Abstract

Purpose: The purpose of this chapter is to review and critically evaluate robots, artificial intelligence and service automation (RAISA) applications in the restaurant industry to educate professors, graduate students, and industry professionals.

Design/methodology/approach: This chapter is a survey of applications of RAISA in restaurants. The chapter is based on the review of professional and peer-reviewed academic literature, and the industry insight section was prepared based on a 50-minute interview with Mr. Juan Higueros, Chief Operations Officer of Bear Robotics.

Findings: Various case studies presented in this chapter illustrate numerous possibilities for automation: from automating a specific function to complete automation of the front of the house (e.g., Eatsa) or back of the house (e.g., Spyce robotic kitchen). The restaurant industry has already adopted chatbots; voice-activated and biometric technologies; robots as hosts, food runners, chefs, and bartenders; tableside ordering; conveyors; and robotic food delivery.

Practical implications: The chapter presents professors and students with a detailed overview of RAISA in the restaurant industry that will be useful for educational and research purposes. Restaurant owners and managers may also benefit from reading this chapter as they will learn about the current state of technology and opportunities for RAISA implementation.

Originality/value: To the best of the authors’ knowledge, this chapter presents the first systematic and in-depth review of RAISA technologies in the restaurant industry.

Abstract

Purpose

This chapter aims to list the literature that document the role of hospitality industry achieving Sustainable Development Goals (SDGs), and to summarize those contributions, related to the literature. Extensive literature review was also conducted to explore a critical analysis of sustainable digitalization of the hospitality industry.

Design/Methodology/Approach

The article has undertaken a systematic literature review of all the significant research area of almost last two decades. Keyword searches were performed in Google Scholar search engine, where timeframe of “2001–2023” was used to filter the desired article. Total 141 research articles were primarily identified after the initial search. After screening the articles for relevance or duplicates, finally 107 articles were considered for this study.

Findings

This study figures out those environment-related SDGs which is considered essential for the hospitality industry. This study found the importance of adopting digitalization in hospitality sector to build inclusive environment and providing seamless experience to customers while focusing on both positive and negative aspects associated with digital transformation.

Originality/Value

Hospitality industry of numerous countries around the world are now exploring by implementing SDGs and Digitalization in their business practices. This study will provide insight to policymakers as development and usage of digital technologies and implementing SDGs in their practices are crucial for the sustainable transformation of hospitality industry. Sustainable transformation of hospitality sector not only improves services and helps us to make wiser choices when planning for a trip but also positively impact both physical and psychological well-being.

Abstract

Purpose: The purpose of this chapter is to elaborate on the major conceptual and practical considerations of the use of robots, artificial intelligence and service automation (RAISA) in travel, tourism, and hospitality companies (TTH).

Design/methodology/approach: The chapter develops a conceptual framework of the major issues related to the use of RAISA in the travel, tourism and hospitality context.

Findings: The findings indicate that while there is a creeping incursion of RAISA into TTH, there are major concerns that the TTH industry has to consider in regard to automating TTH services.

Practical implications: In a practical sense, the chapter identifies the decisions that TTH industry professionals need to take when dealing with RAISA technologies. Furthermore, the chapter elaborates on the impacts RAISA have on business operations, marketing management, human resources and financial management of TTH companies. The TTH industry has to adjust its practices and communicate with its workforce in ways as not to increase Luddite tendencies and resistance among employees.

Social implications: The analysis shows that there is an upcoming era in which automation of services will be so advanced that wealthy countries may not need to import labour to make up with its own aging workforce, suggesting that RAISA and its further development has the potential for disrupting society and international relations.

Originality/value: This chapter provides a comprehensive review of the issues related to the use of RAISA in the TTH industry, including the drivers of RAISA adoption in tourism, advantages and disadvantages of RAISA technologies compared to human employees, decisions that managers need to take, and the impacts of RAISA on business processes. It shows how macroenvironmental pressures shape the microeconomic decisions to use RAISA in a TTH context.

Abstract

Purpose

This paper aims to propose the idea of developing an automatic Radio Frequency Identification (RFID)‐based system for library search and to examine the existing literature to determine whether current technology and developed RFID‐based systems are helpful for building that. To fully understand its key points, adoptions, risks, and benefits, the fundamentals of radio frequency are to be identified and reviewed. Some applications of radio frequency identification in library systems and various industries are to be briefly discussed and four related cases reviewed.

Design/methodology/approach

The paper identifies key benefits and risks of radio frequency identification through review of library literature and case studies. For this purpose, four cases are reviewed from the entire industry and then key features of those cases are matched with the requirements of the big pictures' RFID‐based system to determine the current level of the RFID‐based system development.

Findings

To make library systems functional and successfully operational RFID solutions can be used to reduce operating costs through decreasing the labor costs, enhancing automation, improving tracking and tracing, and preventing the loss of materials under any circumstances.

Originality/value

The proposed automated RFID‐based system is a novel idea by itself. Owing to the fact that better management of books and materials becomes possible, materials are not lost, theft is avoided, and patrons are served on time and correctly.

Abstract

Purpose

This paper aims to review the extant hospitality and tourism literature on the state of robotics and artificial intelligence (AI) in the service industry. The aim was to highlight the current areas of research on this emerging topic and identify areas for future application and study.

Design/methodology/approach

A list of hospitality and tourism journals was used to identify articles related to AI and robotics using the terms AI, robots, robotics, hospitality and tourism, and several combinations thereof. Additional sources were identified through the literature reviews from the identified works.

Findings

The findings revealed several studies on the current state of robotics and AI in hospitality and tourism. Additional research examines and discusses implications for internal and external customer service, legal and ethical issues and theory.

Originality/value

This paper provides a compilation of the current studies that examine the impact of robotics and AI in hospitality and tourism. It offers scholars an overview of the current knowledge in the field on this rapidly emerging and evolving topic.

Abstract

Purpose

The purpose of this paper is to examine how “Lean” principles from the manufacturing world can be adapted to create a best-in-class recruiting function and demonstrate the causal connection between the “value-added” recruiting activity and positive business results.

Design/methodology/approach

This concept paper is based on practitioner experience in leveraging Lean Six Sigma tools in improving the efficiency and effectiveness of the talent acquisition process.

Findings

Talent acquisition today is an activity fraught with risks – Did we hire the right person, the right skills the right fit? – and has the maximum impact on an organization bottom line. It is more than just posting a requisition and making an offer, but a series of sourcing activities, branding efforts, assessment processes and on-boarding activities and more – all designed to help an organization answer these key questions and find talent relevant to its business context. Appraising some of the evolving best practices in talent acquisition within the larger ambit of talent management issues facing organizations at large underscores the need for a new way of thinking about talent management.

Originality/value

Being more innovative in sourcing and recruiting can give organizations a sustainable competitive advantage with visible impact on the bottom line.

Purpose

The purpose of this paper is to introduce the most important engineering and prominent technology of the day, radio frequency identification (RFID), and the RFID‐enabled systems from the current literature.

Design/methodology/approach

Provides a general review of RFID systems.

Findings

RFID technologies and information systems can be used to develop new systems on of off the web. RFID is an emerging technology with full benefits to be emerged in several years to all industries worldwide. It will bring a good opportunity for improving supply chain efficiency and hence the safety of the public in return.

Research limitations/implications

RFID has the potential to change the way the business is done today.

Practical implications

Some years down the road, new ways can be introduced for the entire world to do their business within the framework of a supply chain system.

Abstract

Purpose

This paper aims to propose a new framework for selecting strategies from the pools of RFID strategies, Six‐Sigma strategies and supply chain strategies. To gain a better understanding of the proposed model, three case studies are investigated and all related strategies are presented and discussed.

Design/methodology/approach

This article proposes a new framework for Six‐Sigma driven RFID‐enabled supply chain systems. Theory building is comprised of four parts where each part is discussed clearly in the content of the article. However, it is through such tools that management can identify new systems for matching the needs of his/her organization with all of the right strategies.

Findings

In a journey to business excellence, an organization is successful if specific goals for critical processes of the organization are identified. The quality management programs implemented can modernize and simplify activities towards the ultimate goal of the business. To do so, this author's discussions on Six‐Sigma strategies, supply chain strategies, and radio frequency identification are converted into a framework that can be used for developing an appropriate model for organizational strategy selection. There are some cases in the literature that can support such a model building and framework identification. Three of such cases are presented for the readers' familiarity with the subject.

Practical implications

The use of these three methodologies can bring significant changes to an organization. This can be done by taking into consideration the key strategies of supply chain management, Six‐Sigma, and RFID playing a big role in the success of the organization.

Originality/value

For each methodology considered, strategies are examined and a framework based upon such methodologies is proposed. Cases supporting the proposed framework are reviewed from the literature for clarification purposes.

Abstract

Purpose

The purpose of this paper is two‐fold: first, to deliver a review of the researches conducted on the topic of radio frequency identification (RFID) adoption and the key factors that play a big role in its adoption and second, to develop a systems thinking perspective of RFID adoption through its profitability power generation and engagement. The author illustrates the concepts drawing on the experience of five case studies already presented in the literature, all the way from service industries to highly developed technological industries. Thereafter, a list of key variables from proposed case studies are identified. Then, a causal diagram relating identified variables in some circulars is constructed and modeled.

Design/methodology/approach

The paper identifies key elements of RFID through the review of six case studies. It obtains appropriate data from second sources, for some of these case studies, to make the analysis possible.

Findings

RFID is an appropriate technology for profit generation, efficiency improvement, and productivity enhancement.

The emphasis is put on delivering business values through effective variables and from there RFID can be related to profitability using systems thinking concepts. Since, to the best of this author's knowledge, this is the first paper that relates RFID technology to profitability using systems thinking concepts, it makes a significant contribution to the RFID literature.
