Abstract
Purpose:
This research shows how the perception of quality differs through the table egg chain and highlights the main quality characteristics for each studied chain participant (farm, retail, consumer).
Design/methodology/approach:
Observing the change in perception starts from the farm, through retail to the end consumer using the customer–supplier interaction, while looking back from the consumer to the farm, the application of the quality function deployment (QFD) was used. The study included 30 farms, 50 retail stores, 1,000 customers and 300 households.
Findings:
The farm–retail comparison highlights the type of production as the dominant factor affecting egg quality for both of these participants, followed by hen diet and the type of laying hen hybrid from the farmer's point of view, while retail focuses on packaging and egg damage. Egg quality aspects from the retail–household perspective emphasize the shell appearance and the origin of the eggs, while shelf life and egg class are equally important characteristics for both participants. The application of the QFD throughout the entire egg chain emphasizes quality vs price as the most important characteristic.
Originality/value:
This study could serve to food policy makers as an introduction to further research and production orientation in relation to the set of quality requirements associated with the egg supply chain.

Abstract
Purpose
The purpose of this paper is to evaluate changes in selected quality traits of chicken table eggs during their storage under standard storage conditions and in refrigeration.
Design/methodology/approach
The sample consisted of 570 eggs from Hy-Line hens. The eggs were placed on trays of 30 pieces each, and then group C (control) eggs were stored at 14°C temperature and 70 per cent humidity and group F (experimental) eggs were refrigerated at 5°C and 30 per cent humidity. Changes in egg mass and air cell depth were measured on the laying day and, then, after every 7 days for 5 weeks for group C and for up to 24 weeks for group F. Initially for every week and then after every four weeks, the quality of 30 eggs from each group was evaluated. The following traits were analysed: whole egg (mass, specific gravity), shell (conductivity, strength, mass, thickness, and density) and content (proportions, pH, albumen quality and yolk colour).
Findings
It was shown that due to a significant limitation of qualitative changes (lower water loss, higher specific mass, lower shell conductivity, better albumen quality, lower pH content, more favourable proportions of morphological elements) in eggs stored in refrigeration despite prolonged time, reduced temperature should be considered as a factor allowing for a significant prolongation of egg shelf life during storage.
Originality/value
The unusually elongated time of the experiment allows for a practical implementation of the results, especially in the case of eggs intended for processing.

Abstract
Purpose
The purpose of this paper is to present a simple model to demonstrate how a trade‐off between incomplete contract distortions and excessive governance costs determine an agricultural firm's organizational choices.
Design/methodology/approach
In this paper, it is argued that the perishable nature of products exaggerates the incomplete contract distortion, such that products with a short biological production cycle (e.g. eggs) are likely to be operated under vertical integration, products with a medium cycle (e.g. poultry) are likely to be operated under product contracts, and products with a long cycle (e.g. pork) are likely to be operated under marketing contracts.
Findings
This model helps explain why vertical integration dominates the US egg industry, why product contracts are prevalent in the turkey industry, and why marketing contracts have become common in the pork industry. The implications from this model are also applicable to other sectors and other countries, including China's agricultural sectors.
Originality/value
This paper illustrates that perishable products are more vulnerable to opportunism, because the incomplete contract distortion is exaggerated by the perishable nature of the products. However, a local government can reshape firms' choices of vertical coordination by improving its legal infrastructure to reduce the incomplete contract distortions and then weaken the role of the perishable nature of products, so that contracting (product or marketing) may take place. Note that agricultural producers benefit more in selling their products through product/marketing contracts than spot markets.

Abstract
Purpose
This paper empirically investigates the demand for pastured eggs in the United States and evaluates the welfare consequences of Japan's egg import tariff reductions for the US consumers.
Design/methodology/approach
Using household-level Nielsen Homescan panel data, a fixed-effects Heckman two-stage sample selection model is estimated.
Findings
The estimation results ascertain the importance of a set of household socioeconomic characteristics, which are found to influence both the purchase probabilities and the consumption amounts associated with pastured eggs. In addition, demand for pastured eggs is estimated to be inelastic, and pastured eggs are found to be a normal good, more specifically a luxury.
Research limitations/implications
The dataset used in this study reflect purchases only for at-home consumption, lacking information on away-from-home purchases.
Originality/value
Building upon previous research, this study makes the following distinct contributions to the current literature. To the best of our knowledge, it constitutes the first study to empirically examine the demand for pastured eggs, using household-level panel data and an estimation model that not only allows for left-censoring but also controls for regional and time fixed effects. Second, the present study reflects a unique effort in analyzing the adverse welfare consequences of the increased egg prices in the United States brought by a reduction of Japanese import tariffs on US-supplied eggs, focusing specifically on pastured eggs.

Some misconception appears to have arisen in respect to the meaning of Section 11 of the Food and Drugs Act, 1899, owing, doubtless, to the faulty punctuation of certain copies of the Act, and the Sanitary Record has done good service by calling attention to the matter. The trouble has clearly been caused by the insertion of a comma after the word “condensed” in certain copies of the Act, and the non‐insertion of this comma in other copies. The words of the section, as printed by the Sanitary Record, are as follows: “Every tin or other receptacle containing condensed, separated or skimmed milk must bear a label clearly visible to the purchaser on which the words ‘Machine‐skimmed Milk,’ or ‘Skimmed Milk,’ as the case may require, are printed in large and legible type.”

Abstract
Purpose
Safe food from animal origins rely on preventive measures adopted at the farm level. However, farmers' awareness on the food safety risk is limited, affecting their on-farm activities. Thus, this study was conducted to assess and compare the farmers' perceptions on food safety issues and risks caused by the management and practices at layer farms.
Design/methodology/approach
Farmers from 143 farms certified by National Good Agricultural Practices (GAP) standard and 59 non-GAP farms were interviewed using a structured questionnaire for risk perception evaluation. Their level of perceived risk was compared using a scoring system.
Findings
The food safety hazards in eggs seem to be fairly recognized by both groups of farmers. GAP farmers demonstrated a higher risk of food safety incidences caused by inappropriate management and practices in farms than non-GAP farmers (p < 0.001). Although the results did not confirm the strong connection between risk perception and risk reduction behavior, these findings are beneficial to the food safety policy implementers to evaluate the critical issues for risk communication and for knowledge dissemination activities. The influence of other internal and external factors on farmers' food safety-related behavior should be further investigated.
Research limitations/implications
The impact limitation was identified due to the restriction of scope on a specific population and region. The target respondents did not cover all scales, especially the backyard and smallholder farmers nor other rearing systems, such as free-range productions.
Originality/value
The knowledge regarding the food safety practices by egg producing farmers in Thailand is limited. Notably, this study contributes to the literature in elucidating the preventive behavior of food handlers and all stakeholders in the Thai food supply chain. The implementations of food safety preventive measures by two groups of farmers, GAP-certified and non-GAP-certified farmers, will guide policymakers to intervene more successfully regarding the appropriate changes needed.

Abstract
Purpose
The purpose of this paper is to document the level of risk in the Québec egg sector (conventional and specialty eggs) and analyze the optimal choices of Québec egg producers that must allocate limited resources to production of different types of eggs.
Design/methodology/approach
A quadratic programming approach applied to expected mean-variance models is used to analyze the impact of risk on decision to invest when the resources must be allocated to different type of production that have different risk levels. The model is calibrated using monthly data from 2009 to 2016.
Findings
Results indicated multiple uncertainty sources (technological, cost of production, price of eggs) that vary according to the types of eggs. Given risk aversion parameters, producer would favor production modes with the lowest producers’ price variance, which correspond to free-run eggs. Results also indicated that in response to a greater intensity of risk aversion, the course of action producers may choose is to increase the relative production of free-run eggs.
Research limitations/implications
The empirical limits of this research are found in the lack of quality data on producer prices and costs for specialty eggs. Future research could explore the relationship between the growing impact of egg for processing, which price is based on the US price, and its relationship with specialty eggs.
Practical implications
The findings of the study will be useful for policy makers and managers of eggs supply chain. This is important, given the recent announcement by Canadian’s large retailers and fast food companies to increase cage free eggs offering and, in some cases, eventually only selling these types of eggs.
Originality/value
This study adds to the understanding of the role of risk and uncertainty in the investment decision of egg producers and different mode of production, as well as in the development of the growing production of specialty eggs in Canada. It fills a gap in the literature regarding the impact of risk in Canadian egg production. This gap is likely explained by the perception of a lack of risk in this supply managed sector in Canada and its small size relative to other supply managed sector.

Purpose
The purpose of this paper is to determine the impact of 2014–2015 highly pathogenic avian influenza (HPAI), the largest animal health emergency in US history to date, on agribusinesses’ market values.
Design/methodology/approach
Using the 2014–2015 HPAI outbreaks in US commercial poultry, event study analysis of meat processing and marketing companies is conducted to estimate the effects HPAI had on firm value and how these effects differed across meat marketing firms over distinct disease event dates. The analyses include an overall aggregate event study, chronological outbreak studies, and an analysis that separated firms specifically marketing poultry products from those marketing all other types of meat.
Findings
By tracing abnormal stock returns through the event dates, the results show heterogeneity of investors responses based on the nature of the event (i.e. backyard vs commercial flocks affected), timing of the event over the course of the entire HPAI outbreak, and if a firm marketed poultry products. Overall, negative abnormal returns, ranging from 2 to 4 percent of publicly traded meat processors’ equities, are predominant post-disease event. These negative effects are slightly higher, above 5 percent, for firms marketing poultry products.
Originality/value
This study is the first to analyze the effects of an HPAI outbreak on the market value of US agribusiness firms.

Abstract
Purpose
Given the dominant share of India in global production of fruits and vegetables, this paper intends to analyze the export competitiveness of India and other major food exporters in the world trade. The purpose of this study is to examine export structure, substitutability and complementarity of selected fresh and processed fruits and vegetables of top ten food exporters for the period 2010-20.
Design/methodology/approach
Balassa’s (1965) revealed comparative advantage (RCA) index was used to measure RCA indices of selected fruits and vegetables under study. Also, revealed symmetric comparative advantage (RSCA) and normalized RCA (NRCA) indices have been calculated. Further, Spearman rank correlation coefficients were computed to analyze changes over the study period for India and other competing countries. The export data have been sourced from UN Comtrade, an electronic database of United Nations, as well as World Trade Statistical Review, a database of World Trade Organization. The analysis was undertaken at Harmonized System (HS) four-digit classification for the period 2010-20.
Findings
The results disclosed an improvement in India’s comparative advantage over the period of 2010-20 in HS 07 product category, whereas the advantage ceded to other competitive nations in HS 08 product category. Further, Spearman rank correlation coefficients revealed that India faces competition from countries like China, Indonesia, Brazil, Thailand, Argentina and European Union for HS 07 product category, while countries like Mexico, Indonesia, Brazil and Thailandare the major competitors of India in HS 08 product category.
Originality/value
The paper expands the existing agricultural trade literature in three ways. First, it is one of the very few studies that have analyzed RCA for Indian fresh and processed fruits and vegetables using three different types of indices, namely, Balassa’s RCA, RSCA and NRCA. Second, the authors provide a number of comparisons related to RCA for Indian fruits and vegetables with other top food exporters in the world for a period of 10 years (2010-20). Third, the authors contribute to agricultural trade literature by assessing the substitutability or complementarity of India in the export of fruits and vegetables with other competing nations by using Spearman rank correlation coefficients.
