Abstract

Purpose

Climate change-related weather events significantly affect rice production. In this paper, we investigate the impact of and interrelationships between agriculture inputs, climate change factors and financial variables on rice production in India from 1970–2021.

Design/methodology/approach

This study is based on the time series analysis; the unit root test has been employed to unveil the integration order. Further, the study used various econometric techniques, including vector autoregression estimates (VAR), cointegration test, autoregressive distributed lag (ARDL) model and diagnostic test for ARDL, fully modified least squares (FMOLS), canonical cointegrating regression (CCR), impulse response functions (IRF) and the variance decomposition method (VDM) to validate the long- and short-term impacts of climate change on rice production in India of the scrutinized variables.

Findings

The study's findings revealed that the rice area, precipitation and maximum temperature have a significant and positive impact on rice production in the short run. In the long run, rice area (ß = 1.162), pesticide consumption (ß = 0.089) and domestic credit to private sector (ß = 0.068) have a positive and significant impact on rice production. The results show that minimum temperature and direct institutional credit for agriculture have a significant but negative impact on rice production in the short run. Minimum temperature, pesticide consumption, domestic credit to the private sector and direct institutional credit for agriculture have a negative and significant impact on rice production in the long run.

Originality/value

The present study makes valuable and original contributions to the literature by examining the short- and long-term impacts of climate change on rice production in India over 1970–2021. To the best of the authors’ knowledge, The majority of the studies examined the impact of climate change on rice production with the consideration of only “mean temperature” as one of the climatic variables, while in the present study, the authors have considered both minimum as well as maximum temperature. Furthermore, the authors also considered the financial variables in the model.

Abstract

Purpose

The purpose of this paper is to determine the α‐amylase and α‐glucosidase inhibitory properties of grains of some red and white varieties of rice from India.

Design/methodology/approach

Methanolic extracts of different rice varieties were analyzed for their α‐amylase and α‐glucosidase inhibitory properties. Total phenol and total anthocyanin contents were measured.

Findings

The white varieties of rice grains showed weak α‐glucosidase inhibitory activity and no α‐amylase inhibitory activity. The red varieties of rice grains showed good α‐glucosidase and α‐amylase inhibitory activities. The activities in these red varieties of rice, as determined by the IC50 values, were found to be correlated to total anthocyanin content. α‐glucosidase inhibitory activity of cyanidin‐3‐glucoside, the anthocyanin reported from rice grains was studied. But the IC50 values of different red varieties of rice were much less than that of cyanidin‐3‐glucoside indicating higher activity of red rice grain extracts than the purified pigment. This might be due to synergistic activity with other components present in rice extract.

Originality/value

The report shows hypoglycaemic potential of red varieties of rice grains.

Abstract

Purpose

Rice is considered a high glycemic index food. However, the overall glycemic response to whole foods differs based on the presence of co‐components, cooking or processing technique, starch composition, and amount of food consumed. The purpose of this paper is to observe the relative glycemic impact (RGI) of foods based on postprandial glycemic response to equal quantities of test foods and standard‐bread expressed as glycemic bread equivalent (GBE), using rice and its products.

Design/methodology/approach

In total, five clinically healthy adult volunteers were fed 50 g test foods and bread on different days after an overnight fast. Blood sugar and insulin levels at fasting state and at 30, 60, 90 and 120 min after consuming food were recorded and corresponding area under the curve was calculated.

Findings

The GBE was highest for puffed rice at 107 g, whereas same amount of rice kheer and plain boiled rice induced glycemic response equivalent to 19.5 g and 11 g of bread, respectively. RGI of puffed rice was found to be significantly higher than that of rice kheer and boiled rice (p<0.01). Similarly, the total insulinemic effect of puffed rice (71 g) was found to be significantly higher than that of rice (6 g, p<0.01) and rice kheer (19 g, p<0.05).

Practical implications

Despite being prepared from common raw ingredient, all the three test foods produced varied glycemic and insulin responses. This can be attributed to the different processing conditions, change in nutrient composition and total quantity consumed.

Originality/value

The GBE values may constitute a simple and easy‐to‐use tool for consumers to select food in terms of their predicted glycemic and insulin responses, especially in the diabetic or insulin‐resistant group.

Abstract

Purpose

Rice consumption per capita in many Asian countries is decreasing constantly, but American and European citizens are eating more rice nowadays. A preference study among consumers was carried out with the aim of determining new rice product characteristics in order to support export of Thai rice. This paper aims to report the results

Design/methodology/approach

The research was based on both secondary and primary data collection. The secondary data included exploratory surveys of rice and its products which were conducted in some of Thailand's potential rice export markets. Exploratory primary data were collected through qualitative focus group research. A quantitative questionnaire with 1,128 consumers of target nationalities was conducted to access consumer attitudes and preferences with respect to rice and rice products.

Findings

Rice products were grouped with factor analysis and could be characterized by convenience (explained variance 33.9 per cent), grain variety (21.2 per cent), and tradition/naturalness (12.8 per cent). Rotated factor score plot of the preference for rice products among different nationalities showed a similarity in the preference for the tradition/natural products. Convenient products were preferred in higher income Asian countries and the non‐rice eating countries. These three product categories were correlated with consumers' ideas concerning the health‐supporting character of processed food.

Originality/value

Consumers' rice preferences differed greatly among nationalities. Rice exporters have to understand these different preferences in order to offer the right products to their customers. Assuming consumer preferences to be comparable to one's own country's preference can cause new product failure. This paper confirms existing differences and presents details and backgrounds of these differences.

Abstract

Purpose

The objective of this study is to ascertain the effect of cooking and soaking on the physical characteristics, nutrient composition and sensory evaluation of an indigenous “ofada” rice and a foreign “aroso” rice varieties in Nigeria.

Design/methodology/approach

The two rice varieties were freshly purchased in the raw state, soaked in water and cooked. The physical characteristics, such as length, width, weight, colour, purity, breakage, cooking time, dispersability and swelling capacity of the raw rice varieties were determined according to official methods. The raw, soaked and cooked rice varieties were oven‐dried at 60C for 4 h and milled to obtain a uniform surface area. The proximate composition and some minerals of the raw, soaked and cooked rice varieties and the sensory evaluation of the cooked rice were determined. Findings–The physical characteristics showed that “ofada” and “aroso” rice varieties were brown and creamy in colour, respectively. There were significant (p<0.01) differences in the purity, breakage, cooking time, swelling capacity and weight of the whole grain, but no difference in the length and width. The raw, cooked and soaked “ofada” rice contain more protein, fat, and fibre, than in “aroso” rice, but with no change in carbohydrate content. There were no significant (p>0.01) differences in the levels of minerals, Ca, Fe, Mg and P, in raw, cooked and soaked “ofada” and “aroso” rice. Sensory evaluation showed that cooked aroso rice was generally preferred, in terms of colour, aroma, taste, texture and overall acceptability.

Originality/value

The methods employed in this study are very simple and the two rice varieties are readily available, acceptable to local tastes and widely consumed in Nigeria. The local or indigenous “ofada” rice is compared favourably with a foreign and imported parboiled “aroso” rice. It is therefore possible for small scale and cottage industries to embark on commercial production and fortification of the local rice varieties in Nigeria.

Abstract

The UK consumes about 170,000 tonnes of rice, over 15 per cent of the total EEC consumption. The Food and Drink Federation is increasing efforts to bring down the price of long‐grain rice which is being kept artificially high by the EEC Rice Regime. Two major changes need to be made: the levy on imported long‐grain rice should be removed or reduced; support for medium‐grain varieties should be limited, to encourage producers to cultivate round‐grain rice for which a market exists. The action envisaged by the FDF Rice Panel is described.

Abstract

Purpose

This study aims to examine why women transition from wage work to self-employed entrepreneurship, the seemingly insecure and unruly economic sector compared with the stable iron rice bowl and the fancy spring rice jobs.

Design/methodology/approach

Based on in-depth interviews in Zhejiang, the entrepreneurial hotbed in coastal China, this study examines the experiences of self-employed female entrepreneurs who used to work in the iron rice bowl and the spring rice jobs and explores their nonconventional career transition and its gendered implications.

Findings

This study finds that these women quit their previous jobs to escape from gendered suppression in wage work where their femininity was stereotyped, devalued or disciplined. By working for themselves, these women embrace a rubber rice bowl that allows them to improvise different forms of femininity that are better rewarded and recognized.

Originality/value

The study contributes to studies on gender and work by framing femininity as a fluid rather than a fixed set of qualities and fills the research gap by illustrating women’s agency in reacting to gender expectations in certain workplaces. The study develops a new concept of rubber rice bowl to describe how entrepreneurship, a seemingly women-unfriendly sphere, attracts women by allowing them to comply with, resist, or improvise normative gender expectations.

Abstract

Purpose

This study examines the impact of agricultural credit on rice farmers' technical efficiency (TE) in Côte d'Ivoire by considering the heterogeneity among credit sources.

Design/methodology/approach

A multistage sampling technique was used to collect data from 588 randomly sampled rice farmers in seven rice areas of the country. The authors use the endogenous stochastic frontier production (ESFP) model to account for the endogeneity of access to agricultural credit.

Findings

On the one hand, agricultural credit has a significant and positive impact on rice farmers' TE. Rice farmers receiving agricultural credit have an average of 5% increase in their TE, confirming the positive impact of agricultural credit on TE. On the other hand, the study provides evidence that the impact of credit on rice production efficiency differs depending on the source of credit. Borrowing from agricultural cooperatives and paddy rice buyers/processors positively and significantly influences the TE, while borrowing from microfinance institutions (MFIs) negatively and significantly influences the TE. Moreover, borrowing from relatives/friends does not significantly influence TE.

Research limitations/implications

Future research can further explore the contribution of agricultural credit by including several agricultural productions and using panel data.

Originality/value

The study provides evidence that the impact of agricultural credit on agricultural production efficiency depends on the source of credit. This study contributes to the literature on the impact of agricultural credit and enlightens policymakers in the design of agricultural credit models in developing countries, particularly Côte d'Ivoire.

In late 2015, the El Nĩno phenomenon induced Vietnam’s worst drought in 60 years, which lasted until mid-2016 and intensified the most expansive saline intrusion in 90 years. The combination of the two hazards resulted in a large-scale disaster, which has led 18 provinces of Vietnam, most of them from the Mekong Delta, to water shortage, insanitation, human and animal diseases, food emergency need and a considerable disruption in local communities’ livelihoods. These devastating effects raise the question of what makes local households vulnerable to drought and saline intrusion. The chapter argues that vulnerability to the natural disaster is not something resulted from external threats, but rather, is derived from the interplay between social structures residing deeply inside the socio-economic systems and agency’s conditions presenting at the household level. Social structures are rules and procedures that constrain and/or enable human actions in agricultural production, risk taking and adaptation. Agency refers to the capacities of disaster-affected households in the Vietnamese Mekong Delta who cultivated third rice crop and suffered heavily from the 2015–2016 disaster. In addition to households’ lack of planning and coping capacities, the constitution of vulnerability to drought and saline intrusion can be attributed to the interaction between farmers’ choice of extra rice crops and the state’s policies and directions in agricultural and irrigation development since 1990s to date.

This chapter assesses the regional and national approaches to improving food security for rice consumption in West Africa.

Abstract

Purpose

This chapter assesses the regional and national approaches to improving food security for rice consumption in West Africa.

Methodology/approach

Using the Arkansas Global Rice Model and the RICEFLOW frameworks, we examine the consequences of pursuing self-sufficiency in rice. National rice development strategies have been designed to double the 2008 rice production levels by 2018. The Coalition for African Rice Development and the Africa Rice Center have assisted 23 nations in developing national strategies. We evaluate the strategies of 15 nations for rice land expansion and intensification to increase yields for regional self-sufficiency.

Findings

West Africa accounts for nearly 25% of global rice imports. The elimination of rice imports reduces global rice prices. Results show that achieving self-sufficiency in West Africa is inefficient at the global level. However, if self-sufficiency makes domestic rice uncompetitive with imported rice, then West African consumers will demand a significant price discount for domestic rice, thus reducing benefits to producers and consumers.

Practical implications

Because of the partial equilibrium nature of this study, the consequences for diversification of West African diets are not explored. Although beyond the scope of this chapter, a coordinated policy sequencing approach toward enhancing productivity and quality of rice production – as well as increasing investment in infrastructure, institutions, and emergency food reserves – should be studied more thoroughly to achieve food and nutritional security for West Africa.
