Abstract
Purpose
The purpose of this study is to biomedically assess biscuits designed to reduce selected risk factors for coronary heart disease, in particular serum homocysteine and glucose.
Design/methodology/approach
In this study, one of the countries leading jam sandwhich biscuits was significantly modified, with particular attention being paid to sugar, fat and salt concentration. A traditional biscuit was converted to a functional food by the addition of vitamin B12, Folic Acid, Vitamin C and Prebiotic fibre, while reducing salt and sugar.
Findings
The results obtained from a clinical trial demonstrated that serum homocysteine and blood glucose were significantly decreased (P < 0.05) when the modified product and the traditional biscuit were compared. These findings confirm that a health promoting biscuit can be produced commercially, and have similar organoleptic properties as the standard high fat, high sugar and salt product.
Practical implications
These findings could have significant implications to the biscuit industry, as producers of products traditionally associated with poor health. This study shows that biscuit formulations can be modified significantly, and that the resultant dough yield biscuits which can be produced under commercial conditions, be organoleptically acceptable and reduce risk factors associated with coronary heart disease.
Originality/value
Moving into the twenty‐first century, there is no reason why biscuit consumption should be associated with poor health. Recipe and processing modifications are possible, thanks to new and innovative raw materials and an understanding of dough rheology.

Purpose
Healthy employee relations are important for individual well-being and are likely to contribute towards job satisfaction and other positive work outcomes. The purpose of this paper is to discuss the importance of worker relations and proposes a new three-component model of worker relations which embraces the relationships that employees have with their co-workers, supervisor and the organisation.
Design/methodology/approach
A 20-item inventory was tested using data collected in a local authority (n=157) and led to the retention of nine items which were embodied in a scale for further evaluation. A second study using data using obtained in an emergency call management service (n=85) were used to further evaluate the factor structure of the scale and assess its predictive validity. A third study (n=70) provided further information on the measure.
Findings
The new nine-item measure is a viable instrument with adequate reliability for assessing three levels of worker relations. In line with predictions, the three sub-scales (co-worker, supervisor and organisation) were positively correlated with job satisfaction and social relations.
Practical implications
The new scale provides a freely available and parsimonious alternative to existing measures of worker relations.
Originality/value
The paper considers the component aspects of worker relations before defining, theorising and developing a general purpose short instrument capable of quantitatively measuring worker relations.

Abstract
This research provides accounting-ethics authors and administrators with a benchmark for accounting-ethics research. While Bernardi and Bean (2010) considered publications in business-ethics and accounting’s top-40 journals this study considers research in eight accounting-ethics and public-interest journals, as well as, 34 business-ethics journals. We analyzed the contents of our 42 journals for the 25-year period between 1991 through 2015. This research documents the continued growth (Bernardi & Bean, 2007) of accounting-ethics research in both accounting-ethics and business-ethics journals. We provide data on the top-10 ethics authors in each doctoral year group, the top-50 ethics authors over the most recent 10, 20, and 25 years, and a distribution among ethics scholars for these periods. For the 25-year timeframe, our data indicate that only 665 (274) of the 5,125 accounting PhDs/DBAs (13.0% and 5.4% respectively) in Canada and the United States had authored or co-authored one (more than one) ethics article.

Among university business students today there is much idealism and a strong belief in the rational model of business activity. For those who are headed for initial appointments in corporate structures there will be disillusionment. Whether entering a new organization as a first‐time employee, or entering a new position as an employee of long standing, individuals are likely to experience feelings of anxiety, helplessness, and surprise. This effect is commonly known as “entry shock.” In this paper we (1) review an experiential exercise designed for classroom use, (2) describe implications and use of the exercise in anticipatory socialization to help abate future business entry shock for students, (3) present the results of several such applications of the exercise, and (4) suggest procedures which may be used to facilitate the use of the exercise.

Abstract
Since the late 1990s, teacher professional development models have shifted from a focus on individual improvement to collaboration as a means to foster support, information, and resource exchange between teachers. Following this shift, researchers began to use social network research methodology in the early 2000s to reveal the ways in which informal relationships affect teachers’ practices. This chapter reviews current literature on teachers’ social networks and teacher quality to describe the ways in which social networks mediate teachers’ practices. It provides detailed examples from two studies on teachers’ social networks and suggests ways that scholars can incorporate the constructs of social capital and social networks into large-scale research on teacher quality.

Abstract
This paper explores the contribution of the AAA Symposium on Ethics Research in Accounting to fostering accounting ethics research. For a 17-year period, the contributors, their schools of affiliation, and their research topics were analyzed to determine the extent of and trends in accounting ethics research. The research rankings of the contributing authors were examined in business ethics journals, top-40 accounting journals, and accounting education journals. Institutional rankings identify supportive places to do accounting ethics research. The impact of significant accounting scandals such as Enron and Madoff was examined and a financial scandal “bump” in paper presentations was found. Authors affiliated with Texas schools had papers following the state requirement of an ethics accounting course. A large amount of ethics education-related research was also presented at the Ethics Symposia. Overall the study results indicate that the Symposium with its AAA affiliation is a high-quality venue for paper presentation.

Abstract
Describes a study designed to investigate the banking behavior of Islamic bank customers in the state of Bahrain. The study sample comprised 300 customers. A comprehensive profile analysis and a series of chi‐square tests were conducted to reveal key characteristics and patterns: the majority of Islamic bank customers are well educated; approximately 80 per cent are between 25‐50 years of age; more than 50 per cent of the surveyed customers have maintained their current banking relationship with Islamic banks for more than six years; customers’ awareness and usage rates are quite high for savings accounts, current accounts, investment accounts and automated teller machines; customers were found to be most satisfied with the products/services they use most, with the investment accounts receiving the highest satisfaction score; Islamic bank employees received the highest satisfaction score among the elements of the service delivery system; the two most important bank selection criteria were adherence to the Islamic principles, followed by the rate of return.
