Abstract

Occupational injury in the health care sector in the United States rates among the highest of all industries. Specific to hospital support service workers (e.g., Food & Nutrition, Environmental Services), studies have shown that injury rates for support service workers tend to be among the highest of hospital personnel, and yet there is a shortage of research investigating the safety climate of these workers. Therefore, the purpose of this study is to examine safety perceptions of support service workers. Surveys were used to measure safety climate leadership factors (per the AHRQ's Survey of Patient Safety Culture) to determine if they are related to individual safety perceptions, as well as ratings of work unit safety. Following established safety climate research, we examined the role of the work environment (e.g., supervisor support and work unit culture) on safety perceptions. We found that both supervisor and organizational safety leadership are positively related to individual safety perceptions and supervisor support. Organizational safety leadership and work unit culture were positively related to work unit safety rating. Our findings demonstrate that the antecedent factors and pathways that promote a positive safety climate among health care providers functions in a similar manner for support service workers. These findings contribute to a better understanding of occupational safety of this understudied work group and provide evidence to hospital administration that developing a strong safety climate among support service workers is not entirely different from what is required to promote a robust safety climate across an organization.

Abstract

Purpose

Employees eat at least one meal per day in the workplace on a regular basis, carrying implications for their physical and emotional well-being. For migrants, this can be challenging, owing to food culture differences. This study explores migrant workers’ perceptions of the food eaten in the hospitality workplace.

Design/methodology/approach

Eleven in-depth, face-to-face, semi-structured interviews were carried out with migrant workers in three- and four-star hotels in the southwest of England.

Findings

The findings show that the food eaten in the workplace is perceived as unhealthy and fattening and therefore unappealing. This partly informs a decision to eat home country food away from work.

Research limitations/implications

Further research is needed across many more organisations to investigate whether this would actually have the positive impact on employee well-being (migrant or home national) and employer reputation.

Practical implications

Providing additional “off-menu” meals for migrant employees is recognised. However, staff turnover within the hotel environment may mean that dishes acceptable to one nationality may not be acceptable to another. Alternatively, it may be that attention to such details and the provision of a food offering that is seen as fit for purpose by staff may reduce turnover and demonstrate “care” on the part of the employer. An annual staff survey could be conducted to gauge employee opinion.

Social implications

This study helps to show the significance of food for migrant well-being. It highlights that in increasingly globalised workplaces, food provision is important for both emotional and physical health. The study's findings have relevance to other multicultural workplaces where the food provided to staff may have consequences for employee well-being.

Originality/value

Little research has focused on the link between the food consumed in the hospitality workplace and migrant worker well-being. This study therefore makes an important contribution to knowledge by exploring feelings about the food eaten at work from the perspective of migrant workers themselves.

This paper aims to evaluate the association between carbohydrate quality index (CQI) and nutrient adequacy in Iranian adults.

Abstract

Purpose

This paper aims to evaluate the association between carbohydrate quality index (CQI) and nutrient adequacy in Iranian adults.

Design/methodology/approach

A total of 268 men and women with ages ranged from 18 to 70 years were evaluated in a cross-sectional study. The CQI was calculated by adding together the three components, namely, the ratio of solid to total carbohydrate, dietary fiber and glycemic index. The scores of three components were summed to calculate the CQI, with a higher score indicating a higher dietary carbohydrate quality. The odds ratios (ORs) of nutrient adequacy ratio (NAR), defined as the ratio of intake of a nutrient to the age- and gender-specific recommended dietary allowance, for the intake of energy and 10 nutrients across quartiles of the CQI were calculated by logistic regression analysis and expressed with 95% confidence intervals (CIs).

Findings

CQI ranged between 3 to 15 (mean ± SD: 9 ± 1.9). Being in top versus bottom quartile of the CQI was associated with a higher NAR of folic acid (OR: 3.20, 95% CI: 1.06–9.62; P-trend: <0.001), vitamin A (OR: 3.66; 95% CI: 1.46–9.17; P-trend: <0.001), magnesium (OR: 5.94; 95% CI; 1.71–20.53; P-trend: <0.001), vitamin C (OR: 7.85; 95% CI; 2.99–20.59; P-trend: <0.001).

Originality/value

A higher CQI was associated with greater micronutrient consumption adequacy in Iranian adults. The results suggest that increasing the consumption of total fiber and solid carbohydrates and decreasing the glycemic index of the diet and liquid carbohydrates can improve micronutrient intake adequacy.

Abstract

Purpose

This research seeks to develop a model to predict repurchase intention based on the modified theory of planned behavior (TPB).

Design/methodology/approach

This research is quantitative study involving 150 respondents from five major cities in Indonesia. Data were collected using a questionnaire. Data analysis used confirmatory factor analysis–structural equation modeling (CFA–SEM).

Findings

The research instrument and the proposed model were fit. However, health belief was not proven to have a significant impact on attitude. The perceived behavioral control (PBC) also did not significantly affect repurchase intention.

Research limitations/implications

Future research that utilizes TPB should incorporate emotional belief as part of the attitude variable.

Practical implications

In the designing and marketing process, managers of herbal teas companies should consider the health benefits of their products and the feeling of joy it might incite.

Originality/value

The TPB was initially constructed from three variables: subjective norm, attitude and perceived behavioral control (PBC). Unlike previous research, this study considered cognitive and emotional beliefs as the factors that affected attitude.

Abstract

Purpose

This study aims to establish the findings by confirming the extent to which an extended version of the TPB estimation relates to repetitive fish consumption. This study is important for the sustainable consumption of fish in society. The purpose of this paper is to examine the relationship that explains perceived value, consisting of monetary and non-monetary values, in shaping attitudes on repetition of fish consumption.

Design/methodology/approach

The sampling of this study was conducted for eight months of 365 people who consumed fish for at least one year. This research was conducted in Malang City, Indonesia. Data analysis applied structural equation modelling by measuring perceived values, attitudes, social norms, behaviour control, intentions and frequency of fish consumption.

Findings

It mostly follows the extended theory of planned behaviour (TPB) sections, with exception on the relationship of subjective norms to intentions and attitudes, subjective norms and perceived value towards repetition of fish consumption. The results of the study indicate that attitudes are preceded by the formation of perceived values. The perceived value significantly affects attitude formation. The perceived value of fish consumption is explained by health and monetary values. A positive attitude does not always precede consumption. Subjective norms provide a weak role in the repetition of fish consumption, while behaviour control plays an important role in realising action on repetitive fish consumption.

Originality/value

This study helps explain the extended TPB, and intentions towards the behaviour of repetitive fish consumption. Attitudes are preceded by the formation of perceived values in the TPB in intention repetitive fish consumption.

Abstract

Purpose

Living a nutritious lifestyle requires that people get a sufficient amount of nutrients, vitamins and minerals every day. Healthy dietary practices are related to a stronger immune system, better prevention and easier recovery from illnesses, lower blood pressure, healthy weight, lower risk of diabetes, heart problems and other medical conditions and improved overall well-being (WHO, 2020). Therefore, to maintain a strong immune system able to prevent diseases and ease recovery, optimal nutrition and healthy habits are of increased importance during a pandemic such as Covid-19. However, according to the Bureau of Labor Statistics, more than 22 million Americans have lost a job between February and October 2020, increasing the unemployment rate from 3.5% in February 2020 to 6.9% in October 2020, reaching a peak of 14.7% in April 2020. Job losses during the Covid-19 crisis are likely to put lots of families at risk of malnutrition and food insufficiency and to further deteriorate the already existing food insecurity (Gundersen et al., 2018). This research explores the effect of a recent job loss between August and October 2020 on food sufficiency.

Design/methodology/approach

This research examines the impact of a job loss on nutrition and food safety. Specifically, this study explores the effect of a job loss during the Covid-19 pandemic on the level of family and child food sufficiency as perceived by the respondent, confidence about meeting family’s dietary needs in the four weeks following the interview, and an indicator of whether the food sufficiency status of the family has deteriorated or not. This study also determines the differential effect of a job loss by individuals who are still employed despite the loss relative to workers who remained unemployed after a job loss during the Covid-19 crisis. Subsample analyses based on ethnicities, genders and educational attainment are also performed to identify the most vulnerable groups.

Findings

The results provide evidence that a job loss is associated with a highly statistically significant deterioration of food sufficiency for families and children and a reduction in the confidence in food security for the near future. This effect is observed for all job losers, but from them, it is larger for the ones who are currently unemployed compared to those who are working. The association between a job loss and family’s nutrition insecurity is the greatest for Hispanic, males and people with some college. Children’s nutrition suffers the most for children whose parents have not completed high school. These results provide an insight into the adverse effect of Covid-19 on food security.

Practical implications

From a policy perspective, the results indicate that federal nutrition programs whose goal is to ensure that the dietary needs of Americans, and especially children, are met, which are most likely to benefit the Hispanic population, individuals with low educational attainment and individuals who remained unemployed after losing a job.

Originality/value

This study makes several contributions to the growing literature on food security. First, this study is novel in that it examines the effect of an ongoing event, specifically a labor market disruption as a result of a health and economic crisis, on families’ nutrition, and does so using the newest publicly available data designed to track the impact of Covid-19 on the American population. This is one of the first studies that investigates the forementioned impacts in the context of the Covid-19 pandemic. This study further contributes to the literature by distinguishing between employed versus unemployed individuals despite a job loss and by studying distinct groups on the population. In addition, this study compares the effects of interest in the onset of the pandemic to a year later to examine the population’s adjustment to the crisis. The importance and relevance of the results for policy decision-making are also discussed in the paper.

Abstract

Purpose

The purpose of this paper is to explore the challenges and opportunities associated with attempting to maintain a healthy traditional diet for newcomers living in the North End neighbourhood of Winnipeg, Canada.

Design/methodology/approach

In this mixed-methods photovoice study the researcher used food photographs taken by participants to facilitate in-depth, semi-structured interviews with newcomers living in the area of interest. Community workers involved in food and newcomer programming were also interviewed. Qualitative data from the interviews were analysed using thematic analysis. Food security status of newcomer participants was also determined using The Household Food Security Survey Module.

Findings

Newcomer participants reported many struggles, including low incomes, gardening challenges and little access to culturally acceptable foods. Community worker interviews, field notes and an environmental scan of community resources also revealed a lack of social inclusion/support and few food and nutrition resources for newcomers.

Originality/value

Newcomers to Canada experience high rates of food insecurity and diminishing health status associated with length of time in Canada. This study demonstrates an imminent need for additional resources and programmes in this inner city community in order to decrease food security rates and help newcomers in Winnipeg to eat healthy traditional diets and avoid a decline in health.

Abstract

Purpose

This research seeks to simultaneously test the effect of attitude towards the behavior of following the “Stay at Home” policy, subjective norm, perceived behavioral control, perceived susceptibility and perceived severity on people's intention to follow the “Stay at Home” policy during COVID-19 pandemic.

Design/methodology/approach

The data were collected through an online survey with 148 respondents in the Greater Area of Jakarta, Indonesia. The data were then analyzed using multiple regressions.

Findings

The findings show that attitude towards the behavior, subjective norm and perceived behavioral control positively and significantly affect intention to follow “Stay at Home” during the COVID-19 pandemic. However, perceived susceptibility and perceived severity of COVID-19 do not significantly influence the intention to follow “Stay at Home” during the COVID-19 pandemic.

Research limitations/implications

This research was limited to the Greater Area of Jakarta, Indonesia. Furthermore, sampling was done through convenience sampling. Therefore, future research should be conducted in a different context to test the generalization of this research's findings.

Practical implications

To encourage citizens' adherence to the stay-at-home policy during the COVID-19 pandemic, they must be directed to have positive attitudes toward the policy. Financial and non-financial supports are critical to ensure citizens' ability to sufficiently observe the policy sufficiently. Another important aspect is the influence of leaders and public figures to consistently call for obedience consistently.

Originality/value

This is the first research that studies citizens' behavior related to the “Stay at Home” policy requisitioned by the government to hinder the spread of COVID-19.

Abstract

Purpose

At present, almost the whole globe is facing a severe threat of coronavirus disease 2019 (COVID-19). The present study examines the intention to stay home due to COVID-19 during a second wave of the pandemic.

Design/methodology/approach

The study employed a deductive approach based on cross-sectional data. An online survey is conducted from citizens of Pakistan. A convenience sampling is applied to target the respondents. In total, 238 useable responses proceed for final analysis. The structural equation model (SEM) is used to infer the results.

Findings

The findings of the study highlight a positive and significant effect of fear of COVID-19, attitudes to stay at home behaviour (AtSHB), knowledge about COVID-19 (Ka19) and health consciousness (HC) on the intention to stay at home (ItSAH).

Practical implications

The study would provide the guidelines to policymakers and planners to develop the policies which may establish the individual's ItSAH. This strategy would restrict the spread of COVID-19. The government should also formulate the plannings to reduce the fear about COVID-19 and health concerns to combat the pandemic. The government should launch awareness programs regarding the spread and cure of COVID-19.

Originality/value

This study is the first study which highlights the factors such as fear, HC, attitudes and knowledge towards ItSAH. The study may be unique in the COVID-19 perspective, particularly in the Pakistani context.
