Abstract

Purpose

In this chapter, we explore the future global supply and demand trends for key agricultural products under baseline assumptions of socioeconomic changes in population and income. We examine nutritional trends under this baseline to highlight countries that lag behind in attaining key dietary sufficiency targets.

Methodology/approach

Using a global multimarket agricultural model, we disaggregate the key macronutrients within food commodities to understand how progress toward target dietary intake levels of nutrients compares across various regions. We look particularly at those regions whose populations fall into the bottom sixth of nutritional attainment (the Bottom Billion) and note their slow projected progress toward achieving dietary sufficiency in key macronutrients.

Findings

Many countries falling into the Bottom Billion category of nutritional attainment are in Africa and Asia. Colombia is the only Latin American country that fell into this category. Most populations in the Bottom Billion are deficient in carbohydrate, protein, and fiber intake.

Practical implications

Policies aimed at eliminating hunger and improving the nutritional status of populations must be aligned with evolving socioeconomic patterns and changes that shape food consumption and dietary patterns. This analysis evaluates regions of the world in greatest need of attaining sufficient dietary intake of important nutrients, and sets the stage for a deeper discussion of policy options for improving these regions’ food security.

Abstract

Purpose

A current estimate of the cost of reducing the concentration of carbon dioxide in the atmosphere by Ocean Nourishment is provided. A scenario of fertilisation of the ocean in regions of excess phosphorous, carried out using a ship to distribute ammonium hydroxide, is examined.

Design/methodology/approach

Ocean fertilisation could be deployed to draw down the carbon dioxide already in the atmosphere and store it for millennia in the deep ocean.

Findings

The costs of fertilising the ocean with macronutrient depends mostly on the cost of producing the nutrient and the cost of its delivery. Macronutrient fertilisation has been calculated, for a particular scenario, to cost US$20 per tonne of carbon dioxide emission avoided for 100 years.

Research limitations/implications

There is a collateral benefit of increased fish stocks, which is not considered here. The ocean, plausibly, has the capacity to sequester more than one Gigatonne per year of carbon (∼3.7 Gt CO2/yr) via macronutrient fertilisation.

Practical implications

This modest cost of reducing climate change justifies further research and development of ocean macronutrient fertilisation.

Social implications

The modest cost allows climate change to be addressed without serious economic disruption.

Originality/value

The study reported is a contribution to mitigation of climate change.

Abstract

Purpose

This study aimed to determine the relationship between calorie and macronutrients intake and the growth status of Aboriginal children based on gender and age group.

Design/methodology/approach

This was a cross-sectional study participated by 85 school-aged Aboriginal children at Labu, Negeri Sembilan. The dietary intake and socioeconomic status data were collected from the parents using an interviewer administrated structured-questionnaire and 24-hour dietary recall. WHO AnthroPlus software was used to determine the z-score of weight for age (WAZ), height for age (HAZ) and body mass index (BMI) for age (BAZ).

Findings

The mean fat intake was significantly higher among younger children (i.e. 7–9 years old) as compared to elder children (i.e. 10–12 years old) (40.7 ± 17.3 g vs 32.0 ± 13.8 g; t = 2.496, p = 0.015) but not for the mean intake of calorie (1816.1 ± 979.9 kcal vs 1566.3 ± 808.7 kcal; t = 1.248, p = 0.216), protein (50.13 ± 20.08 g vs 44.94 ± 16.45 g; t = 1.269, p = 0.208) and carbohydrates (198.0 ± 63.0 g vs 190.8 ± 66.1 g; t = 0.513, p = 0.609). The majority of the respondents did not meet recommended nutrient intake (RNI) for the calorie (65.9%) and fat (75.3%). A significantly higher proportion of elder children did not meet RNI for fat as compared to younger children (88.8% vs 65.3%; X2 = 6.21, p = 0.021). The HAZ showed that 28.2% (n = 24) of the Aboriginal children were stunted, while WAZ showed that 14.8% (n = 9) of the Aboriginal students were underweight, and 8.2% of them were overweight. Based on BAZ classification, 15.4% (n = 6) of boys and 2.2% (n = 1) of girls were overweight. There is no significant correlation between calories and macronutrients and growth status of the children.

Originality/value

Although the under-nutrition status among Aboriginal children is still a highlighted issue, the few over-nutrition statuses among Aborigines should be taken into count, especially in term of energy and macronutrient intake.

The major component of agriculture production includes the type of seed, soil, climatic conditions, irrigation pattern, fertilizer, weed control, and technology used. Soil is one of the prime elements in modern times for agriculture. Soil is also one of the primary and important factors for crop production. The available soil nutrient status and external applications of fertilizers decide the growth of crop productivity (Annoymous, 2017). The upcoming research question that needs to be addressed is What is the application of soil data on soil health management for sustaining agriculture? Driven by the need, the aim of the present study is (a) to explore the soil parameters of a district, (b) compare the values with the standards, and (c) pave a way for mapping the crops with suitability of soil health. This study will not only be beneficial for the district to take appropriate steps to improve the soil health but also would help in understanding the causal relationship among soil health parameters, cropping pattern, and crop productivity.

Abstract

Purpose

This paper aims to determine the nutritional profile of popular takeaway meals in the UK. Fast food has a poor nutritional profile; research has focused on the major catering chains, with limited data on takeaway food from independent establishments.

Design/methodology/approach

Random samples of takeaway meals were purchased from small, independent takeaway establishments. Multiple samples of 27 different takeaway meals, from Indian, Chinese, kebab, pizza and English-style establishments (n = 489), were analysed for portion size, energy, protein, carbohydrate, total fat, salt and total sugars.

Findings

Takeaway meals were inconsistent with UK dietary recommendations; pizzas revealed the highest energy content, and Chinese meals were lowest in total fat. However, there was a high degree of variability between and within categories, but the majority of meals were excessive for portion size, energy, macronutrients and salt.

Research limitations/implications

The present study focused on energy, macronutrients, salt and total sugars. Future research should analyse the quality of fat and carbohydrates and micronutrients to provide a more detailed nutritional profile of takeaway food.

Practical implications

The nutritional variability between establishments suggests that recipe reformulation should be explored in an attempt to improve the nutritional quality of takeaway foods. In addition, portion size reduction could favour both the consumer and the industry.

Social implications

Takeaway outlets do not provide nutritional information; due to the excessive nutritional profiles, regular intake may increase the risk of non-communicable disease. Therefore, there is a pressing need for this provision to help consumers make conscious food choices.

Originality/value

This is the first study to analyse energy and macronutrient content of independent takeaway meals in the UK.

Abstract

Purpose

This study was designed with the aim of assessing the energy and nutrient intakes of male university students before and during Ramadan and comparing it with the Recommended Nutrient Intake (RNI) of Malaysia.

Design/methodology/approach

A total of 30 male students aged between 19‐24 years from International Islamic University Malaysia (IIUM) Kuantan Campus were recruited before Ramadan. The height, weight, waist and hip circumferences were recorded on day one of Ramadan and also recorded on day 21 of Ramadan to assess the changes. From the weight and height, the body mass index was calculated and from the waist and hip circumference, the waist‐to‐hip ratios were calculated. The respondents were requested to keep three days food record in household measurements; once prior to fasting and once during the third week of Ramadan. The records were then analyzed using Malaysian Food Composition Table and Food Atlas to get the averages of energy and macronutrients intakes of the subjects.

Findings

After 21 days of Ramadan, the results revealed that there was reduction in the body weight and there was significant (P<0.05) improvement in the waist‐to‐hip ratio of the subjects. The effect was more prominent in the normal‐weight compared to overweight respondents. The mean energy and protein intakes were significantly (P<0.001) lower than the RNI for Malaysians of similar age group. However, mean energy and protein intakes increased during Ramadan compared to the first day of Ramadan. This study indicates that Ramadan fasting does not affect energy and macronutrients intake but only the routine of intake is affected.

Research limitations/implications

This research was limited to a specific group of normal and overweight students who were residing on campus of the IIUM. Their intakes might not be consistent with those at home or living outside the university campus. Another thing is that the students might have over‐reported their energy and macro‐nutrients intakes compared to what they have consumed in reality. So, the self‐reported intakes could not be ascertained. The stated factors might have confounding effects on the finding of this research.

Practical implications

Most research argues that the body weight loss during Ramadan fasting is due to reduced energy consumption; however, this is not true in all cases. This study infers that there is no reduction in the total energy consumption, rather there is a change in the pattern of energy intake. This brief study would help researchers planning to conduct research on Ramadan fasting and will caution fasting readers about the intakes.

Originality/value

This study indicates that during Ramadan fasting does not affect energy and macro‐nutrients intake but only the schedule of intake is affected.

Abstract

Purpose

The purpose of this paper is to compare energy and macro‐nutrients intake in university hostel students in two countries of Asia.

Design/methodology/approach

Female students from the hostels of International Islamic University, Malaysia (IIUM), Kuantan Campus and NWFP, Agricultural University Peshawar, Pakistan were assessed for energy and macro‐nutrients intake. A total of 140 students were registered who volunteered to participate in this study. The age range of the registered students was 22‐26 years. On the day of the registration, age, height and weight were recorded; also, food frequency questionnaires (FFQs) were provided. The participants were asked to record alternately for three days whatever they ate during the prescribed week. Out of 140 students 139 returned the FFQs. From the anthropometry, the BMI was used to assess the under, ideal, over‐weight and obese students. From the FFQs, energy and nutrient intakes were calculated using the food composition tables for Malaysia and Pakistan and compared with the recommended nutrients intakes (RNIs).

Findings

The body weight for the required height among the Malaysian students was lower by 7.81 per cent than the reference value, whereas the body weight of Pakistani students matched to the reference weight for height. The Malaysian students were 28.0, 61.0, 5.5 and 0.9 per cent under, ideal, over‐weight and obese, respectively, whereas Pakistani students were 100 per cent in the category of ideal‐body weight. The total energy consumption was higher among Malaysian students by 9.93 per cent compared to the reference requirements, whereas the Pakistani students claimed to meet the requirements. In terms of nutrients balancing the Malaysian students were having the ideal combination of the macro‐nutrients and it was within the recommended range of 55‐60, 15‐20 and 25‐30 per cent for carbohydrates, protein and fat, respectively; whereas the balancing of the macro‐nutrients was poor among the Pakistani students and met the energy requirements at the expense of fat consumption.

Originality/value

The paper suggests that there is imbalance in macro‐nutrients intake among the students.

Abstract

Levels of 12 metals (Ca, K, Na, Mg, Cu, Fe, Mn, Zn, Cd, Cr, Pb and Ni) were estimated in 19 different imported brands of unexpired and expired canned dry milk available from local markets. The HNO3/HClO4‐based wet digestion method was used for the analysis of the samples by the FAAS technique under optimum analytical conditions. Of the macronutrients, Ca showed highest at 1,144 μg/g in the dry milk from Holland. In the case of micronutrients, Fe showed the maximum level at 119.15 μg/kg in the milk from UK. Cr dominated at 23.19 μg/kg compared with other heavy toxic trace elements. The following order of decreasing concentration was observed for both unexpired and expired milk: Ca > Na > K > Mg > Fe > Zn > Cr > Pb > Cu > Ni > Cd. All the trace elements were found to have 100 per cent incidence of occurrence. The expired milk samples showed enhanced levels of Fe, Zn, Cr and Pb by a factor of 1.2‐1.6 on average. The results of the metal contents were compared with those for fresh cow milk. The data were statistically evaluated to find bivariate correlation between the metals in pre‐ and post‐expiry milks.

Abstract

Purpose

Coronavirus disease-2019 (COVID-19) is becoming a crucial health problem worldwide. Continued and high-speed mutations of this virus result in the appearance of new manifestations, making the control of this disease difficult. It has been shown that well-nourished patients have strong immune systems who mostly have short-term hospitalization compared to others. The purpose of this study is to review the major nutrients involved in the immune system reinforcement and to explain nutritional aspects during the recovery of COVID-19.

Design/methodology/approach

In this review paper, the mechanistic role of nutrients in boosting the immune system and the nutritional aspects during the recovery of COVID-19 patients were discussed. Papers indexed in scientific databases were searched using antioxidants, COVID-19, inflammation, immune system, macronutrient, micronutrient and probiotic as keywords from 2000 to 2022.

Findings

Because of the adverse effects of drugs like thrombosis, pulmonary embolism and hypercholesterolemia, a balanced diet with enough concentrations of energy and macronutrients could increase the patient's durability. The inflammatory cytokines in a vicious cycle delay patients’ rehabilitation. The main mechanistic roles of micronutrients are attributed to the downregulation of virus replication and are involved in energy homeostasis. Dysbiosis is defined as another disturbance among COVID-19 patients, and supplementation with beneficial strains of probiotics helps to exert anti-inflammatory effects in this regard. Being on a well-planned diet with anti-inflammatory properties could reverse cytokine storms as the major feature of COVID-19. Future studies are needed to determine the safe and effective dose of dietary factors to control the COVID-19 patients.
