Abstract
Purpose
This paper aims to assess the consumption of dairy products in Kuwaiti children, and develop and validate a semi-quantitative food frequency questionnaire to measure dairy product consumption.
Design/methodology/approach
This cross-sectional study was based on a sample of child–parent dyads (n = 150). A dietary assessment questionnaire on local dairy products consumed by preschool and preadolescent children was developed. Serving and portion sizes were evaluated on the basis of the guidelines of the United States Department of Agriculture and the American Academy of Pediatrics to calculate median intake levels of three age groups (3-5, 6-8 and 9-11 years).
Findings
All children met or exceeded the recommended daily servings of dairy products for their age and sex. Dairy product intake was often from processed dairy including milk-based desserts, flavored milk and cheese. Compared to boys, girls consumed more yogurt (15.5 per cent vs 14.2 per cent, p = 0.001) and milk-based desserts (15.5 vs 14.3, p = 0.001). In boys, flavored milk contributed more to the total dairy intake than in girls, especially in 6-8-year-olds (21.8 per cent vs 18.9 per cent, p = 0.021). Weight status was not associated with dairy product intake in either sex.
Originality/value
This is the first study that quantifies dairy product consumption in Kuwaiti children and provides insight into sex-specific trends in dairy product selection. The findings of this study may help in investigating relationships between dairy product consumption in children and disease risk factors, and are important for the development of local dietary guidelines for children.

Abstract
Purpose
This paper aims to identify the combination of innovation determinants driving the creation of innovative products amongst market leaders and market followers in food and beverage (F&B) firms.
Design/methodology/approach
This research is based on the case study methodology by using two types of data sources: (1) semi-structured interviews with industry experts and (2) in-depth interviews with managers. In addition, a questionnaire adapted from prior research was used to consider market and firm types.
Findings
Suggesting an integrated theoretical framework based on firm-based factors and market-based factors, this study identified a combination of determinants significantly impacting innovative products in the market. Specifically, these determinants are competition intensity and innovation capability (a combination of research and development (R&D) investment and marketing capabilities). The study also examined how these determinants vary depending on whether the firms are market leaders or market followers.
Practical implications
This research provides practical insights for managers working in the F&B industry by using case studies and exploring the determinants of developing innovative products. In doing so, suitable strategies can be selected according to the market and firm situations.
Originality/value
The originality of the study is shown by focussing on how different combinations of market and firm factors could be applied in creating successful innovative products in the food sector.

Abstract
Purpose
While it is essential to further research the growing diversity in western metropolitan cities, little is currently known about how the members of various ethnic communities acculturate to multicultural societies. The purpose of this paper is to explore immigrants’ cosmopolitanism and acculturation strategies through an analysis of the food consumption behaviour of ethnic consumers in multicultural London.
Design/methodology/approach
The study was set within the socio-cultural context of London. A number of qualitative methods such as in-depth interviews, observation and photographs were used to assess consumers’ acculturation strategies in a multicultural environment and how that is influenced by consumer cosmopolitanism.
Findings
Ethnic consumers’ food consumption behaviour reflects their acculturation strategies, which can be classified into four groups: rebellion, rarefaction, resonance and refrainment. This classification demonstrates ethnic consumers’ multi-directional acculturation strategies, which are also determined by their level of cosmopolitanism.
Research limitations/implications
The taxonomy presented in this paper advances current acculturation scholarship by suggesting a multi-directional model for acculturation strategies as opposed to the existing uni-directional and bi-directional perspectives and explicates the role of consumer cosmopolitanism in consumer acculturation. The paper did not engage host communities and there is hence a need for future research on how and to what extent host communities are acculturated to the multicultural environment.
Practical implications
The findings have direct implications for the choice of standardisation vs adaptation as a marketing strategy within multicultural cities. Whilst the rebellion group are more likely to respond to standardisation, increasing adaptation of goods and service can ideally target members of the resistance and resonance groups and more fusion products should be exclusively earmarked for the resonance group.
Originality/value
The paper makes original contribution by introducing a multi-directional perspective to acculturation by delineating four-group taxonomy (rebellion, rarefaction, resonance and refrainment). This paper also presents a dynamic model that captures how consumer cosmopolitanism impinges upon the process and outcome of multi-directional acculturation strategies.

Abstract
Purpose
This study explores the contribution of social entrepreneurship to the realization of the Sustainable Development Goals (SDGs) in Uganda.
Design/methodology/approach
We employed a qualitative approach and a multiple-case design to engage 20 participants. Specifically, semi-structured interviews were conducted to gather the perceptions and views of the participants regarding the study phenomenon.
Findings
Study findings indicate that social entrepreneurs support a number of people and undertake activities that solve social, environmental and economic problems. However, environmental issues receive less focus when compared to other sustainability aspects. It is also evident that social entrepreneurs are financially constrained with limited managerial skills, undermining their potential to fulfill their social mission. Despite these challenges, social entrepreneurs have significantly contributed to the attainment of SDGs 1, 4, 5, 8 and 10 in Uganda.
Originality/value
This study contributes to the existing literature on social entrepreneurship and sustainable development. Specifically, it provides initial empirical evidence on the social entrepreneurial activities, the beneficiaries and challenges being addressed by social entrepreneurs and contribution to the attainment of the SDGs in Uganda.

Abstract
Purpose
The purpose of this study is to investigate and compare the role of communication, structural and intangible elements on both tourists’ rational and emotional engagement across five different types of events (nature, gastronomy, religion, theatre and music).
Design/methodology/approach
Responses from 1,528 tourists were obtained through a face to face questionnaire in five heterogeneous events in the Spanish region of Extremadura, a well-known cultural tourism destination. Linear regressions were used to evaluate focal constructs’ contribution (emotional and rational engagement, formal and informal communication and structural and non-structural elements) on tourists’ engagement across events.
Findings
The results revealed that tourist’s rational and emotional engagement depends on the type of event. Non-structural elements seem to be important for rational and emotional engagement for gastronomic and cultural events. Besides the impact of structural elements on rational engagement, all other factors seem to have a mixed influence. Therefore, practitioners must select the factors to highlight according to the type of events, besides structural factors.
Practical implications
The current results allow tourism managers to understand the mechanisms for tourists’ engagement in a multi-event scenario to strategically select and use and communicate each type of appeal when planning and communicating events to specific target audiences.
Originality/value
Unlike most studies that focus on a single event or typology, this study combines a set of heterogeneous events to provide a complete picture of tourism engagement for the tourism sector.

Abstract
Purpose
This study aims to analyse the differences between professional interaction mediated by video conferencing and direct professional interaction. The research identifies diverging interests of office workers for the purpose of addressing work ethical and business ethical issues of professional collaboration, competition, and power in future hybrid work models.
Design/methodology/approach
Based on 28 qualitative interviews conducted between November 2020 and June 2021, and through the theoretical lens of phenomenology, the study develops explanatory hypotheses conceptualising four basic intentions of professional interaction and their corresponding preferences for video conferences and working on site.
Findings
The four intentions developed on the basis of the interviews are: the need for physical proximity; the challenge of collective creativity; the will to influence; and control of communication. This conceptual framework qualifies a moral ambivalence of professional interaction. The authors identify a connectivity paradox of professional interaction where the personal dimension remains unarticulated for the purpose of maintaining professionality. This tacit human connectivity is intertwined with latent power relations. This plasticity of both connectivity and power in direct interaction can be diminished by transferring the interaction to video conferencing.
Originality/value
The application of phenomenology to a collection of qualitative interviews has enabled the identification of underlying intention structures and the system in which they affect each other. This research identifies conflicts of interests between workers relative to their different self-perceived abilities to persevere in competitive professional interaction. It is therefore able to address consequences of future hybrid work models at an existential and societal level.

Abstract
Purpose
The purpose of this scoping review was to summarise the general results of the Chilean Food Law implementation to help to understand how this policy has changed consumer's behaviour.
Design/methodology/approach
Preferred Reporting Items for Systematic Reviews and Meta-Analyses (PRISMA) extension for scoping reviews (PRISMA-ScR) guidelines were followed. Five databases were searched for studies published from January 2015 to February 2020 evaluating the Chilean population's perception, behaviour and purchasing habits of processed foods.
Findings
The results showed that consumers support the implementation of a front-of-package warning label (FOPWL) and thought it a good strategy to help make healthier food choices for themselves. However, even with a positive perception about these products, the intention-to-change the purchase of unhealthy food occurred only for sugar-sweetened beverages. Meanwhile, children did not stop eating foods that had a FOPWL, although the mothers' perception was that the presence of FOPWLs could be important to differentiate unhealthy from healthy products. The availability of products with FOPWLs at schools decreased, indicating that the law was being complied with and that the child-directed marketing strategy showed a reduction after the first phase of implementation.
Practical implications
This evidence will guide other countries about in understanding and improving this policy.
Originality/value
This is the first study to gather research available in international databases that evaluated the results of the Chilean Law on the advertising of children's food and the perception, purchase intention, reformulation of products and consumption behaviour of the Chilean population.

Purpose
The purpose of this paper is to review the food supply chain management (FSCM) in terms of systems and implementations so that observations and lessons from this research could be useful for academia and industrial practitioners in the future.
Design/methodology/approach
A systematical and hierarchical framework is proposed in this paper to review the literature. Categorizations and classifications are identified to organize this paper.
Findings
This paper reviews total 192 articles related to the data-driven systems for FSCM. Currently, there is a dramatic increase of research papers related to this topic. Looking at the general interests on FSCM, research on this topic can be expected to increase in the future.
Research limitations/implications
This paper only selected limited number of papers which are published in leading journals or with high citations. For simplicity without generality, key findings and observations are significant from this research.
Practical implications
Some ideas from this paper could be expanded into other possible domains so that involved parties are able to be inspired for enriching the FSCM. Future implementations are useful for practitioners to conduct IT-based solutions for FSCM.
Social implications
As the increasing of digital devices in FSCM, large number of data will be used for decision-makings. Data-driven systems for FSCM will be the future for a more sustainable food supply chain.
Originality/value
This is the first attempt to provide a comprehensive review on FSCM from the view of data-driven IT systems.
