Abstract

Purpose

Nutritional disorders and unhealthy nutrition, which are recognised as the causes of many widespread health problems (overweight, obesity, diabetes, cardiovascular disease, cancer, etc.) have emerged as a significant problem that requires resolution. The purpose of this study is to influence dietary preferences and to reduce current health issues by using gamification as a social marketing tool. To this end, the decision-making processes affecting food choices in individuals based on calorific content were evaluated and the effectiveness of gamification in encouraging consumers to make lower-calorie choices was examined.

Design/methodology/approach

An experimental design was used to determine the effect of gamification on the dietary preferences of consumers. An independent factorial design (between groups) in which multiple variables were tested with different subjects was used to test the factors that were thought to affect the food choices made by the participants from gamified and non-gamified menus.

Findings

In Study 1, menus (gamified vs non-gamified) and nutritional consciousness (low vs high) had a significant main effect on the total calorie count of the selected foods. In Study 2, menus (gamified with prices vs non-gamified with prices) had a significant main effect on the total calorie count of the selected foods, while nutritional consciousness (low vs high) did not. A significant interaction was observed between menus and nutritional consciousness.

Practical implications

Gamification can be used as an important publicity tool for promoting public health using different influential factors such as price.

Originality/value

This study shows that people can change their food preferences positively through gamification. It shows further how people tend to evaluate the price of their food rather than the calorie count when making dietary preferences. Gamification can, therefore, be considered a promising social marketing tool for improving public health.

This study aims to evaluate the nutritional habits, eating behavior and nutritional status of children with autism.

Abstract

Purpose

This study aims to evaluate the nutritional habits, eating behavior and nutritional status of children with autism.

Design/methodology/approach

This study was conducted with 60 boys and 16 girls diagnosed with autism (mean age: 8.3 ± 4.9 years). Research data were collected from parents of children with autism using a questionnaire form developed by researchers after literature searching. The height and body weight of the children were recorded, and body mass index (BMI) was calculated.

Findings

Almost half of the children except the 13–18 age group were overweight/obese according to BMI. Difficulty in giving new food was 73.1% in the 2–5 age group, 70% in the 6–12 age group and 40% in the 13–18 age group (p = 0.04). It was determined that the children refused to consume a median of 3 (1–8) types of food (p = 0.04) and were obsessed with consuming 2 (1–4) types of food and 1 (1–4) type of beverages. Additionally, milk and dairy products were refused significantly higher between 2–5 and 6–12 years than 13–18 years (p = 0.02). Also, it was found that age had an inverse effect on refusal food number (β = 0.38, 95% CI = −0.30 − −0.08, p = 0.01). In conclusion, obesity and nutritional problems such as food selectivity, food refusal and obsessive eating behavior are encountered in children with autism which affect children socially and physically and should not be ignored when planning the treatment of children with autism.

Research limitations/implications

The lack of a control group to compare the results of children with autism is an important limitation of the study.

Originality/value

This study fulfills a defined need to examine and evaluate Turkish children’s nutritional status, nutritional habits and eating behavior with autism.

Abstract

Purpose

People have become more health conscious about the food they eat on any occasion. As healthy dietary information has been released to the public in order to correspond with active public adaptation, more consumers have become aware of and are showing interest in new information related to health. The purpose of this paper is to utilize food-related lifestyle (FRL) instruments to explain nutrition information-conscious behaviors.

Design/methodology/approach

This study used a cross-sectional survey design. A questionnaire was developed based on previous studies. A factor analysis and a cluster analysis were conducted to segment nutrition information-conscious behaviors of consumers. Participants were 200 and the survey was administered to citizens in South Korea. Exploratory factor analysis, cluster analysis, analysis of variance, Duncan’s multiple comparison tests, and χ2 test were used.

Findings

Nine factors were identified and four clusters were established. These clusters were named: “personal value concern group,” “enthusiastic group,” “moderation group,” and “unconcerned group.” Each segment was significantly different in body satisfaction and nutrition information-conscious behaviors. Nutrients such as dietary fibers, sodium, and trans fat were considered differently by the four segments.

Originality/value

Using an FRL instrument in relation to nutrition information-conscious behavior, interesting conclusions were drawn. Results of this study suggested that each segment has its characteristics in relation to nutrition information-conscious behaviors. Also it can be concluded that it is time for individuals to take responsibility for their own health problems.

Abstract

Purpose

The purpose of the chapter is to explore the relation between women’s healthy eating intention and food attitudes, beliefs, perceptions, and barriers with a focus on the effect of women’s income differences.

Methodology/approach

The research applies the Theory of Planned Behavior, including attitudes, subjective norms, perceived behavioral control, perceived barriers, and ability opportunity resources. Close-ended survey responses of 704 women between ages 25 and 65 years, affluent and at-risk-of-poverty women in three EU-member countries were analyzed.

Findings

Women are mostly positively inclined towards healthy eating, and income does not differentiate women’s inclination. Influencing factors are perceived behavioral control, attitudes towards healthy eating, subjective norms, and level of knowledge regarding healthy food. Barriers, when present, are similar for lower or higher income women and relate to routinized family habits and food affordability and availability.

Research limitations/implications

Future research should thoroughly investigate family network and structure features, with a focus on family food preferences and habits.

Social and practical implications

Encouraging women’s healthy behavior also impacts children and men, and vice-versa. There is need to target all family components with enjoyable, self-rewarding, emotionally gratifying, and pleasant tasting food.

Originality/value

Income is an overestimated driver in healthy food choices. Women are strongly influenced by personal and environmental factors, mainly personal control, feelings, and family habits.

Abstract

Purpose

There are insufficient health and nutrition education interventions targeting adolescent females in rural contexts in Indonesia. There is also a paucity of research evaluating the impact of implemented programs. This paper aims to develop and test the validity of a tailored education module to improve the knowledge, attitude and skills of adolescent females on health and nutrition.

Design/methodology/approach

The study was conducted between 2019 and 2023 in Ban Village, Karangasem Regency. This study used an explanatory sequential mixed methods research approach consisting of three stages: formative research using mixed methods, validation and review of the module by experts using the Delphi technique and pilot testing of the module. In the formative research stage, there were 40 female adolescent respondents implicated, in the validation and module review stage, there were 14 nutrition and public health experts implicated, and in the pilot test, a new cohort of 60 female adolescents were recruited. Validity was assessed by exploring the feasibility, reliability and linguistics of the module. The Delphi score was measured by the mean score and standard deviation.

Findings

The Health and Balanced Nutrition Education Module was impactful in improving the health and nutrition of female adolescents in Ban Village. The validation score of the module shows that from the total score of 4, construct reliability obtained a score of 3.18 with a 0.35 standard deviation. The construct feasibility and language revealed better scores, which were 3.31 with 0.4 standard deviations and 3.29 with 0.46 standard deviations, respectively. After dissemination of the module, participants’ mean score of knowledge on the importance of balanced nutrition significantly improved by 68.8% (p-value = 0.0001).

Research limitations/implications

The Health and Balance Nutrition Education Module has been proven to improve the awareness of adolescents on balanced nutrition. Nevertheless, this study also has limitations due to the small number of respondents attending the information sessions and the pilot testing. Further studies should consider using implementation research for scale-up in other parts of Bali.

Practical implications

This study provides insight for health and nutrition educators for creating modules that better align with the context and information needs of the target group particularly for adolescents in rural areas, which are seldom neglected.

Social implications

This study indicates that the trialed education materials can play a role in improving female adolescents’ knowledge of nutrition throughout their life cycle and their role in preventing stunting and noncommunicable diseases in later adult life.

Originality/value

The health and nutrition module trialed in the study is tailored specifically to the context of rural areas of Bali and validated by public health experts, then tested with 60 adolescents.

Purpose

Nutrition behaviours have been linked to an increased risk of poor health and reduced productivity at work. Therefore, the workplace is a logical setting to implement nutrition-related programmes. Many existing workplace health promotion programmes (WHPPs) employ a standardised approach that typically attracts those who are already healthy or highly motivated to change. Understanding the factors that influence an individual’s desire to improve health and participate in nutrition WHPP will facilitate the development of highly engaging programmes that appeal to the greatest number of workers. The paper aims to discuss these issues.

Design/methodology/approach

In all, 881 employees of an Australian mining company participated in a self-report health survey aimed at investigating employee predictors of desire to improve personal nutrition, desire for assistance with improving personal nutrition, and intention to participate in nutrition WHPPs.

Findings

Overall, females and older employees were most likely to intend to participate, with group information sessions garnering the widest appeal to employees.

Practical implications

The findings suggest that practitioners ought to include a group-based educational component designed to increase awareness particularly to employees who are nutritionally deficient and unlikely to voluntarily participate in strategies.

Originality/value

The innovative psychosocial research findings and recommendations outlined herein may be applied immediately to increase employee participation in workplace nutrition strategies.

Abstract

Purpose

The purpose of this paper is to report on a study that examines the sale and provision of healthy beverages across four sectors of the hospitality industry: restaurants, cafes, pubs and quick-service/takeaways. Specifically, the research investigates perceptions of demand for healthy products, challenges to distribution and strategies for increasing supply. In addition, business managers’ attitudes and behaviours with regard to offering healthy beverages, including probiotic beverages (i.e. kombucha, kefir, etc.), are explored, as these are among the fastest growing drinks category.

Design/methodology/approach

Data were collected in 2018 through 400 telephone interviews with hospitality business managers from Australia (n=250) and New Zealand (n=150). Data were analysed through SPSS and Stata using descriptive statistics and Probit regression, with a binary outcome variable of “sell/ do not sell” probiotics to consumers.

Findings

Results suggest that the business’ decision to sell healthy beverages is influenced by perceptions of consumer demand, profit margins, shelf life of the products and if locally produced.

Originality/value

The findings from this exploratory study present new insights on how hospitality firms respond to consumer demand for healthy options, and the factors influencing their decision to incorporate healthier beverages in their menus.

Abstract

Purpose

The purpose of this paper is to improve adolescents’ nutrition knowledge and to examine the effect of interventions component to improve adolescents’ nutrition knowledge.

Design/methodology/approach

The study design was multi-factorial with repeated measures, at two points in time, of dependent samples from three schools, which were randomly selected from 15 middle schools in Miyun County, Beijing, and then randomly assigned to control school or intervention school. The instrument for baseline survey was a 14-item and for follow-up survey was a 26-item, self-administered, structured questionnaire, designed in Chinese.

Findings

Students’ nutrition knowledge improved significantly in intervention schools after intervention compared with controls. The extent to which students felt that peer support activities were helpful and that what they learned in class about nutrition was helpful, was related to their resultant level of nutrition knowledge.

Originality/value

To the authors’ knowledge there have been no previous studies which explore the effect of specific intervention components on levels of nutrition knowledge among adolescents.

Purpose

Greater fruit and vegetable (F&V) intake has been linked to more positive mood. Here, the purpose of this paper is to examine if this relationship is mediated by expectancies about their benefit to health/mental health.

Design/methodology/approach

Participants completed a new questionnaire to assess expectancies related to F&V intake. This was administered alongside a validated food-frequency measure of F&V intake, an assessment of positive and negative mood state and other measures.

Findings

Participants held strongly positive expectations about the physical and mental health benefits of consuming F&V. The authors observed a significant relationship between self-reported F&V intake and positive mood (d = 0.52). Importantly, this effect was largely (but not completely) independent of expectancies. The authors also observed that expectancies about F&V intake were independently predictive of positive mood (d = 0.47).

Originality/value

This is the first study to explore expectancy effects in the mental health benefits of F&V intake. These data suggest that positive expectancies about F&V intake, and F&V intake itself, are both predictive of positive mood. The former finding is probably a placebo effect, whereby people believe they are consuming sufficient F&V (even if they are not) and so experience mood-related benefits due to their positive expectations. The latter finding is consistent with F&V exerting a biologically beneficial effect on the brain.

Abstract

Purpose

The purpose of this study was to assess the nutritional behavior regarding the frequency of consumption of the main types of food by pregnant women attending antenatal classes in comparison to non-attendees.

Design/methodology/approach

A questionnaire survey was conducted in Poland among 200 women in the first pregnancy, 100 of whom were attending antenatal classes and 100 were non-attendees.

Findings

Women attending antenatal classes exhibited more favorable health-related nutritional behaviors in comparison with those not attending. Attendees eat more vegetables and milk products whereas non-attendees declared more processed meat and sweets consumption. Three-fourth of non-attendees and two-fourth of attendees considered their diet as good. It was also found that the level of physical activity of pregnant women attending antenatal classes was significantly higher than among those who did not attend such classes.

Research limitations/implications

A limitation of the study was that it took place in Poland and voices from women of other European countries as well as diverse ethnicities were not represented. In addition, women were interviewed only during their pregnancy, and therefore it was not possible to investigate women's nutritional behaviors after delivery.

Practical implications

This research shows clearly that attending antenatal classes may involve with a beneficial effect on the nutritional behavior of pregnant women. It is expected that once established healthy nutritional habits should be practiced further.

Originality/value

This research is the indication of the important role of antenatal classes in developing more favorable health-related dietary behavior expressed by the participants. To our knowledge in Poland, it is the first time that the nutritional behavior of pregnant women attending and not attending antenatal classes were examined and compared. So far in Poland, the extent and type of nutritional education received by pregnant women across antenatal care has not been examined. This research can contribute to a broader recognition of nutritional knowledge and practice of pregnant women important for the health of mother and her baby.
