Abstract

Purpose

This paper aims to model and empirically test the determinants of small accommodation business (SAB) size.

Design/methodology/approach

This study distinguishes among three aspects of SAB size (accommodation scale, investment and employment) and between two modes of growth (managerial and entrepreneurial growth). A conceptual framework was developed based on business growth theory, whereby three econometric models were constructed and estimated to predict size variations. Data were collected through a survey on 200 SABs in North Zhejiang Province of China. Effects of the determinants were contrasted between different size indicators.

Findings

The SAB size can be affected by personal factors (employed working experience, education level, industry-specific know-how), interpersonal factor (relative ties to other SABs) and environmental factor (association support). The interpersonal and environmental factors tend to contribute to managerial growth, while the personal factors are usually conducive to entrepreneurial growth.

Research limitations/implications

This study addresses the questions of “why some SABs grow larger in size than others” and “why different SABs grow in different ways”. But more contexts and business types should be examined so as to ensure generalizability through future studies.

Practical implications

The research findings can provide guidelines for local tourism administration to encourage or regulate SAB development.

Originality/value

This study is among the first endeavors to examine the multidimensionality and determinants of business size in tourism and hospitality; it contributes to literature by expanding tourism entrepreneurship research into a/the “growth paradigm”.

Abstract

Purpose

This study aims to test a new model by examining the influence of memorable local food consumption experiences (MLFCEs) on international diners’ affective states, well-being and attitudinal loyalty. Local food tasting destination, local food neophobia and previous local food tasting experience are used as moderating variables.

Design/methodology/approach

A quantitative data collection method was used to source data from 900 US tourists to European countries (excluding the UK) and Asian countries. The data were quantitatively analyzed to examine the multidimensionality of tourists’ MLFCEs as well as their influence on outcome variables.

Findings

The findings indicate that MLFCEs significantly explain diners’ attitude toward local food, subjective well-being, intention to recommend and attitudinal loyalty. Also, three variables partially moderate the associations between the proposed constructs.

Research limitations/implications

Theoretically, the study enhances our understanding of the dimensional nature of tourists’ MLFCEs and how they inform the affective and behavioral states of tourists. Practically, it provides insights for local food businesses and destination marketing organizations concerning the composition of tourists’ MLFCEs and promotion of a tourism destination.

Originality/value

This study has quantitatively unraveled the dimensionality of tourists’ MLFCEs. It also developed an integrated model to test the predictive effect of MLFCEs on outcome variables and has provided a deeper understanding of the relationships, thereby enriching the literature and aiding the development of relevant theories.

Abstract

Purpose

The purpose of this paper is to synthesize and evaluate research on hospitality and tourism education in the past ten years (2005-2014) and to suggest directions for future inquiries.

Design/methodology/approach

From 13 hospitality and tourism journals, 644 full-length articles were reviewed. A multi-stage process was used to code and analyze each article by two analysts independently to ensure objectivity and accuracy. Two more researchers were involved in discussion to resolve differences in coding.

Findings

The analysis resulted in five distinctive meta-themes, grounded within 30 sub-themes. Observations are made in terms of teaching and learning, student development, curricula and programs, education environment and faculty development. Areas requiring further scholarly attention under each theme were identified.

Research limitations/implications

This review provides an important reflection of the scholarly activities over the past decade on hospitality and tourism education, summarizes the current knowledge on various relevant concepts and offers avenues for future education research.

Practical implications

This review provides a one-stop information source for education and industry practitioners engaged in human capital, professional and executive development practices.

Originality/value

Operating under the dynamic industry and changing higher education environment, it is timely to conduct a comprehensive evaluation of recent education research to assess whether these activities address the challenges faced.
