Abstract

Purpose

Oyster cultivation has a long history in Pearl River Delta area and is one of the traditional aquaculture depending strongly on the natural coastal resource because of the expected variation of salinity, temperature and diversity of infaunal organisms for the cultivation practice. Apart from being the traditional knowledge inherited through the coastal communities over the centuries, oyster aquaculture is also embedded in the long-term socio-economic relationships among communities that have a rich experience regarding the quality and quantity controls for the long-term sustainable coastal resource management, together with a strong sense of responsibility for safeguarding and promoting the local food heritage for various reasons. The paper aims to discuss these issues.

Design/methodology/approach

This paper seeks to examine oyster cultivation in Lau Fau Shan (literally means floating mountain) in Hong Kong, not only from the cultural–historical perspectives but also from the social resilience perspectives, such as how and why local communities are willing to inherit the traditions, what kinds of roles NGOs and government play in oyster cultivation, why local people should be engaged, and how the oyster aquaculture/industry underwent the transformations, given all the difficulties and challenges.

Findings

The value of oyster cultivation is not only for food production but also for the global exchange of experiences on social resilience for both school and public educations.

Originality/value

It is an original research making use of a local case study for the understanding of post-disaster reconstruction of coastal communities in the global context.

Abstract

Purpose

Through application of multi-level structural equation modeling as the data analysis technique, the purpose of this paper is to analyze the group-level impacts on a couple’s food choices during travel at a coastal destination.

Design/methodology/approach

Researchers obtained 380 individual questionnaires from 190 mixed gender couples (who eat oysters) in Charleston and Beaufort County, South Carolina, USA. Data were collected from both members of the couple during their vacation. Due to missing data and normality issues 5 couples and 30 individuals were eliminated. The remaining data were analyzed with SPSS 21 and EQS 6.2 with advanced confirmatory factor analysis and multi-level (ML) regression techniques.

Findings

The study results indicated that while women have a more negative attitude than men toward oysters, their intention to eat oysters during vacation is not different from their partner. By detecting the interdependency of responses of individuals within a couple, this study revealed that a ML approach is a more powerful way to understand the decision-making process of couples. Additionally the difference in the results of single- and ML models showed that the latter approach lowers the chance of Type 2 error and provides more accurate results.

Originality/value

In tourism decision-making literature, the focus has been mostly on the individual despite the collectivistic nature of tourism activity. The current study is the first to analyze a couple’s decision-making process at the group level. Furthermore by collecting data from both members of the group during their vacation, this study has distinguished itself from previous studies.

Abstract

Purpose

The purpose of this article was to study the influence of oyster mushroom powder (Pleurotus ostreatus) as a partial substitute for sodium pyrophosphate in frankfurters made from red tilapia (Oreochromis spp.) fillets.

Design/methodology/approach

This study looks at adding oyster mushroom powder (OMP) to the emulsion at concentrations of 0, 0.075, 0.150, 0.225 and 0.300% (p/p) in combination with sodium pyrophosphate (PS), which was added at concentrations of 0.225, 0.150, 0.075 and 0%, respectively. A sausage with only sodium pyrophosphate added was evaluated as the control sample. The proximal chemical composition, physicochemical parameters, color, texture, lipid oxidation and sensory characteristics were determined for each treatment.

Findings

The results revealed that adding OMP up to 0.150% (w/w) provided the best conditions for the sausages in terms of pH, lipid oxidation, moisture retention capacity and cooking losses. In addition, the characteristics of texture and color, as well as the sensory evaluation, showed the best values for this OMP and SP ratio, meaning a substitution of sodium pyrophosphate with oyster mushroom powder at this concentration is suitable.

Originality/value

This paper discusses the beneficial properties of oyster mushroom powder, thereby showing potential for the establishment of health-promoting effects of the fish sausages.

Abstract

What proof have the public, independent of the assertions of the makers, that all the firms whose products are sold indifferently by the shopkeepers use only the best materials; or, indeed, that a large number of the articles sold are not mixtures more or less objectionable or fraudulent ? This, in effect, is the question put by a writer in a West of England newspaper, and it might be used as a text upon which to write a lengthy homily on the adulteration question and on the astonishing gullibility of the public. As a matter of fact the only evidence of the character and quality of food and other products, in regard to which there is no independent guarantee, is that which is afforded by the standing of the makers, and to some extent of the firms which offer them for sale. And this evidence cannot, under any circumstances, be looked upon as constituting proof. The startling allegations so commonly put forward by advertisers with respect to their wares, while they may be ineffective in so far as thinking people are concerned, must nevertheless be found pecuniarily advantageous since the expense involved in placing them under the eyes of the public would otherwise hardly be incurred. Many of these advertised allegations are, of course, entirely unjustifiable, or are incapable of proof. It may be hoped that the lavish manner in which they are set out, and their very extravagance, may, in time, result in producing a general effect not contemplated by the advertisers. In the meantime it cannot be too often pointed out that proof, such as that which is required for the satisfaction of the retailer and for the protection of the public, can only be obtained by the exercise of an independent control, and, in certain cases, by the maintenance of efficient independent inspection in addition, so that a guarantee of a character entirely different to that which may be offered, even by a firm of the highest eminence, may be supplied.

Abstract

Purpose

The study aims to analyze the composition and mineral profile of oyster shell powder (OSP) and assess its potential as a sustainable source of calcium.

Design/methodology/approach

A total of two batches of OSP with different particle sizes had been evaluated for centesimal and mineral composition and microbiological quality. OSP with smaller particles (0.85 mm) was used in the production of bread: standard bread (SB) (0%), fortified bread (FB1) (3%) and FB2 (4%). Centesimal and mineral composition and sensory acceptance had been performed. The internal preference map had been constructed using principal component analysis. The Just About Right data and the influence of sensory attributes on bread acceptance had been assessed by a penalty analysis test.

Findings

OSP-0.85 mm had calcium content (478.47 ± 2.37 mg.g-1) lower than OSP-1.00 mm (521.15 ± 0.99 mg.g-1) due to retention of particles. In both batches, heavy metals such as chromium, nickel and copper had not detected. FB1 and FB2 had the best nutritional content compared to SB, with higher calcium content (mg.g-1) 0.69 ± 0.07; 13.76 ± 0.72 and 19.47 ± 1.99 for SB, FB1 and FB2, respectively. The internal preference map showed better acceptance of FB1 compared to FB2. The penalty test showed that this acceptance was penalized (p < 0.05) due to the sandy texture.

Originality/value

The large number of shells generated in the processing of oysters is an environmental problem and generates waste of a natural source of calcium. It has been demonstrated that oyster shell powder can be used as a natural and sustainable source of calcium in bread, requiring further studies to assess the bioavailability of calcium.

The Daily Telegraph has recently published several articles and a considerable amount of correspondence relating to malt whisky and the tricks of the whisky trade. As is usually the case when a daily newspaper takes up a subject of this kind, a number of well ‐ meaning people make a variety of suggestions as to what ought to be done to secure the purification of the particular Augean stable under discussion and to ensure the reception by the purchaser of the article which he really desires to have. But what ought to be done and what can be done are two very different things, and the question of what it is possible to do in the present state of scientific knowledge—and under the existing law as it is at present administered— is, as a rule, avoided by the writers referred to. It has been suggested, for instance, that it should be made compulsory that all vessels in which spirits are sold should bear a label distinctly stating the exact nature of the contents of such vessels. This would be an excellent suggestion if it could be effectively carried out, but, before this can be done, it is necessary to devise a method of compulsion. A man who sells as malt whisky an article mainly or entirely composed of spirit to which that title should not be applied would not have any very serious scruples as to the truth of the statements which appear on his labels. He must be compelled to act honestly by some sufficient force, and, short of a law which would permit the manufacture and “blending” of whisky to be carried out by certain persons only, according to specified rules, and under strict Government supervision in every case, no legislative enactments whatever would have the effect of preventing the various forms of this particular fraud. At present there are no legal definitions whereby the composition and characters of the articles described as “malt whisky” and “whisky” are laid down, excepting the definitions which may be held to be implied in the application of the 6th section of the Sale of Food and Drugs Act of 1875 to the case. This section requires that an article shall be of the “nature, substance, and quality demanded by the purchaser.” On the strength of this section it is quite unjustifiably assumed that the compulsion referred to can be effectively secured by the operation of the Sale of Food and Drugs Acts. According to our legal system it is essential under the criminal Acts— and the Food Adulteration Acts are criminal Acts—for the prosecuting authority to prove beyond all possibility of question that a person charged with an offence is guilty of that offence, and, in regard to the matter under consideration, it would therefore be necessary to absolutely prove by scientific evidence that any given mixed spirit, for the sale of which as malt whisky a prosecution had been instituted, was not of the nature, substance, and quality of the article demanded. Under the present conditions relating to sampling under the Acts this would be impracticable, except, possibly, on very broad lines; and, assuming that scientific investigation resulted in the possibility of fixing clear and definite points of distinction between the true and the false, there would still be the enormous difficulties and the heavy expenses attending the proving of offences of this character to the satisfaction of the Courts—difficulties and expenses which local authorities cannot fairly be expected to face. If, after the lengthy and expensive investigations that would be necessary, and which could only be properly carried out with Government aid, by a scientific Commission appointed by the Government, it were found possible to establish working definitions and standards, these would necessarily be only applicable to a limited extent, just as is at present the case in regard to milk and butter; while the question of quality can never be dealt with under repressive Acts of, Parliament of any kind. Assuming the establishment of standards of some kind we fully admit the possibility, under altered legal conditions, of checking the grosser forms of whisky sophistication by the employment of legal machinery, as is done with various other products; but vast amounts of various spirit mixtures could still be sold under false names with impunity. We should still have with us the legalised inferiority and the legalised adulteration of comparatively minor type which we have in the case of milk and butter. What is required and what alone can be effective, in dealing with sophistications which the law can never reach, is the provision of adequate and entirely independent guarantees which are based both on permanently‐applied analytical investigations carried out upon quantities of material which are not absurdly limited, and on a system of permanent and independent inspection,—both being supplied by some authority or authorities of sufficient standing. While the statements made by a reputable firm ought to carry weight, and ought, no doubt, to be accepted as valuable so far as they go, there is always necessarily and obviously a great element of weakness in the declarations put forward by a firm with respect to its own products. Particularly in view of modern commercial conditions something very much stronger than a personal asseveration as to the purity and excellence of one's own goods is now in reality required. That this is the case is shown by the fact that the demand for independent guarantees has recently been repeatedly voiced in the general press. The public are badly in want of education on all such questions and the Daily Telegraph is entitled to the thanks of the community for having initiated a discussion which can only be productive of good results in this direction.

Abstract

In the Annual Report of the General Purposes Committee of the Middlesex County Council for the year ending March 31, 1909, it is stated that inquiries were made as to the action taken under the Dairies, Cowsheds, and Milkshops Orders of 1885 and 1899 by the thirty‐six district councils in the county, the object of such action being the detection of cows suffering from tuberculosis of the udder. It might be thought that by this time the necessity for putting these orders into force had been thoroughly proved. The Royal Commission on Tuberculosis made a definite statement to the effect that milk derived from tuberculous cattle is one of the principal causes of tubercular disease in the human subject, and, apparently there seems to be some disposition on the part of local authorities to make tuberculosis notifiable. The Public Health (Tuberculosis) Regulations, 1908, which came into force at the beginning of 1909, require that all cases of pulmonary tuberculosis are to be notified to the sanitary authority if the patients are receiving treatment from the Poor Law medical officers. Large sums are spent every year throughout the country on the upkeep of sanatoria with the object of curing cases of tubercle, if possible, but, in any case, of alleviating the sufferings of those afflicted with tuberculosis. On all sides, in fact, it is now recognised that the most energetic measures are necessary in order to combat this terrible disease. It appears from the figures given in the Report referred to that in twenty‐three out of the thirty‐six districts. “No veterinary examinations of cows were made on behalf of the local authorities!” The statement is not made the subject of comment, but we hardly think that the county authorities can regard the results of their enquiry as satisfactory. The Report was apparently presented to the County Council on July 22 last, so that up to that time, at least, it would seem that these twenty‐three districts, in a county with about one million inhabitants, are governed, so far as sanitary matters go, by people who consider themselves qualified to hold opinions diametrically opposed to those held by experts and based on the best scientific evidence at present available.

Purpose

The purpose of this study was to optimize the parameters for enhancing the vitamin D2 formation in three edible mushroom varieties, namely, shiitake mushroom (Lentinula edodes), white button mushroom (Agaricus bisporus) and oyster mushroom (Pleurotus ostreatus) using ultraviolet (UV) irradiation.

Design/methodology/approach

Freshly harvested mushrooms were irradiated with UV-B and UV-C lamps. Further, mushrooms were treated with UV-B at a distance ranging between 10 and 50 cm from the UV light source, for 15–150 min, to maximize the conversion of ergosterol to vitamin D2. Analysis of vitamin D2 content in mushrooms before and after UV exposure was done by high pressure liquid chromatography (HPLC).

Findings

HPLC results showed a significant (p < 0.001) increase in vitamin D2 levels of shiitake (17.3 ± 0.35 µg/g), button (24.9 ± 0.71 µg/g) and oyster (19.1 ± 0.35 µg/g) mushrooms, irradiated with UV-B at a distance of 20–30 cm for 120 min. Further, stability studies revealed that vitamin D2 levels in UV-B-irradiated mushrooms gradually increased for 48 and 72 h of storage at room and refrigeration temperatures, respectively. During cooking operations, 62%–93% of vitamin D2 was retained in UV-B-irradiated mushrooms.

Originality/value

This study describes the most effective parameters such as ideal wavelength, mushrooms size, duration of exposure and distance from UV sources for maximum vitamin D2 formation in edible mushrooms using UV irradiation. Further, assessment of vitamin D2 stability in UV exposed mushrooms during storage period and cooking operations has been carried out. In addition, this study also provides a comparison of the vitamin D2 levels of the three widely cultivated and consumed mushroom varieties treated simultaneously under similar UV exposure conditions.

Abstract

Purpose

This article aims to focus on the food value of the mushroom. Because of its low calorific value and very high content of proteins, vitamins and minerals, mushrooms may contribute significantly in overcoming protein deficiency in developing countries like India.

Design/methodology/approach

Oyster (Pleurotus sajor caju) mushroom cultivated on two substrates i.e. wheat straw and brassica straw were procured. Freshly harvested and washed mushrooms were cut into small pieces. Sliced mushrooms were divided into four portions. Two portions were left untreated and dried using sun and oven drying methods. The third portion was blanched in boiling water at 100 °C for two mins, cooled immediately and drained. The blanched samples were divided into two portions. One portion was sun dried and another was oven dried. The fourth portion was soaked in solution of citric acid (0.25 percent) for 30 mins and drained. The steeped samples were divided into two portions. One portion was sun dried and another was oven dried. Each sample was dried from initial moisture content of 91 percent on fresh weight basis of the final moisture content 10 percent on dry weight basis. All the samples were ground to make fine powder. The untreated and treated samples were analysed for physico‐chemical properties and sensory evaluation by using standard methods.

Findings

Treated and untreated powders prepared from oyster (Pleurotus sajor caju) mushrooms grown on two substrates i.e. wheat and brassica straw were analysed for physical and chemical characteristics. Among the powders, T6 (steeped in 0.25 percent citric acid and oven dried) powder exhibited highest yield followed by untreated and blanched powders. On the other hand, untreated samples T1 (sun dried) and T4 (oven dried) showed higher browning index as compared to pretreated powders. Steeped samples (T3 and T6) from both type of mushrooms, irrespective of drying methods exhibited higher values of water retention capacity and swelling index as well as sensory attributes (colour, aroma and texture) In terms of chemical analysis, steeped samples from both types of mushrooms, irrespective of drying methods, exhibited higher contents crude protein, crude fibre and ash as compared to blanched powders. Blanching in hot water may cause leaching out of nutrients.

Practical implications

With regard to healthy benefits and medicinal value of mushroom, its production and consumption should be increased. However, mushroom production does not demand land, but helps in the bioconversion of potential pollutants like agro‐wastes to useful and nutritive food for human consumption, which is essential to a developing country like India.

Originality/value

The findings of this article may contribute significantly in overcoming protein deficiency in developing countries like India. Mushrooms have a low carbohydrate content, no cholesterol and are almost fat free. Therefore, they form an important constituent of a diet for a population suffering from atherosclerosis.
