Abstract

Purpose

The purpose of this paper is to put forward a multi-period dynamic pricing strategy for perishable food considering consumers’ price fairness perception. The impacts of the multi-period retail price, food freshness and inventory shortage risk on consumers’ heterogeneous willingness to pay (WTP) and their strategic purchasing behaviours are studied.

Design/methodology/approach

The authors present a price optimization model for perishable food, and conduct a laboratory experiment to justify the theoretical model. The data collected are analysed by correlation analysis and nonparametric test.

Findings

The results obtained reveal, first, food freshness and inventory shortage risk have effect on consumers’ heterogeneous WTP. Second, different retail prices lead to consumers’ strategically purchasing behaviours. Finally, consumers’ intertemporal price fairness perception and the food retailer’s long-term utility maximization can be achieved by developing multi-period dynamic pricing strategy.

Practical implications

This study suggests the perishable food retailer to apply a step-by-step price markdown strategy. It aims at eliminating price unfairness perceptions caused by loss of freshness and high shortage risk of the perishable food in the subsequent selling periods within the shelf life. Some valuable managerial insights towards perishable pricing for food retailers are discussed.

Originality/value

This study serves as the first step to utilize a laboratory experiment to dig out consumers’ intertemporal WTP towards perishable food. It also presents a novel way for describing consumers’ intertemporal price fairness perception by equalizing consumers’ average utilities considering consumer surplus, food freshness and shortage risk at different selling periods. The line of research on dynamic pricing concerning consumers’ price fairness perception is quite new in academic research, and has arisen due to its importance for food retailers of maximizing their long-term revenues and also of constructing mutual benefit and lasting connections with the consumers.

Abstract

Purpose

Covid-19 is a serious threat to the dietary quality of vulnerable communities in developing countries with limited economic resources. This study explored the implications of COVID-19 on daily dietary behavior and food consumption patterns of perishable and nonperishable food commodities based on the gender of household headship in Pakistan.

Design/methodology/approach

The data was collected through an online survey using the snowball sampling technique. A mixed design ANOVA, an independent t-test and a multivariate probit model were used to look at the data from 417 female-headed households and 1,131 male-headed households that were surveyed in the study.

Findings

Female-headed households experienced a greater decrease in their daily intake of perishable and nonperishable food commodities compared to male-headed households during COVID-19. The decrease in consumption of perishable food commodities was greater than the decrease in nonperishable food commodities for both female-headed and male-headed households. Female-headed households witnessed the largest decrease in daily intake of animal-derived foods, while male-headed households observed the highest diminution in consumption of fruits. Female-headed households and male-headed households reduced their consumption of perishable food commodities by more than one-third and one-fifth, respectively. Households with lower socioeconomic status reported higher reductions in their daily intakes of food commodities compared to households with higher socioeconomic status.

Research limitations/implications

The cross-sectional nature of the collected data does not allow the development of a causal relationship between COVID-19 implications and food consumption changes in daily dietary patterns.

Originality/value

Dietary and consumption patterns of populations are changing worldwide due to COVID-19. There is no study to assist policymakers in determining how COVID-19 is affecting the daily food consumption patterns of perishable and non-perishable food commodities of households based on gender in the developing world.

Abstract

Purpose

The purpose of this study is to compare the impact of multi‐period pricing, as an example of more dynamic pricing and discounting strategy with that of a present less dynamic alternative on customer satisfaction and consumers' willingness to make trade‐offs between price and remaining shelf‐life.

Design/methodology/approach

The authors conducted interviews with three food retail managers in South Korea to gather practical information about the management of perishable foods, which informed the design of a survey in which consumers in South Korea were questioned about their perceptions of the two strategies, with respect to nine perishable food products in three categories. The data collected were analysed by one‐way ANOVA and the t‐test.

Findings

The findings of this research present an improved understanding of the impact of a multi‐period pricing strategy on consumer satisfaction and customer behaviour for perishable foods. The conclusions have the potential to significantly assist food retailers to understand the consumers' perspective on the benefits of a more dynamic pricing strategy.

Practical implications

The findings suggest that food retailers can enhance customer satisfaction by offering an earlier but lower discount, and increasing it as perishable food items approach their expiry date, rather than a higher discount when the expiry date is imminent.

Originality/value

The findings in this study are significant since they serve as the first step in measuring the value of dynamic pricing approaches that provide better trade‐off options between price and remaining shelf‐life from consumers' perspectives.

Abstract

Purpose

The purpose of this paper is to provide a literature review of the perishable food supply chain quality (PFSCQ). It includes all the products/process from the farm to folk of perishable food (milk, meat, vegetable, grains and butter).

Design/methodology/approach

The methodology of a structured literature review involves selection of a representative sample of articles followed by classification of articles on the basis of research methodology and content of PFSCQ in the paper.

Findings

Research toward PFSCQ has risen in last five years. Fewer articles are addressing issues of developing countries then developed countries. Majority of the articles involved multiple as entity of analysis (combination of supplier, distributor, manufacturer, retailer and consumer), information as element of exchange and chain as the level of analysis. A large number of articles involved “agri-food,” “dairy” and “pork” as perishable products. Majority of articles used “case study” methodology. Statistical analysis as a tool for problem solving was used in majority of articles. Performance measurement aspect is also on growth in PFSCQ literature. Information sharing, logistic management, strategic management, demand forecasting and integration among the various stakeholders of PFSCQ are some of the critical issues.

Originality/value

Many literature reviews that aim at critical examination of supply chain literature are reported but none of them focussed exclusively on content of PFSCQ. Another unique feature of this paper is that the sample size of articles with respect to number of papers (481 papers) as well as number of journals (141 journals) is quite large. The paper spans a longer time span of 20 years (1994-2013) as well.

Abstract

Purpose

This paper aims to address procurement, logistics management, inventory control and distribution of perishable items, i.e. vegetables, fruits, flowers and fishes, during the social isolation period of the Covid-19 era to identify conflicting interests among the channel members; present inventory and information sharing scenario; and reveal organizational dispute and existence of redundant, nonessential and corrupted members in the supply chain.

Design/methodology/approach

This study uses an exploratory investigation to evaluate the relations among the members of the supply chain of perishable food items. In this context, it is designed to investigate the field, observe the members of the existing supply chain from rural and remote places and capture their interviews to accomplish the objectives.

Findings

This study identified that although the supply chain of perishable food items is controlled truly by private parties, from a realistic view, the private–public partnership is essential where the government should play the coordinating role. In this context, continuous interaction, coordination and information sharing among the members to establish an optimum and scalable network and remove any redundant nodal points is a key success factor for managing an efficient supply chain.

Research limitations/implications

Theoretical and managerial implication of this research is enormous. The existence of functional and dysfunctional conflicts in the same supply network and how it can be detrimental to the performance of the members are exposed in this study, which can be an excellent source to be investigated. Practitioners and researchers can gain a greater understanding to identify the root causes of conflicts in the existing structural dynamics, shedding light on organizational interactions, power and group behavior during the Covid-19 era.

Originality/value

From the light of management and inter-organizational conflicts, this is a pioneer study that has detected the redundant channel members, their source of power and how their removal can present an optimum channel with group coherence and synergistic interest.

Abstract

Purpose

Currently, digital technology has been proposed as a new archetype for developing an effective traceability system in the perishable food supply chain (FSC). Implementation of such a system needs significant investment and the burden lies with the members of the supply chain. The purpose of this paper is to examine the impact on the profit of the supply chain members due to the implementation of an effective traceability system with such a large investment. The study also tries to explore the impact of the implementation of such a system by coordination among the members through a cost-sharing mechanism.

Design/methodology/approach

A two-level supply chain that comprises a supplier and retailer is analyzed using a game-theoretic approach. The mathematical models are developed considering the scenario for an individual, centralized and both members invest using a cost-sharing mechanism. For each of the models, the impact of product selling price, information sensing price and quality improvement level on profit is analyzed through numerical analysis.

Findings

The study reveals that consumer involvement can be a strong motivation for the supply chain members to initiate investment in the traceability system. Further, from an investment perspective cost-sharing model is beneficial compared to the individual investment-bearing model. This mechanism can coordinate as well as benefit the FSC members. However, the model is less beneficial to the centralized model from profit and quality improvement levels.

Practical implications

Food wastage can be less from supplier and retailer perspectives. Moreover, consumers can purchase food items only after verifying their shipping conditions. Consequently the food safety scandals can be reduced remarkably.

Originality/value

Digital technology adoption in the perishable FSC is still considered emerging. The present study helps organizations to implement a traceability system in the perishable FSC through consumer involvement and a cost-sharing mechanism.

Abstract

Purpose

The purpose of this paper is to examine the concept of perishable food supply chain quality (PFSCQ) and to suggest a structural model that counts the influence of PFSCQ practices on organizational sustainable performance.

Design/methodology/approach

On the basis of comprehensive literature review, PFSCQ highly significant practices were examined and designated. These practices were classified into four dimensions: upstream quality (supplier quality), downstream quality (customer focus), internal quality (process and logistics quality) and support practices (top management leadership and commitment to quality, quality of human resource, quality of information and supply chain integration). The measurement instrument of organizational sustainable performance was also build on, containing three aspects: economic, environmental and social performance.

Findings

An inventive conceptual model that specifies a comprehensive image cover up core dimensions of PFSCQ and various aspects of organizational sustainable performance was suggested. This conceptual model can be used as “a directive” for theory developing and measurement instrument development of PFSCQ practices and organizational sustainable performance. More prominently, on the road to achieving additional insight, an extensive structural model that makes out direct and indirect relationships between PFSCQ practices and organizational sustainable performance was also developed. Practitioners can apply this model as “a path plan” for implementing PFSCQ practices to improve organizational sustainable performance.

Originality/value

The integration of quality and supply chain even now remains inadequate in the literature. Consequently, it is required to have a more focused approach in assessing quality issues inside the upstream, internal and downstream of the supply chain. This study concentrates on the practices which make better quality aspects of the supply chain, known as PFSCQ practices. Suggested research models in this paper contribute to conceptual frameworks for theory building in PFSCQ and sustainable organizational performance. It is also expected that this research can suggest a useful direction for determining and implementing PFSCQ practices as well as make possible further studies in this arena.

Abstract

Purpose

At the end of 2019, the first case of the Corona Virus Disease (COVID-19) was reported in Wuhan city of China. The disease was declared a pandemic without imagining the magnitude of damage currently caused in all branches of the economy. One of the most affected sectors was food and mostly perishable food (PF), which are more susceptible to environmental conditions. Thus, the research examines the effect of the COVID-19 outbreak on Ecuador's perishable food supply chains (PFSCs) during the pandemic. It contributes to new results on the special issue (SI) PFSC response to event risk and uncertainty, such as those that generated the pandemic.

Design/methodology/approach

The data used are from primary information sources, which were collected through a questionnaire. The questionnaire was applied to 298 companies belonging to the sector, and later the information was processed through partial least squares structural equation model. The convergent validity, discriminate and robustness tests provide arguments for the suitability of the model. Therefore, the findings are reliable and valid for the adequate measures to improve the PFSC due to a COVID-19 outbreak.

Findings

The results show that the perception of personal risk (PPR) produced by COVID-19 has caused the companies of the PFSC to adopt preventive policies (PO) to avoid contagion and guarantee the operation of the companies. In addition, the PPR has been responsible for the alterations in the demand and price (DP) of PF. Next, PO and DP have a significant effect on PFSC, which shows the evidence favouring the malfunction of PFSC operations due to anti-contagion PO, the mismatch of DP. On the contrary, circular economy practices contribute to the excellent performance of the PFSC. Finally, the research suggests some policy implications to consider in improving the PFSC.

Originality/value

This study is the first to be carried out in Ecuador's country on the PFSC; its contribution is unprecedented and makes it a road-map to be considered to guarantee the correct functioning of the PFSCs, and it will provide policymakers with valid elements to design efficient PFSCs that better respond to unforeseen events and uncertainties. Future research will focus on analysing the management of PF consumption in Ecuador during the pandemic.
