Abstract

Purpose

Legumes are widely grown and are consumed as a source of plant protein throughout the world. They rank second after cereals with respect to their consumption order. Legumes have anti‐nutritional factors which make their uses limited. This study aims to check the effect of soaking and cooking on the anti‐nutrient contents and nutritional quality of the legumes.

Design/methodology/approach

Five legumes (white kidney bean, red kidney bean, lentil, chickpea, and white gram) frequently used by the masses were selected for soaking and cooking trials. Legumes were tested for their weight, volume, density, swelling capacity and water absorption capacity before soaking and cooking. Legumes were soaked in simple water, 2 per cent sodium chloride solution, acetic acid and sodium bicarbonate and cooked in a beaker with 1 : 5 seed water ratio to uniform soft mass. After soaking and cooking, legumes were tested for anti‐nutrients (phytic acid and tannin) and their nutritional quality.

Findings

The statistical analysis of the study results revealed that dark colour legume (red kidney bens) has a high level of phytic acid and tannin compared with light colour (white kidney beans and white grams). Soaking and cooking of legumes result in significant reduction in phytic acid and tannin contents. Maximum reduction of phytic acid (78.055) and tannin (65.81 per cent) was found for sodium bicarbonate soaking followed by cooking. These treatments also result in a slight reduction in nutrients such as protein, minerals and total sugars.

Practical implications

Soaking and cooking of legumes reduce their anti‐nutrients; phytic acid and tannin significantly. These treatments may be used domestically as well as commercially to increase the nutrients' availability from legumes to meet the problem of protein and minerals deficiencies.

Originality/value

Along with water different soaking solutions which are easily available in the market were used to test out their effect on the nutritional quality and safety. These may be used by the common people to raise their nutritional status.

Abstract

Purpose

Soaked–dehulled moth bean seed (SDMBS) powder was incorporated into wheat flour and the paper aims to investigate its effects on the nutritional and quality properties of composite bread.

Design/methodology/approach

Different ratios of SDMBS powder (0%–12.5%) were mixed into wheat flour to prepare composite bread. Proximate composition, mineral content and functional properties of SDMBS powder and wheat flour were studied. The composite bread samples were assayed for proximate composition, mineral nutrients, amino acid composition, physical characteristics as well as sensorial properties.

Findings

Protein and ash contents of SDMBS powder were found to be 2.15 and 5.69 fold higher than wheat flour. Water absorption capacity (WAC), oil absorption capacity (OAC), (FC) and emulsion activity (EA) values of SDMBS powder were also 1.63, 1.78, 4.43 and 1.58 times higher than wheat flour, respectively. The inclusion of different levels of SDMBS powder into wheat flour significantly (p = 0.05) increased the functional properties of composite flours. Bread samples fortified with SDMBS powder exhibited higher values of essential amino acids than the recommendations of World Health Organization/Food and Agriculture Organization/United Nations University (2007). The bread samples containing 10% and 12.5% of SDMBS powder provided 39.23% and 41.15% of the recommended lysine level, respectively. The addition of a higher proportion of SDMBS powder into wheat flour gradually increased the protein and ash contents of the bread samples. Control sample without SDMBS powder (0%) and samples fortified containing 2.5% and 5% of SDMBS powder received the highest scores of overall acceptance, whereas the bread sample with the highest SDMBS powder (12.5%) content received the lowest scores.

Research limitations/implications

The main findings of the current investigation indicated that the addition of 2.5–5% of SDMBS powder into wheat flour enhanced the nutritional and quality characteristics of wheat bread.

Originality/value

SDMBS powder could be incorporated into refined wheat bread to achieve functional bread with significantly higher protein content.

Abstract

Purpose

The purpose of this paper is to evaluate the antioxidant and type II diabetes related enzyme inhibition properties of phenolic extract from raw and traditionally processed Indian under‐utilized food legume grains, Bauhinia purpurea L. (purple camel's foot seeds).

Design/methodology/approach

The methanolic extract was prepared from the raw and traditionally processed seed samples and analyzed for total phenolic content. The antioxidant activity and type II diabetes related enzyme inhibition properties of methanolic extract and their relationship with phenolic content was demonstrated.

Findings

The methanolic extract of raw seed materials contained total free phenolic content of 14.45±1.62 g catechin equivalent/100 g extract DM. Encouraging levels of ferric reducing/antioxidant power (FRAP, 1203 mmol Fe[II]/mg extract), inhibition of ß‐carotene degradation (45.37 percent) and scavenging activity against DPPH (63.60 percent) and superoxide (42.14 percent) radicals were exhibited by the raw samples. Further, it also recorded 80.69 percent of α‐amylase and 63.74 percent of α‐glucosidase enzyme inhibition characteristics under in vitro starch digestion bioassay. Sprouting+oil‐frying caused an apparent increase on the total free phenolic content, antioxidant and free radical scavenging capacity, while soaking+cooking as well as open‐pan roasting treatments show diminishing effects.

Originality/value

Identification of suitable processing technique offered a good strategy to improve the phenolic content and health relevant functionality of B. purpurea seeds, which could be envisaged as a dietary ingredient in the formulation of supplementary foods with therapeutic value to manage type II diabetic patients.

Abstract

Purpose

This study aims to analyze iodine content in various foods and water.

Design/methodology/approach

Food and water samples were collected from rural and urban areas of different agroclimatic zones of Haryana State, India, and analyzed for iodine content by a standard method.

Findings

A wide variation was observed in the iodine content of cereals, pulses, vegetables, fruits and milk. The iodine content in water samples varied from source to source and from zone to zone.

Research limitations/implications

The investigators could not obtain sufficient samples of pulses and fruits for analysis from rural areas as they are not grown by farmers in their fields.

Originality/value

The study is original and innovative. The values of iodine for various foods are not available in the literature, and thus data of the present study will be useful to researchers, nutritionists, food scientists and dieticians.

Abstract

Both pressure cooking and solar cooking significantly reduced the phytic acid and polyphenol content of cowpea cultivars. A significantly greater reduction in the content of both these antinutrients was noticed during pressure and solar cooking of soaked cowpeas compared to unsoaked seeds. The percentage reduction increased when the soaked cowpeas were dehulled and then cooked by both pressure and solar cooking. The results of the study reveal that solar cooking was more effective than pressure cooking in reducing the concentrations of phytic acid and polyphenols in cowpeas. The cumulative effect of soaking and dehulling, followed by solar cooking, was the removal of most of the polyphenols (88‐94 per cent). Such practices should be encouraged at the home level for the preparation of cowpea seeds.

Abstract

Purpose

This paper aims to study the changes in anti‐nutritional factors during the germination of the Indian bean and also to carryout an evaluation by subjecting it to different cooking treatments – boiling, roasting and pressure cooking.

Design/methodology/approach

The healthy Indian bean (Dolichos lablab L.) seeds were soaked for 12 h and allowed to germinate (sprout) at room temperature 27±2C for a period of 32 h. Seedlings were withdrawn at designated time intervals and used for analysis of anti‐nutritional factors like trypsin inhibitory activity (TIA), phytic acid, polyphenols and tannins of dried and germinated cotyledons. They were also evaluated regarding their changes by subjecting to different cooking treatments – boiling, roasting and pressure cooking.

Findings

The raw dry Indian bean had a very high TIA which decreases progressively to 17 per cent at 32 h germination period. An overall fall in polyphenols of 70 per cent, tannins 46 per cent, phytic acids 36 per cent and phytate phosphorus to 30 per cent was noticed during the 32 h germination period. Maximum reduction was observed in TIA and phytic acids with roasting, while the boiling and pressure cooking decreases the levels of polyphenols and tannins.

Originality/value

The paper proves that germination is a more effective method in reducing TIA, tannins, polyphenols and phytic acid than the various cooking treatments.

Purpose

The purpose of this study is to compare the effect of olive or salmon oil on the hepatic storage and transport of fatty acids by very-low-density lipoproteins (VLDL).

Design/methodology/approach

In all, 24 male Wistar rats (80 ± 5 g) were fed a 0.5 per cent cholesterol-enriched diet with either 20 per cent casein (C) or chickpea (CP) proteins with 10 per cent olive (O) or salmon (S) oil for 28 days.

Findings

In VLDL-triacyglycerols fatty acids, oleic acid content was higher in CPS as compared to that in CS or CPO and lower in CS and CPO than that in CO; linoleic acid content was higher in all groups; arachidonic acid content was higher in CS and CPO as compared to that in CO. In the liver, TG fatty acids content was lower in CPO or CPS as compared to that in CO or CS; oleic and arachidonic acid contents were lower in CPS than that in CPO; linoleic acid content was lower in CS, CPS and CPO than that in CO, CPO and CO. In liver, phospholipid fatty acid, oleic and arachidonic acid contents were lower in CPS than that in CS; oleic, linoleic and arachidonic acid contents were lower in CPO compared to that in CO. In liver, cholesteryl esters fatty acids, oleic, linoleic and arachidonic acids contents were higher in CPS as compared to that in CS; oleic, linoleic and arachidonic acid contents were lower in CS as compared to that in CO; linoleic and arachidonic acid contents were lower in CPS than that in CPO.

Originality/value

A cholesterol-enriched diet containing casein or chickpea proteins combined with olive or salmon oil affects the hepatic storage and transport of polyunsaturated and monounsaturated fatty acids by VLDL.

Purpose

The purpose of this current investigation is to evaluate the effect of adding different levels of cheeseweed Malva parviflora L. mallow leaves powder (MPLP) on the nutritional and quality characteristics of bread.

Design/methodology/approach

Wheat flour was partially replaced with MPLP at 0%, 1%, 2%, 3%, 4% and 5% levels to obtain the wheat– MPLP composite flour. Chemical composition, phenolics, flavonoids and antioxidant activity by 2,2-diphenyl-1-picrylhydrazyl of wheat flour and MPLP were determined. Physicochemical and sensory characteristics of bread enriched with various levels of MPLP were evaluated.

Findings

MPLP contains 23.9% of protein, 10.1% of crude fiber and 9.8% of ash, respectively. MPLP had a significantly higher concentration of micronutrients than wheat flour. The content of total phenolics, flavonoids as well as free radical scavenging activity of MPLP were 17.6, 38.2 and 6.0 fold, respectively, higher compared to wheat flour. Protein content in bread samples increased with the addition of the MPLP in a range of 1.2%–6.6%. The increasing replacement of MPLP in the composite flours resulted in progressively higher dietary fiber and ash contents for fortified bread samples. The higher level of MPLP reduced the specific volume of fortified breads. The highest scores for the sensory attributes were noted for bread samples fortified with 2% and 3% of MPLP, whereas the lowest scores for bread samples fortified with 4% and 5% MPLP.

Research limitations/implications

Supplementation of wheat bread with different levels of MPLP resulted in significant increases in macro and microelements of fortified breads.

Originality/value

Supplementation of wheat bread with different levels of cheeseweed Mallow (Malva parviflora L.) leaves powder resulted in significant increases in macro and microelements of fortified breads.

Purpose

The purpose of this paper is to determine the effects of different dietary protein and lipid origins on serum HDL2 and HDL3 compositions and lecithin: cholesterol acyltransferase (LCAT) activity in growing rats fed a 0.5 per cent cholesterol‐enriched diet with either 20 per cent casein (C), chick pea (CP) or lentil (L) proteins combined to 10 per cent olive (O) or salmon (S) oil for 28 days.

Design/methodology/approach

HDL2 and HDL3 separation according to Sjöblom and Eklund and LCAT activity according to Glomset and Wright.

Findings

Serum total cholesterol was 1.3‐fold lower in CPS than in CPO group. HDL3 amounts were 2‐ and 1.5‐fold higher in CPO and LO groups, respectively, compared to CO group. HDL3‐unesterified cholesterol values were, respectively, 2‐ and 5‐fold lower in CPO and LO groups than in CO group, and were threefold decreased in CPS and LS groups vs CS group. HDL3‐phospholipids in LO group represented 12 and 51 per cent of the CO and CPO group values, respectively. HDL2‐triacylglycerol amounts were decreased in LO group vs CO group (−67 per cent) and in CPS and LS groups (−62 per cent) compared to CS group. HDL3‐apolipoprotein A‐I values were lower in LO group vs CO and CPO groups, and in CPS group vs CS group. However, LCAT activity was similar in all the studied groups.

Originality/value

The paper shows that when diets containing casein, chick pea or lentil proteins combined with olive or salmon oil are supplemented with cholesterol, HDL2 and HDL3 compositions are impaired despite unchanged LCAT activity. Moreover, if oils modify HDL compositions, dietary proteins play a critical role in these modifications.
