Abstract

Purpose

The purpose of this paper is to present an overview of functional properties of the polysaccharide-based component and their application in developing edible film and coating for the food processing sector.

Design/methodology/approach

In this review study, approximately 271 research and review articles focusing on studies related to polysaccharide-based components and their film-forming properties. This article also focused on the application of polysaccharide-based edible film in the food sector.

Findings

From the literature reviewed, polysaccharide components and components-based edible film/coating is the biodegradable and eco-friendly packaging of the materials and directly consumed by the consumer with food. It has been reported that the polysaccharide components have excellent properties such as being nontoxic, antioxidant, antimicrobial, antifungal and with good nutrients. The polysaccharide-based edible film has lipid and gas barrier properties with excellent transparency and mechanical strength. In various studies, researchers worked on the development of polysaccharide-based edible film and coating by incorporating plant based natural antioxidants. This was primarily done for obtaining improved physical and chemical properties of the edible film and coating. In future, the technology of developing polysaccharide-based edible film and coating could be used for extending the shelf life and preserving the quality of fruits and vegetables at a commercial level. There is more need to understand the role of edible packaging and sustainability in the food and environment sector.

Originality/value

Through this review paper, possible applications of polysaccharide-based components and their function property in the formation of the edible film and their effect on fruits, vegetables and other food products are discussed after detailed studies of literature from thesis and journal article.

Abstract

Purpose

The purpose of this paper is to prepare alginate‐pectin‐starch containing matrices expanded by the generation of carbon dioxide, from carbonates when in contact with acids, characterise their structure in vitro and to assess their capacity to provide satiety in vivo.

Design/methodology/approach

For in vitro characterisation, carbon dioxide expanded polysaccharide matrices (rafts) were prepared in HCl and their structural strength was measured in terms of their capacity to resist breakage in a model test system. For in vivo trials, 12 healthy volunteers (mixed sex, aged 25‐55) were recruited to take part in the three‐part trial. Each part lasted for one week where volunteers consumed polysaccharides (in 50 ml water) with or without rafting salts (carbonates), or water (as a control). Effects on satiety, reduction of food intake and any change to body weight were evaluated with the volunteers.

Findings

The in vitro results showed that aqueous solution/dispersions (50 ml) of alginate‐pectin‐starch matrices produced rafts in hydrochloric acid (pH < 2), where increasing the ratio of carbonates to polysaccharides (range from 0.25:1 to 1.5:1, w/w) provided increased floatation capability but reducing gel strength. These rafts were stable for over 24 h at room temperature within 0.05‐0.5 M HCl. For in vivo “satiety” studies, when volunteers consumed (daily) aliquots of the polysaccharide mixture plus flavour and sweetener without carbonates 2.5 h after lunch, they felt the onset of hunger on average 186 ± 68 min after consumption of the polysaccharides. This was not significantly different from a water only control (onset of hunger at 165 ± 47 min). When polysaccharides plus flavour sweetener and carbonates were consumed, however, volunteers reported feeling the onset of hunger at 224 ± 62 min on average after consumption which was significantly different from the water control (p < 0.001), or the polysaccharides without carbonates (p < 0.01). When consuming the polysaccharide rafting format, half of the volunteers reported a reduction in size of their evening meal.

Originality/value

These data indicate that the alginate‐pectin‐starch combination with carbonate salts in a “gastric rafting format” provide a potential approach in the management of body weight and obesity.

Abstract

Purpose

The aim of this study is to identify and quantify sugar and polysaccharide contents in locally grown Hericium erinaceus.

Desig/methodolog/approach

The experiment is presented of chromatography methods to determine sugars in Malaysian–grown H. erinaceus. After the extraction, the crude polysaccharide solution was followed by hydrolysis with acid as well as enzymes reaction, respectively.

Findings

In thin–layer chromatography, two sample spots turned blue after treatment with sugar visualizing reagent. The HPLC analysis of the H. erinaceus hot water crude extract showed arabinose as the major component. All H. erinaceus water crude extract showed the components of arabinose, glucose and rhamnose when reacting with different enzymes. The ratio of arabinose and glucose was 2.3:1 after enzymatic reaction compared with 2.7:1 before the enzymatic reaction.

Research limitation/implications

The H. erinaceus polysaccharides from the fruiting body can be further isolated and purified by means of GCMS. In this way, the contents of the polysaccharides isolated and types of the linkage can be determined thoroughly in a more detailed way. The purified polysaccharides also should be screened for the bioassay guide fractionation.

Practical implications

The H. erinaceus can also be analyzed for its various nutritional values. In this way, it is hoped that Malaysia can produce Hericium products locally for the benefit of the local consumers with a more competitive price.

Originalit/value

This paper fulfils an identified information of sugar and polysaccharide content in Malaysian–grown H. erinaceus.

Abstract

Purpose

The Monascus pigment has been widely applied in the food processing industry as a functional additive. Lovastatin and polysaccharides are two important bio-active materials found in Monascus. Citrinin is considered as mycotoxin. Thus, it is important to produce high yields of intracellular Monascus pigments with high yields of lovastatin and polysaccharides, while maintaining low citrinin yields under liquid fermentation.

Design/methodology/approach

The intracellular yields of pigments, lovastatin, polysaccharides and citrinin; biomass; and reducing the sugar content of Monascus purpureus HBSD 08 were determined every day during a 10-day culturing period using lactose, maltose, sucrose, glucose, glycerine and xylose as the sole carbon sources. Additionally, the pigment composition was analysed by a thin layer chromatography (TLC) and the in vitro antitumor activities of the pigments were determined.

Findings

The maximal yield of pigments (55.44 U/mL after six days of culture) and lovastatin content (1,475.30 µg/L after five days of culture) were obtained in the presence of glucose and maltose as the sole carbon sources, respectively. The suitable carbon sources for high intracellular polysaccharides yields were sucrose, maltose and xylose. Glucose should not be chosen as the sole carbon source because of its high food safety risk. In vitro antitumor activities of pigments in the presence of different carbon sources were in the order of xylose > glucose = maltose > glycerine > sucrose = lactose. The pigment compositions in the presence of different carbon sources were the same from the TLC analysis. Thus, maltose displayed high intracellular yields of pigments, lovastatin and polysaccharides; high food safety against citrinin, and high in vitro antitumor activity during the ten days culturing period.

Originality/value

This study shows us the benefits of using maltose as a substrate in the production of intracellular Monascus pigments while ensuring economic and food safety.

Abstract

As the proportion of the UK population who may be considered overweight or obese is increasing, questions about the impact of foods and food constituents upon appetite and satiety become increasingly important. Briefly reviews some of the literature on the effects of dietary fibre (or, more correctly, non‐starch polysaccharides) on satiety. A number of experimental approaches have been used to investigate this issue and, according to the mode of administration of dietary fibre used, a variable outcome on satiety has been demonstrated. However, the evidence overall is quite strongly in favour of an enhancement of satiety with dietary fibre. Unfortunately, clinical trials of the effects of dietary fibre have revealed only modest improvements in weight loss and further work is needed in order to target those individuals who demonstrate the greatest response.

Abstract

Evaluating the hypothesis that dietary fibre is a protective factor and interpretation of the nutritional advice to ‘eat more fibre’ is dependent on quantitative measurements of dietary fibre. The analysis poses several very difficult analytical issues. Firstly there are the technical issues which arise whenever one analyses a complex mixture, especially of carbohydrates. Secondly, because different components exert different physiological effects, there is a need to characterise as well as quantify the dietary fibre if one wishes to understand or predict its effects; and thirdly, the definition of dietary fibre is couched in physiological terms that do not lend themselves to translation into analytical procedures.

Abstract

Purpose

The mucilage of the Linum usitatissimum L. seed (Linseed) is one of the natural mucilages that presents a great potential to provide a food hydrocolloid with potential applications in both food and pharmaceutical industries. To increase the yield and quality of linseed oil during its production process, it is necessary to previously extract its polysaccharides. Because of this, flax mucilage production can be made viable as a byproduct of oil extraction process, which is already a product of high commercial value consolidated in the market. Thus, the purpose of this work is to optimize the mucilage extraction process of L. usitatissimum L. using the normal-boundary intersection (NBI) multiobjective optimization method.

Design/methodology/approach

Currently, the variables of the process of polysaccharide extraction from different sources are optimized using the response surface methodology. However, when the optimal points of the responses are conflicting it is necessary to study the best conditions to achieve a balance between these conflicting objectives (trade-offs) and to explore the available options it is necessary to formulate an optimization problem with multiple objectives. The multiobjective optimization method used in this work was the NBI developed to find uniformly distributed and continuous Pareto optimal solutions for a nonlinear multiobjective problem.

Findings

The optimum extraction point to obtain the maximum fiber concentration in the extracted material was pH 3.81, temperature of 46°C, time of 13.46 h. The maximum extraction yield of flaxseed was pH 6.45, temperature of 65°C, time of 14.41 h. This result confirms the trade-off relationship between the objectives. NBI approach was able to find uniformly distributed Pareto optimal solutions, which allows to analyze the behavior of the trade-off relationship. Thus, the decision-maker can set extraction conditions to achieve desired characteristics in mucilage.

Originality/value

The novelty of this paper is to confirm the existence of a trade-off relationship between the productivity parameter (yield) and the quality parameter (fiber concentration in the extracted material) during the flaxseed mucilage extraction process. The NBI approach was able to find uniformly distributed Pareto optimal solutions, which allows us to analyze the behavior of the trade-off relationship. This allows the decision-making to the extraction conditions according to the desired characteristics of the final product, thus being able to direct the extraction for the best applicability of the mucilage.

Hydrocolloids are generally polysaccharide extracts, obtained from plants, which have a great affinity for water at relatively low concentrations (considerably less than 1%) and produce highly viscous or gelled systems. Abstract

Purpose

This paper aims to investigate the effect of shear rate, concentration (4–20 kg/m3) and temperature (20°C–60 °C) on the apparent viscosity of apricot gum solutions.

Design/methodology/approach

Apparent viscosity has been measured using a rotational viscometer.

Findings

It has been observed that the shear stress and apparent viscosity values increase at high concentrations in the prepared apricot gum solutions. However, it is understood that the higher the temperature in the operation conditions, the lower the apparent viscosity results. Power-law is found the best-fitting model to illustrate the changes in temperature and concentration. According to the consistency coefficient and flow behavior indices, the apricot gum displayed shear-thinning behavior (pseudoplastic). The apricot gum is a polysaccharide with amino and uronic acids, according to Fouirer Transform Infrared Spektrofotometre spectra.

Practical implications

The results suggest that power-law model can be used to estimate the viscosity of apricot gum solutions at different temperatures and concentrations for applications for which flow behavior should be taken into account.

Originality/value

Exudate gums have good rheological properties and, therefore, are widely used in the food industry. Apricot gum is a biodegradable and abundant polysaccharide that enhances viscosity, stabilizes suspension or emulsion and improves the flow properties of foods. Different rheological models are used to investigate rheological properties. However, those models are time-independent to fit the experimental data.
