Abstract
Purpose
The critical role of diet in climate change mitigation has raised behavioural approaches to the top of the agenda. In this paper, the authors take a critical look at these behavioural approaches and call for a more dynamic, practice-oriented understanding of long-term changes in sustainable food consumption and supply.
Design/methodology/approach
This approach is based on the experiences from a long-term experiment promoting sustainable eating in a workplace lunch restaurant using a series of informational and nudging techniques. In the experiment, the authors found that focussing solely on eating behaviours did not help to capture the multi-level change processes mobilised. The authors therefore propose a more dynamic, practice-oriented methodology for examining long-term changes in sustainable eating. The emprical data of the experiment are based on qualitative and quantitative data, consisting of customer survey, customer and kitchen personnel focus group discussions and monitoring data on the use of food items in the restaurant and their climate impacts.
Findings
The results draw attention to a series of practical challenges restaurants face when promoting sustainable eating. Directing analytical attention to tinkering helped to reveal the tensions brought about by labelling and nudging in menu planning and recipe development. The results show how tinkering required attentiveness to customers' wishes in both cases. Nudging offered more freedom for the restaurant to develop menus and recipes. In the case scrutinised, however, nudging customers towards tastier and more satiating vegetarian dishes included the use of dairy. This partly watered down the climate benefits gained from reduced meat consumption.
Originality/value
Rather than looking separately at changes in consumer behaviour and in the supply of food, the authors show how we need analytical concepts that enable the evaluation of their mutual evolution. Tinkering can assist us in this endeavour. Its adaptive, adjustive character, however, calls for caution. The development of praxis in food services and catering requires critical companions from the transdisciplinary research community. Research can provide systematic knowledge on the impacts of labels and nudges on kitchen praxis. However, research itself also needs to tinker and learn from experiments. This necessitates long-term speculative research strategies.

Abstract
This study revisits the Great Canadian Grain Logistics Crisis of 2013-14 to explore the competitiveness of the country's grain exports. An approach to comprehending the dilemmas of the international grain supply chain and trade, and national logistics policy in an era of multinational corporations, draws upon the literature on global value chain analysis. This analysis identifies both the grain industry's global and local dimensions. An important literature on the 'politics’ of the supply chain is also called into play to discuss who controls what aspects. This task of interpreting the various steps in Canada's grain logistics chain recognizes the key economic actors - producers, grain companies, railway companies, port terminal operators and export buyers - and political struggles between them as they each seek to maximize their self-interest. Policy implications for streamlining logistics operations are drawn from identifying where changes in the supply chain arrangements have gained or lost opportunities in export markets, particularly in the Asia-Pacific region.

Abstract
Background: Compliance of patients with self-care practices is the mainstay of measures to manage diabetes. This study explored self-care practices of type 2 diabetes patients receiving insulin treatment in North-East Ethiopia.
Methods: The study employed an interpretive phenomenological approach using purposive sampling. The data were collected from 24 (11 males and 13 females) participants (July 2019 to January 2020) using in-depth interviews till theoretical saturation. The data were analyzed thematically and organized using QDA Miner Lite v2.0.8.
Results: The findings were categorized into: labeling diabetes, self-care maintenance experiences, recognition of symptoms, and mitigating mechanisms. The self-care maintenance practice of patients was linked with diet input preferences and the effectiveness level of insulin. What guides the self-care behavior was the patients’ preferentiality of strictly adhering to their preferred dietary inputs. Barley and wheat were the most common preferential and non-preferential inputs, respectively. The patients strictly adhered to insulin treatment because they found it effective. The most common hyperglycemia symptoms to be managed by taking an additional dose of insulin, were frequent urination, increased thirst, and their consequence (dehydration). Excessive sweating (initial), shivering (middle), and falling (final), respectively in severity, were the most common symptoms of hypoglycemia which were perceived to be treated with sweet snacks.
Originality: To our knowledge, this is the first research in Ethiopia to investigate the self-care experiences of type 2 diabetes patients receiving insulin using an interpretive phenomenological approach.

Abstract
Purpose
The purpose of this study is to propose a matrix framework to understand the interdependencies of domains and scales of protein transition towards diets based on plants and alternative sources of proteins.
Design/methodology/approach
The abductive research approach is used in building the framework, and the proposed framework is illustrated using the regional food system in Central Finland as an example. Focus groups and interviews were used to collect qualitative data from 28 respondents.
Findings
This study provides a framework for protein transition, with five domains and five scale levels. Interactions between public and private governance activities at different scales, domains and governed niche and regime levels are discussed. The study shows how micro-level activities at individual or community levels are linked with broader governance activities.
Research limitations/implications
Due to the relatively narrowed set of empirical data, further research is required to test the framework in different regional and cultural settings.
Practical implications
This paper presents a practical illustration of the matrix framework, and considering this, the paper discusses the possible implications of matrix interdependencies for protein transition management.
Social implications
This study proposes that understanding the coevolution of domains and scales, with the help of accurate policies and business models, can lead to effective protein transition.
Originality/value
This study fulfils an identified need to study protein transition in a broader frame, which highlights the structural activity interdependencies between different scale levels and domains.

Abstract
Purpose
This study aims to examine determinants of farmers’ use of climate-smart agricultural practices, specifically improved crop varieties, intercropping, improved livestock breeds and rainwater harvesting in Wadla district, northeast Ethiopia.
Design/methodology/approach
A cross-sectional household survey was used. A structured interview schedule for respondent households and checklists for key informants and focus group discussants were used. This study used both descriptive statistics and a multivariate probit econometric model to analyze the collected data. The model was used to compute factors influencing the use of climate-smart agricultural practices in the study area.
Findings
The results revealed that households adopted selected practices. The likelihood of farmers’ decisions to use improved crop varieties, intercropping, improved livestock breeds and rainwater harvesting was 85%, 52%, 69% and 59%, respectively. The joint probability of using these climate-smart agricultural practices was 23.7%. The model results confirmed that sex, level of education, livestock holding, access to credit, farm distance, market distance and training were significant factors that affected the use of climate-smart agricultural practices in the study area.
Originality/value
The present study used the most selected locally practiced interventions for climate-smart agriculture.

Abstract
Purpose
This paper aims at providing the evidence about how carbon sequestration in terrestrial ecosystems could contribute to the decrease of atmospheric CO2 rates through the adoption of appropriate cropping systems such as agroforestry.
Design/methodology/approach
Stratified randomly selected plots were used to collect data on tree diameter at breast height (DBH). Composite soil samples were collected from three soil depths for soil carbon analysis. Above ground biomass estimation was made using an allometric equation. The spectral signature of each plot was extracted to study the statistical relationship between carbon stock and selected vegetation indices.
Findings
There was a significant difference in vegetation and soil carbon stocks among the different land use/land cover types (P < 0.05). The potential carbon stock was highest in the vegetation found in sparsely cultivated land (13.13 ± 1.84 tons ha−1) and in soil in bushland (19.21 ± 3.79 tons ha−1). Carbon sequestration potential of the study area significantly increased (+127174.5 tons CO2e) as a result of conversion of intensively cultivated agricultural lands to agroforestry systems. The amount of sequestered carbon was found to be dependent on species diversity, tree density and tree size. The vegetation indices had a better correlation with soil and total carbon.
Originality/value
The paper has addressed an important aspect in curbing greenhouse gases in integrated land systems. The paper brings a new empirical insight of carbon sequestration potentials of agroforestry systems with a focus on drylands.

Purpose
The major objective of this research work was to evaluate various physico-chemical characteristics, such as, chemical composition, antioxidant capacity, objective color and texture profile analysis (TPA) of the wheat flour/chickpea flour (CF) blends, so that nutritious baked products could be consumed by the type-2 diabetic persons.
Design/methodology/approach
Wholegrain wheat flour (WGF) and white wheat flour (WWF) were substituted with CF at 0 to 40% levels. These wheat flour/CF blends were analyzed for proximate composition, the prepared dough and baked breads were tested for objective color, antioxidant capacity as trolox equivalent antioxidant capacity (TEAC), malondialdehyde (MDA) and total phenolic content (TPC) and TPA.
Findings
WGF had the highest TEAC (117.42 mM/100g) value, followed by WWF (73.98 mM/100g) and CF (60.67 mM/100g). TEAC, MDA and TPC values varied significantly among all the three flour samples.
Research limitations/implications
Inclusion of whole chickpea (without dehulling) flour in such type of blends would be another interesting investigation during the future research studies.
Practical implications
These research findings have a great potential for the production of these baked products for human consumption on an industrial scale.
Social implications
Production of breads using wheat flour and CF blends would benefits the consumers.
Originality/value
Production of Arabic and pan breads using wheat flour and CF blends would, therefore, combine the benefits of both the needed proteins of plant origin and the health-promoting bioactive compounds, in a most sustainable way for the consumers.

Abstract
Purpose
The Dutch market for meat substitutes has grown steadily, however, their market share is still low, and meat consumption in the Netherlands is not decreasing. For a transition towards a more plant-based diet, understanding consumer motives regarding meat substitutes is important. The purpose of this study was to explore what motives lay behind the appropriateness of the use of meat substitutes in different usage situations.
Design/methodology/approach
In total, 20 semi-structured in-depth interviews were performed to discover Dutch consumers’ associations with the terms “eating vegetarian” and “meat substitutes”, as well as motives regarding the situational appropriateness of meat substitutes.
Findings
The most mentioned motives for eating vegetarian were “environmental impact”, “health” and “animal welfare”, while meat substitutes were mainly eaten to replace meat in the meal. Most participants perceived vegetarian stir-fry pieces appropriate for almost all situations; the appropriateness of other meat substitutes was more situation-specific. The thematic content analysis yielded seven categories for the motives given for the (in)appropriateness of the four meat substitutes in six usage situations: “Functionality”, “Convenience”, “Properties”, “Preferences”, “Association with meat”, “Association with meals” and “Nutrition”. Mainly motives in the categories convenience and functionality (function of the meat substitute in a meal) were mentioned for all situations and other motives were situation-specific.
Originality/value
The focus in the development of plant-based foods is mostly on the product properties. The situational appropriateness and the underlying motives regarding meat substitutes have not yet been studied. This exploratory study suggests that these should be taken into consideration in the design of new meat substitutes.

Abstract
Purpose
The present study focused on examining the effect of treated wastewater (TWW) on soil chemical properties. Also, efforts were made to compare the soil chemical properties under TWW irrigation with that under groundwater (GW).
Design/methodology/approach
During the years 2021 and 2022, surface and subsurface soil samples were randomly collected in triplicate by using an auger fortnightly at two depths (20 and 40 cm) from the selected spot areas to represent the different types of irrigation water sources: TWW and GW. Samples of the GW and the TWW were collected for analysis.
Findings
This study examines the impact of TWW on soil characteristics and the surrounding environment. TWW use enhances soil organic matter, nutrient availability and salt redistribution, while reducing calcium carbonate accumulation in the topsoil. However, it negatively affects soil pH, electrical conductivity and sodium adsorption ratio, although remaining within acceptable limits. Generally, irrigating with TWW improves most soil chemical properties compared to GW.
Originality/value
In general, almost all of the soil’s chemical properties were improved by irrigating with TWW rather than GW. Following that, wastewater is used to irrigate the soil. Additionally, the application of gypsum to control the K/Na and Ca/Na ratios should be considered under long-term TWW and GW usage in this study area in order to control the salt accumulation as well as prevent soil conversion to saline-sodic soil in the future. However, more research is needed to thoroughly investigate the long-term effects of using TWW on soil properties as well as heavy metal accumulation in soil.
