Abstract

Purpose

In recent years, global demand for functional foods grew tremendously due to the rising trend of health-conscious consumers. Driven by increased awareness of probiotic products, consumption of yogurt drink is gaining popularity across all age groups. In the present study, the authors aimed to assess sensorial, nutritional and technological properties of synbiotic yogurt drink enriched with prebiotic inulin.

Design/methodology/approach

Sensory analysis, proximate compositions, viscosity, viable count and DPPH radical scavenging activity were examined in control (without inulin) and 3 variants of inulin-supplemented synbiotic yogurt drink, namely F1 (4%, inulin), F2 (4.5% inulin) and F3 (5% inulin).

Findings

Evaluated by 75 consumer panellists on 9-point hedonic scales, F3 showed significantly (p < 0.05) higher overall acceptability (5.79 ± 1.94) compared to control. In addition to lower calorie content (36.52 kcal/100 ml), nutritional and technological properties of F3 [total dietary fibre content (4.03 ± 0.04 g/100 ml), viscosity (28 ± 6.93 cP), viable count (87.00 ± 4.00 × 106 CFU/ml S. thermophilus; 14.67 ± 3.51 × 106 CFU/ml L. bulgaricus) and antioxidant activity (50.40 ± 1.80%)] were significantly (p < 0.05) improved compared to control. Remarkably, the new formulation complied with nutrient criteria for Healthier Choice Logo Malaysia in addition to meeting requirements for “low fat” and “high dietary fibre” contents according to Malaysia Guide to Nutrition Labelling and Claims. Hence, we conclude that 5% inulin improved nutritional and technological characteristic in synbiotic yogurt drink without compromising consumers' acceptance.

Originality/value

This novel study showcases the incorporation of prebiotic inulin in the development of synbiotic yogurt drink. Remarkably, this new formulation complied with the nutrient criteria for Healthier Choice Logo Malaysia in addition to meeting the requirements for “low fat” and “high dietary fibre” contents according to Malaysia Guide to Nutrition Labelling and Claims. More importantly, results have contributed knowledge to existing literature as well as benefits food manufacturers in creating healthy yogurt drinks to better meet the needs and expectations of health-conscious consumers without compromising hedonic perceptions.

Abstract

Purpose

The purpose of this paper is to determine the influence of low-fat and high-fat diets supplemented with dextrin obtained from corn starch on the numbers and relative proportions of enteric bacteria Bacteroidetes (Bacteroides, Prevotella), Actinobacteria (Bifidobacterium) and Firmicutes (Clostridium, Lactobacillus). Moreover, basic indicators of gastrointestinal function (among other things: epidydymal fat mass, mass with contents, pH in the colon, cecum, small intestine, fecal enzymes were investigation) and short-chain fatty acids are analyzed.

Design/methodology/approach

In vivo experimental studies in rats (analized samples of the ileal, cecal and colonic digesta; pH; blood serum; fecal enzymes); determination of the number of bacteria – fluorescence in situ hybridization; and determination of type and concentration SCFA – HPLC were considered.

Findings

No statistically significant differences in final body weight were found between rats fed low-fat and high-fat diets supplemented with dextrin. In rats fed the low-fat diet with dextrin, the gut microbiota composition was as follows: 42.74 percent Bacteroises and Prevotella (Bacteroidetes), 35.28 percent Clostridium and Lactobacilllus (Firmicutes) and 21.98 percent Bifidobacterium (Actinobacteria), while in rats fed the high-fat diet with dextrin it was similar. Irrespective of the diet type, supplementation with dextrin enhances bacterial glycolytic activity and the cecal production of total SCFAs, with strongly increased propionate and decreased butyrate fermentation.

Practical implications

Dextrin may enrich food or be a component of functional foods.

Originality/value

Dextrin from corn starch may contribute to changes in the composition of intestinal microbiota.

Abstract

Purpose

Recent societal interest in healthful foods has led to the development of functional dairy products that basically provide health benefits in addition to their fundamental nutrients. Yoghurt being most popular fermented milk product due to its healthy image can be an excellent carrier for probiotics. Functional properties of yoghurt can be enhanced with the inclusion of functional ingredients such as probiotics and its conjugate application with prebiotics may be advantageous as it favors probiotic growth. Nutritional and medicinal value of honey coupled with presence of oligosaccharides has projected honey as a functional additive in yoghurt.

Design/methodology/approach

Attempt has been made to review the literature on the biochemical activities of yoghurt cultures and probiotics in presence of honey. Both review and research papers related to biochemical activities and functional properties of yoghurt cultures and probiotics in presence of honey and their health benefits published in diverse journals under Pub Med and Science Direct have been considered. Keywords used for data search included functional foods, yoghurt, probiotic, health benefits, honey, etc.

Findings

Functional properties of yoghurt can be further enhanced with the inclusion of probiotic cultures and honey. Honey can be safely used in association with different probiotic cultures during yoghurt manufacture for augmenting functional properties of yoghurt to extend health benefits. Honey may not be equally a suitable matrix for all yoghurt cultures or probiotic cultures.

Research limitations/implications

Reviewed literature indicated that limited research on animal or human feeding trials with honey containing yoghurt has been done. Clinical trials with honey containing yoghurt are emerging prior to its marketing as functional food.

Originality/value

Application of honey as a functional additive during the manufacture of probiotic yoghurt is suggested to extend the functional properties of normal yoghurt.

Purpose

Among soy products, soy ice cream with neutral pH, high total solids contents and prebiotic oligosaccharides is an appropriate vehicle for probiotics. The purpose of this paper is to survey soy ice cream as a carrier for the efficient delivering of Lactobacillus casei, or L. casei.

Design/methodology/approach

Probiotic soy ice cream containing L. casei was produced via the powder of soy milk. The physicochemical and organoleptic properties of the product were assessed. Also, the viability of L. casei was surveyed over a 180-day period of storage at −25 °C.

Findings

The density characteristic of probiotic soy ice cream demonstrated a significant rise (P < 0.05). The result of the viability analysis showed significant alterations in the number of probiotics in this product after freezing and throughout the 180-day period (P < 0.05). The most noticeable drop was seen throughout the first 60 days about 1.83 logs after that the trend of survival of this probiotic strain leveled off over the next 120 days. Also, no significant differences were found in the organoleptic properties of both ice creams.

Originality/value

Soy ice cream with prebiotic elements protected the growing and activity of probiotic bacteria. The results showed that L. casei is a good probiotic for soy ice cream.

Purpose

The purpose of this paper is to determine the effect of synbiotic combination of lactobacilli with konjac glucomannan hydrolysate (GMH) to reduce Streptococcus mutans growth in vitro with the intention of characterising its efficacy as a new approach for oral hygiene.

Design/methodology/approach

Strains of Lactobacillus acidophilus and S. mutans were grown individually or in combination in modified Columbia base broth supplemented with 2 per cent GMH. Following incubation, the samples were plated on De Man, Rogosa and Sharpe and Columbia blood agar and growth of both strains was assessed.

Findings

The probiotic bacteria L. acidophilus was able to “out grow” S. mutans in the presence of konjac glucomannan in the mixed cultures.

Originality/value

The results indicate that consumption of prebiotic and probiotic combinations may play a role as potential prophylactic or therapeutic agents for reducing the presence of organisms in the mouth associated with tooth decay. In order to confirm a beneficial effect of GMH further in vivo in this concept, studies involving healthy human volunteers should be considered.

Abstract

Purpose

Resistant starch, defined as all starch and starch-degradation products not absorbed by small intestine of healthy individuals, is included in the diet of individuals due to its prebiotic characteristics and protective effects against diseases like colon cancer, type II diabetes, obesity and cardiovascular diseases. Some cooking methods are known as effective on resistant starch content of foods. The purpose of this paper is to explore the effect of various cooking methods on resistant starch content of foods.

Design/methodology/approach

Potential health benefits and functional features of the resistant starch have been emphasized in the recent years. This review includes up-to-date scientific findings in different studies on the effect of various cooking methods on resistant starch content of foods. Advantages and nutritional quality of resistant starch are included to topic.

Findings

Cooking methods including baking, steaming and autoclave cooking increased the amount of the resistant starch of foods, but cooking method such as pressure cooking decreased the amount of the resistant starch of foods. Boiling, frying, microwave cooking and extrusion cooking have the potential of increasing the amount of resistant starch, which depends on the source of starch and the process conditions. Although frying method has a high potential to increase the resistant starch content of foods, it is inconvenient to recommend frying to modify resistant starch content of foods due to detrimental effects of frying and products on health.

Originality/value

This paper focuses on the effects of various cooking methods on resistant starch content of foods, which offers a promising future for the inartificial development of the prebiotic content of diet. Due to its potential health benefits, appropriate cooking methods should be preferred to increase resistant starch content of foods.

Abstract

Purpose

The popularity of dietary supplements (DSs) and functional foods (FFs) is currently widespread worldwide. In general, European countries represent one of the most important markets for both two groups; however, regional differences were reported in their consumption and preferences. The main objective was to determine the attitudes of Czech adult consumers towards DSs and FFs and to find out which ones are most commonly used and for what reasons.

Design/methodology/approach

The data were collected from 1,049 respondents using a questionnaire survey. A Pearson Chi-squared test was used to determine the association between consumer preferences and selected socio-economic characteristics. A multiple correspondence analysis was used to compare relations among 13 categories of DSs and FFs and the socio-demographic variables.

Findings

The authors’ findings showed a high prevalence of awareness regarding the terms DSs and FFs (79%) and use (99%) of both these categories among the respondents. Data indicated that average consumption of FFs was slightly higher (56.7%) than that of DSs (48.6%). The most popular FFs were identified as dietary fibre, unsaturated fatty acids, followed by probiotics and prebiotics, whereas vitamins, minerals and herbal products were mentioned as the most preferred DSs. The most frequent reasons for consumption of both food products were stress relief, digestive care and immunity boosting.

Originality/value

The authors report for the first time on consumer attitudes to and preferences for the use of DSs and FFs. The findings can contribute to an understanding of general attitudes and preferences regarding both food categories in the EU population.

Abstract

Purpose

The purpose of this paper is to investigate how synbiotic combinations of lactobacilli with konjac glucomannan hydrolysate (GMH) may be used to reduce Staphylococcus aureus (S. aureus) and Salmonella typhimurium (S. typhimurium) growth in vitro.

Design/methodology/approach

Growth of S. aureus and S. typhimurium was assessed individually and when mixed with L. acidophilus in modified media supplemented with two per cent GMH. The effect of the GMH and the Lactobacillus strain on S. aureus growth was also investigated using the well diffusion test on Muller‐Hinton agar medium.

Findings

The results showed that L. acidophilus “out grew” the pathogens S. aureus and S. typhimurium in the presence of konjac glucomannan in the mixed cultures.

Originality/value

The paper demonstrates that konjac glucomannan hydrolysates combined with probiotic bacteria, may be used to inhibit the growth of pathogenic bacteria such as S. aureus and S. typhimurium. These data support the development of an alternative approach to reduce infections and promote consumer health.

Abstract

Purpose

In absence of breast milk, humanized mammalian milk may not be adequate as it could not confer considerable protection to the infants as those extended by breast milk. With the objective of enhancing the nutritional and therapeutic attributes of humanized mammalian milk considerable efforts have been exercised to mimic infant formulae to the health‐promoting benefits of breast milk with the inclusion of probiotics, oligosaccharides and proteins. The purpose of this paper is to address this issue.

Design/methodology/approach

In the present article an endeavour has been made to enlighten innovations in supplementary foods for infants in absence of human milk. Suitability of special humanized milk such as hypoallergenic formulae, neural formulae and gastrointestinal integrity formulae as a supplementary food for infants in absence of human milk is also justified.

Findings

Characterization of components of human milk and identification of nutritional needs of infants have resulted in formulation of special humanized milk such as hypoallergenic formulae for allergenic infants, neural formulae for normal physiological functions of infants and gastrointestinal integrity formulae for maintaining microbial balance in the intestine. Supplementation of infant formulae with sialic acid, long chain poly unsaturated fatty acids such as decosahexaenoic acid and arachidonic acid, probiotic cultures such as Bifidobacterium bifidum, Lactobacillus acidophilus, Lactobacillus GG and Lactobacillus casei and prebiotic such as galacto‐OS and fructo‐OS are recommended.

Originality/value

The paper emphasises that, with the characterization of components of human milk and identification of nutritional needs of infants, modification of infant formulae should be constantly carried.
