Abstract

Purpose

The purpose of this paper was to explore the possibility of utilization of Ocimum sanctum Linn (Tulsi) leaf extract as a natural preservative in muscle foods. The products incorporated with Ocimum sanctum leaf extract were assessed for various oxidative stability and storage quality parameters.

Design/methodology/approach

The Ocimum sanctum leaf extract was incorporated at 300 mg/kg level in the formulation. Chicken sausages incorporated with Ocimum sanctum leaf extract along with control samples were aerobically packaged in low-density polyethylene pouches and assessed for lipid oxidation, physicochemical, microbiological and sensory characteristics under refrigerated (4 ± 1°C) conditions.

Findings

Ocimum sanctum leaf extract showed a significant (p < 0.05) effect on the lipid stability, as the treated products exhibited significantly (p < 0.05) lower thiobarbituric acid reactive substances (mg malonaldehyde/kg) and free fatty acid (% oleic acid) values in comparison to control. A significant (p < 0.05) effect was also observed on the microbiological characteristics of the products, as the treated products showed significantly (p < 0.05) lower values for total plate count, psychrophilic count and yeast and mould count. Significantly, (p < 0.05) higher scores were also observed for various sensory parameters of the treated products.

Originality/value

The paper has demonstrated the use of Ocimum sanctum leaf extract as a potential natural preservative, as it successfully improved the oxidative stability and storage quality of the products during refrigerated (4 ± 1°C) storage and may be commercially exploited as a natural preservative in muscle foods.

Abstract

Elemental analysis of these medicinal plants was performed by employing Instrumental Neutron Activation Analysis (INAA) and Atomic Absorption Spectroscopy (AAS) techniques. The samples were irradiated with thermal neutrons in a nuclear reactor and the induced radio activity was counted by gamma ray spectrometry using an efficiency calibrated high resolution High Purity Germanium (HPGe) detector. Most of the medicinal plants were found to be rich in one or more of the elements under study. The variation in elemental concentration in same medicinal plant samples collected from different regions was studied and the biological effects of these elements on human beings are discussed. The study was also extended further to estimate the level of toxic elements like Cr, Cd, Ni, Pb and Hg in medicinal plants which arises due to environmental pollution. The results were discussed with careful reference to established role of essential and rare elements to the physiology and pathology of plant and human life.

Case overview/synopsis

Sushruth Ayurved Industry (SAI) is a proprietorship firm owned by Girish Banvi who always dreamt of being an entrepreneur. He had set up SAI to produce diabetes supplement by the name “Sugar Knocker” to give wings to his dreams. Notwithstanding competition from corporate players and demands from health-care practitioners, he had to abandon his traditional route to selling his product and open his eyes to online marketing. He believed it could provide him the perfect medium to reach his prospects directly without any middlemen within a cost-effective budget. SAI registered revenue of INR 24m per year, completely attributable to online sales. With a firm footing in the online space, Girish was now exploring physical marketing to expand his audience reach in the B2B market and also add new products to his portfolio. He was also worried about the low capacity utilization of his manufacturing unit, which stood at 20%. With only 30% of the 40 formulations used, there was much scope for expansion. With his plant capacity underused, the time was ripe for Girish to trace his footsteps from where he had begun in the first place.

Abstract

Purpose

The textile sector is moving towards new technologies, where the application of nanotechnology is offering fabrics with multifunctional properties making fabric odourless, hydrophobic, durable and self-cleaning. This aim of this research is to investigate self-cleaning ability of denim fabric with the application of zinc oxide nanoparticles (ZnO NPs) synthesized naturally. The primary focus of this investigation is achieving sustainability mark through green synthesis of ZnO NPs.

Design/methodology/approach

In this analysis, ZnO NPs being one of the metal oxides exhibiting self-cleaning, UV-protective and anti-microbial properties were synthesized naturally using Azadirachta Indica leaves. The prepared NPs were characterized by using X-ray diffraction and scanning electron microscopy analyses confirming their size and crystalline structure. Different formulations were investigated with varying concentration of zinc oxide and auxiliaries onto the denim fabric using pad-dry-cure application technique.

Findings

XRD analysis confirmed the successful green synthesis of ZnO NPs. SEM analysis revealed the homogeneous and hexagonal wurtzite NPs deposition on the denim fabric. It was ascertained that with 5% ZnO NPs and 7% Binder concentrations, the formulation resulted in a smooth and even layer on the denim fabric maintaining the appearance and feel at the same time offers appreciable grading (Grade 4) against the stringent stains of Ketchup, Coffee, Grape and Orange Juice with insignificant change in tensile strength.

Originality/value

In this study, self-cleaning attributes of denim fabric with zinc oxide nano formulations of different composition was studied to achieve promising functional properties in a single step not studied earlier.

Design/methodology/approach

Chevon sausages were used as a model system and were prepared by incorporating different levels of T. cordifolia, namely, T1 (0.25 per cent), T2 (0.50 per cent) and T3 (0.75 per cent), and assessed for lipid oxidative stability and storage quality under refrigerated (4 ± 10°C) conditions.

Findings

Lipid oxidative stability showed a significant improvement as the products incorporated with T. cordifolia exhibited significantly (p = 0.001) lower thiobarbituric acid reacting substances (mg malonaldehyde/kg) in comparison to control. A significant improvement was also observed in the microbial stability as T. cordifolia-incorporated products showed significantly lower values for total plate count (log cfu/g, p = 0.001), psychrophilic count (log cfu/g, p = 0.003), yeast and mould count (log cfu/g, p = 0.02) and free fatty acid (percentage of oleic acid, p = 0.01). Significantly higher scores were observed for various sensory parameters of the treated products during storage.

Originality/value

Tinospora cordifolia successfully improved the lipid oxidative and microbial stability of the model meat product and may be commercially exploited as a novel preservative in muscle foods.

Abstract

Purpose

A shared set of moral standards, ethical principles and behavioral norms of social structure can be referred to as culture. Many health problems are strongly influenced by one’s cultural background. The purpose of the paper is to examine the scientific explanation of indigenous norms and practice of health healing.

Design/methodology/approach

This qualitative study considered in-person interviews to know the Tribals’ indigenous healing practice in Bangladesh. A focus group discussion with five tribal students was conducted to form a baseline on Tribals’ norms, rituals and information-sharing behavior. Around 35 tribal students were interviewed to find out their healing practices, norms and rituals on health issues. All these practicing indigenous knowledge were documented instantly. Peer-reviewed scientific papers from renowned databases were searched to have scientific evidence on each case. All the studies having negative or positive evidence were mentioned with each case.

Findings

The findings showed more indigenous knowledge with scientific disagreements on health aspects among the Tribals’ health practice in Bangladesh. However, the positive impact of such knowledge is not negligible. Therefore, showcasing the scientific tribals’ indigenous knowledge to a global audience is a strong recommendation.

Originality/value

Health and health care-seeking behavior among the tribal population in Bangladesh is not a new area of research, few studies have focused on the context, reasons and choices in patterns of health care-seeking behavior; obstacles and challenges faced in accessing health-care provision in the tribal areas in the country. However, research attempts to show the relationship between ecological knowledge and scientific indication is new in nature.

This study aims to investigate the effect of Ajuga iva (Ai) on enzymes involved in the metabolism of cholesterol, in rat fed a cholesterol-enriched diet.

Abstract

Purpose

This study aims to investigate the effect of Ajuga iva (Ai) on enzymes involved in the metabolism of cholesterol, in rat fed a cholesterol-enriched diet.

Design/methodology/approach

Male Wistar rats (n =12), weighing 120 ± 5 g were fed on 1 per cent cholesterol-enriched diet [hypercholesterolemic (HC)] for 15 days (d15). After this adaptation phase, HC rats (total cholesterol = 6.5 ± 0.6 mmol/L) were divided into two groups fed the same diet and treated (Ai-HC) or not with (HC) with Ai for d15.

Findings

At day 15, in Ai-HC group compared to HC, serum triacylglycerol (TG) values were 1.4-fold lower (p =0.002), whereas unesterified cholesterol (UC) contents were 1.8-fold higher (p =0.0001). Serum phospholipids (PL) and cholesteryl esters (CE) contents and liver TG, UC, PL and CE values were not sensitive to Ai. TC/HDL-C and LDL-HDL1-C/HDL-C ratios were, respectively, 1.8- and 4-fold lower (p =0.006 and p =0.04). HDL2-C and HDL3-C amounts were enhanced by 40 and 74 per cent, respectively (p =0.003 and p =0.0001). HDL3-UC was 1.6-fold higher (p =0.006); whereas PL contents were 1.4-fold lower (p =0.003). HDL3-apo and HDL2-CE contents were similar between groups. A decreased of hydroxy-methyl-glutaryl-coenzyme A reductase and cholesterol 7α-hydroxylase activities (−44 and −25 per cent; p =0.003 and p =0.02, respectively) were noted. Lecithin: cholesterol acyltransferase activity was 1.5-fold higher (p =0.001).

Originality/value

In HC rat, Ai is able to induce hypotriglyceridemia. However, it turns out that Ai may reduce cardiovascular risk by decreasing the reports of atherogenicity and modifying the activities of enzymes involved in the cholesterol metabolism.

Chevon sausages were used as a study model and prepared by incorporating different levels of A. racemosus, namely, T1 (0.25 per cent), T2 (0.50 per cent) and T3 (0.75 per cent) and were vacuum packaged and assessed for various lipid oxidative stability and storage quality parameters under refrigerated (4  ±  1°C) conditions.

Findings

Significantly (p < 0.05) lower thiobarbituric acid reacting substances (mg malonaldehyde/kg) values were observed for the products containing A. racemosus in comparison to control indicating a significant effect on the lipid oxidative stability. The products containing A. racemosus also showed significantly (p < 0.05) lower values for various microbiological characteristics like total plate count (log cfu/g), psychrophilic count (log cfu/g), yeast and mould count (log cfu/g), anaerobic count (log cfu/g) and free fatty acid (% oleic acid) values indicating the antimicrobial and antifungal properties of A. racemosus. No significant (p > 0.05) effect was observed on the cooking yield and moisture content of the products. Significantly (p < 0.05) higher scores were observed for various sensory parameters of the products containing A. racemosus during the entire period of storage.

Originality/value

A. racemosus successfully improved the lipid oxidative stability and storage quality of the model meat product without compromising the sensorial characteristics and has a great potential as a novel natural preservative in muscle foods.

Abstract

Purpose

The paper is a review of current research on phytochemicals and how they may alleviate type 2 diabetes by improving insulin activity in the body.

Design/methodology/approach

Literature searches were conducted to find a link between common household spices and type 2 diabetes. Only common household spices were researched so that any link found between spices and type 2 diabetes could lead to practical home‐based recommendations for changes in a person's diet.

Findings

Cinnamon, garlic, ginger, basil, oregano, nutmeg, tea, bay leaf, allspice, curry, and others were found to play a role in lowering blood glucose, increasing insulin sensitivity, and increasing glucose synthesis in response to food intake. In addition, these spices may improve blood circulation, decrease platelet aggregation, lower blood pressure, and act as blood vessel protectants, ameliorating the cardiovascular disease often associated with type 2 diabetes. To gain these benefits, only average amounts commonly used in foods are necessary, such as amounts usually sprinkled in foods or amounts used in recipes. At high concentrated doses, the advantages to utilizing spices may be inhibited.

Originality/value

The findings that phytochemicals in common household spices can improve insulin activity in the body present a more natural way to possibly treat and prevent type 2 diabetes.

Abstract

Purpose

The purpose of the study was to produce a healthier, convenient and traditional ready-to-eat (RTE) snack option with increased nutritional value, using spent hen meat, dietary fibre (DF) and simple technological methods. The product was designed to be stable without refrigeration and be easily adoptable by local self-help groups, rural women and youth and entrepreneurs in urban and semi-urban areas.

Design/methodology/approach

Conventional binder used for making snacks, i.e. rice flour was partially replaced by different sources of antioxidant DFs, i.e. oat flour (T1 – 10%), finger millet flour (T2 – 5%) and amaranth flour (T3 –15%) to prepare spent hen snack sticks (SHSS). The snacks were then packaged in low density polyethylene (LDPE) pouches and evaluated for their storage stability at ambient temperature for a period of 35 days. Their physico-chemical, sensory and microbiological quality was evaluated at a regular interval of 7 days. The proximate composition of developed SHSS was compared to commercially available snack products (chakli/murukku – snacks without meat).

Findings

The fibre-enriched SHSS showed significant improvement in nutritive value, as they contained more fibre (p = 0.001) and protein (p = 0.029) than control SHSS. When compared to commercially available snack product SHSS showed three-fold significant increase in protein (p = 0.000) and ash content (p = 0.001) and only 11%–12% total fat as compared to 31% fat in the market-available product. The most acceptable treatment in terms of overall sensory quality and nutritional aspects was T3; however, T2 was more shelf-stable during the storage period. The study showed that fibre-enriched snacks can be stored at ambient temperature for up to 35 days without substantial loss in physico-chemical, sensory and microbial quality. Hence, substituting rice flour with DFs can lead to the development of products with better sensory attributes and improved functionality.

Social implications

The simplicity of the product in terms of composition, machinery and low production costs makes it an easily adoptable one by small-scale entrepreneurs, especially those belonging to semi-urban areas.

Originality/value

Incorporation of spent hen meat, a relatively cheap but abundant source of protein, in RTE products can serve as an effective way to alleviate protein malnutrition, whereas addition of fibre further improves the functionality of the product. The methodology can be easily taken up by small-scale entrepreneurs and create a market for snack-based functional meat products.
