Abstract

Purpose

The purpose of this study is to compare the different pesticides management practices and productions in three apple farms in the Northeastern US and Northern China.

Design/methodology/approach

Interviews and surveys were conducted in the three farms between the summer of 2010 and spring of 2011. Production, pesticide and fertilizer usage, and labor costs were calculated for comparison.

Findings

The conventional US apple grower manages his farm for maximum production and minimum labor costs. As a result, the farm achieved a high yield of 24.68 kg/dollar, but low health value for the highest amount of pesticide expenditure ($2.43 per 100 kg of apples). The organic apple farm aims at minimizing environmental impact and protecting consumers. Its yield was 14.22 kg/dollar with 15-30 percent greater labor costs. The health value of the apples improved with pesticide expenditure of $1.66 per 100 kg of apples. This farm uses only the least toxic pesticide certified by OMRI. The traditional apple farm in Northern China spent 1,365 hours/ha on bagging to protect consumers, comparing to only 252 hours/ha of total labor spent in the conventional apple farm. Annual production of the Chinese farm was 22,727 kg/ha, which was only 50 percent of the conventional apple production and 71 percent of the organic apple production.

Originality/value

The results reveal great potential for a much better economic and environmental effectiveness in the Chinese apple farm if they redirect labor from bagging to an effort for production and efficient management while still providing consumer protection.

Abstract

Purpose

The purpose of this paper is to explore the factors that influence Chinese apple farmers’ willingness to adopt organic farming, paying a special attention to the role of information acquisition.

Design/methodology/approach

Given that the selection bias may occur when farmers themselves decide whether or not to acquire the information to understand the essence of organic farming, this study employs a recursive bivariate probit model to address the issue of the selection bias.

Findings

The empirical results indicate that farmers’ decision to acquire information is positively affected by farmers’ environmental awareness, access to credit and access to information. In particular, information acquisition appears to increase the likelihood of farmers’ willingness to adopt organic farming by 35.9 percentage points on average.

Practical implications

The findings suggest that measures increasing farmers’ information exposure can be promising policy interventions to induce adoption of organic farming.

Originality/value

While considerable evidence indicates that organic farming provides more benefits than conventional production practice, little is known about farmers’ willingness to adopt in China. This paper provides a first attempt by examining the role of information acquisition in determining Chinese apple farmers’ willingness to adopt.

Abstract

Purpose

Previous research studying larger market-driving businesses argues that successful entrepreneurs intuitively show market-driving capabilities. Even though market-driving is acknowledged as entrepreneurial action and practice, this phenomenon has rarely been studied from a micro-business perspective. Representing more than 40% of all food businesses in Norway, micro-businesses contribute significantly to both value creation and variety in the marketplace, and this study addresses the existing research gap by examining market-driving practices in food micro-businesses in a competitive Norwegian grocery market.

Design/methodology/approach

The study employs a multiple-case-study approach with four pioneering food micro-businesses within the Norwegian local food sector. Data collected during in-depth interviews with the individual founder-managers provide insight into understanding market-driving practices through the lens of entrepreneurial orientation.

Findings

The findings suggest that food micro-businesses are disrupting the grocery market through their pioneering practices. A three-pillared framework for market-driving practices in food micro-businesses was developed: (1) taking the risk and following their passion, (2) innovativeness led by a passionate personal value proposition, and (3) proactively and perseveringly building a new category.

Originality/value

The study offers a novel attempt to explore and conceptualize market-driving practices in a micro-business context. The findings present a new framework for market-driving contextualized in the local food sector, representing an under-investigated area in micro-business and enterprise development.

Abstract

Purpose

The purpose of this paper is to investigate the supply chains for organic milk, apples and pasta in eight European countries and how added value is distributed among market players.

Design/methodology/approach

Using secondary data and expert interviews, a market overview for the three products is provided as the basis of a more detailed analysis of the added value in 12 organic supply chain examples. For this, interviews with market players and an “added value calculator” tool are employed.

Findings

The farm gate and retail price of organic products is higher than conventional. Supermarkets are the main outlet for organic milk and apples in the countries studied, whereas the situation for organic pasta is varied, suggesting that the use of different sale channels is influenced by the food product. The farmers’ share of added value ranges between 3 and 65 per cent of the added value created in the organic supply chains analysed. Organic offers opportunities to increase the farmers’ share of added value both in supermarkets and alternative sale channels, by developing collaboration, physical infrastructures for organic and integrating operations upstream of the chain.

Research limitations/implications

While more research is needed into a larger number of chains, this paper indicates that there are dynamics and features at supply chain level, such as the distribution of added value and the target markets used, that cannot be interpreted according to the binary division between “mainstream” and “alternative” organic suggested by the conventionalisation hypothesis.

Originality/value

The distribution of added value for existing supply chains in eight European countries is calculated by using an effective added value calculator tool.

Abstract

Purpose

The purpose of this paper is to better understand consumer's familiarity with fruit processing as well as how fruit production conditions (organic and conventional farming), processing conditions (homemade, artisanal and industrial) and the type of processing (e.g. applesauce, apple cider and apple sorbet) influence consumer perceptions of processed fruits.

Design/methodology/approach

An online survey questionnaire was applied to 1,000 people living in France. The people represented different genders, ages (18–60+) and sociodemographic categories. Participants were categorized based on their produce purchasing habits (conventional, local, organic, local-organic). The questionnaire contained multiple choice and five point Likert scale questions. Data were analyzed using non-parametric tests.

Findings

The authors found that participants saw year-round availability, fruit preservation and food waste reduction as processing advantages. Locally sourced products were preferred to organic products. The perceived disadvantages to processing were additive usage, nutrient loss and packaging. For consumers, these disadvantages drove highly differentiated perceptions of industrial versus artisanal/homemade apple products. Processing conditions appeared to matter far more than production conditions (organic vs. conventional). In general, consumers weren't familiar with processing operations, awareness was greater for consumers of local and/or organic produce than conventional consumers.

Social implications

There must be a societal transition toward healthier diets, and food technologies. Informed consumers, might be better equipped to make healthy, informed choices if the consumers are given quality information about food production and processing at different levels.

Originality/value

Research has shown that consumers view fresh organic fruit positively, but only few studies have looked at perceptions of processed fruit products and their familiarity with processing operations. Results of this study demonstrate that consumers could make better choices if the consumers are given quality information about fruit production and processing.

Abstract

Purpose

This research aims to develop a behaviorally based definition of “locavores”, i.e. a segment of a population that purchases locally grown produce. It describes the locavore segment on a set of attributes representative of those typically used for market segmentation and contrasts the locavore segment with a non‐locavore segment to estimate the impact value of local production over organic production. This paper operationalizes the concept in terms of reported buying behavior for fresh produce. A questionnaire administered to adult primary household food shoppers and residents of a US state included attribute, trial and usage (AT&U) questions focusing on a specific target product, i.e. apples. The paper profiles the segment in terms of marketing relevant criteria and discusses implications of the segment for the marketing of fresh produce.

Design/methodology/approach

A quantitative online survey of 1,218 Pennsylvania residents was conducted. The survey included a conjoint experiment where respondents rated their preference for various apples consisting of different levels of key apple characteristics, including physical apple attributes (sweetness, blemishes, size, crispness), credence attributes (conventional versus organic production method, local origin versus product of USA versus imported) and purchase price when buying apples. The data were used to quantify how much consumers are willing to give up in terms of product appearance, price, value of locally produced or other variables. Traditional attribute, trial and usage data were also collected.

Findings

The key finding was that the attribute “local” was significantly more impactful in changing preference for apples than “organic”. It was also found that there were three segments of apple consumers: those that most valued the quality of the apple, a second that was most interested in price, and a third most interested in the health and/or life style attributes such as local and organic attributes. Large differences were found between locavores and non‐locavores on marketing relevant criteria, such as price sensitivity, outlet preferences, and media characteristics.

Research limitations/implications

The major limitation was the use of only Pennsylvania residents in the study and produce other than apples might have been used as well. Additionally it would have been more effective if the actual apples could have been available to taste and inspect. A valuable finding is that there is a local segment that values and is willing to pay for a locally produced product. However, that is the smallest segment and must be carefully targeted as most consumers are interested in either taste or price.

Practical implications

USA food retailers that use local supply can tell their customers “that purchasing from local farmers helps the economy in the communities we serve. Local produce can be delivered to your store very quickly and faster shipping means even fresher produce for you. Items can be picked and packed at a more mature stage. This can really bring out the taste of the product. Eating locally grown food also means less fossil fuel burned in preparation and transport – and less energy needed to refrigerate during transportation”. Farmers may wish to promote their local crops and not spend the additional money on organic farming.

Originality/value

The article appears to be the first research paper to tease apart the impact of local from organic via a conjoint analysis.

Purpose

The purpose of this paper is twofold, first: to define the profile of adopters of labor-enhancing technologies (e.g. platforms) identifying factors – such as operations size, mix of fruits grown, apple operation location, principal operators socio-demographics – and second: to estimate the efficiency threshold for platform adoption during apple harvesting to be financially feasible considering future increases in farm labor wages.

Design/methodology/approach

The authors conducted a mixed-mode survey in January-February 2010. Data were analyzed using a bivariate probit model, considering that the decision to adopt platforms was related with the orchard planting system. The authors conducted simulation scenarios to estimate the efficiencies – harvest – platforms must achieve in order to be economically feasible.

Findings

In total, 11 percent of the 316 apple operations covered by the survey used platforms. Orchard operations most likely to invest in planar structures are relatively large, produce high-value varieties, use organic systems, and have relatively young and educated operators. Similarly, operations producing high-value fruit such as “Honeycrisp” and controlled or patented varieties and relatively large operations are more likely to invest in platforms. The results of the comparison of the cost of harvesting apples using platforms vs ladders under several production assumptions indicate that platforms must increase labor productivity by at least 13 percent in order to be adopted by the industry.

Research limitations/implications

This study caveat is the lack of inclusion of production and marketing uncertainties in the estimation of future apple harvest costs. Further research to deeper analyze these issues is needed.

Practical implications

The authors present information on the profile of mechanization adopters, so extension educators and engineers could concentrate efforts on them to increase adoption levels. In addition the authors provide a threshold of efficiencies for harvest platforms associated with cost savings compared to manual harvest.

Social implications

Enabling the adoption of mechanization technologies by specialty crop industries would decrease the dependence on labor, decreasing labor uncertainties and facilitating the production of high quality produce to satisfy the needs of consumers. Second, it will end an era of importing poverty, given that the specialty crop industry has long benefited from seasonal migrant workers. It will improve rural American communities to shorten pools of farm workers, giving them access to permanent jobs with higher salaries.

Originality/value

The contribution of this study is to improve understanding of the degree of mechanization, financial feasibility of current existing technologies, and barriers to greater mechanization by the Washington apple industry. Given the similar labor challenges faced, in general, by the US specialty crop agriculture, results could be applicable to the entire industry.

Abstract

Purpose

The purpose of this paper is to examine the impact of agricultural cooperative membership on farmers’ decisions to adopt integrated pest management (IPM) technology and to estimate the impact of IPM adoption on farm economic performance.

Design/methodology/approach

An endogenous switching probit model that addresses the sample selection bias issue arising from both observed and unobserved factors is used to estimate the survey data from a sample of 481 apple households in China. A treatment effects model is employed to estimate the impact of IPM adoption on apple yields, net returns and agricultural income. In order to address the potential endogeneity associated with off-farm work variable in estimating both cooperative membership choice specification and IPM adoption specifications, a control function approach is used.

Findings

The empirical results show that cooperative membership exerts a positive and significant impact on the adoption of IPM technology. In particular, farmers’ IPM adoption decision is significantly associated with household and farm-level characteristics (e.g. education, farm size and price knowledge). IPM adoption has a positive and statistically significant impact on apple yields, net returns and agricultural income.

Practical implications

The findings indicate that agricultural cooperatives can be a transmission route in the efforts to proliferate the adoption and diffusion of IPM technology, and increased IPM adoption tends to improve the economic performance of farm households.

Originality/value

Despite the widespread evidence of health and environmental benefits associated with IPM technology, the adoption rate of this technology remains significantly low. This paper provides a first attempt by investigating to what extent and how agricultural cooperative membership affects IPM adoption and how IPM adoption influences farm economic performance.

In this chapter we discuss the dynamics of convergence-divergence between organic and non-organic farming systems. We are specifically interested in how and in what ways organic systems emerge into a new system that synthesizes the diverse qualities of competing systems. Or, will these systems continue to diverge because of their path dependencies and contradictory, unresolvable logics? Alternatively, are we confronted with conversion? Following a discussion of the origin of organic agriculture and the IFOAM Principles, we explore differentiation of two agricultural paradigms that was developed more than 20 years ago before the rise of GMOs. This comparison identifies the key features of both systems and a first interpretation on the potential of convergence-divergence. Third, we take a macro-look at agro-food chain that offers insights on the convergence-divergence potential in the context of global, economic, market, political, and societal dynamics. Fourth, we discuss convergence-divergence at the production level comparing the four agricultural systems. Finally, we reflect and assess on the explanatory potential of our study for the future development of organic and non-organic agriculture/farming. We conclude that there is more evidence for conversion than for convergence.

Abstract

The apparent conflict between what is scientifically known and what is perceived concerning food acceptability by consumers provides an interesting paradox. Some of the leading international contributions concerned with organic farming system food products are thus reviewed in the light of consumer beliefs and attitudes. It is concluded that, in a market economy, consumer opinion will gradually prevail and that agricultural farming systems will have to adjust to more extensive lower input farming approaches.
