Abstract
MR. JONATHAN HUTCHINSON, the eminent consultant, has just put forward a statement of the utmost importance with respect to the probable existence of a direct connection between the consumption of arsenic‐contaminated food and the occurrence of cancer. He points out that certain modern “improvements” in processes of production have led to the contamination of various food‐products with small amounts of arsenic, and observes that “if, as seems proved, the continuous use of arsenic in small medicinal doses can predispose the skin to multiple cancer there seems no reason for doubting that it may do the same for the other tissues, and for the mucous membranes and the viscera,” while there must necessarily also be “the constitutional tendency, the appropriate age, and, in some cases, the local irritation.” Mr. HUTCHINSON refers to the recent successful tracing of the Manchester outbreak of “peripheral neuritis” to the use of arsenic‐contaminated beer as an example of what may be caused by the habitual ingestion of minute doses of arsenic. It is a remarkable fact that the increase in the occurrence of cancer may be looked upon as almost synchronising with the increasingly extensive adoption of those “improved” modern methods of manufacture, not only of beer but of other food‐products, which open the door to arsenic‐contamination; together with the great increase in the use of arsenic in medical prescriptions.

Abstract
Purpose
The purpose of this paper is to evaluate the welfare cost resulted from an increase in food prices in the three most populous countries of south Asia (Pakistan, India and Bangladesh).
Design/methodology/approach
The effect of rising food prices on consumer welfare is analyzed by using the compensating variation technique. The measurement of the total consumer welfare effect requires the estimation of price elasticities which are calculated by using linear approximation version of the almost ideal demand system.
Findings
The results indicate that cereals (wheat, rice) are relatively price inelastic. However, protein-rich food items like chicken and mutton are relatively more income elastic where consumer welfare declines in all countries mainly for cereals and milk, as these food items are relatively less elastic to price fluctuations.
Social implications
Pakistan, India and Bangladesh represent together about 37 percent of the total world undernourished population. This study suggests that government should target the most vulnerable consumers (low-income group) to improve the income level in these countries.
Originality/value
It is the first effort to estimate and compare that how food inflation affects the consumer welfare in the most populated countries of South Asia. This type of study is also important for the policy planners to overcome the welfare cost under different setting of price and income so it is an effort toward this direction.

Abstract
Purpose
The aim of this research is to conduct a holistic sustainability life cycle assessment (LCA) comparison of different kinds of biofuels, integrating environmental, social, cultural and economic sustainability. The feasibility of a vision that by year 2015 households, companies, and other organizations all over the world will turn their sewages into biofuels, instead of discharging them into the environment is tested through these comparisons.
Design/methodology/approach
Semi‐structured interviews of biofuels' experts in Finnish companies, industry organizations, research institutions, and non‐governmental organization were conducted.
Findings
Biogases are environmentally more sustainable than bio‐oils, field biomass, wood‐based biomass and peat, all of which cause loss of biodiversity. Bio‐oils and field biomass are socio‐culturally unsustainable when they affect farming for food. Launching any kind of biofuel system is expensive, but running it reaps benefits. Biogases, bio‐oils and liquid field biomass use the cradle‐to‐grave approach; solid field biomass, wood‐based biomass and peat use the cradle‐to‐cradle approach in their life cycles. Biogases made of sewage have an endless supply with little need for an endless life cycle, which, however, could also be developed.
Practical implications
Refining sewage into biofuels solves two global environmental problems at once: carbon dioxide emissions from fossil fuels contributing to climate change and over‐fertilization of waterways causing sea, lake and river deaths. Hence, the launching expenses are well worth the effort. Yet other biofuels compete so heavily that large‐scale global turning of sewage into biofuels by 2015 is unlikely.
Originality/value
This is the first holistic sustainability LCA comparison of biofuels which integrates environmental, socio‐cultural and economic sustainability views of industry, research and civil society experts.

Abstract
Purpose
This paper aims to document indigenous knowledge systems (IKS) used for short- and long-range rainfall prediction by small holder farmers in three communities of Guruve District, in north-eastern Zimbabwe. The study also investigated farmers’ perceptions of contemporary forecasts and the reliability of both IKS and contemporary forecasts.
Design/methodology/approach
Data were collected among small holder farmers in Guruve District using household interviews and focus group discussions in three wards in the district, grouped according to their agro-climate into high and low rainfall areas. To get an expert view of the issues, key informant interviews were held with key agricultural extension personnel and traditional leaders.
Findings
Results obtained showed show high dependence on IKS-based forecasts in the district. Over 80 per cent of the farmers used at least one form of IKS for short- and long-range forecasting, as they are easily understood and applicable to their local situations. Tree phenology, migration and behaviour of some bird species and insects, and observation of atmospheric phenomena were the common indicators used. Tree phenology was the most common with over 80 per cent of farmers using this indicator. While some respondents (60 per cent) viewed forecasts derived from IKS as more reliable than science-based forecasts, 69 per cent preferred an integration of the two methods.
Originality/value
The simplicity and location specificity of IKS-based forecasts makes them potentially useful to smallholder farmers, climate scientists and policymakers in tracking change in these areas for more effective climate change response strategies and policymaking.

Purpose
The purpose of this paper is to study the quality of porridge made from cereal legume composite flour and to compare with a porridge that it is traditionally eaten.
Design/methodology/approach
The nutritional composition as well as protein, microbiological, and sensory quality of porridge from a sorghum bean composite flour was assessed and compared with sorghum porridge (SP) that is traditionally eaten in Botswana.
Findings
Results indicated that the nutrient composition and the protein quality of the sorghum bean composite porridge were significantly higher than that of the SP. The majority of children and adults rated the sensory attributes of the sorghum composite porridge highly and adult consumers indicated willingness to buy it.
Originality/value
The study demonstrates that using traditionally consumed foods, which are culturally acceptable and low cost, such as sorghum and sugar beans, can improve nutritional and sensory attributes when composited. These composited foods can then be recommended as a sustainable supplementary food source to improve the nutritional status and health of vulnerable populations such as HIV+ children.

Abstract
In connection with the suggestion recently made in the BRITISH FOOD JOURNAL to the effect that a National Pure Food Association should be established it is of importance to call attention to the fact that a society describing itself as the “League for the Defence of Human Life” has been recently formed in Paris with the object of preventing the frauds practised by dishonest traders upon their customers. One of the obligations entered into by the members of the League is to discover and prosecute persons engaged in the sale of adulterated or injurious articles of food and drink. Judging from the recent reports of the proceedings of certain Parisian tradesmen it would appear that a society of this description has much scope for its operations in the French Metropolis, and, as we have suggested, a society with similar objects might with advantage be formed in this country, with branches in all the principal cities and towns. With the legal machinery placed at the disposal of local authorities, cumbrous, inadequate and weak as it is, much more might be done in the way of repression if only the responsible authorities could be brought better to appreciate their duty.

Abstract
Purpose
The objective of this study was to evaluate the effects of rice flour obtained from rice grains with different levels of amylose on technological, nutritional and sensory properties of cookies made with a blend of rice and cowpea flour.
Design/methodology/approach
The cookies preparation was set at a ratio of rice flour and cowpea beans 70:30. The studied formulations were: LA: low amylose rice flour; MA: medium-amylose rice flour; HA: high amylose rice flour. The quality of the obtained cookies was analyzed for proximate composition, in vitro protein digestibility, thickness, diameter, dispersion factor, texture, color, amino acid profile and sensory properties.
Findings
Proximate composition and in vitro protein digestibility showed no differences between the three studied formulations. The medium and low amylose rice flour cookies showed the lowest hardness values. The combination of rice and beans allowed a good balance of essential amino acids. The cookies formulated with high amylose rice flour presented lighter coloration, low hardness and greater sensory preference.
Originality/value
Rice and cowpea flours are an alternative source for the preparation of gluten-free bakery products, such as cookies. The high amylose content of rice flour has less negative interference in the texture characteristics of the cookies. The combination of rice and beans flour provides a balance of essential amino acids.

Abstract
Purpose
This study investigate the return and volatility spillover among agricultural commodities and emerging stock markets during various crises, including the COVID-19 pandemic and the Russian-Ukrainian war.
Design/methodology/approach
This return and volatility spillover is estimated using Diebold and Yilmaz (2012, 2014) approach.
Findings
The results reveal the weak connectedness between agricultural commodities and emerging stock markets. Corn and sugar are the highest and lowest transmitters, respectively, whereas soya bean and coffee are the largest and smallest recipients of spillover over time. Most equity indices are the net recipient except for India, China, Indonesia, Argentina and Mexico, during the entire sample period. Most commodities are net transmitters of volatility spillover except coffee and soya bean. At the same time, major equity indices are the net recipient of the volatility spillover except for India, Indonesia, China, Argentina, Malaysia and Korea. In addition, the return and volatility spillover increase during various crises like the COVID-19 pandemic and the Russian-Ukrainian war, but the major increase in spillovers occurs during the COVID-19 pandemic.
Practical implications
The empirical results show a weak relationship between agricultural commodities and emerging stock markets which is helpful for investors and portfolio managers in the construction and reallocation of their portfolios under different periods, most notably under COVID-19 and the Russian-Ukrainian war.

Abstract
Case overview
At midnight on Thursday, 26 March 2020, the South African government ordered a three-week lockdown in response to the COVID-19 pandemic and subsequently extended this lockdown for a further two weeks until the end of April 2020. Among other measures, businesses not classed as “essential” had to cease operation. This meant that Jonathan Robinson, founder of the Bean There Coffee Company had to close his trendy Cape Town and Milpark coffee shops, as well as the company’s hospitality and corporate business. At the same time, Bean There’s costs increased by 25%, as the rand: dollar exchange rate worsened substantially. A glimmer of hope was that the company was able to continue roasting coffee and supplying its retail clients. Unlike most captains of industry, Robinson was not driven by the bottom line and clamouring shareholders. His corporate strategy was driven by a single, simple purpose: to achieve ethical sustainability aspirations while still running a profitable business. The question for him now, however, was how to ensure that his company could survive in the short term, so that it could achieve these goals in the longer term, and whether he could take this opportunity to think about whether his business was best positioned to achieve these goals when things returned to normal.
