Abstract

Purpose

This paper aims to discuss how whale meat foodways in Japan is a local practice, contrary to the prevailing political belief that it is national, and to examine two local whale meat foodways in Japan by focusing on the usage of blubber. To understand complexity of whaling issue, one needs to be careful of species rather than general “whale.”

Design/methodology/approach

By investigating two kinds of recipe books, one published in the early 19th century and the other the early 20th century on whale meat dish, the paper clarifies blubber has been widely consumed rather than lean meat, and blubber was more important than lean meat as whale meat.

Findings

The western part of Japan has rich whale meat foodways compared to other parts of Japan. It is because of their history of whaling since the 17th century. They have inherited rich whale meat foodways.

Originality/value

Although whale sashimi and deep-fried lean meat are popular nationwide regardless of their communities' history, former whaling communities in the western part of Japan developed a preference for blubber, skin, tongue and offal over lean meat. Whale meat foodways in Japan, therefore, is a local heritage. This fact should be the starting point for analyzing Japanese whaling and whale meat foodways.

Abstract

Purpose

The essence of the demand for nature‐based tourism is an important issue seen from both an academic and practitioner's perspective. One approach to understanding it is to examine the relationship between tourists' travel motivations and activities. Therefore, the purpose of this paper is to conduct an empirical study of the links between travel motivations and travel activities within the nature‐based tourism context.

Design/methodology/approach

Performing a series of logistic regression analyses, the authors have adopted this approach to empirically investigate the travel motivations and activities (participated/planned to participate) of a sample of nature‐based tourists in Northern Norway.

Findings

The study clearly confirms the strong link between travel motivations and activities. More specifically, the study findings are moderated by the fact that “Novelty”, “Prestige”, and “Physical activity” are the main sources of motivation for participating in whale safaris, fishing and hiking respectively. Furthermore, the findings show that non‐Norwegian tourists are considerably more likely than Norwegians to participate in these nature‐based activities. Theoretical and practical implications of the study are also provided.

Research limitations/implications

The survey was conducted in a limited geographical area, and the results should accordingly be tested in several places. Analysis of other motives and activities will provide further information.

Practical implications

Knowledge about factors motivating tourists to participate (or not) in certain nature‐based activities is of value to the industry, both in marketing and providing service to the customers.

Originality/value

The paper adds useful knowledge to the relationship between nature‐based tourists' travel motivations and activities.

Abstract

Purpose

–The paper originated in challenges trying to theorize and research practices and processes of actors engaged in transnational activities for business and everyday life. Key concern was the assumption that actors’ identities remain the same regardless of time/space. While intersectional analysis once seemed a reasonable analytical approach the authors wondered about starting from identity-based categorical schemes in a world where mobility may be ever more the ontological status of everyday experiences and social structuring. Thus, the paper addresses limitations of intersectional analysis in such situations and advances its recasting via mobile conceptualizations, redressing its analytical purchase for contemporary subject formation.

Design/methodology/approach

Discusses emergence of intersectionality at a particular point in time, its success and proliferation, and more recent critiques of these ideas. Develops alternative conceptualization – mobile subjectivities – via literatures on mobilities in the context of globalization. Illustrates the value of these arguments with ethnographic examples from a multi-sited ethnographic project and analyses. Concludes by examining implications for new feminist theorizations under neoliberalism and globalization.

Findings

Observing the constitution of a “mobile selfhood” in actual transnational business activities is a step toward making sense of complex processes in contemporary subject formation under globalized market neoliberalism.

Research limitations/implications

“Mobile subjectivities” suggest that analyses of oppression and subordination must be ongoing, no matter which “new subjectivities” may appear under “the latest regime.”

Originality/value

Theoretical and empirical analyses facilitated a reconceptualization of intersectionality as a mobile, precarious, and transitory accomplishment of selfhood temporarily fixed by the neoliberal rhetoric of “choice” and “self-empowerment.” This is of particular value for understanding transnational practices and processes of contemporary organizational actors.

Abstract

This chapter develops Lefebvre’s concept of rhythmanalysis to investigate the ways super-diversity comes to life in the everyday city through the intersection of the spatial and temporal. The chapter explores the multicultural intimacies of streets in a London neighbourhood through a close ethnographic focus on rhythms and atmospheres using slow-motion video. The research contributes to an emerging field of visual ethnographic scholarship by presenting slow-motion video as a method to explore the ‘presence’ (Lefebvre, 2004) of super-diversity and conviviality on the street.

I argue that in slowing down the encounters of the street, slow-motion video shows the often overlooked sensible and affective elements of super-diverse urban space, the mundane interactions between bodies, materials and technologies that create a form of ‘convivial affect’. I argue that these everyday encounters are shaped by a situated politics of difference and yet are also mediated by wider rhythms and atmospheres, contributing to a sense of ‘social time’. I draw attention to both the human and non-human elements of the streets. These material and technological elements can uncover the wider discourses and circulatory regimes of atmospheres in urban super-diverse neighbourhoods, focussing on their relation to broader flows of capital, forms of postcolonial culture and translocality.

This research has implications for how we understand super-diversity and its manifestations in urban space. It encourages policymakers and academics to recognise the affective human and non-human encounters that are a crucial aspect of conviviality, the everyday ways we live together with difference.

Abstract

The two islands of Trinidad and Tobago were made one administrative unit in the year 1889. The total area is something under two thousand square miles— that of an ordinary English county. The climate is tropical and healthy, the soil extremely fertile. With the exception of the asphalt of La Brea the population is mainly concerned with the forest products and with the care of and development of the sugar and cocoa plantations. The population is mixed—East Indians; people of negro stock, and a small proportion of people of European descent. With a population exhibiting widely different cultural levels the authorities responsible for public health are confronted with correspondingly complex administrative problems. The Government Chemical Department is occupied not only with the administration proper to such a department, but acts in an advisory capacity when matters relating to plantation or local manufactured products are brought to its notice. It is satisfactory to learn of the “notable developments which have taken place in the Department in recent years.” The extent of this development may be partly judged by the estimates, which in 1945 amounted to about twenty‐nine thousand dollars, to those for 1946: these were some forty‐three thousand dollars. This increase led to the enlarging of the Departmental buildings, the purchasing of special apparatus—where this came from is not stated, but if from this country its source of origin is suggested by “the extreme slowness of delivery,” and this it seems is, or let us hope was, delaying the benefits expected from the increase in expenditure. The library, too, was enlarged. Nor are the activities of the Department limited to Trinidad alone. Reference is made to the submission of samples from various islands in the British West Indies. In a word, the Chemical Department is in close and constant touch with all social and industrial developments in the island, and the hope is expressed, and it will no doubt be justified, that the laboratory will stand comparison with any laboratory of its kind and size in the Empire. With regard to the work of the Department, it seems that 5,193 samples were examinend and reported on during the year. Of these, 4,776 were official. The bulk of the work relates to Customs (1,509 samples) and Police (2,577 samples). Among the samples submitted by the police for examination by the Department were nine cases of suspected ground glass in foodstuffs, and 255 of viscera and other articles for poison. The Port of Spain City Council submitted 407 samples of potable water. It is observed that the capital city “appears for the first time as an appreciable source of work.” Only five samples were submitted in each of the two previous years. The result of the analyses showed that the samples submitted were uniformly satisfactory from a chemical point of view. The Customs examination of 146 samples were mainly for the purpose of determining the alcohol content of medical preparations and essences. The Excise examinations for duty purposes—1,314 samples in all—were almost exclusively concerned with samples of rum, bitters, brandy, and so forth. These were all of local manufacture, and they constitute an important item in local manufacture. Angostura and other bitters are too well known to require more than passing mention. The Preventive branch had to consider twelve cases for the possession of prepared opium. Eight prosecutions were successful, and fines, amounting to $925, were inflicted. As remarked above, all the major sources of water supply of the city are now examined each month. Other sources of water supply outside the city are now also subject to examination under the supervision of the Medical Services. The Colonial Secretary, to whom this report was submitted for the information of the Governor of the Colony, had informed the Town Clerk of the Port of Spain in June, 1945, that the Chemist's Department was in a position to carry out analyses of foodstuffs and drugs submitted by the City Council. In spite of this, the amount of work done for the City Council had not been on the scale that was anticipated, for up to the end of the year 1946 no samples of the kind had been sent in for purposes of analysis. On the other hand, we notice that 1,753 food samples were examined in 1946, as against 1,394 in 1945, but these were from areas outside the area under the control of the Port of Spain Authorities, but no drug samples were submitted, nor, it seems, have any been submitted under the Food and Drug Ordinance (chap. 12, No. 3) for several years! We are, therefore, not surprised to read that “it is impossible to say to what extent (if any) these important articles are sold in an adulterated or unsatisfactory condition.” It is true that adulteration of foodstuffs— nobody can say anything about drugs—would seem to be on the decrease as the percentage figure for 1944 was 10·8, that for 1945 was 9·3, and for 1946, 7. The figures, however, refer to foodstuffs in general. If, however, we turn to figures that relate to the purity of the domestic milk supply, we find that they tell in some respects a different tale. Out of the 1,753 samples sent in for analysis 454 were milk samples. Of these, 118, or 25·9 per cent., were reported against. It is true that the figure just given is less than that of the two preceding years—1944, 37·3 per cent., and 1945, 29·5 per cent.—but the chief chemist, writing with a full knowledge of the circumstances and making, no doubt, full allowance for administrative difficulties, calls the 1946 figure “outstandingly bad,” and this percentage of adulteration still does not tell the whole tale. It seems that the larger dairies are not to blame, but “it must be a matter for continued concern that one‐quarter of the milk sold by the smaller retailers is adulterated,” for they number among their customers those “who can least afford the nutritional loss involved.” The figures, it will be noted, show a decrease, and this, it is observed, is due to “greater vigilance” on the part of the police and “other competent authorities.” In the unadulterated samples the average fat content was 3·9 per cent., and of solids not fat 8·6 per cent., so there seems to be nothing wrong with the livestock as far as these figures go, but the average figures for the adulterated samples were 3·2 per cent. of fat and 7·6 per cent. of solids not fat. Of the 118 samples reported against, 69 were deficient in solids not fat, 17 in fat content, 32 were deficient in both. The standards laid down by law for the composition of milk are 8·5 per cent. solids not fat, and 3 per cent. fat. Fines amounting to $2,460 were imposed. It was pointed out that a remedy for the present state of things is to take more samples at more frequent intervals. This has been done, but the percentage of adulteration is still abnormally high. Increased vigilance by the police, who are, it appears, the sampling officers, is certainly demanded. The percentage of adulteration for other foodstuffs is very low. It calls for no special comment.

Legislation designed to promote and maintain high food standards and the hygienic handling and manufacture of food must recognise the existence of two problems. First, how to prevent deliberate adulteration, and, second, how to persuade the people concerned in its handling and manufacture that ignorance and carelessness, or a combination of both, can and do result in the contamination of the product, rendering it as dangerous for human consumption as any substance on the poisons register. In bygone days the adulteration of food proved a remunerative pastime. Millers and bakers were particularly unscrupulous, adding alum and other matter to their flour. Grocers, not to be outdone, mixed lime with sugar and starch with cocoa. A commission set up by the editor of the Lancet in 1851 revealed that tea had been treated with blacklead, indigo and mica, while every sample of milk was diluted with water and every loaf sophisticated with alum! Fortunately, measures taken to prevent this knavery and to protect the consumer in other ways, such as the Food and Drugs Adulteration Act of 1928 (now replaced by the Food and Drugs Act, 1938) have proved largely successful; but the problem of how to ensure clean and uncontaminated supplies of food still remains, and, in recent years, has engaged the attention of the experts to an ever increasing degree. Recent widespread cases of food poisoning in various forms, some of them fatal, have rightly caused general public concern, but the real danger seldom lay in the food itself. The evidence in these cases seems to indicate that in the first place the food was perfectly wholesome but that infection had been transmitted to it by human contact. In June, 1948, over ninety people suffered agonies from food poisoning attributed to eating cream buns at a party in Lambeth. It was found that the substance used for filling these buns had been infected by a person who had prepared them, a “carrier” of the germ which caused the poisoning. In another case, 171 people were taken ill after four separate wedding parties catered for by the same restaurant proprietor. Their illness was traced to one of the girls who prepared the trifle for each party. There have, of course, been a few cases in which the outbreak has been due to the activities of unscrupulous traders who have used ingredients unfit for human consumption in the manufacture of cooked meats, meat pies, etc. Nevertheless, in any attempt to eliminate the dangers of food poisoning, emphasis must be laid on personal hygiene and the cleanliness of the premises and utensils rather than on the condition of the food itself.

The Pure Food and Health Society of Great Britain held a conference at the Inns of Court Hotel, Holborn, on May 27. Mr. H. E. MORGAN presided, supported by LORD CAMOYS and Mr. S. F. EDGE. The principal objects of the conference were to discuss (1) the best methods of preventing food frauds and substitutions that are injurious to consumer and honest manufacturer alike; (2) some means of educating the public, preferably by advertisement, so that they can discriminate genuine and good from inferior, worthless, and fraudulent articles.
