the Kurdistan region. Dietary information was collected using a short food frequency questionnaire, and diet quality was assessed using a plant-based healthy diet score. A blood test was performed to measure the SARS-CoV-2 immunoglobin G (IgG) titer after the vaccination's first and second doses.

Findings

Overweight and obese subjects reported more local pain, myalgia, headache, local bruising and local reactions after receiving the first dose of the vaccine (p = 0.04). People on a less healthy diet reported more local pain, myalgia and headache (p = 0.04) and more local bruising and reactions (p = 0.01) after receiving the second dose of the vaccine. On the other hand, the authors observed that those with healthy dietary habits had more IgG titer after the first and second doses of vaccination than those with less healthy dietary habits (p = 0.001).

Originality/value

The results showed that participants with a healthy diet and normal weight status had fewer side effects of the Pfizer-BioNTech COVID-19 vaccine than obese people and those with a less healthy diet.

Purpose

The purpose of this paper is to analyze households’ acquisition of healthy food away from home (FAFH) from restaurants. Specifically, determinants of households’ decision to purchase healthy FAFH, the share of households’ FAFH expenditures allocated to healthy FAFH and the share of households’ FAFH calories obtained from healthy items are identified.

Design/methodology/approach

Using data from the National Household Food Acquisition and Purchase Survey, the UK Food Standards Agency’s Nutrient Profiling Model is used to classify the healthfulness of households’ FAFH purchases. A double-hurdle model is estimated to identify determinants of households’ decision to purchase healthy FAFH and the share of their FAFH expenditures and calories allocated to healthy items.

Findings

Households’ acquisition of healthy FAFH varies with income, food assistance, FAFH purchase frequency, dieting, restaurant type, household composition, region and season. There is little difference in the impact of these factors on healthy FAFH expenditure shares vs calorie shares, suggesting that healthy FAFH expenditures proxy the contribution of healthy FAFH to a households’ diet.

Practical implications

Results suggest that increased availability of healthy FAFH may need to be supplemented by targeted advertising and promotions, revisions to nutrition education programs, improved nutrition information transparency and value pricing in order to improve the dietary quality of households’ FAFH acquisitions.

Originality/value

This study is the first to analyze household acquisition of healthy FAFH.

Abstract

Purpose

The purpose of this research is to introduce and test a path model that explores the effects of Hofstede's cultural value dimensions on consumers' intention to eat a healthy diet, through the mediation of their public self‐consciousness.

Design/methodology/approach

A total of 21,974 subjects from 25 nations were surveyed in this cross‐cultural consumer study.

Findings

As the model demonstrated, individualism and uncertainty avoidance had negative impacts on public self‐consciousness, while power distance and masculinity positively affected public self‐consciousness, which in turn had a positive influence on consumers' intention to eat a healthy diet.

Originality/value

The study measured each nation's cultural values by assigning the national culture index scores originally computed by Hofstede. This operational approach made it possible to develop and test a hierarchical path model on the relationships among cultural values, mediating variables and consumer behaviors. It also used the 3M model as a theoretical structure for investigating the nomological validity of two new constructs that are relevant to the field of consumer marketing (i.e. public self‐consciousness and intention to eat a healthy diet). Managerial implications are provided.
