Abstract

Purpose

Adolescence is a period in which autonomy grows and where children develop into independent and active consumers and a period in which their food choices are also becoming more autonomous. Snacking is known to increase during the period of adolescence and the snack choice of adolescents is often unhealthy. Therefore, the purpose of this study is to know when adolescents perceive a snack as healthy. As healthiness perception could be linked to the perception of naturalness and sustainability of a snack, these are interesting product characteristics to study as well.

Design/methodology/approach

Semi-structured interviews with 20 adolescents were conducted to characterize their perception of healthiness, naturalness and sustainability. Chocolate snack bars were used as a stimulus product.

Findings

All participants mentioned consuming snacks because they like them. Healthiness was seen as important but was not always a priority in adolescents' snack choices. Naturalness and sustainability were concepts which the adolescents were not aware of or did not perceive as important during snack choice. The adolescents mentioned experiencing natural products to be healthier compared to not natural products. The consequences of the discerned dimensions time, impact and effect of choices were rather limited for this target group.

Originality/value

Understanding the healthiness, naturalness and sustainability perception of chocolate snack bars by adolescents may help to better understand drivers for adolescents' snack choices.

Abstract

Purpose

The purpose of this study is to investigate how hotel guests can be nudged for more active engagement in hospitality plate waste prevention and moderation at buffets, through designing effective persuasive interventions. Plate waste is a main sustainability challenge, and it is considered one of the major drivers of food waste in the hospitality sector, whose operations generate excessive amounts of waste. The hospitality industry, featured by all-you-can-eat buffet-style settings, is somehow encouraging consumers to increase the amount of food ordered or taken and not been eaten.

Design/methodology/approach

This study reports a field experiment conducted in a real hotel setting, where persuasive interventions were targeted to consumers at the croissants buffet, when guests were making their selections. The research tests the persuasiveness of functional and experiential appeal messages to nudge hotel guests towards a more active engagement in avoiding plate waste. Each single treatment was carried out for three weeks in varying sequence.

Findings

The findings are based on 63 rounds of data collections and show the superiority of experiential appeal messages in positively influencing guests’ behaviour. This implies that appropriate messages can persuade tourists to avoid plate waste in buffet-style settings, especially if these messages are grounded in participatory cues with an emphasis on altruistic values.

Originality/value

This is one of the few studies that empirically tests the effectiveness of different persuasive interventions in a real consumption setting, thus measuring actual behaviours which have been rarely studied. This study further contributes to the identification of concrete communication tools that can help to mitigate plate waste generation.

Abstract

Purpose

This paper aims to explore stakeholder perspectives of the role of a campus eco-garden in education for sustainability (EfS). It will combine the perspectives to highlight a powerful learning environment (PLE) for university students to realize the concept of EfS.

Design/methodology/approach

Semi-structured interviews were conducted to reveal stakeholder understandings of a campus eco-garden, as well as its associated expectations of learning activities and education outcomes. Three stakeholder groups were interviewed; designers, educators and environmental and non-environmental subject-related students.

Findings

All three stakeholder groups expected cognitive learning of EfS to be enhanced by the eco-garden. The use of affective learning was not strongly expected by the stakeholders. Psychomotor learning was believed to be the most difficult to realize. To fulfill the potential of the eco-garden in EfS, all stakeholders suggested learning activities and roles for both students and teachers. The combined perspectives of the stakeholders helped to visualize a PLE to aid EfS.

Practical implications

This study underlines the importance of effective communication of expectations between stakeholders. It underlines the importance of integrating educational activities with the eco-garden as a PLE, highlighting the roles of teachers and students. It also sheds light on the importance of introducing a cultural component to the EfS program.

Originality/value

This is the first study to apply the PLE theory to enhance EfS with the aid of infrastructure. Both users and designers reveal their views on the planning of the campus eco-garden, especially in its educational function. The study is possibly the first to reveal the differences in expectations between designers and other stakeholder groups (teachers and students) using Könings et al.’s (2005) combination-of-perspectives model.

Abstract

Purpose

A composting project was introduced into an undergraduate microbiology course, to evaluate its efficacy against traditional lecturing for teaching environmental sustainability.

Design/methodology/approach

The research project was a semester-long intervention. Three groups of students participated in the study: a group of 47 female undergraduate students were involved in a composting project, a group of 43 female students were exposed to a traditional lecture and a group of 34 students were the control group. A pretest and a posttest were used, along with poster presentations for the composting project students. In addition, a questionnaire was used to examine students' attitudes toward composting and their waste management practices.

Findings

The project and lecture groups showed significant increases in average test-scores, with the post-project increase (20.9 points) being higher than the post-lecture increase (12.3 points). The questionnaire revealed that nonorganic waste recycling was practiced irregularly, while food waste was reused as livestock feed by 38% of the students. Composting was not common, but 23% of the students in the project group started household composting during the project. The students who were most satisfied with the project outcomes were willing to spend higher prices for a composting box (p = 0.036), showing a high correlation between awareness raising and environmental sustainability practices.

Social implications

The project-based learning approach had more impact than the traditional lecture in teaching environmental sustainability to the students. The project succeeded in improving students' composting knowledge and increased their interest in continuing the composting practices at home.

Originality/value

The study is the first attempt to measure the direct impact of composting education on Emirati students' knowledge of, and interest in environmental sustainable practices, vis-à-vis composting.

Abstract

Purpose

The study aims to investigate urban agriculture in the city of São Paulo from the perspective of social capital. The specific objectives are (1) to identify the effects of social capital on urban agriculture and (2) to investigate social capital formation (its sources and challenges imposed onto its development).

Design/methodology/approach

Initially, a review of the literature was carried out in order to understand the main concepts used in the field of study. Semi-structured interviews were also carried out with people from urban agriculture initiatives, and they were analyzed under the lens of social capital.

Findings

Aspects of social capital were recognized and organized in a framework including sources, effects and challenges. The first deals with consummatory or instrumental sources that generate social capital. The second deals with the following effects: generation of human capital, citizenship, engagement, access and mobilization of resources, and access to information. The third deals with the challenges to its formation related to homophily and the perception of benefits from this form of capital.

Originality/value

Urban agriculture plays an increasingly important role in relieving the pressure generated by the food production system, being part of the solution to food security and sustainability issues. Many researchers recognize important social aspects acting on the dynamics of the movement and the effects of activities on the generation of social capital. The contribution of this work is to deepen the understanding of this type of capital in the context of urban agriculture.

Abstract

Purpose

The purpose of this study was to observe the people’s response regarding rooftop farming in one of the rapidly developing area of Kavrepalanchok district, Dhulikhel, as rooftop farming is aimed in solving food security problem in urban area by providing quality materials for nutritional requirements.

Design/methodology/approach

The research design of this study was random sampling survey with replacement techniques as respondents without concrete roof were not selected for the study. This study was aimed at recording the people’s response in one of the most accessible way, which would be easy for interpretation and analysis.

Findings

The major finding was that all of the respondents found rooftop farming beneficial but not all could practice it because of many constraints associated with rooftop farming. Most of them have fear of roof damage, so they are not adopting it. However, the respondents who are practicing rooftop farming find it difficult to manage because of lack of proper knowledge. Planting materials include plastic bags, crates, polythene and many other non-recyclable components.

Originality/value

To the best of the authors’ knowledge, this research is the first ever conducted in their country. Surveys related to rooftop gardening have not been done in the authors’ country till date. This is one of the present needs to improve the urban farming status, thus survey on rooftop farming and solving its constraints is necessary.

Abstract

Purpose

This paper aims to analyze the conceptions that underlie the notion of “sustainable food” of different social actors based on a study focused on promoting sustainable food strategies on university campuses.

Design/methodology/approach

The research incorporates the views of various actors linked to a sustainable food project on the campuses of the National Autonomous University of Mexico (Universidad Nacional Autónoma de México), which is one of the most important universities in Latin America. The study includes a literature review on food sustainability strategies on university campuses and implemented sustainable food programmes in 100 universities worldwide. It also incorporates semistructured interviews and discussion groups conducted with consumers of the university community, 60 smallholder farmers and managers of 23 alternative food networks in Mexico City.

Findings

This research evidence the diversity of meanings and perspectives associated with food sustainability and a generalized emphasis on its environmental dimensions, although environmental problems tend to be partially understood. It also highlights the priority students and producers give to the accessibility of healthy foods.

Research limitations/implications

The results of this study revealed important elements, potentially useful for designing sustainable food strategies on the campuses, considering the principles of the rights-based approach to development and social participation.

Originality/value

The research evinces tensions in the definition of food sustainability and its translation into actions from a multistakeholder perspective.

Abstract

Purpose

The purpose of the study is to analyse municipal solid waste (MSW) disposed of in Jimeta-Yola metropolis for landfill gas (LFG), methane and project viability potential.

Design/methodology/approach

The data was collected daily from landfills for four weeks. About 7,329.55 Mg/year of waste was analysed. These waste were separated into bio-degradable components i.e. paper and textile (263.66 Mg), non-food organic (681.45 Mg), wood and straw (189.50 Mg) and food and kitchen waste (1797.20 Mg). Non-degradable components include plastics, polythene bags, metals, sand, stones, cans etc. (4397.73 Mg). The component's characteristics such as a number of samples, weight, volume, landfill age etc. were measured. The waste, methane (CH4) and energy potential were also analysed using LFG energy cost model.

Findings

The landfills received 15 Gg/year of MSW and emit 0.31 Gg/year of LFG having CH4 content of 82.95 Mg in 2016. These can produce 33.78 GWh of heat energy equivalent to 10.14 GWh of electricity analytically. Therefore, between 2016 and 2022, about 2.24 Gg CH4 and 5201.32 MWh of electricity were wasted. Henceforth, proper management of these waste substances can produce 186.4 Gg CH4 which will generate 432.52 GWh of electricity. The most economically viable project is an electricity project generating 418 kW/year at a sale price of $1.14/kWh (58.38/kWh) and a payback period of 11 years.

Practical implications

Raw LFG collected can be used in heating brick kilns, boilers, furnaces and greenhouses. When treated, the LFG can produce renewable natural gas (RNG), which is used in energy generation and various domestic, vehicle and industrial applications.

Social implications

The analytical energy generation can provide gross revenue of ₦19.46bn at an average of ₦192.71million/year. Using Landfill Gas Emissions Model (LandGEM) model, the gross and net revenue will be $0.42m and $0.28m yearly, respectively. The project can provide jobs and economic boost to the immediate community through associated ripple effect.

Originality/value

The research is a pre-feasibility study for LFG to gas or electricity projects in Jimeta-Yola. The study contributed to the body of knowledge as a source of literature for further studies locally and globally.

Abstract

Purpose

This paper aims to describe the indigenous and innovative practices adopted by the small-scale farmers to cope with the impacts of climate change hazards on subsistence farming.

Design/methodology/approach

The data were collected through focus group discussions with 72 small-scale farmers from a rural community in Limpopo Province, South Africa. The discussions were analysed through verbatim transcripts and content analysis.

Findings

The study results show the farmers’ understanding of climate change variability and its hazards in the form of rainfall scarcity and excessively increased temperature, which are responsible for a declining production of indigenous crops. It has also been found that in the face of these hazards, the farmers experience low crop yields, which cannot provide the household food requirements. However, the small-scale farmers use a combination of local and innovative knowledge and skills to improve their crop production. They have adopted the indigenous adaptation mechanisms, which include rainfall prediction, preparation of the gardens, change of crops and the planting season to ensure better crop yields. The farmers also adopted innovative adaptation practices such as the use of fertilisers, growing of exotic crops and use of extension officers’ guidance and skills to minimise the risks and maximise the chances of resilient crop production.

Research limitations/implications

This paper describes the farmers’ ability to use the indigenous and innovative adaptation practices. It is only focused on the farmers’ knowledge and skills other than the extension officers’ skills.

Originality/value

The adaptation practices reported in the study fall within the adaptation and mitigation systems stipulated in the South African National Climate Change Strategy to assist the small-scale farmers grow and maintain the crops to improve production and minimise the risks, thus ensuring food security under observable harsh climate hazards.
