The purpose of this paper is to study the resilience and elastic properties of short pastry with the meals of soy, sunflower and milk thistle.

Abstract

Purpose

The purpose of this paper is to study the resilience and elastic properties of short pastry with the meals of soy, sunflower and milk thistle.

Design/methodology/approach

Recent studies in the emerging food technologies of short pastry with use of meals were considered. Their focus on the improvement of the functional peculiarities of short pastry and benefits for people were the defining characteristics of the studies.

Findings

Model food compositions have been developed from soybean meal, sunflower meal and milk thistle for adding them to semi-finished short pastry products. The technology of short pastry confectionery made from short pastry with oilseed meal has been scientifically substantiated and developed. The chemical composition of shortbread cookies with the use of oilseed meal was calculated. The developed technology increased protein content by 2.5 times, cellulose content – by six times, significantly increased mineralization in the developed confectionery products. The content of calcium increased by 172.9 mg, selenium – by 13.06 mcg, iodine – by 2.76 mcg and vitamin E by 2.4 mg.

Practical implications

The developed technology of short pastry with a model composition of the meal can be used in practice. The use of a meal composition is a promising direction to improve the brittleness of short pastry products. The developed pastry products made from short pastry with added meal can be introduced into catering establishments as functional products with improved biological value.

Social implications

Developed pastry products can be used as functional products with improved biological value, which is important for people’s health and has positive effects on the human body.

Originality/value

The use of meals of soy, sunflower and milk thistle in short pastry increases its nutritional and biological value, which improves the impact on the human body. The developed pastry products can be introduced as functional products with improved biological value, which is important for the improvement of people’s health in different countries of the world.

Abstract

Purpose

This study investigates the relationship between social commerce adoption determinants, perceived trust and purchase behaviour among pastry product consumers.

Design/methodology/approach

The research data were collected using a five-point Likert from 409 pastry consumers through an online survey. Partial least square-structural equation modelling (PLS-SEM) was utilised to test the study model and hypotheses.

Findings

The study findings indicate that pastry consumers perceived social commerce as effortless, engaging, enjoyable, can be trusted, simple to use and time-saving, motivating them to consume pastry products via social commerce platforms.

Practical implications

This study provides insights and implications for social commerce researchers and marketers related explicitly to perishable products.

Originality/value

This study is one of the few studies that predict and explain the consumer acceptance of social commerce in the pastry products realm. As only a handful of research has endeavoured to research social commerce, this study findings contribute to the conceptualisation of technology acceptance theory by understanding the determinants of social commerce adoption among consumers.

The case will also help assess the financially viable growth. Marketing Management: It can be useful for a comprehensive yet straightforward explanation of marketing mix price, promotion, place, and product, also at the same time it serves to explain the importance of customer service in terms of retailing. Strategic Marketing: The case provides varied growth options that are being considered by retail organizations, which gives the student real-time opportunity to arrive at strategic decisions by considering financial viability, internal strengths (SWOT analysis), franchising as a growth option.

Case overview

Kanwar, the owner of 39 Bakers, was one of the fastest-growing retail outlets in Jammu, India. He had been successful in carving his pie for himself with its unique bakery products of more than 1000 variety of, break-even point price, everyday surprise product (EDSP), reasonable price, open kitchen concept, hygiene, excellent customer service. Within three years, 39 Bakers had grown from one to eight outlets, and revenue had increased to US$68,621, and vision was to achieve US$2m within the next three years. To achieve his vision, he made two business expansion plans either to start product distribution to other retailers like an FMCG company or to go ahead with the business format franchising model. The investors needed a detailed planned within three days. But Kanwar had to decide should he expand geographically and start with franchise model or shall he establish his brand with product distribution, and then go for the franchise model, which plan would make him reach his vision by 2023? Which strategy would be efficient? He indeed wanted to go for the franchise model, but the question is when?

Expected learning outcomes

This case will help entrepreneurs to decide on services and retail industries to expand their business and explore available growth options. It offers a platform to talk about how often franchising used to fuel growth. Either you select to be a franchisee or independent business owner or provide franchising opportunities or start your distribution network, a detailed business plan is one of the most critical decision-making activities. Without adequate details, it can make your life's most expensive option. Abstract

Purpose

The purpose of this paper is to provide empirical research evidence on the process innovations and the NPD (new product development) processes/practices adopted by the food industry as well as their interface.

Design/methodology/approach

The study was conducted in the Greek food industry. A total of 44 companies that have developed new products were identified and personal interviews were conducted with company managers. Three different aspects of their innovativeness was investigated, namely the use of new raw ingredients/materials, new machinery and new controls. Questions were asked on the adoption of 33 different processes for the development of these new products and the importance attributed to these NPD processes/practices.

Findings

Firms in the food industry may operate on the basis of a U‐shaped process innovativeness. They employ either the same raw materials/ingredients with new equipment/machinery or new raw ingredients/materials with old equipment/machinery. New controls/procedures go together with new equipment/machinery. Increased process innovativeness is associated with only a small number of NPD processes/practices. These revolve around manufacturing and its preparation.

Research implications/limitations

The small number of identified innovations and the focus sector limit the results to the target sample.

Practical implications

The exact NPD processes used by the food industry and which of these are associated with increased process innovativeness, bear important implications for food industry managers and research.

Originality/value

The paper fills a gap regarding what is the nature of innovativeness in the Greek food industry, what new product development processes/practices are followed and which of these are associated with increased innovativeness. As such it provides further specialised evidence for the food sector across European countries.

Abstract

This research paper aims to briefly summarize data from the Taylor, Nelson Sofres studies on diet, compiled by Friary Marketing and Consulting Group and make some comparisons with those of the Department for Environment, Food and Rural Affairs’ National Food Survey for household food consumption. Studies show that the diet of the Scots provides a higher proportion of fat, contains less fruit and vegetables, supplies less energy from foods and beverages, includes a greater proportion of meals eaten out of the home and incorporates considerably more fried foods – both within and outside the home. Notes that 40 per cent of the Scots were of social class D and E. Shows similarities between the NFS data for household food consumption and that of Friary Marketing and Consulting Group. Suggestions are made for improving the diet of the Scots.

Purpose

This paper aims to present results from a research that analyzed the quality of labels available in the Serbian food market and consumers’ attitudes toward food labels.

Design/methodology/approach

A total of 899 food labels have been analyzed in relation to the presence of legally required information, their readability to average consumer and presence of nutritional/health claims and/or nutritional information. In parallel, 400 respondents were interviewed in the survey of consumers’ attitudes regarding labels.

Findings

Results revealed that 38.2 per cent of food products hold labels that are not fully readable to average consumers. Regarding basic label information, 11 per cent of foods have missing information in terms of series/lot identification. The majority of the products (87.4 per cent) have only basic nutritional information with 4.6 per cent of products holding nutritional claims. Consumers with active sport activities showed higher awareness of nutritional information. There were no statistically significant differences between smokers and non-smokers regarding their attitudes toward nutritional information. Age and education play a significant role in ranking nutritional facts. The most important nutritional information is fat content, followed by sugar and vitamins.

Research limitations/implications

The nature of the study did not allow conclusions regarding causal relationship between food products and consumers as well as if nutritional information affects consumers’ choices and purchasing patronage.

Originality/value

The findings of this study are worthy, as they report the Serbian consumers’ understanding of labels and nutritional information as well as the status food labels sold in the Serbian market.

Purpose

Sesame can cause food allergy and according to European legislation, its presence in food must be declared on the label. The purpose of this paper is to investigate the presence of sesame in food products carrying no mention of sesame on the ingredient label and in food products carrying the voluntary labelling statement “may contain traces of sesame”.

Design/methodology/approach

Packaged bakery and non-bakery food items were collected at retail. Sample size was calculated according to estimated prevalence of 2 per cent and precision of 5 per cent: in total 32 samples of packaged bakery and non-bakery food were collected for each food category. The RIDASCREEN®FAST Sesame test (R-Biopharm AG, Darmstadt, Germany) was used for the analysis: its limit of detection was fixed in the laboratory at 0.5 ppm.

Findings

Of the 32 food samples that did not mention sesame seed on the ingredient label, one (3.1 per cent) breadsticks sample tested positive at a concentration (326 ppm). Of the 32 food samples that carried the precautionary label statement “may contain traces of sesame”, one (3.1 per cent) breadcrumbs sample tested positive (305 ppm). Comparison between the allergen concentration and the published eliciting dose (ED5) for sesame proteins (1 mg) was performed. The calculated exposure was more than 2 the ED05 reported in the literature.

Originality/value

To date, few studies investigating compliance with food-allergen labelling requirements are available. This survey provides data for preliminary risk assessment for sesame allergenic consumers.

Purpose

The purpose of this paper is to offer an insight into the fundamental changes taking place in Port wine production value chains. Specifically, the authors examine two distinct production regimes: when Port is aged and sold in the Greater Oporto and, alternatively, when it is produced, aged and sold in Douro.

Design/methodology/approach

The authors apply a tri-regional input–output model (Douro, Greater Oporto and rest of the country) for Portugal’s economy. This framework comprises a significant level of detail, with 431 products and 136 industries, the corresponding supply and demand for the products, by industry (for intermediate consumption) and final demand.

Findings

This study shows that the two regimes generate noteworthy, but quite heterogeneous, regional impacts. In both cases, the distribution of value added generates international and interregional trade flows. Moreover, the study reveals a greater capacity to capture national value added by getting the supply chain more intensive in localised services and by using state-of-the-art production techniques.

Originality/value

Using detailed regional data, the authors use disaggregated information, both for industries as well for territories, overcoming a common limitation in similar works that are grounded in international databases. Additionally, the approach integrates the trade interactions among industries and regions, which proves essential to uncovering spillovers resulting from the (direct and indirect) use of inputs from other regions and other countries.

Abstract

Purpose

This study aims to explore how customer-perceived quality is affected by innovation in traditional products in the bread, bakery and pastry industry. The study assesses whether innovating traditional products is an effective strategy, especially in traditional industries.

Design/methodology/approach

This study followed a quantitative method of analysis. Data were gathered from a sample of 200 Italian bread consumers and analysed using a two-pronged correlation analysis, and two hypotheses were tested using Pearson’s correlation.

Findings

The results showed the negative relationship between customer-perceived quality and innovating traditional products in traditional industries embedded in closed contexts.

Research limitations/implications

The study has several academic implications. First, by focusing on the traditional food industry, the study contributes to the theory by answering the call for research in this field; second, the findings contribute to the embeddedness construct and, third, to the studies of customer-perceived quality and to the literature on innovation.

Practical implications

The findings are particularly interesting for entrepreneurs and consultants in traditional industries who make decisions on whether it is better to innovate or to remain anchored to tradition.

Originality/value

The present study clarifies the shadowy side of innovation in traditional industries, such as the bread, bakery and pastry industry, and it reveals how tradition plays a meaningful role in those sectors.
