Abstract
Purpose
Domestic preparation practices influence the sensory properties and nutritional composition of food products. Information on the variability in actual domestic preparation practices is needed to assess the influence of applied conditions on the sensory and nutritional quality of food. The collection of such information requires a reliable, valid and practical research method. The paper aims to discuss these issues.
Design/methodology/approach
Direct in-home observations, observations in a model-kitchen using cameras, and a self-reporting questionnaire were evaluated for reliability and validity, to study domestic food preparation practices by consumers. Broccoli preparation practices by Dutch consumers were checked by these three methods in this research paper.
Findings
All three research methods were found to be test-retest, inter-observer, parallel-form reliable; and face, content and concurrent valid. However, the self-reporting questionnaire is the most practical research method that can be administered on a large number of respondents in a short time to capture the wide variations in preparation practices.
Originality/value
Consumers can be assisted on domestic food preparation practices that reach their sensory preferences (e.g. texture, colour) as well as have health benefits on consumption.

Abstract
Purpose
This paper focusses on the leaders' ability to recognise and empathise with emotions. This is important because leadership and particularly transformational leadership are principally focussed on an individual's social interactions and their ability to identify emotions and to react empathetically to the emotions of others (Psychogios and Dimitriadis, 2020). Many leadership theorists suggest the ability to have and display empathy is an important part of leadership (Bass, 1990; Walumbwa et al., 2008).
Design/methodology/approach
To examine the extent to which those who work in jobs with a significant element of leadership education can recognise and empathise with emotions, 99 part-time postgraduate executive Master of Business Administration (MBA) students took part in an emotional recognition test. First, all participants were shown a sequence of pictures portraying different human facial expressions and the electrical activity in the brain as a result of the visual stimuli were recorded using an electroencephalogram (EEG). The second stage of the research was for the participants to see the same seven randomised images, but this time, they had to report what emotion they believed they had visualised and the intensity of it on a self-reporting scale.
Findings
This study demonstrated that the ability to recognise emotions is more accurate using EEG techniques compared to participants using self-reporting surveys. The findings from this study provide academic departments with evidence that more work needs to be done with students to develop their emotional recognition skills. Particularly for those students who are or will go onto occupy leadership roles.
Originality/value
The use of neuroscientific approaches has long been used in clinical settings. However, few studies have applied these approaches to develop the authors’ understanding of their use in social sciences. Therefore, this paper provides an original and unique insight into the use of these techniques in higher education.

Abstract
Purpose
The purpose of this study is to evaluate student visual literacy skills using the newly designed visual literacy framework and visual literacy (VL) scale.
Design/methodology/approach
It includes a newly designed framework, a self-reporting questionnaire and a scale to evaluate an individual's VL skills and overall competency. The self-reporting questionnaire consists of 13 items with a five-point Likert scale.
Findings
The newly developed VL skill scale assessed the Fiji students’ competency (i.e. identify, understand, evaluate and communicate using visuals). The mean for the 13 items on VL skills showed average results, but 46.33% recorded high visual literacy competencies. The multiple linear regression analysis outcomes showed all 13 skills demonstrated significant contributions to becoming visually literate.
Research limitations/implications
The limitation of this study is that the questionnaire is self-reporting, so the evaluation can be highly rated. The implications are that relevant stakeholders will be able to devise strategies and content to improve visual literacy in Fiji.
Practical implications
Images are playing an important role today, especially after COVID-19, which forced the education system to go online. Online learning involves a lot of visuals, and as such, visual literacy is important to students so that they can successfully learn online. This paper brings out the important aspects of visual literacy, which needs to be understood by the students.
Social implications
In society, everything involves visuals. This paper introduces a visual literacy scale and a visual literacy tool to measure the visual competencies of individuals. If people understand the components of visual literacy, then visual competencies of the people will also improve.
Originality/value
To the best of the authors’ knowledge, this paper is the first one on evaluating visual literacy competencies in Fiji and also in the South Pacific. The visual literacy tool is also new to the world.

Abstract
Purpose
The purpose of this study is to use a developed and pre-tested scenario-based measurement instrument for policy compliance and determine whether policy compliance measurements in the current policy compliance research are biased as has been postulated during a pre-study. The expected biases are because of social desirability and because of biases based on identity theory.
Design/methodology/approach
A survey was conducted (n = 54) that used policy compliance scales from literature and the developed self-reporting policy compliance (SRPC) scale, along with the Marlow–Crowne social desirability (MC-SDB) scale. Differences between the policy compliance scales were assessed. Moreover, a transformation of the SRPC measurements into the literature-based scales was examined using pair-wise t-testing. Finally, correlations between the MC-SDB and the policy compliance scales were examined.
Findings
There are no significant influences on the desire for social approval of the respondents as was exhibited by the MC-SDB values and policy compliance on either scale. However, the SRPC scale measurements show deviations from the literature-based policy compliance scales. Individuals that exhibit secure behaviour, which is not rooted in a policy but rather in anything but the policy, are also captured as being policy compliant in the current scales. This shows that a response bias exists in current scales. Respondents, who perceive to exhibit secure behaviours, may think that they are in compliance with the policy, even when they are not.
Practical implications
These findings mean that several contributions in the field of policy compliance must be questioned and that a revisit of several factors influencing policy compliance may be required.
Originality/value
To the best of the authors’ knowledge, response biases in policy compliance research have not been considered to date.

Abstract
Purpose
Providing health care services requires collaboration between several occupations. This study aimed to reveal how three occupational groups (nurses, physicians, and administrators) perceive human resources management practices (HRMP) and whether these practices are differently associated with trust in the clinic manager.
Design/methodology/approach
The study included 290 employees from 29 primary care clinics, all affiliated with a health care organisation that operates in the public sector. Self-reporting questionnaires measured participants’ perceptions of six HRMP across occupations and their association with trust in the clinic manager. Variation between occupational groups was analysed through one-way analysis of variance (for groups’ perceptions of HRMP and trust in manager) and t-tests (for the association between perceived HRMP and trust in manager).
Findings
The results indicate some differences in perceived HRMP and trust across groups. Also, some differences were found across occupations regarding the relationship between HRMP and trust in the clinic manager: Nurses’ perceptions significantly differed from those of physicians and administrators, yet there was no significant difference between the two latter groups.
Practical implications
Health care organisations should expand their human resources architecture and customise their HRMP for each occupational group based on that group’s perceptions of the workplace. This can nurture trust in managers and create a climate for trust as a mechanism that encourages employees from distinct occupational groups to work together for the benefit of their clinic, organisation, and patients.
Originality/value
This study contributes to the discussion about the contextualisation of HRMP, providing insights regarding perceptions of HRMP as an enabler of an organisation’s strategy.

Abstract
Purpose
This research examined correlations between contextual factors: frequency of online teaching (OT) (number of hours per week), Transformational Leadership Style (TLS) and TPACK (TPACK) among Arab and Jewish teachers in Israel after more than a year of teaching online during the Covid-19 crisis.
Design/methodology/approach
Quantitative methodology elicited data from 437 questionnaires. An online questionnaire was first sent to Israeli Arab and Jewish teachers studying for M.A degrees in three randomly selected higher education institutes in Israel, and then the questionnaire was sent to other teachers, selected through the snowball method. After data collection common method variance was precluded.
Findings
The findings of this research indicated a positive correlation between frequency of OT, TLS and TPACK among Israeli teachers. Major differences were found between Arab and Jewish teachers: Arab teachers (AT) reported more improvement of TPACK, although they taught fewer hours than Jewish teachers (JT). In addition, TLS and sector (Arab/Jewish) moderated the positive correlation between the frequency of OT and TPACK among ATs.
Originality/value
The findings of this research validate the opportunity created by the Covid-19 crisis for cultivation of teachers’ TPACK through OT. This research contributes to extant relevant literature and practice concerning the influence of contextual factors on teachers' improvement of their TPACK while performing OT during the Covid-19 crisis and can inform the design of ecological and culturally appropriate education policies in the post-COVID-19 period. The research was built on the theories of TLS, which is a crucial component supporting the influence of technology integration. The findings strengthen existing knowledge on the unique capacity of TLS to buffer negative external influences imposed on teachers' TPACK and motivate them.

Abstract
Purpose
The purpose of this paper is to address the subjectivity inherent in existing methods of human capital value measurement (HCVM) by proposing a 360‐degree peer review as a method of validating self‐reporting in HCVM surveys.
Design/methodology/approach
The case study is based on a survey of a section of the Royal Australian Navy. The sample was 118 respondents, who were mainly engineering and technical workers, and included both civilian and uniform.
Findings
The research may be summarised in three main findings. First, it confirms previous research demonstrating that correlations between self‐ and other‐ratings tend to be low. However, while previous research has found that self‐rating tends to be higher than other‐rating, it was found to be the opposite: other‐rating was higher than self‐rating. Second, personality is discounted as an influencing variable in self‐rating of knowledge. Third, there are patterns in the size of the discrepancy by knowledge dimension (i.e. employee capability, employee sustainability) that allow generalisation about the adjustment necessary to find an accurate self‐other rating of knowledge.
Research limitations/implications
The findings are based on a single case study and are therefore an exercise in theory development rather than theory testing.
Practical implications
The 360‐degree peer review rating of knowledge has considerable application. First, use the outcomes in the way 360‐degree feedback has been traditionally used; i.e. identifying training needs assessment, job analysis, performance appraisal, or managerial and leadership development. Second, use it for performance appraisal – given the method's capacity to identify issues at a very finite level: e.g. are you building effective relationships with customers? Third, identify knowledge gaps, at a strategic level, for recruitment and development targets. Finally, in terms of financial decisions investors might be able to compare knowledge scores by organization.
Originality/value
Traditionally, researchers and practitioners have used other‐ratings as a tool for identifying training and development needs. In this paper, other‐ratings have been introduced as a method for validating self‐rating in the measurement of knowledge. The objective was to address one of the weaknesses in existing methods – subjectivity. The solution to this problem was to use three data points – self‐reporting, 360‐degree peer review, and personality ratings – to validate the measurement of individuals’ human capital. This triangulation method aims to introduce objectivity to survey methods, making it a value measurement rather than value assessment.

Abstract
Purpose
The purpose of the study was to identify the inter-relationship of certain antecedents of innovative work behaviour (IWB). The antecedents identified for the study were workplace agility (WA), organizational identity (OI) and organizational solidarity (OS).
Design/methodology/approach
Data for the study were collected online using four standardized and validated questionnaires from 364 gainfully employed respondents from across Saudi Arabia. The respondents belonged to various forms of organizations like manufacturing, service, hospital and banking. The data collected for the study were analysed using structural equation modelling (SEM).
Findings
The study found a significant positive relationship between the identified concepts of WA, workplace identity, OS and IWB.
Originality/value
A detailed review of the literature found that no previous studies had examined the complex relationship between the identified constructs. The results of the study found a significant positive relationship between the constructs. The findings of the study have many theoretical and practical values and implications. It also enriches the literature about the antecedents of IWB. It is expected that the present study will act as a trigger for more empirical examinations in this interesting area.

Abstract
Purpose
The purpose of this research is to explore how knowledge source and knowledge recipient influence knowledge transfer performance through political skill and partnership quality, and in so doing to make up for the lack of research on the political skills of knowledge sources in the process of knowledge transfer.
Design/methodology/approach
This research used paired-sample questionnaires to conduct a survey. One direct supervisor was paired with 1–4 subordinates; 224 other-reported questionnaires were sent out to supervisors and 896 self-reported questionnaires to subordinates. A total of 171 valid supervisor questionnaires and 511 valid subordinate questionnaires were collected. Hierarchical regression analysis was used to analyze the data.
Findings
This empirical research demonstrated that knowledge sources with political skills can promote partnership quality and influence the success of knowledge transfer.
Research limitations/implications
This study was a cross-sectional design. Therefore, in our future research, self-report and non-self-report data will be collected in the process of questionnaire administration, and a multi-group questionnaire method (time/field isolation method) will be adopted to avoid having the same source of data. Supervisors and employees will be divided into different groups to collect sources, and the results from two different sources will be used to reduce the negative impact of common method variance.
Practical implications
External knowledge sources with political skills can impact recipient' knowledge transfer performance in the workplace, which means that external knowledge sources can provide the organization with innovative ideas and implementation skills.
Originality/value
The study presents a valid model that comprises the antecedents (characteristics of the source of knowledge), mediators (partnership quality), moderators (political skill) and consequences of knowledge transfer performance of firms.

Abstract
Purpose
This article aims to present a unique dimension to mentor studies in that unlike most research that focuses on the novice-teachers-mentee, this study explores the influence of mentoring on the mentors themselves. Two main questions were examined: “Which components of mentoring influence the mentors' professional development?” and “What is the differential impact of each of these components as they are internalized by the mentors?”
Design/methodology/approach
A total of 765 mentors completed a questionnaire composed of 47 multiple-choice questions and an open-ended question describing the contribution of mentoring. The survey thus generated both quantitative and qualitative data.
Findings
The results show three main components of mentoring that influence mentors' professional development in the following order: personal–emotional, didactic knowledge and systemic–organizational. The findings also illustrate how the mentors used a comparison process to develop their professional perception: first, by comparing their role as a teacher and their role as a mentor, and second, by comparing their own professional identity as a teacher with that of the novice-teacher.
Research limitations/implications
The implications of the study point to the importance of mentoring for mentors' professional development. Practical implications of this study encourage mentor training courses that combine a body of knowledge of theory and practice, as well as supervision and mentoring for mentors. It may be important for mentors to develop a professional identity as mentors that is distinct from their professional identity as teachers.
