Abstract

Purpose

A plethora of publications have reported several cytotoxic effects associated with chronic consumption of thermoxidized palm oil. This research aims to investigate the effects of garlic and Aloe vera on liver function and hepatic cytoarchitecture in rats fed thermoxidized palm oil diet.

Design/methodology/approach

Thirty-five male albino Wistar rats weighing 150-180 g were used for this study. They were randomly assigned into five groups (n = 7): control, thermoxidized palm oil diet fed (TPO), TPO plus garlic juice (TPO + G), TPO plus Aloe gel (TPO + A) and TPO plus garlic/Aloe gel (TPO + G + A). The TPO diet was prepared by mixing 15 g of cooled thermoxidized palm oil with 85 g of rat feed. The juice and gel were orally administered at doses of 2.00 ml/kg and 19.12 ml/kg, respectively. After 3 months of feeding and administration, the animals were sacrificed using standard methods and blood collected via cardiac puncture for analysis.

Findings

Serum alanine aminotransferase (ALT), aspartate aminotransferase (AST) and alkaline phosphatase were significantly increased (p < 0.001) in the TPO group compared to the control. This increase was reduced (p < 0.001) in all the treated groups compared to TPO, with the greatest decrease (p < 0.001) seen in TPO + A. Total bilirubin was increased (p < 0.001) in the TPO group compared to the control, whereas there was a significant decrease (p < 0.001) in all the treated groups. Serum proteins and plasma fibrinogen were lowered (p < 0.001) in the TPO group compared to the control but increased progressively in all the treated groups. TPO induced prominent histopathological derangements of the liver tissues. However, there were marked improvements following treatment with garlic and Aloe vera.

Originality/value

The results obtained in this study have revealed that chronic consumption of thermoxidized palm oil is hazardous to health by inducing hepatotoxicity, as seen in increased ALT, AST and total and unconjugated bilirubin and decreased total protein. However, these debilitating effects were seen to be greatly ameliorated following garlic juice and Aloe vera gel administration. If these results are to be extrapolated to humans, then the chronic consumption of thermoxidized palm oil diet should be seriously discouraged.

This study was aimed to develop and evaluate nutritional efficacy and bio-efficacy of food products from plantain, soycake, rice-bran and oat-bran flour.

Abstract

Purpose

This study was aimed to develop and evaluate nutritional efficacy and bio-efficacy of food products from plantain, soycake, rice-bran and oat-bran flour.

Design/methodology/approach

The flour samples were blended as follows: plantain 70% and soycake 30% (PS); plantain 65%, soycake 30% and rice bran 5% (PSR); plantain 65%, soycake 30% and oat bran 5% (PSO); and plantain 60%, soycake 30%, rice bran 5% and oat bran 5% (PSRO). Antioxidant and nutritional properties of the blended foods and controls (100% plantain and Cerolina) were determined.

Findings

Protein (16.2–19.4 g/100g) and biological values (98.5–99.3%) of the food samples were significantly (p = 0.03) higher than 100% plantain (5 g/100g, 31.6%) and Cerolina (17.9 g/100g, 98.3%). Pack cell volume (36.2–42%), serum protein (7.3–9.3 mg/dL), urea/creatinine (1.1–2.8) and aspartate-aminotransferase/alanine-aminotransferase ratio (0.9–1) of the foods were significantly (p = 0.03, 0.01, 0.02 and <0.01, respectively) higher than 100% plantain (28%, 1.6 mg/dL, 4.6 and 0.8) and Cerolina (46%, 4.9 mg/dL, 3 and 0.73). In vivo antioxidant activity of the food samples decreased from PSRO to PSO, PSR and PS, respectively and were higher than control samples. Nutritional performance of formulated foods in rats was similar to that of Cerolina, but higher than in 100% plantain. Cerolina and 100% plantain were rated higher in overall acceptability than formulated foods; however, PSO was most preferred followed by PSRO for the formulated foods.

Originality/value

The study established that PSRO was rated best in terms of nutrition, growth performance and antioxidant activities. Hence, this food may be suitable as functional food to prevent malnutrition and oxidative stress.

Abstract

Purpose

This paper aims to evaluate the impact of garden cress supplemented biscuits on the nutritional status of malnourished children.

Design/methodology/approach

For the present study, 60 underweight and anemic seven-nine-year-old school children were selected according to the World Health Organization (WHO) classification and divided into two groups, i.e. experimental (30) and control (30). Biscuits (60 g) developed using roasted garden cress seeds were supplemented to the experimental group, while biscuits without garden cress seeds were provided to control group for a period of three months and impact was observed in terms of improvement in nutritional status of subjects before and after the supplementation.

Findings

The food and nutrient intake increased with increased percent nutrient adequacy and sharp increase (p ≤ 0.05) was noticed in cereal, fat and sugar after supplementation. Average height, weight, body mass index and mid-upper arm circumference increased, with 3.56 and 0.87 per cent gain in weight and height (p ≤ 0.05) respectively. Hemoglobin levels increased from 10.6 to 11g/dl with little improvement (p ≤ 0.05) in proteins, albumin and other indices of blood profile and nine subjects fell in non-anemic category.

Research limitations/implications

The diets of both groups were not controlled, which might have varied the results.

Practical implications

Garden cress-seed-enriched biscuits were able to have a positive impact on the nutritional profile of malnourished and anemic school children.

Social/implications

The duration of supplementation was short, which may have affected these results. Therefore, researchers are encouraged to perform long-duration supplementation study for more accurate results.

Originality/value

This paper identifies the need for promoting garden cress seeds in supplementary foods to reduce malnutrition.

Abstract

Purpose

The aim of the study was to compare the nutritional status of children having celiac disease (CD) with those not having the disease in the age group of 7-12 years. Children not having CD were from first- and second-degree siblings of the children affected to match for family and environment. In Indian celiac pediatric population, studies on nutritional status of celiac children and comparisons with their siblings as reference have not been reported.

Design/methodology/approach

Children with CD (n = 50) and without CD (n = 25) were matched for age and were purposively selected. Nutritional assessment included anthropometry, biochemical, clinical and nutrient intake. Weight and height measurements were recorded as per the standardized techniques. Biochemical investigations were done by skilled technicians. A two-day 24-h dietary recall method was used for calculation of nutrient intake. The observations were categorized as celiac and non-celiac children and pre-adolescents in age group of 7-9 years and 10-12 years.

Findings

The issues of being underweight and of low height according to age among celiac children were rampant. The non-celiac children were comparatively taller than children with CD. The hemoglobin and serum iron were significantly lower in celiac than non-celiac group (p < 0.01). Energy intake was significantly higher (p < 0.05) in celiac pre-adolescents as compared to non-celiac children (7-9 years). The protein intake was higher in non-celiac children, and the difference was highly significant (p < 0.01). The fat consumption was higher in celiac pre-adolescents. The nutritional status of celiac children was poor as compared to non-celiac children.

Originality/value

The present study is an attempt to compare the nutritional status of celiac children with their siblings.

Abstract

Purpose

Evaluation of the effect of yoghurts enriched with a complex of vegetable additives on the state of the antioxidant defense system, the content of triglycerides and cholesterol in rats exposed to toxic seeds with cadmium chloride. The purpose of this paper is evaluation of the effect of yoghurts enriched with a complex of vegetable additives on the state of the antioxidant defense system, the content of triglycerides and cholesterol in rats exposed to toxic cadmium chloride.

Design/methodology/approach

The studies were carried out on 72 male rats (Wistar), divided into six groups (n = 12): control, model of cadmium intoxication and receiving the developed dairy product, enriched with appropriate biologically active supplements (rosehip, rowan and hawthorn berries syrup and grape peel extract [rich in resveratrol]). Biochemical parameters of blood, homogenates of the liver and kidneys were analyzed.

Findings

The intensity of lipid peroxidation processes (in the liver, kidneys and erythrocytes) decreased in the group receiving dairy products enriched with berry syrups and grape peel extract (rich in resveratrol). The activity of catalase, total antioxidant activity and superoxide dismutase increased. In the groups receiving dairy products enriched with berry syrups, the total protein level in the blood increased, compared with Group 2. The content of triglycerides and cholesterol levels in groups receiving dairy products decreased significantly compared to animals intoxicated with cadmium chloride.

Originality/value

The topic of cadmium’s toxic effects on human and animal health and methods for solving this problem is very relevant.

Abstract

Purpose

The purpose of this study was to evaluate in vivo the bioavailability of the Ilex paraguariensis polyphenols due to total polyphenols and changes in antioxidant capacity (AOC) in human plasma after an acute intake of 300 ml of an infusion of yerba maté (YM) for 120 minutes. Also, we evaluated the variation of plasma protein or plasma uric acid after the acute intake of YM infusion.

Design/methodology/approach

Seventeen healthy young volunteers participated in the determining plasma of total polyphenols concentration (TPC, Folin-Ciocalteu method), plasma AOC for ferric reducing antioxidant power (FRAP) and 2,2′-azinobis-3-ethylbenzothiazoline-6-sulfonic acid diammonium salt [ABTS] methods), plasmatic uric acid and plasma total protein over the 120 minutes test.

Findings

It was found that the bioavailability of YM polyphenols during 120 minutes was 49.3 ± 11.9 per cent, the TPC was increased to 6.0 ± 1.5 per cent, the plasma AOC was increased by FRAP 8.3 ± 3.3 per cent and by ABTS 6.0 ± 2.0 per cent and no significant variation of plasma protein or plasma uric acid was found.

Practical implications

Maté polyphenols has a thrifty effect on the natural antioxidant defenses of the body, which are beneficial to human health.

Originality/value

There was no information on the bioavailability of polyphenols in YM infusions prepared in its traditional form as “hot mate”.

Abstract

Purpose

The purpose of this study was to evaluate the antioxidant and hypocholesterolemic activities of sardine and bogue protein hydrolysates in cholesterol-fed rats.

Design/methodology/approach

In total, 18 male Wistar rats (220 ± 10 g) fed 20 per cent casein, 1 per cent cholesterol and 0.5 per cent cholic acid were divided into three groups and received a daily gavage of 250 mg of sardine (SPH) or bogue (BPH) protein hydrolysates for 30 days. The third group, named control group (CG), received in the same conditions water. Lipoproteins were fractionated by size-exclusion fast protein liquid chromatography, and serum lipids, apolipoproteins and lipoproteins were assayed.

Findings

In SPH and BPH groups, serum total cholesterol concentrations were −66 per cent lower than in CG. This corresponded to the decreased very low-density lipoprotein-C in the former groups. Moreover, BPH treatment reduced low-density lipoprotein-C compared with CG and SPH groups. Compared with CG, serum phospholipids were reduced by SPH and BPH. Furthermore, BPH increased significantly APOA4 and sphingomyelin but lowered phosphatidylcholine. In the latter group, serum lecithin cholesterol acyltransferase activity was +23 per cent higher, but with SPH, this activity was −35 per cent reduced compared with CG. Apolipoprotein A-I contents were similar in the three groups. Compared with CG, hydroperoxide and lipid peroxidation contents in serum and lipoprotein fractions were reduced by SPH and BPH. Compared with CG, serum superoxide dismutase and glutathione peroxidase activities were increased in the treated groups, particularly in the BPH group.

Originality/value

These results suggest that sardine protein hydrolysates and particularly those of bogue could be a very useful natural compound to prevent hypercholesterolemia by both improving the lipid profile and modulating oxidative stress in cholesterol-fed rats.

Abstract

Purpose

This paper aims to evaluate hematological parameters, blood glutathione (GSH), serum glucose-6-phosphate dehydrogenase (G6-PD) and liver function in favism animals' models after oral intake with a mixture of pickled olives and Vicia faba (V. faba) seeds.

Design/methodology/approach

Favism is a life-threatening hemolytic crisis. It results from the ingestion of V. faba by the individuals. The hemoglobin (Hb), hematocrit (Hct), red blood cells (RBCs), white blood cells (WBCs), serum glucose, blood GSH, serum G6-PD, serum thiobarbaturic acid reactive substances (TBARS), liver protein and liver function were evaluated after oral administration with a mixture of pickled olives with V. faba seeds in favism animals' models.

Findings

The favism-, vicine- and convicine-treated animals showed a significant decrease (p < 0.01) in Hb (6.42, 7.23 and 5.96 g/dl), Hct (25.4, 26.4 and 25.1%), RBCs (2.56, 2.45 and 2.60 106 cells/mm3, WBCs (4.35, 4.25 and 4.30 103 cells/mm3), serum glucose (95.8, 97.1 and 96.5 mg/dl), blood GSH (24.7, 26.6 and 23.8 mg/dl), serum G6-PD (15.8, 15.9 and 15.7 U/L), serum aspartate aminotransferase (6.35, 6.59 and 5.97 U/L), alanine aminotransferase (4.49, 4.61 and 4.50 U/L), total protein (6.54, 6.59 and 6.40 g/dl), albumin (3.84, 3.91 and 3.75 g/dl), globulin (2.70, 2.48 and 2.65 g/dl) and liver protein (3.37, 3.10 and 3.42 g/g tissue) but a significant increase (p < 0.01) in serum TBARS (38.7, 38.9 and 39.4 nmol/dl), alkaline phosphatase (275, 271 and 281 U/L) and total bilirubin (0.93, 0.89 and 0.91 mg/dl) compared to Hb (16.3 g/dl), Hct (45.3%), RBCs (5.80 106 cells/mm3), WBCs (9.45 103 cells/mm3), serum glucose (96.5 mg/dl), blood GSH (39.7 mg/dl), serum G6-PD (36.1 U/L), serum TBARS (18.0 nmol/dl), serum aspartate aminotransferase (19.8 U/L), alanine aminotransferase (9.23 U/L), alkaline phosphatase (214 U/L), total bilirubin (0.57 mg/dl), total protein (8.76 g/dl), albumin (4.85 g/dl), globulin (3.91 g/dl) and liver protein (6.28 g/g tissue) in control group. The oral administration with pickled olives + V. faba, pickled olives + vicine and pickled olives + convicine into favism animals' models, vicine-treated animals and convicine-treated animals, respectively pushed all the above-mentioned parameters to near the control levels.

Originality/value

V. faba contains vicine and convicine glycosides. Vicine and convicine glycosides in V. faba are hydrolyzed by intestinal microflora to aglycones divicine and isouramil, respectively. Divicine and isouramil are highly reactive compounds generating free radicals where divicine and isouramil are the main factors of favism. The ß-glucosidase in pickled olives converts both vicine and convicine glycosides into aglycones divicine and isouramil, respectively, in aerobic condition outside the human body (in inactive forms) and prevent these glycosides to cause favism.

Abstract

Purpose

The purpose of this paper is to determine the effects of different dietary protein and lipid origins on serum HDL2 and HDL3 compositions and lecithin: cholesterol acyltransferase (LCAT) activity in growing rats fed a 0.5 per cent cholesterol‐enriched diet with either 20 per cent casein (C), chick pea (CP) or lentil (L) proteins combined to 10 per cent olive (O) or salmon (S) oil for 28 days.

Design/methodology/approach

HDL2 and HDL3 separation according to Sjöblom and Eklund and LCAT activity according to Glomset and Wright.

Findings

Serum total cholesterol was 1.3‐fold lower in CPS than in CPO group. HDL3 amounts were 2‐ and 1.5‐fold higher in CPO and LO groups, respectively, compared to CO group. HDL3‐unesterified cholesterol values were, respectively, 2‐ and 5‐fold lower in CPO and LO groups than in CO group, and were threefold decreased in CPS and LS groups vs CS group. HDL3‐phospholipids in LO group represented 12 and 51 per cent of the CO and CPO group values, respectively. HDL2‐triacylglycerol amounts were decreased in LO group vs CO group (−67 per cent) and in CPS and LS groups (−62 per cent) compared to CS group. HDL3‐apolipoprotein A‐I values were lower in LO group vs CO and CPO groups, and in CPS group vs CS group. However, LCAT activity was similar in all the studied groups.

Originality/value

The paper shows that when diets containing casein, chick pea or lentil proteins combined with olive or salmon oil are supplemented with cholesterol, HDL2 and HDL3 compositions are impaired despite unchanged LCAT activity. Moreover, if oils modify HDL compositions, dietary proteins play a critical role in these modifications.

Abstract

Purpose

The purpose of this study was to determine the effects of chickpea (Cicer arietinum) protein hydrolysates prepared at two degrees of hydrolysis (DH) on lipoprotein profile and on oxidant status in cholesterol-fed rats.

Design/methodology/approach

Eighteen male Wistar rats (220 ± 10 g) were divided into three groups and fed for 30 days a diet containing 20 per cent casein supplemented with 1 per cent cholesterol and 0.5 per cent cholic acid. During the experimentation, the first and the second groups received daily by gavage 250 mg of chickpea protein hydrolysates/rat at DH = 8 per cent (CPH8) and DH = 17 per cent (CPH17), respectively. The third group, named control group (CG), received water under the same conditions.

Findings

Serum total cholesterol concentrations were reduced in CPH8 (p < 0.0073) and CPH17 (p < 0.0004) groups versus CG. This reduction corresponded to a lower very-low-density lipoprotein (VLDL)-cholesterol (p < 0,0019). CPH17 reduced low-density lipoprotein- and high-density lipoprotein (HDL)-cholesterol (p < 0.0001) but increased apolipoprotein A4 (p < 0.002) concentrations and lecithin-cholesterol acyltransferase activity (p < 0.0001). APOA1 remained unchanged in the treated groups. Liver total and esterified cholesterol contents were twofold lower in both treated groups versus CG. CPH8 increased triacylglycerols and phospholipids (p < 0.0001) contents, while CPH17 decreased those of unesterified cholesterol (p < 0.0016). Compared with CG, CPH8 and CPH17 reduced serum (p < 0.0001) and lipoprotein hydroperoxides by stimulating paraoxonase activity (p < 0.0001). However, only CPH17 treatment reduced serum, VLDL- and HDL-malondialdehyde contents and improved glutathione peroxidase activity (p < 0.061).

Originality/value

Thus, chickpea protein hydrolysates and especially hydrolysed at DH = 17 per cent may have a great potential for use as a nutraceutical to reduce hypercholesterolaemia and, by consequence, oxidative stress. Therefore, the degree of enzymatic hydrolysis has a significant influence on the production of potent bioactive peptides.
