Abstract

Purpose

The purpose of this paper is to investigate the potential quality of Kamut® (triticum turgidum turanicum) as an ancient relative of modern durum wheat for food preparation and Egyptian consumption.

Design/methodology/approach

The methodology included in this paper is based on quality evaluation of Kamut wheat of the Dashure-Fayume geographical origin physically, chemically and technologically compared to Beni Suef 1, Beni Suef 3 and Suhag 3, the most dominant durum varieties in Egypt. After that, producing a specific end product (traditional couscous) regarded the critical quality aspects in Kamut wheat.

Findings

The results obtained showed that Kamut grains had higher physical properties indicating higher milling yield potential. Besides, Kamut flour was remarkable with higher protein and oil content. The use of a farinograph for assessing the rheological properties of Kamut dough has proven a useful quality for its measured characteristics compared to the Egyptian durum varieties. The good physical and rheological properties, coupled with high protein content, validated that Kamut is a valuable addition to the Egyptian diet and suited for the production of pasta and/or couscous. The sensory attributes of traditional couscous were significantly (p < 0.05) highly acceptable to the panelists.

Originality/value

These results lead to valuable addition and improvement of the Egyptian diet which consider The Sustainable Agricultural Development Strategy (SADS) towards 2030 in Egypt based on achieving higher rates of food security in strategic goods in regard to improve food quality and safety, especially Kamut wheat which produces high quality grains without artificial fertilizers and pesticides.

Abstract

Purpose

The aim of this study was to produce an enriched honey powder with active compounds coming from bee pollen and investigate the effects of bee pollen addition as a carrier material on honey powder.

Design/methodology/approach

The effects of bee pollen addition as carrier material in corporation with gum arabic at different ratios (25, 50 and 75% of total carrier material amount) on vacuum-dried honey-bee pollen powder were investigated.

Findings

The bee pollen concentration raise in the mixture increased the particle size, total phenolic, flavonoid and sugar contents and antioxidant activity, whereas decreased the Hauser ratio and Carr index values, hygroscopicity and solubility of enriched honey powder samples. The honey powder samples had passable and poor flow properties and very hygroscopic (>20%) structure because of the high sugar content. The phenolic and flavonoid contents of honey powder samples with bee pollen changed between 1531.59 and 3796.00 mg GAE/kg and 424.05–1203.10 mg QE/kg, respectively, and these values were much higher than the control sample. On the basis of linear correlation analysis, there was a very high positive correlation between total phenolic, flavonoid and antioxidant activity, while there was a very high negative correlation between these parameters and solubility.

Originality/value

The study evaluated that enriching of honey powders with pollen, which is a product of both plant and bee origin, rather than enriching with different plant and animal sources has an innovative approach. Additionally, the usage of bee pollen as a carrier agent in food drying has not been previously reported in any study.

Abstract

Purpose

The explosion of the deadly coronavirus (COVID-19) has led to an unprecedented crisis lately, which has adversely affected the performance level of professionals in the educational sector worldwide because of numerous constraints, imposition of the lockdown being one of those. Organizational resilience (OReg) and emotional intelligence (EI) discretely have been identified as indicators of employee performance (EP) over the years, but during the period of crisis, it has scarcely been analysed. Therefore, this study aims to examine the mediating role of EI on the relationship between OReg and EP in such a global pandemic.

Design/methodology/approach

In total, 390 samples including teaching and non-teaching professionals working in higher educational institutions (HEIs) were collected from different HEIs located in India through online survey questionnaires. The collected data was further analysed using regression analysis, factor analysis, structural equation modelling along with bootstrapping technique, reliability and validity analysis, mediation analysis and model fit indices analysis.

Findings

The results of the study confirmed the partial mediation effect of EI on the OReg-EP relationship, and further results also exhibited that employees with a higher level of EI, contribute more positively to the OReg level, which further enhances the performance level at the workplace.

Research limitations/implications

The samples collected for the current study pertain to the HEIs only, and therefore the present study results have limited general applicability. Furthermore, the study does not investigate the influence of time.

Practical implications

This study would assist practitioners of HEIs in improving the resilience capabilities of the organization. EP can be improved by enhancing the levels of OReg and individual emotional intelligence, which is in line with the findings of the current study.

Social implications

In the COVID-19 pandemic, worldwide the students are affected due to the transition to online teaching. This study will help HEI’s to cope up with the student’s loss by being flexible in approach for the retention of performance of employees by taking care of their emotional needs and focusing on their skill development by providing a learning culture in a depressing time of the pandemic so that students will not suffer due to this rapid change without any preparation or previous experience in a pandemic.

Originality/value

The current study examines the mediating effect of EI on the OReg and EP relationship for the first time in HEIs in India.

Abstract

Purpose

Currently, there is a great demand for those food products that are easy to prepare or ready for direct consumption. Making pear fruit/juice available round the year is desirous owing to pears' high-nutritional value and specific pleasant taste. Pear is, however, a seasonal fruit and under ambient conditions has a limited shelf life rendering it available as fresh fruit for a specific period.

Design/methodology/approach

The study aimed to optimize the spray drying process parameters using response surface methodology for the development of pear juice powder. The process variables included the inlet air temperature of 140–210°C, maltodextrin levels of 4–25%, atomization speed of 11,400–28,000 rpm, feed flow rate of 180–630 mL/hr, and feed total soluble solids (TSS) of 13–30°Brix. The dependent responses were powder yield, solubility, antioxidant activity {% 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging capacity}, dispersibility, hygroscopicity and particle density.

Findings

Among independent variables, inlet air temperature showed a predominant effect. The optimum processing conditions for the development of pear juice powder with optimum quality were 163.02°C inlet air temperature, 13.50% maltodextrin, 28,000 rpm atomization speed, 390.94 mL/h feed flow rate, and 25.5°Brix feed TSS. Under these optimum conditions, pear powder with desirable properties could be produced. The experimental and predicted values were found to be in agreement, indicating the suitability of the model in predicting optimizing responses of pear powder. Glass transition temperature of pear powder was found to be 36.60 ± 0.40°C, which is much higher than that of ambient temperature, suggesting better shelf stability.

Originality/value

The processing of pear fruit has resulted in the increased demand for pear juice powder in both domestic and international markets as a primer of new food products. The optimum conditions obtained in the current study could provide a new insight to the food industry in developing spray-dried pear powder of optimum quality. This can open up a new horizon in the field of food industry for the common masses of Jammu and Kashmir, India.

Abstract

Purpose

This study aims to determine (1) the effect of environmental management accounting on organizational performance and (2) the mediating effect of process innovation on the relationship between environmental management accounting and organizational performance.

Design/methodology/approach

This research uses survey methods designed for management accountants of large manufacturing companies in Indonesia. Data from 123 respondents were analyzed using the WarpPLS.

Findings

The implementation of environmental management accounting exerted a positive effect on organizational performance. It is evident that the implementation of environmental management accounting encourages companies to innovate processes which will improve how well the organization performs.

Research limitations/implications

These findings still contained several limitations such as data were only collected from one province in Indonesia, and so the findings might not be generalizable to other provinces in Indonesia. Also, the number of variables studied only involved three. The study only focused on certain dimensions of environmental management accounting without considering other dimensions in-depth.

Practical implications

These findings extend the literature on environmental management accounting and demonstrate, from a practical perspective, environmental management accounting (EMA), which prioritizes the environment, will encourage companies to innovate their processes so that they are more environmentally friendly; EMA recognizes the important role of accountants in managing environmental issues.

Originality/value

This study documents the importance of environmental management accounting to assist companies in getting accurate information on environmental issues and environmental costs.

Abstract

Purpose

In this paper, a novel Lyapunov–Krasovskii stable fuzzy proportional-integral-derivative (PID) (FPID) controller is introduced for load frequency control of a time-delayed micro-grid (MG) system that benefits from a fuel cell unit, wind turbine generator and plug-in electric vehicles.

Design/methodology/approach

Using the Lyapunov–Krasovskii theorem, the adaptation laws for the consequent parameters and output scaling factors of the FPID controller are developed in such a way that an upper limit (the maximum permissible value) for time delay is introduced for the stability of the closed-loop MG system. In this way, there is a stable FPID controller, the adaptive parameters of which are bounded. In the obtained adaptation laws and the way of stability analyses, there is no need to approximate the nonlinear model of the controlled system, which makes the implementation process of the proposed adaptive FPID controller much simpler.

Findings

It has been shown that for a different amount of time delay and intermittent resources/loads, the proposed adaptive FPID controller is able to enforce the frequency deviations to zero with better performance and a less amount of energy. In the proposed FPID controller, the increase in the amount of time delay leads to a small increase in the amount of overshoot/undershoot and settling time values, which indicate that the proposed controller is robust to the time delay changes.

Originality/value

Although the designed FPID controllers in the literature are very efficient in being applied to the uncertain and nonlinear systems, they suffer from stability problems. In this paper, the stability of the FPID controller has been examined in applying to the frequency control of a nonlinear input-delayed MG system. Based on the Lyapunov–Krasovskii theorem and using rigorous mathematical analyses, the stability conditions and the adaptation laws for the parameters of the FPID controller have been obtained in the presence of input delay and nonlinearities of the MG system.

Land bank distribution in India is a complex subject and with the family size reduction, the average land holding is going down. Maintenance of the land records in physical format is very difficult. There are thousands of court disputes for different land parcels and managing the same is becoming a complex task. The aim of the chapter is to design a conceptual framework with electronic landbank records in dematerialized form, so that they can be easily maintained and traded. Associated benefits of implementing such system are also discussed. Authors have used secondary data published in previous research work in the area of Geographical Information System (GIS) and business analytics to analyze the prospects of land bank dematerialization and its possible applications. The chapter focuses on the need of regulatory support and associated IT infrastructure to put the plan in action. If implemented, this change can help India to transform its land management process and will also enable to explore commercial utilization of agricultural land and urban land plots for planned development.

Abstract

Purpose

The USA is one of the largest oil producers in the world. For this purpose, the authors model and predict the US conventional and unconventional oil production during the period 2000–2030.

Design/methodology/approach

In this research, the system dynamics (SD) model has been used. In this model, economic, technical, geopolitical, learning-by-doing and environmental (social costs of carbon) issues are considered.

Findings

The results of the simulation, after successfully passing the validation test, show that the US unconventional oil production rate under the optimistic scenario (high oil prices) in 2030 is about 12.62 million barrels/day (mb/day), under the medium oil price scenario is about 11.4 mb/day and under the pessimistic scenario (low oil price) is about 10.18 mb/day. The results of US conventional oil production forecasting under these three scenarios (high, medium and low oil prices) show oil production of 4.62, 4.26 and 3.91 mb/day, respectively.

Originality/value

The contribution of this study is important in several respects: First, by modeling SD that technical, economic, proven reserves and technology factors are considered, this paper models US conventional and unconventional oil production separately. In this modeling, nonlinear relationships and feedback loops are presented to better understand the relationships between variables. Second, given the importance of environmental issues, the modeling of social costs of CO2 emissions per barrel of oil is also presented and considered as a part of oil production costs. Third, conventional and unconventional US oil production by 2030 is forecast separately, the results of this study could help policymakers to develop unconventional oil and plan for energy self-sufficiency.

Abstract

Purpose

Open innovation (OI), by now one of the major concepts for the analysis of innovation, is seen as a methodology for collaboratively designing and implementing solutions by engaging stakeholders in an iterative and inclusive service design process. This paper aims to empirically investigate OI capacities, defined as a cooperative, knowledge-sharing innovation ecosystem, and to explore how it can lead to improved performance of firms in Central and Eastern European (CEE) and Southeastern European (SEE) countries.

Design/methodology/approach

The study builds on the World Bank/European Bank for Reconstruction and Development (EBRD’s) Business Environment Enterprise Performance Survey (BEEPS) dataset for 2009, 2013 and 2019. Primarily, the research model was estimated using log-transformed ordinary least squares (OLS). Taking into consideration that this method might produce substantial bias, yielding misleading inferences, this study is fitting Poisson pseudo maximum likelihood estimators with robust standard errors and instrumental variable/generalized method of moments estimation (IV/GMM) approach for comparative results. Secondarily, the research model was tested using structural equation modelling (SEM) to investigate the relationship between five OI capacities and firm performance.

Findings

The findings indicate that there is a significant positive relationship between most OI capacities and firm performance, except for innovation, which did not show a statistically significant relationship with firm performance. Specifically, research and development (R&D), knowledge and coopetition are statistically significant and positively associated with firm performance, whereas transformation is statistically significant but negatively associated with firm performance. The IV/GMM estimations’ findings support the view that the firm performance is significantly affected by OI capacities, together with some control variables such as size, age, foreign ownership and year dummy to have a significant impact on firm performance.

Originality/value

This paper fills an identified gap in the literature by investigating the impact of OI on firm performance executed in the specific CEE and SEE country context.
