Abstract

Supply of food from the early stages of societies was one of the most important needs of humans. Sustainable supply of food is a demand in modern societies. The agri-food market grows as the population rises every year. The increase in the demand side of the market is more than the growth of the supply side. The rate of using technology in the supply side is increasing rapidly. By using technology in some parts, the efficiency of production improved and caused more production while resources are the same. Availability of resources in different areas causes different ways of production and nurturing innovative technologies to maintain food security. Water, soil, climate change, and growth of population are drivers of using technology in food security. To depict the role of different technologies in the food industry, the authors have reviewed the role of the most important technologies in this field. Knowing the trends of changes in the industry will help to focus on the most important questions and solutions. Having a share in the global food market requires the major use of technology in production processes. In this chapter, the authors will review the most important trends of technology absorption in the food industry.

Abstract

Reflecting on recent questions concerning the meaning and implications of food “re-localization”, in this chapter we utilize the concept of “embeddedness” as an analytical tool to deepen and broaden the investigation of the relationships between food and territory. After pointing to some limitations inherent in the conventional use of the concept of the embeddedness, in the first part of the chapter we suggest a more holistic approach that takes into consideration its implications in the wider political, natural and socio-economic environments in which food networks develop and operate. In the second part of the chapter, we apply this holistic approach to the analysis of three alternative food networks in the South West of England: Cornish clotted cream, Steve Turton meats and West Country Farmhouse Cheddar Cheese. By focusing on the different dimensions of the territorial embeddedness of these networks, we attempt to show that their real distinctiveness comes from their variable ability to reconfigure (“re-localize”) the time-space and the spatial relations around them. Through this actively constructed process of re-localization, we argue, alternative food networks in the South West are signalling the emergence of a new agrarian eco-economy that is vertically (i.e., politically and institutionally) disembedded and horizontally (i.e., spatially and ecologically) embedded. As we discuss in the conclusions, this further complicates the competitive relationships between the alternative and the conventional food sectors, while also providing new insights into the likely sustainability of these networks and their contribution to rural development.

Abstract

This conceptual chapter aims to understand the role of artificial intelligence (AI) in value co-creation phenomena in a healthcare service ecosystem, through a literature review and the definition of a conceptual framework. AI, as an operant resource, can stimulate a completely patient-centered, adaptive and resilient healthcare system, and governance models in healthcare based on data-driven decision-making (DDDM), ensuring faster choices, more timely diagnosis and more personalized treatment paths. However, the full implementation of AI in healthcare is inhibited by some frictions, mainly related to the risk that the AI black box may generate an inadequate automatic decision, also due to the quality of data used, often partial and unstructured given the reluctance to share them by patients concerned by privacy threats. The co-design (multi-part and multi-level) of a predictive decision model based on the functional transparency of the AI algorithm would allow for augmented decision as result of an effective human–machine interaction. Healthcare actors could thus make decisions using the information detected by the software (based on clear cause-and-effect correlations and modifiable variables in case of mistakes), integrated with their professional knowledge. This would also help to strengthen the patient’s perception of the decision’s reliability and accuracy and the safety of the tool (factors that can affect his/her trust). AI may be considered as a driver for value co-creation in healthcare, thanks to transparency. It would allow the promotion of collaborative behaviors involving actors by generating new institutions and new resource integration practices among them.

Abstract

Food fraud as intentional deception for economic gain relies on a low-tech food value chain, that applies a ‘paper-and-pencil approach’, unable to provide reliable and trusted data about food products, accompanied processes/activities and actors involved. Such approach has created the information asymmetry that leads to erosion of stakeholders and consumers trust, which in turn discourages cooperation within the food chain by damaging its ability to decrease uncertainty and capability to provide authentic, nutritional, accessible and affordable food for all. Lack of holistic approach, focus on stand-alone measures, lack of proactive measures and undermined role of customers have been major factors behind weaknesses of current anti-fraud measures system. Thus, the process of strong and fast digitalisation enabled by the new emerging technology called Industry 4.0 is a way to provide a shift from food fraud detection to efficient prevention. Therefore, the objective of this chapter is to shed light on current challenges and opportunities associated with Industry 4.0 technology enablers' guardian role in food fraud prevention with the hope to inform future researchers, experts and decision-makers about opportunities opened up by transforming to new cyber-physical-social ecosystem, or better to say ‘self-thinking’ food value chain whose foundations are already under development. The systematic literature network analysis is applied to fulfil the stated objective. Digitalisation and Industry 4.0 can be used to develop a system that is cost effective and ensures data integrity and prevents tampering and single point failure through offering fault tolerance, immutability, trust, transparency and full traceability of the stored transaction records to all agri-food value chain partners. In addition, such approach lays a foundation for adopting new business models, strengthening food chain resilience, sustainability and innovation capacity.

Abstract

Food supply chain transparency and traceability is very important to address the issue regarding quality and safety. In traditional tracing system, with increasing the complexity of supply chain making product recalls difficult to manage and putting human lives at risk. To eliminate such types of risks, blockchain technology gives more efficient and reliable system for food tracing. Recently, there is an exponential rise in adoption of blockchain technology and most disparate IOT (Internet of things) devices in agriculture and food supply chain. It is an evolving technology that comforts the food supply chains by providing transparent data records and manage the food movement in the chain using distributed (P2P) network. That is more secured and there's no need for third party verifications. Our focus in this research will be on the Indian wheat supply chain and issues related to food losses caused by a lack of transparency and traceability. In order to improve the transparency of the wheat supply chain, we created an end-to-end smart wheat supply chain solution that combines blockchain technology, NFC tags, IoTs, and smart contracts. The solution is supported by entity relationship diagrams, information and money flow sequence diagrams, and a blockchain network diagram. We also used a security algorithm and the “NFC-Tag writer by NXP” program to validate and assess our system. This work could serve as a springboard for more in-depth research in this area. Depending on the existing situation in the industry, this research can also advise corporate procedures to deploy blockchain-based applications in the supply chain and logistics industry.

Abstract

Blockchain, in general, diversifies supply chain management in record-keeping and maintains authenticity. In addition, traditional issues and challenges like overflow and information overload press down mysteriously whenever the blockchain steering wheel of the supply chain turns. Factually, the miracle and twists in supply chain resilience have not been incorporated under systematic review homogeneously. As a result, this study reviews the potential impact of blockchain on logistics and supply chain (LSC) efficiency. The methodology of this study provides a subjective assessment of the utility of blockchain-based LSC performance.

On the other hand, the review reveals new insights on its current acceptance and applications, with a particular emphasis on the Limit Redundancy Mechanism and Core Information-based Direct Comparison. Prospectively, the identified facts under the research paradigm and extensive literature survey will subsidize the practices of blockchain technology and possible areas of extension in supply chain resilience in luminous fashion in the future. After all, this study materializes new solid magnitudes, adaptability, and a realistic overview of blockchain-based LSC movements.

Abstract

This chapter illuminates why and how a group of local social entrepreneurs improved farmers’ living conditions and contributed to the preservation of Kerinci Seblat National Park (KSNP) through sustainable coffee farming. KSNP is the largest national park on the Island of Sumatra and is a UNESCO world heritage site. However, since 2011, it has been listed as a “World Heritage in Danger” due to illegal logging, encroachment, and poaching of KSNP land. To save KSNP and improve the living conditions of the people around the national park, a group of local social entrepreneurs gathered in 2014 and devised a vision of “preserving the nature by empowering the community” by establishing Koperasi Alam Kopi Kerinci (ALKO cooperatives). The cooperative started to recruit seasoned farmers and younger people who wanted to become agripreneurs. The coffee supply chain was strengthened by educating farmers about good farming practices and coffee traceability technology, so Kerinci coffee could compete in the export market. After seven years of collaborative work, by early 2021, the initiative empowered 516 farmers who cultivated 410 hectares of coffee plantations in 24 villages with a total production of 350 tons of Arabica specialty Kerinci coffee. Ninety-five per cent of coffee productions were exported with premium prices to Belgium, Norway, France, the Netherlands, England, New Zealand, the USA, China, Malaysia, and Singapore. Farmers started to enjoy the fruit of their hard work. Some illegal loggers stopped poaching KSNP and started to plant coffee outside KSNP. The endeavor to preserve the nature and empower the community has started to show good results.

Blockchain is a distributed ledger that ensures the immutability and security of transactions. Given the increasing need for security measures in industries, understanding blockchain technology is crucial for preparing for its future applications.

This chapter aims to examine the use of blockchain technology across industries and presents a compilation of existing and upcoming blockchain technologies for intelligent applications. The methodology involves reviewing research to understand the security needs of different industries and providing an overview of methods used to enhance multi-institutional and multidisciplinary research in areas like the financial system, smart grid, and transportation system.

Overconsumption of resources has become a global issue. To deal with resource depletion and mitigate these impending crises, the circular economy (CE) holds some promise. A wide range of performance measurements for CE have emerged over the years. However, with increasing complexity of supply chains, appropriate and potentially new performance measurements are needed for effective CE management. Blockchain is an innovative technology that may advance CE development. This chapter provides an overview of the potential linkages between blockchain technology and CE from sustainability perspectives – the specific focus will be on the performance measurement of reverse logistics activities. One of the main findings indicates that both blockchain and CE performance measurements – especially reverse logistics processes – are still evolving in both theory and practical developments. Future directions with a critical analysis including research and theoretical applications will conclude this chapter.
