Abstract

Purpose

This paper aims to investigate the characteristics of demand and supply in relation to the real-world supply chain strategies of local urban fresh food supply chains (FFSC). It generates insights into how a range of strategies is adopted by urban retailer businesses in attempting to cater for the particular requirements of food-literate urban consumers and small-scale local growers.

Design/methodology/approach

Using a multiple case study method, 12 urban local fresh food retailers in Sydney were studied and interview data were analyzed using thematic analysis.

Findings

Local fresh produce has characteristics of both functional and innovative products. Retailers with strong upstream and downstream collaborations adopt hybrid strategies for increased time efficiency and product variety. The dominance of strategies for time efficiency in downstream activities is aimed at maximising the product’s freshness and taste, while product range improvement strategies mean innovative retailers are working with growers to introduce new product types and offering new recipes to consumers that encourage a wider use of products. Urban retailers of local fresh produce leverage on their relationships with upstream and downstream supply chain entities in implementing hybrid strategies.

Implications

Policymakers will make use of the new knowledge generated about the real enablers of contemporary urban food systems in designing developmental policies; findings will inform urban FFSC retailers about how harmonious relationships can be leveraged for sustainability.

Originality/value

The study generates new knowledge on the implementation of a leagile approach by studying the adoption of innovative hybrid strategies by urban local FFSCs in relations to demand and supply characteristics and the utilization of strong vertical relationships in a short supply chain.

Abstract

Purpose

The purpose of this paper is to investigate supply chain relationships in an urban local fresh food system from a retailer perspective to examine the types of relationships and the factors underpinning the development of such relationships.

Design/methodology/approach

Using the multiple case study method, interview data from twelve urban local fresh food retailers in Sydney were analysed using the thematic analysis.

Findings

This study finds that balanced power relationships in the supply chain allow reasonable power to sit with growers in product price determination irrespective of the dependency of small-scale growers on relatively large local retailers. Trust-based relationships are developed over multiple transactions, where shared values across the supply chain and consistently low opportunistic behaviour in reward sharing are demonstrated to be the crucial factors underpinning close relationships. This study also found evidence of horizontal supply chain linkages among retailers in a competitive environment.

Practical implications

Findings of this study have implications for policymakers in designing urban fresh food systems and for practitioners in large urban retailers including supermarkets that attempt to integrate local food into their product portfolio.

Originality/value

This study extends the local food system literature dominated by rural studies to include new knowledge about the dynamics of collaborations in contemporary urban local fresh food supply chains. It provides the first empirical evidence of lateral inventory transshipment between retailers in a competitive environment confirming previous simulation studies.

Abstract

Purpose

Contemporary academic research generally discusses positive spillovers that consumption and purchase of local foods/produce may have for consumers, farmers and local economies from which these products come. In a hospitality industry context, local produce can enhance culinary experiences as well as benefit regions and businesses that promote it. However, to what extent are hospitality businesses aware and receptive to the range of local products available? Furthermore, are small hospitality enterprises (SHEs), particularly those near rural areas, actively involved in utilising local products on their menus? And if so, to what extent is this demand driven or an attempt to seek out a unique selling proposition on the part of SHEs? The present paper seeks to answer these questions from the hospitality operators' perspective.

Design/methodology/approach

A total of 21 SHEs located in the southern United States were interviewed via telephone and face‐to‐face.

Findings

Despite their close geographical proximity to farms that grow fresh produce and a near‐by farmers' market open in the summer, SHEs' involvement with local foods in this study is very fragmented. In fact, more respondents are not involved in purchasing local products than those who are, while others are only marginally involved. Furthermore, convenience of direct deliveries by out‐of‐state food distributors and unawareness of existing fresh local produce availability are reasons expressed for not engaging in efforts to buy locally.

Research limitations/implications

The narrow geographical area chosen and low number of participating businesses in this study may not allow for making generalizations with regards to the findings.

Practical implications

The dysfunctional nature of the current relationship identified between SHEs and local food producers may be conducive to very unfavourable long‐term impacts for both parties, including lost sales opportunities by not providing fresher, higher quality produce that appeals to increasingly discerning customers.

Originality/value

The present study offers new insights into the relationship between SHEs and local food producers, an area that has been largely neglected in contemporary research.

Purpose

The purpose of this paper is to investigate how consumers from a developing country background such as Indonesia make local fresh food decisions for daily eating.

Design/methodology/approach

The use of the means-end chain approach is utilized as a measure of attributes, consequences and values of locally produced products.

Findings

For Javanese ethnic group in Indonesia, “save money” and “health benefits” are identified views that motivate consumers purchasing their local foods.

Research limitations/implications

Although investigating the largest ethnic groups in Indonesia, the results of this study cannot be generalized to all Indonesian consumers and a larger sample needs to be studied to generalize the results to the wider population of Indonesia.

Practical implications

It is better for the Government to promote local food policies that is based on identified motivations of consumers. “Save money” and “health benefits” themes can be used as the central messages for the development of advertising strategies.

Originality/value

This study identifies the Javanese motivations for buying local foods and examines the motivation differences between rural and urban locations. This is providing views for the Government and individual businesses use to.

Abstract

Purpose

All along the length of the supply chain, fresh food firms face the challenge of managing both product quality, due to the perishable nature of the products, and product cost. The purpose of this paper to develop a method to assist logistics managers upstream in the fresh food supply chain in making cost optimized decisions regarding transportation, with the objective of minimizing the total cost while maintaining the quality of food products above acceptable levels.

Design/methodology/approach

Considering the case of multiple fresh food products collected from multiple farms being transported to a warehouse or a retailer, this study develops a total cost model that includes various costs incurred during transportation. The practical application of the model is illustrated by using several computational intelligence approaches including genetic algorithms (GA), fuzzy genetic algorithms (FGA) as well as an improved simulated annealing (SA) procedure applied with a repair mechanism for efficiency benchmarking. The authors demonstrate the practical viability of these approaches by using a simulation study based on pertinent data and evaluate the simulation outcomes.

Findings

The application of the proposed total cost model was demonstrated using three approaches of GA, FGA and SA with a repair mechanism. All three approaches are adoptable; however, based on the performance evaluation, it was evident that the FGA is more likely to produce a better performance than the other two approaches of GA and SA.

Practical implications

This study provides a pragmatic approach for supporting logistics and supply chain practitioners in fresh food industry in making important decisions on the arrangements and procedures related to the transportation of multiple fresh food products to a warehouse from multiple farms in a cost-effective way without compromising product quality.

Originality/value

This study extends the literature on cold supply chain management by investigating cost and quality optimization in a multi-product scenario from farms to a retailer and, minimizing cost by managing the quality above expected quality levels at delivery. The scalability of the proposed generic function enables the application to alternative situations in practice such as different storage environments and transportation conditions, etc.

Abstract

Purpose

This paper aims to develop a coordination mechanism that can be applied to achieve the channel coordination and information sharing simultaneously in the fresh agri-food supply chain with uncertain demand. It seeks to elucidate how the producer can use an option contract to transfer the risk caused by uncertain demand, impel the retailer to share demand information and improve the performance of supply chain.

Design/methodology/approach

An option contract model based on the basic model of fresh agri-food supply chain is introduced to compare the production, profit, risk and information sharing condition of the supply chain in different cases. In addition, a case study focusing on the sale of autumn peaches produced by a local producer is investigated, which provides evidence of the applicability of the authors’ approach.

Findings

The optimal option contract can help the supply chain achieve channel coordination and reach Pareto improvement. In the meantime, such a contract will encourage the retailer to share market demand information with producer spontaneously and help maintain the strategic cooperation between two parties.

Research limitations/implications

This paper considers a single-producer, single-retailer system and both of them are risk neutral.

Practical implications

Presented results can be used as suggestions for improving the contract design of fresh agri-food supply chain in China and can also provide references for other countries with similar experiences as China in fresh agri-food production.

Originality/value

This research introduces the option contract into fresh agri-food supply chain and takes information sharing and the risk caused by uncertain demand into consideration.

Abstract

Purpose

This chapter compares and discusses the 10 sustainability-oriented food supply chain innovations described in the previous chapters. Our purpose is to address and reflect on the questions and challenges introduced in the first chapter.

Methodology/approach

The cases are first analyzed in terms of the extent to which the innovations were motivated and impacted the social, environmental, and economic dimensions of sustainability. The various sustainable food supply chain practices adopted are compared. The third section explores the innovation strategies used in the cases, including the type of strategy, the breadth and level of innovativeness of the strategy, the governance approach, and the extent of capability development required. The final section presents our conclusions.

Findings

The results suggest that to become truly sustainable, companies need to adopt a broad set of practices that address all three dimensions of sustainability, and develop strategies to make the sustainability-oriented innovation economically viable. The more radical and systemic the innovation, the more difficult it is to generate these outcomes.

Abstract

Purpose

Changing consumption patterns have led to a number of transformations throughout the food cycle, and understanding how and why people purchase local food is important. This paper aims to examine the characteristics of the people leading this phenomenon: those that prefer to buy locally produced food.

Design/methodology/approach

In order to explore the characteristics of local food purchasers, a single item question, “I try to buy a lot of locally produced food”, was included in the food section of a New Zealand consumer lifestyles survey for which 3,556 responses were collected. The full survey included 600 questions across the full attitude, interest and opinion schedule.

Findings

For people who express a strong intention to purchase local food, this behaviour is linked to the types of food they eat (e.g. unprocessed foods), where they buy it (e.g. at speciality stores), and how they cook it (e.g. follow recipes). A range of personality and other personal characteristics differ between local and non‐local food buyers, with the former segment being more liberal, interested in quality, and frugal.

Practical implications

Consumers who express an interest in purchasing local food are a demanding segment of the population whose interest in food makes them critical judges of produce. Local food must thus be fresh and value for money. Growing this sector requires making local food more accessible through mainstream retail outlets.

Originality/value

While something is known about why people buy local food, less is known about other aspects of local food consumers, the range of attitudes they hold towards food or their food‐related behaviours.

Abstract

Purpose

This study aimed to the attributes, consequences and personal values that motivate the behavior of consumers of fruits and vegetables (FV) at local markets and how these elements are associated with food safety.

Design/methodology/approach

This is a qualitative research that used the laddering in-depth interview technique for data collection. Fifty interviews were conducted with consumers from Minas Gerais, Brazil. From the codification of the interview content, a hierarchical value map was constructed, showing the relationships between the attributes, consequences and values involved in the consumers’ purchasing decision.

Findings

Consumers value characteristics related to the origin of the product and the way it is produced and marketed. They seek particular benefits – such as satisfaction with the purchase, care for their health/well-being and safety when consuming food – and social benefits, such as the possibility of contributing to the local economy. Issues related to hygiene, organization, exposure and handling of products were some of the concerns reported by respondents with regard to food safety.

Research limitations/implications

It is worth highlighting the application of the laddering technique itself. Analyzing the predictive validity of the method, there is a propensity for biases linked to possible interference by the researcher, especially in the coding stage of the elements.

Practical implications

This study can be used by producers, marketing professionals and public policymakers to promote FV sold at local markets and to encourage the improvement of food safety practices.

Originality/value

The research points to five consumer segments according to the different motivations that guide their purchase behavior for local FV. In addition, a focus is given to food safety, revealing its importance in the investigated context.

Abstract

Purpose

This paper aims to explore the shopping intention of local products. Using the theory of planned behavior model, the authors study the effect of egoistic and altruistic benefits and the influence of contextual limitations and people’s own limitations on the intention to buy local fresh fruits and vegetables.

Methodology

This paper uses a sample of 1,200 consumers of a south European city to test the model using a structural equation modeling technique with partial least squares.

Findings

Although egoistic benefits have a direct effect on the shopping intention, altruistic benefits have a much higher total effect. Surprisingly, attitude does not influence shopping intention. This paper provides elements that favor the consumption of local products from a more global, social and sustainable perspective.

Value

This paper provides new empirical evidence on the influence of perceived benefits and personal limitations on local food consumption.

Este trabajo explora la intención de compra de los productos locales. Partiendo del modelo de la Teoría del Comportamiento Planificado, estudiamos el efecto que los beneficios egoístas y altruistas y la influencia de las limitaciones contextuales y las propias limitaciones de las personas tienen en la intención de compra de frutas y verduras frescas locales.

Metodología

Utilizamos una muestra de 1.200 consumidores de una ciudad del sur de Europa para probar el modelo, utilizando modelos de ecuaciones estructurales con mínimos cuadrados parciales.

Hallazgos

Aunque los beneficios egoístas tienen un efecto directo en la intención de compra, los beneficios altruistas tienen un efecto total mucho mayor. Sorprendentemente, la actitud no influye en la intención de compra.

Originalidad

Este artículo proporciona nueva evidencia empírica de la influencia de los beneficios percibidos y las limitaciones personales en el consumo de alimentos locales.
