Abstract

Purpose

Locally derived foods from the lens of restaurant settings play an important source of tourist attraction. Surprisingly, research into this sector is quite scarce. The aim of the paper is to develop and empirically examine a conceptual framework on tourist’s preferences in selecting local foods. The framework includes tourists’ satisfaction, quality of food, tourist’s perception, purchase intention and purchase behavior among tourist’s selection for local foods.

Design/methodology/approach

The research is designed as quantitative in nature. A sum of 280 usable questionnaires was used from 300 distributed instruments by using convenient sampling techniques.

Findings

The results show that the relationship of tourist satisfaction and behavior is mediated by purchase intention, whereas tourist’s satisfaction and perception have a positive and significant impact on the intention of purchasing local foods. There is also a significant relationship between tourist’s satisfaction and perceived quality toward the tourist’s perception of local foods. Moreover, a significant relationship exists between tourist’s intentions and tourist’s purchase behavior.

Research limitations/implications

The study derived the purchase behavior dimensions of local foods by the tourists through literature and verified the conceptual model through empirical testing. Based on these findings, managers of local food restaurants require maximizing the purchase behavior of the visitors by considering satisfaction and perceived quality. In summation, they also should consider perception and behavioral intention of tourists. The limitation of this research relates to the sample, where data were collected from the major city of a tourist-friendly country. Future research could investigate the perceived value and gender variance as moderating variables in and between purchase intention and purchase behavior.

Practical implications

Managers and policymakers may use the outcome of this research as a guideline to understand the depth of tourist’s behavior. By identifying the antecedents of the behavioral factors may assist the managers to strengthen the restaurant’s competitive position within the industry. Finally, policymakers may use the research to assess touristsperceptions of local foods acceptability in promoting the nation’s culture to other parts of the world.

Originality/value

This work adds to tourism behavior research by exploring the effect of satisfaction, perceived quality, perception and intention on behaviors associated with local foods purchase behavior. In particular, the study highlights the relationships between tourist’s perception, perceived quality of local foods and satisfaction of local foods to measure tourist’s behavior through purchase intention for local foods from the perspective of restaurant settings, which have received less research attention.

Abstract

Purpose

The purpose of this paper is to provide a suggestion for the research framework on tourists as target groups for planning city branding strategies with reference to possible differences for tourists having a different country of origin. This framework was applied to analyze and compare the perception of Banja Luka city brand (Bosnia and Herzegovina) by four main target group by country of origin.

Design/methodology/approach

The suggested research framework combines qualitative generation of tourist’s city brand associations and brand personality with quantitative measurements of city brand perception (scale developed following the framework of Anholts’ (2006) City Brand Index adjusted to tourists as target groups).

Findings

The developed research framework was demonstrated in the example of Banja Luka main target groups. Three dimensions of city brand which largely coincide Anholt’s (2006) dimensions were extracted: tourist attractiveness, life standard and safe and pleasant atmosphere. Differences between analyzed countries were found in city brand perception, brand associations, brand personality, but also in all other analyzed categories.

Research limitations/implications

Possible limitation of the study is the fact that results were interpreted including both those who have visited Banja Luka and those who are not personally familiar with it.

Practical implications

Practical implications of research findings are demonstrated in form of branding suggestions focused on particular target groups.

Originality/value

The study suggests a research framework on tourists as target groups in the city branding process. Also, it contributes to a very scarce research on differences in city brand perception by target groups by country of origin, but also to the literature related to Banja Luka city brand and tourism development.

Abstract

Purpose

This paper aims to study the influence of gender on the theoretical and empirical relationships between tourists’ risk perceptions and both destination image and behavioural intentions.

Design/methodology/approach

An empirical study was carried out with potential tourists at home in Germany and the UK considering travelling to Spain, Egypt, Morocco, Brazil, Colombia and Indonesia. Data were analysed using structural equation modelling with multi-group analysis.

Findings

Results show that gender moderates the theoretical relationships between risk perception and both destination image and behavioural intentions. Risk perception is higher for women than for men and depends on the type of risks and the characteristics of the destination. Women are more likely than men to reduce their visit to a destination whenever there is an increase in their risk perceptions. However, the influence of risk perception on destination image is higher for men than for women. Thus, results prove there are significant gender differences in the theoretical relationships between risk perceptions and destination image and visiting intentions.

Originality/value

This paper provides new evidence on the gender differences in risk perceptions in tourism and their impact on destination image and visiting intentions, showing that whenever there are higher risks at a tourist destination women do change more than men their behavioural intentions. The results are useful for designing risk management and promotion policies at destinations that avoid the masculinisation bias, thereby considering the impact of gender differences on travel behaviour and consumption decisions.

Propósito

Este artículo analiza la influencia del género en las relaciones teóricas y empíricas entre las percepciones de riesgo de los turistas y la imagen del destino y las intenciones de visitar.

Diseño/metodología/enfoque

Se ha llevado a cabo un estudio empírico a turistas potenciales en Alemania y Reino Unido que consideran viajar a España, Egipto, Marruecos, Brasil, Colombia e Indonesia en un futuro próximo. Los datos se analizaron utilizando un Modelado de Ecuaciones Estructurales con Análisis Multigrupo.

Resultados

Los resultados muestran que el género actúa como variable moderadora en las relaciones teóricas entre la percepción del riesgo, la imagen del destino y las intenciones de comportamiento. La percepción del riesgo es mayor para las mujeres que para los hombres y depende del tipo de riesgo y de las características del destino. Las mujeres están más dispuestas que los hombres no visitar un destino cuando aumenta la percepción del riesgo. Sin embargo, la influencia de la percepción del riesgo en la imagen del destino es mayor para los hombres que para las mujeres. Por tanto, los resultados demuestran que existen importantes diferencias de género en las relaciones teóricas entre las percepciones de riesgo, la imagen del destino y las intenciones de visitar.

Originalidad

Este estudio proporciona nuevas evidencias sobre las diferencias de género en las percepciones de riesgo en turismo y su impacto en la imagen del destino y las intenciones de visitar, demostrando que cuando aumenta el riesgo en un destino turístico, las mujeres estarán más dispuestas que los hombres a cambiar de destino. Los resultados son útiles para el diseño de políticas de promoción y gestión de riesgos en destinos desde la perspectiva de género, considerando las diferencias de género en los comportamientos de viaje y las decisiones de consumo.

Abstract

Purpose

The main purpose of the study is to determine international leisure tourist perceptions with regard to crime, to assess the influence of demographic factors and to investigate the influence of prior, during and post-visit measures on international leisure tourists’ crime perceptions.

Design/methodology/approach

A personal intercept interview survey was used to collect the data at popular Cape Town (CT) tourist attractions via structured questionnaires. A generalized linear model was used to statistically assess respondents’ crime-related perceptions. Qualitative data was also generated via individual in-depth interviews, which were conducted among nine international leisure tourists.

Findings

The study found that international leisure tourists exhibited favorable sentiments regarding crime preparations; general safety information; post-visit crime related perceptions but were less positive about security safety information during their visit. International leisure tourists maintained that crime did not inhibit their activities and was not worse than anticipated during their visit. A majority of tourists indicated that they were not deterred by crime and would revisit CT.

Research limitations/implications

The research was limited to a single city and to English-speaking international leisure tourists. The study was cross sectional in nature and the number of data collection sites was limited to four of the popular tourist attractions in CT.

Practical implications

The study showed that a relatively high number of international leisure tourists had either witnessed or experienced crime in CT. Hence, a separate South African Police Service tourism protection unit could be established to help circumvent crime in CT.

Originality/value

The study used both quantitative and qualitative approaches to provide a comprehensive overview of international leisure tourist crime perceptions, which included prior, during and post-visit measures, of one of the top tourist destinations in the world. Additionally, this study is one of the few recent endeavors to assess the influence of a broad range of demographic and crime-related factors on international leisure tourists’ prior, during and post-visit crime perceptions in an African developing country.

Tourism and crime are closely related phenomena, and security is one of the basic preconditions for the functioning of tourism since tourists and tourist areas have many characteristics that make them vulnerable to crime. In this chapter are presented the actual (objective) risk of crime and tourists victimization, visible in statistics on committed crimes and crime victims surveys, and the perceived (subjective) risk of crime, recorded in surveys conducted with tourists. The characteristics which influence the actual and perceived risk of crime and violence are presented by analysing three key elements in the relationship between tourism and crime: (1) tourist (these characteristics are classified as socio-demographic, socio-cultural and psychological); (2) trip (characteristics are the purpose of the trip, travel party, and stage of the trip); and (3) destination (characteristics are crime rates in destination, the occurrence of crime by place and time, type of accommodation and length of stay).

Abstract

Purpose

This study assessed the antecedents and consequences of tourists’ authenticity experience in a new ancient town in China. Based on Chinese cultural background and case study, this paper aims to explore this kind of tourism place making and establishes an empirical model to examine and verify the impact of touristsperception, authentic experience and behavioral tendency on such place making, and proposes targeted improvement measures.

Design/methodology/approach

Based on a Chinese cultural background and case study, this paper explored a certain kind of tourism place making and established an empirical model to examine and verify the impact of touristsperceptions, authentic experiences and behavioral tendencies on such place making; the goals were to try to create a new scale to measure the authenticity of the “new ancient town” in the Chinese context and to propose targeted measures for improvement.

Findings

Research shows that Chinese visitors acquire experiences that they perceive to be authentic when visiting a contrived attraction such as a new ancient town. The dimensions of cultural, functional, product, value and unique authenticity were identified as distinct dimensions of tourists’ authenticity experiences in a new ancient town. Although these dimensions have been mentioned at times in the context of traditional Western assessments of authenticity, they do not replicate exactly any category of Western objective authenticity, existential authenticity, constructive authenticity or postmodern authenticity. They instead constitute an authentic experiential dimension in a typical oriental context, which is comprehensively explicated by combining the image of a national cultural theme and the elements of functional construction created by tourist places in a new ancient town.

Research limitations/implications

This study explored the path relationship among perception of place making – authenticity experience – behavioral intention, but it did not analyze relationships among the dimensions of perception of place making or among the authenticity experience variables. Furthermore, advantage was not taken of the availability of socioeconomic information to look for differences among interviewees with different attributes. In addition, there is a profound cultural and complex theoretical connotation to authenticity in the Chinese context, and the study of a single case is insufficient to fully elucidate meaning in this emerging discourse.

Practical implications

By verifying the path of tourists’ authenticity experiences through the perception of place making, the understanding of the effects of different elements of place making on tourists’ experiences is refined. For space producers, different elements of place making promote tourists’ authenticity experiences to different degrees. Strengthening the construction of the physical environment, marketing and scenes can promote tourists’ authenticity experiences: planning and design, marketing and scene enhancements promote tourists’ functional authenticity experiences; planning and design, the physical environment and marketing enhance tourists’ product authenticity experiences; planning and design, marketing, the physical environment and scene enhancement can improve touristsperceptions of value; unique authenticity experiences can be created in the marketing and scenes in new ancient towns.

Social implications

Certain aspects of the space production in new ancient towns can be used to strengthen touristsperceptions of value. First, the scene system at scenic spots can be strengthened, catering to tourists’ visual, olfactory and other senses so that they are available in all kinds of weather. Second, the local cultural characteristics of the material environment can be strengthened and the installation of inappropriate cultural symbols can be avoided. Thus, a physical environment that is of local ethnic cultural significance can be created so that both local residents and tourists can perceive the value of the place. Third, the rational layout of the new ancient towns should be established and maintained through the ongoing involvement of professional planning and design teams. Local cultural attributes that are of national significance should be included in the layout and design of the physical environment. Fourth, daily marketing and management actions influence how tourists influence scene value. Therefore, managers of scenic places need to make prudent decisions about and integrate local folk and ethnic characteristics into their marketing, which can promote the sustainable development of tourism effectively (Saarinen, 2018).

Originality/value

First, this study constructed and validated the model and path relationship of the “perception of place making, authentic experience, and behavioral intention,” and it confirmed that the perception of place making had an important impact on tourists’ authentic experiences. Second, the exploratory factor analysis extracted five dimensions of the tourist authenticity experience (i.e. cultural, functional, unique, product and value authenticity) based on China’s context of ming shi, which enriched the connotations of the authenticity experience. Third, this study effectively linked the perception of place making with the real experience and behavioral intention of tourists and expanded the theoretical research boundary of place making to a certain extent.

以现代技术手段再造(创造)遗产旅游目的地已经成为一个全球性的现象。本文基于中国的文化背景和案例, 考察和验证了游客对地方营造的感知、真实性体验和行为意向的影响, 尝试创造一种新的尺度来衡量在中国语境下“新古镇”的真实性内涵, 并以此提出了针对性的改善措施。

研究发现

研究表明, 中国游客在参观新古镇等人造景点时, 会获得他们认为真实的体验。文化真实、功能真实、产品真实、价值真实和独特真实是新古镇游客真实性体验的不同维度。它们构成了一个典型东方语境下的真实性内涵, 全面阐述了一个民族文化主题形象与新古镇旅游地方营造功能建设要素的结合。

研究局限/启示

实践意义

对于空间生产者来说, 加强物理环境、营销和场景的建设可以促进游客的真实体验:规划设计、营销和场景的增强可以促进游客的功能真实体验;规划设计、物质环境、营销提升游客的产品真实性体验;规划设计、营销、实体环境和场景提升可以提升游客的价值感知;在新古镇的营销和场景中应创造独特的真实性体验。

社会启示

新古镇地方营造的某些方面可以提升游客的价值感知。首先, 通过迎合游客的视觉、嗅觉和其他感官, 加强景区的场景系统。其次, 可以创造一个具有当地民族文化意义的物质环境, 使当地居民和游客都能感受到这个地方的价值。第三, 通过专业规划设计团队的持续参与, 建立和维护新古镇的合理布局。第四, 日常营销和管理行为影响游客的价值体验。

原创性/价值

首先, 本研究构建并验证了“地方营造感知、真实体验与行为意向”的模型和路径关系, 证实了地方营造感知对游客真实体验的重要影响。其次, 基于中国语境, EFA提取了旅游真实性体验的五个维度(文化真实、功能真实、独特真实、产品真实和价值真实), 丰富了真实性体验的内涵。第三, 本研究将游客的地方营造感知、真实体验和行为意向进行了有效地连接。

Diseño/metodología/enfoque

Basándose en un contexto cultural chino y en un estudio de caso, este artículo exploró la creación de lugares turísticos en la “nueva ciudad antigua” y estableció un modelo empírico. Se utilizaron SPSS 23.0 y Smart PLS 3.0 para el análisis de datos, con el fin de examinar y verificar la relación entre las percepciones de la creación de lugares, las experiencias auténticas y las intenciones de comportamiento de los turistas en dichos lugares.

Propósito

La recreación moderna de lugares como atracciones turísticas patrimoniales es un fenómeno mundial. Partiendo de un contexto cultural chino y de un estudio de caso, este artículo examina y verifica el impacto de las percepciones de los turistas, las experiencias auténticas y las tendencias de comportamiento en dicha creación de lugares; los objetivos eran intentar crear una nueva escala para medir la autenticidad de la “nueva ciudad antigua” en el contexto chino y proponer medidas específicas de mejora.

Hallazgos

La investigación muestra que los visitantes chinos adquieren experiencias que perciben como auténticas cuando visitan una atracción artificial como una nueva ciudad antigua. Las dimensiones de autenticidad cultural, funcional, de producto, de valor y única se identificaron como dimensiones distintas de las experiencias de autenticidad de los turistas en una nueva ciudad antigua. Éstas constituyen una auténtica dimensión experiencial en un contexto típicamente oriental, que se explica de forma exhaustiva combinando la imagen de un tema cultural nacional con los elementos de construcción funcional creados por los lugares turísticos de una nueva ciudad antigua.

Limitaciones de la investigación/implicaciones

Este estudio exploró la relación entre la percepción de la creación de lugares, la experiencia de autenticidad y la intención de comportamiento, pero no analizó las relaciones entre las dimensiones de la percepción de la creación de lugares, ni entre las variables de la experiencia de autenticidad. Además, no se aprovechó la disponibilidad de información socioeconómica para buscar diferencias entre entrevistados con distintos atributos. Adicionalmente, en el contexto chino, la autenticidad tiene profundas connotaciones culturales y teóricas complejas, y el estudio de un solo caso no basta para dilucidar plenamente la importancia de este tema emergente.

Implicaciones prácticas

Para los productores de espacios, reforzar la construcción del entorno físico, el marketing y las escenas puede promover las experiencias de autenticidad de los turistas: la planificación y el diseño, el marketing y la mejora de las escenas promueve las experiencias de autenticidad funcional de los turistas; la planificación y el diseño, el entorno físico y el marketing mejoran las experiencias de autenticidad de los productos de los turistas; la planificación y el diseño, el marketing, el entorno físico y la mejora de las escenas pueden mejorar la percepción de valor de los turistas; se pueden crear experiencias de autenticidad únicas en el marketing y las escenas de las nuevas ciudades antiguas.

Implicaciones sociales

Ciertos aspectos de la creación de lugares en las nuevas ciudades antiguas pueden mejorar la percepción de valor de los turistas. En primer lugar, puede reforzarse el sistema escénico de los lugares de interés, atendiendo a los sentidos visuales, olfativos y de otro tipo de los turistas. En segundo lugar, se puede crear un entorno físico que tenga un significado cultural étnico local para que tanto los residentes locales como los turistas puedan percibir el valor del lugar. En tercer lugar, el trazado racional de las nuevas ciudades antiguas debe establecerse y mantenerse mediante la participación continua de equipos profesionales de planificación y diseño. En cuarto lugar, las acciones diarias de marketing y gestión influyen en la experiencia de valor del turista.

Originalidad/valor

En primer lugar, este estudio construyó y validó el modelo y la relación entre la “percepción de la creación de lugares, la experiencia auténtica y la intención de comportamiento,” lo que confirmó la importante influencia de la percepción de la creación de lugares en la experiencia auténtica de los turistas. En segundo lugar, basándose en el contexto chino, el análisis factorial exploratorio extrajo cinco dimensiones de la experiencia de autenticidad turística (autenticidad cultural, funcional, única, del producto y del valor), que enriquecieron las connotaciones de la experiencia de autenticidad. En tercer lugar, este estudio vinculó eficazmente las percepciones de los turistas sobre la creación de lugares, con la experiencia real y con las intenciones de comportamiento de los turistas.

Abstract

Purpose

The purpose of this paper is to investigate the influence of tourists’ sociodemographic characteristics on their perception of destination personality and emotional experience on the example of the city break tourism destination.

Design/methodology/approach

To examine this relationship, survey research was conducted on a sample of 203 national and international tourists who visited Novi Sad, the second-largest city in Serbia.

Findings

Research results confirmed the role of travelers’ sociodemographic variables in shaping their emotional experience and destination personality perception. The findings pointed out significant divergences in the perception of emotional experience in the case of respondents’ education level, previous visits to the city and travel companion. On the other hand, the analysis showed that repeat visitors significantly differed from first-time visitors regarding destination personality perception. In addition, differences in both destination personality and emotional experience assessment were found between national and international city break travelers.

Originality/value

The current study is first to focus on the role of travelers’ sociodemographic variables in simultaneous modeling of their perception of destination personality and emotional experience within the city break destination context. Besides, results revealed some new influencing factors of both destination personality and emotional experience perception, thus contributing to the existing tourism literature. In addition, this paper offers useful practical implications for city break marketers to adapt promotional activities, more effectively present the desired brand personality of the city to different sociodemographic categories of tourists and sustain repeat touristsperception of Positive surprise.

Assesses the perceptions of service quality in China’s hotel industry, from the perspective of both international tourists and hotel managers. A questionnaire was used to survey a sample of 90 hotel managers and 270 international tourists who visited China and stayed at hotels in Beijing, Shanghai, and Guangzhou. A descriptive statistics analysis was used (paired t‐test and independent t‐test) to evaluate the service quality of China’s hotel industry from both the tourists’ and the managers’ perspectives, and to investigate the four gaps: between tourists’ expectations and their actual perceptions; between managers’ perceptions of tourists’ expectations and the actual expectations of tourists; between managers’ perceptions of a hotel’s service delivery and tourists’ actual perceptions of the service; and between managers’ perceptions of tourists’ expectations and managers’ perceptions of their hotel’s service delivery. The results showed that touristsperceptions of service quality provided in the hotel industry in China were consistently lower than their expectations and that managers overestimated the service delivery, compared to touristsperceptions of actual service quality, in the hotel industry in China. From the result of gap analysis, it might be concluded that Delivery Gap and Internal Evaluation Gap were the main reasons contributing to the service quality shortfalls in the hotel industry in China.

Abstract

Purpose

Regarding research on authenticity perception, this paper aims to pose the following questions: In different cultural regions, what are the different authenticity elements of old towns from a tourist perspective? What is the difference in authenticity perception in different cultural regions? How does the authenticity perception of old towns change in the tourismification process?

Design/methodology/approach

Combining eight cultural regions in China, this study focuses on 155 old towns to discuss the differences between authenticity perception of various old towns in different cultural regions and how the interactions between tourists and local places influence the perception of authenticity, with 11,387 user-generated photographs applied to interpret authenticity perception.

Findings

The study shows that the authenticity perceived by tourists varies greatly between farming and pastoral cultural regions; after authenticity loss, old towns with a long history of tourismification regain authenticity in touristsperception.

Originality/value

The findings could serve as a reference for tourism development and authenticity protection of old towns. Furthermore, the study explores a creative research method and theoretical framework for regional authenticity studies, which is significant in a global context. In the process of globalization, the implications of this study, including differences in authenticity perception within various cultural regions, will also be significant globally.

Abstract

Purpose

This paper aims to study the decision‐making processes of Portuguese tourists traveling to South America and Africa destinations by developing a conceptual framework that focuses on information sources, motivations, perceptions, satisfactions, and behavioral intentions.

Design/methodology/approach

The study applies a structural model that looks to explain the factors behind decision making and the relationships present. The relationships are observed in detail through the application of a categorical principal component analysis.

Findings

The results of the empirical study show that behavioral intentions precede emotional and cognitive satisfaction, which in turn, are explained through perceptions and motivations. Tourists perceive tourism destinations as places of leisure although little information is available on existing facilities and core attractions.

Research limitations/implications

The study has the restriction of being limited to the Portuguese tourists. However, these findings open paths for further investigation, namely extending to other destinations and to tourists with different motivations.

Originality/value

This study contributes to the overall understanding of the decision‐making processes of tourists. Specifically, the decision processes is assess by considering two stages: the pre‐purchase stage and the post‐purchase stage. These two phases were analyzed in order to understand how people decide to travel to a certain destination.
