Abstract

Contemporary society is characterized by extreme acceleration (Rosa, 2010). Time has become a scarce resource and individuals are forced to adhere to the demands of speediness. This condition is connected to the increased performance now required in many areas of daily life, an increase so profound that some authors refer to ours as a “doping society.”

This chapter argues that the practice of quantification exponentially increases the “managerializing” of the user. In this sense, the quantified-self (QS) can be thought of as something that helps people to organize their activities in the manner of the market. Individuals thus become self-entrepreneurs who, in keeping with the standard aims of neoliberalism, make use of their collected data in a fashion analogous to the way results are determined in a corporation’s Research & Development department. The self becomes an assortment of analyses by which measures of behaviors and habits are made, all in the name of producing an “objective report” on the user’s characteristics. The ultimate aim of all this is to improve certain parts of life so as to increase and optimize our productivity.

Abstract

Purpose

Pasta is popularly consumed in developed and developing countries. Many low-income homes that could not afford protein-rich foods consumed pasta without further supplements as a meal. However, pasta is deficient in protein and some other health-promoting substances. Deoiled sesame and amaranth flours are rich in protein, minerals, amino acids, antioxidants and many non-nutrient-based health benefits. Formulating a nutrient-dense pasta product (spaghetti) would reduce protein-energy malnutrition (PEM) and improve the health status of pasta consumers. This study aims to investigate some bioactive, nutrients and non-nutrient components of developed and optimized spaghetti pasta from deoiled sesame, amaranth and modified sorghum starch blend.

Design/methodology/approach

Amaranth, sorghum and sesame grains were sorted, wet-cleaned and dried. Sesame grain was roasted while starch was extracted from sorghum grain. The innate starch was modified by heat-moisture treatment. The prepared grains and starch were milled into flours and formulated into different flour mixtures using the Box-Behnken design of response surface methodology and the process was modeled and optimized. The flour mixtures were made into spaghetti pasta. Proximate, mineral, amino acids, biological value, protein efficiency ration, phytochemical, antioxidant activity, physico-functional and sensory properties of the formulated spaghetti were evaluated using standard procedures.

Findings

An optimal mixture of deoiled sesame (31.12g/100g), amaranth (56.56g/100g) and modified sorghum starch (12.32g/100g) were established, which yielded protein (25.79g/100g), appearance (96.65%), taste (94.57%) and acceptability index (97.37%). The spaghetti was significantly (p-values ranged from 0.001 to 0.018) superior in protein, ash, fat, fiber, calcium, magnesium, zinc, alkaloids, total phenolic, flavonoids, 2,2-diphenyl-1-picryl-hydrazl (DPPH) and ferric ion reducing antioxidant power (FRAP) relative to the control (100% wheat flour). Amino acid showed that the product is rich in histidine, isoleucine, phenylalanine and threonine. The high essential amino acid index of the product indicated that it is a good protein source. The spaghetti was significantly (p-values ranged from 0.001 to 0.021) superior in aroma, taste and acceptability index relative to the control.

Originality/value

This study showed the feasibility of developing spaghetti pasta from deoiled sesame, amaranth grains and modified sorghum starch. The production process described in this study is scalable; and the process could be applied on a small scale for the development of self-entrepreneurs and industrially. The high protein content of the product indicated that it could be used to reduce PEM in developing countries.

In this chapter, I unpack the idea of “smart community” conceived in relation to the first “smart district” in Italy, Milano 4 You, that will be realized in Segrate, one of the wealthiest municipalities of Italy located in the Milanese metropolitan area. Through the lenses of critical political economy, notably the work of Miranda Joseph and David Harvey, the chapter focuses on the economic rationality behind the “smart community,” that is, a community of production and consumption. In fact, the new residents are envisaged as self-entrepreneurs willing to re-appropriate their data and sell them for profit, while sharing a “smart” lifestyle. However, the chapter avoids a reductionist and negative reading, highlighting the potential for contestation and alternative rationalities to emerge.

Abstract

Purpose

Leafy vegetables are known to be highly perishable because of high moisture content, which had resulted in applications of different preservative methods. However, these methods were not without certain limitations during storage. Osmotic pre-dehydration had been proved to be a better alternative because of high retention and improvement in nutritional qualities and stability during storage. This study aims to investigate the osmotic pre-dehydration of fluted pumpkin (Telfairia occidentalis) leaves.

Design/methodology/approach

Fluted pumpkin (T. occidentalis) leaves were pre-dried using sucrose, corn syrup and sodium chloride solutions as osmotic agents, while unosmo-predried leaves were used as the control. Both osmo-predehydrated and unosmo-predried leaves were dried in a hot air oven, whereas the effect of the osmotic agents on the nutritional qualities was investigated using standard protocols.

Findings

There were significant differences (p-values ranged from 0.001 to 0.030) in the proximate compositions of samples. Osmo-predried leaves recorded higher mineral contents in Ca, Cu, Fe, K, Mg, Mn and Na. Osmotic pre-dehydration by NaCl had a significant effect (p = 0.02) on ascorbic acid. The amino acid profile of the oven-dried leaves (unosmo-predried) showed that histidine and cysteine recorded high amino acid scores of 120.42% and 135%, respectively. Threonine (43.73%) recorded the highest essential amino acid score (without histidine). The economic evaluation indicated the percentage cost index difference of leaves treated with NaCl as 2.08%, sucrose (11.19%) and corn syrup (16.43%).

Originality/value

The high proportion of beneficial elements such as calcium, magnesium, phosphorus, potassium and appreciable chemical compositions of the osmo-predried leaves compared to unpre-dried leaves proved osmotic pre-dehydration as a value-added technique for preservation of leafy vegetables. The best osmotic agent was sodium chloride. This process could be applied on a small scale for the development of self-entrepreneurs and home-scale industries.

Abstract

Purpose

The purpose of this paper is to examine factors that influence women entrepreneurship development in Bangladesh.

Design/methodology/approach

The paper adopts quantitative and qualitative analyses of possible factors that may affect the development of women entrepreneurships such as: age, education, socio‐culture, motivation, market information, business idea, enterprise creation, advocacy and decision making, enabling environment, and financing. A questionnaire was used to provide empirical evidence on the variables and to estimate the model employed by the study.

Findings

The analyses revealed that women face problems in establishing their own businesses in every step that they take. The desire for financial independence and decision making, market and informational network, availability of a start‐up capital, knowledge and skills, and responsibility towards children are the main factors that impact women's decision to become self‐entrepreneurs. The regression analysis, however, revealed that participation in women associations, advocacy, and decision making (self‐fulfillment) and knowledge are the main factors that affect women's decision to develop their business. Yet, the results indicated that religion does not influence women's entrepreneurship development.

Research limitations/implications

The questionnaire survey employed in this paper is confined only to a women population who passed grade five and above as semi‐educated or educated women respondents group. The paper excludes homeless women or those who live in the slum urban areas.

Practical implications

The outcome of this paper can be used by researchers, government, non‐governmental organizations, civil society, and local community to formulate effective policy that motivate women to become entrepreneurs. This will have a positive effect on women participation on the economic development of Bangladesh.

Originality/value

This paper will be the first to provide empirical evidence on factors that affect women's entrepreneurship development in the urban Bangladesh.

Abstract

Purpose

The purpose of this paper is to offer a new gender- and class-sensitive framework for research on rural women entrepreneurship by focusing on the women’s agricultural cooperatives in Turkey. Although these cooperatives have been promoted as ideal bottom-to-top organizations to integrate women into economy as entrepreneurs, there has been significant decline in their numbers. This paper tackles with this contradictory situation and intends to offer an alternative research framework on the viability of the women’s agricultural cooperatives in Turkey.

Design/methodology/approach

The paper is built on a critical assessment of the existing literature. It argues that a framework that brings together macro-, meso- and micro-factors will provide a springboard to unfold the gendered processes integral to rural female entrepreneurship in Turkey. Drawing on intersectional theory, the multilayered factors which operate to rural women’s (dis)advantages through the cooperatives are unfolded as policymaking, policy implementation and everyday experiences.

Findings

For policymakers and implementers, it points out the need for a holistic and integrated understanding of rural female entrepreneurship and for re-formulation of policies at the state level. For rural women, it draws attention to the measures required to be taken at the cooperative level to overcome inequalities.

Originality/value

This paper is original in making explicit social, political and economic embeddedness of female entrepreneurship in rural Turkey.

Abstract

The article conceptualizes the dilemma between exploration and exploitation for flexible knowledge workers. At a time when work is fragmented and society is individualized, we consider, besides the strategies of organizations, also those of workers and the ways in which they move among organizations in an attempt to ‘get by’ between increased margins of autonomy and a lack of the resources necessary to pursue their passions and to fulfil their projects. Through analysis of the life stories of flexible knowledge workers and their relationships with the organizations for which they work, the article illustrates how flexible knowledge workers handle the tension between exploration and exploitation and how organizations resist their attempts. The purpose is to interpret the pervasiveness of individualization processes that prompt individuals to think of themselves as organizations, while human resource management claim that people are their most valuable resource but treat them as disposable workers.

Abstract

Purpose

The so‐called individual action plan (IAP) has become a major policy instrument in providing active welfare for social benefit claimants, and as such it has attracted quite a research interest. The purpose of this paper is to maintain that research hitherto has been founded in a too narrow notion of the IAP, arguing instead that IAP represents a new societal rationality, in relation to which the scope of research questions should be broadened.

Design/methodology/approach

The paper explores the basic dynamics and internal features of the IAP dialogue theoretically and ideal typically. It is furthermore argued that IAP‐like arrangements have extended far beyond the domain of social policy; IAP‐like dialogues are practiced in all corners of society in the form of HRM conversations, supervision, coaching etc. Relating to Foucault it is therefore argued that IAP represents a new dispositif.

Findings

The paper states that the emerging dispositif demands that the individual constitutes herself as a creative and self‐expressive subject in dynamic dialogue. Accordingly the microphysics of the interaction change for the clientele as well as for the case worker. Purpose and procedures turn singular, which undermines collective endeavours and general criteria for success in social policy.

Originality/value

The paper employs a theoretical and sociological perspective on the IAP as a new technology in the organisation of social policy, and its contribution lies in its displacement of the perspective on IAP and its consequences on research questions.
