Abstract

Purpose

The purpose of this study is to determine the viability of Lacticaseibacillus rhamnosus GR-1 (L. rhamnosus GR-1) in five yogurt samples with or without quinoa, chickpea, soybean and rice flour over various fermentation periods and refrigerated storage durations, with a focus on exploring the potential of functional foods, which provide health benefits beyond nutritional value. Additionally, the study aimed to evaluate consumer acceptance of yogurt fortified with functional flour. Using a nine-point hedonic scale, from 1 (dislike extremely) to 9 (like extremely), participants rated appearance, flavour, texture and overall acceptability.

Design/methodology/approach

The samples were inoculated with the probiotic strain L. rhamnosus GR-1 and fermented for 0, 2, 4 and 6 h at 38°C, followed by refrigerated storage at 4°C for 1, 15 and 30 days, respectively. Microbial enumeration was performed throughout fermentation and storage to assess the viability of L. rhamnosus GR-1. A sensory evaluation involving 86 participants was conducted to assess the consumer acceptability of the yogurt samples.

Findings

Notably, L. rhamnosus GR-1 achieved viable counts of 108 colony-forming units per mL in all treatments at all fermentation time points. Over the 30-day storage period, no statistically significant differences (p < 0.05) in average pH values were observed among the five treatments, and within each treatment, pH levels remained stable, with an overall mean of 4.2 ± 0.64. Treatment 4, which featured rice flour fortification, received higher hedonic scores from sensory panellists in terms of appearance, flavour, texture and overall acceptability. These findings indicate that incorporating functional flours in conjunction with cow’s milk effectively promotes and preserves the viability of L. rhamnosus GR-1 in yogurt.

Originality/value

Exploring the potential of probiotic yogurt enriched with diverse functional flours to enhance nutritional content and health benefits as well as attract new consumers, this study addressed a critical gap in understanding consumer perceptions and generated insights for creating innovative and health-promoting dairy products.

Abstract

Purpose

The goal of this narrative review was to look at the link between the Mediterranean diet (MD) and the telomere length. Furthermore, this study aims to understand the impact of the MD on obesity-related telomere length.

Design/methodology/approach

Relevant literature was reviewed to explore the potential influence of the MD on telomere length and its association with obesity.

Findings

The MD is one of the healthiest diets of all known dietary patterns, and it is also linked to the telomere length. Except for fruits and vegetables, the main findings for other MD components are inconsistent. In terms of antioxidant and antiinflammatory properties, using the MD as a weight loss approach is a good method. For predicting changes in obesity characteristics, the initial telomere length is critical. However, there are not many studies in the field that have looked at the MD as a weight loss approach and its link to the telomere length. As a result, more research is needed to understand these connections in various groups.

Originality/value

This study is unique since it examines the MD, telomere length and obesity-related consequences. This study examines the MD, telomere length and obesity to determine if the MD can help lose weight while maintaining telomere length. As there are few studies on MD weight loss and telomere length, the work emphasizes the need for greater research in this area. This study fills a research gap and improves the understanding of nutrition, telomere biology and obesity-related outcomes.

Abstract

Purpose

Many studies revealed positive health impacts of the Mediterranean diet (MedDiet), especially on metabolic disorders. Conversely, in Lebanon, recent information about determinants of adherence to the MedDiet are limited. This study aimed to examine the individual determinants of MedDiet adherence among adults in Lebanon.

Design/methodology/approach

A cross-sectional study was carried out during July 2021 among a convenient sample of 326 Lebanese adults. Data from participants were collected via an online survey developed by study researchers, composed of two well-structured questionnaires: a background questionnaire and a 14-item Mediterranean Diet Adherence Screener (14-MEDAS).

Findings

The mean MedDiet score in the total sample was 7.59 ± 2.22, reflecting moderate/fair MedDiet adherence. Consumption of fruits, vegetables, legumes and olive oil met the recommended MedDiet intake among most participants. Older age and having a regular routine of physical activity emerged as significant independent determinants of better MedDiet adherence.

Originality/value

Future public health interventions aiming at promoting MedDiet adherence shall target predominantly younger age groups of the Lebanese population and incorporate strategies to boost physical activity among target groups.

The purpose of this paper is to examine the market integration and direction of causality of wholesale and retail prices for the chickpea legume in major chickpea markets in India.

Abstract

Purpose

The purpose of this paper is to examine the market integration and direction of causality of wholesale and retail prices for the chickpea legume in major chickpea markets in India.

Design/methodology/approach

In this paper, the authors employ the Johansen co-integration test, Granger causality test, vector autoregression (VAR), and vector error correction model (VECM) to examine the integration of markets. The authors use monthly wholesale and retail price data of the chickpea crop from select markets in India spanning January 2003–December 2020.

Findings

The results of this study strongly confirm the co-integration and interdependency of the selected chickpea markets in India. However, the speed of adjustment of prices in the wholesale market is weakest in Bikaner, followed by Daryapur and Narsinghpur; it is relatively moderate in Gulbarga. In contrast, the speed of adjustment is negative for Bhopal and Delhi, weak for Nasik, and moderate for retail market prices in Bangalore. The results of the causality test show that the Narsinghpur, Daryapur, and Gulbarga markets are the most influential, with bidirectional relations in the case of wholesale market prices. Meanwhile, the Bangalore market is the most connected and effective retail market among the selected retail markets. It has bidirectional price transmission with two other markets, i.e. Bhopal and Nasik.

Research limitations/implications

This paper calls for forthcoming studies to investigate the impact of external and internal factors, such as market infrastructure; government policy regarding self-reliant production; product physical characteristics; and rate of utilization indicating market integration. They should also focus on strengthening information technology for the regular flow of market information to help farmers increase their incomes.

Originality/value

Very few studies have explored market efficiency and direction of causality using both linear and nonlinear techniques for wholesale and retail prices of chickpea in India.

Abstract

Purpose

Changes in eating habits and food preferences caused by circadian rhythm disruptions in shift workers increase the risk for chronic diseases. Several studies demonstrated that shift work exerts adverse effects on various risk factors for cardiometabolic disease and cancer. Moreover, shift work leads to altered eating patterns, including diets low in alkaline foods (such as vegetables, fruit and legumes) and high in acidogenic foods (such as meat, fish and cheese). Previously not examined, this imbalance could result in a high dietary acid load (DAL). DAL has been linked to low-grade metabolic acidosis, tissue inflammation and other metabolic alterations. The aim of this study was to investigate the hypothesis that shift work is positively associated with an increased DAL.

Design/methodology/approach

The authors used cross-sectional data from the National Health and Nutrition Examination Surveys (2007–2010). The sample for this analysis was drawn from a representative multistage-probability sample of US civilians. DAL estimations included potential renal acid load (PRAL) and net endogenous acid production (NEAP). Acid load scores and nutrient intake were compared between regular day workers (n = 3,814; mean age, 43.7 ± 0.3; mean body mass index (BMI), 28.6 ± 0.1; females 46.9%) and shift workers (n = 881; age, 37.4 ± 0.6; BMI, 28.4 ± 0.3; females 48.1%). Evening/night shift workers combined with rotating shift workers were contrasted to participants on a regular daytime schedule.

Findings

Potassium and magnesium intake were significantly lower in shift workers, whereas no significant differences with regard to total energy intake were found. The authors found significantly higher crude NEAPF scores in shift workers (mean: 61.8 ± 1.2 mEq/day) compared to regular day workers (mean: 58.7 ± 0.5 mEq/day, P = 0.023). After adjustment for confounders, however, this association remained no longer significant. There were no significant intergroup differences regarding NEAPR and PRALR.

Research limitations/implications

This study revealed significant differences in crude NEAPF scores between shift workers and day workers. After adjustment for confounders, this association was no longer significant. Such discrepancy is probably because of the scarce homogeneity in the analyzed sample which represents the main limitation of this study. Thus, the results did not confirm the hypothesis that shift work is associated with elevated DAL scores. Importantly, the data suggest significant intergroup differences in nutrient intakes without confirming our initial hypothesis with regard to DAL.

Originality/value

In light of the detrimental health outcomes associated with an increased DAL, this study reinforces the call for evidence-based dietary guidelines in shift workers. Studies in other shift working populations are thus warranted.

Abstract

Purpose

The authors developed and validated a questionnaire called “The Jordanian Food Purchasing Habits Survey” (JFPHS). The purpose of this questionnaire was to explore Jordanians’ food purchasing habits and the factors which may affect these habits among a convenient sample of people. To the best of the authors’ knowledge, no such questionnaires have been developed to measure these factors for the Jordanian population. This paper aims to describe the reasoning behind and the process of developing the (JFPHS).

Design/methodology/approach

The JFPHS investigated meal preparation and grocery shopping behaviors, nutrition label use and factors affecting purchasing of 13 (n = 13) food groups. A two-step process, a pilot test and validity study, were used to validate the questionnaire. Internal consistency (split-half reliability) tests were run on the factors in each individual food group producing Spearman–Brown correlation coefficients.

Findings

A convenient sample of 483 individuals (118 males, 365 females) participated in the study. Spearman–Brown correlation coefficients were < 0.7 for bread and between 0.7–0.8 and 0.8–0.9 for other food groups. The ingredients list grid and the expiry date grid had Spearman–Brown coefficient values > 0.9.

Social implications

This questionnaire is a valid tool to assess food purchasing behavior. Results from our questionnaire, when published, may be used to monitor trends in food consumption.

Originality/value

To the best of the authors’ knowledge, no such questionnaires been developed to measure these factors for the Jordanian population.

Abstract

Purpose

This study aims to assess dietary choices of pregnant women and its relationship with their anaemia status.

Design/methodology/approach

A mixed-method study comprising a survey and three focus group discussions (FGDs). The survey included 380 adult pregnant women with data collected on food choices, preferences and haemoglobin (Hb) status.

Findings

More than 50% of women in the study had Hb concentration < 11.0 g/dl; mean Hb was 10.24 g/dl (SD = 1.59). Univariate analysis was used to generate descriptive tabulations for socio-demographic characteristics of respondents, dietary choices for women and anaemia status. T-test and bivariate analysis between dietary diversity score of the women among the food groups consumed as well as their anaemia (Hb) status. This showed that women with high dietary diversity score had improved Hb status (P = 0.003), and those who consumed meat and fish as well as dark leafy vegetables had significantly high diversity scores (P = 0.031 and P = 0.049). Thematic analysis was used for analysing qualitative data.

Research limitations/implications

The sample used in the study is unlikely to be fully representative of pregnant women in the Accra Metropolis. In addition, this study used a cross-sectional study design, making it difficult to establish causal associations between nutritional status and food choice of pregnant women. It does not also show variation in dietary practices by seasons of the year. The scope of the study did not allow for a detailed analysis, and this should be considered in future studies. Also, the study did not explore an obstetric factor like past bleeding history as well as the menstrual cycle of these pregnant women, as these factors are likely to interfere with the anaemia status of the pregnant women.

Originality/value

This paper contributes significant value by specifically focusing on and clarifying the complex relationship between dietary choices and aneamia among pregnant women. It also provides insights into the distinct dietary patterns and preferences of pregnant women, which may be contributing to the high prevalence of aneamia. The results of the study can inform the development of localized, evidence-based interventions to address this critical public health concern, ultimately leading to improved maternal and foetal health outcomes.

Purpose

Access to formal financial services is one of the main obstacles to the adoption of agricultural technologies such as Sustainable Agricultural Practices (SAPs). In order to increase financial inclusion and lessen farmers' liquidity restrictions, Village Savings and Loans Associations (VSLA) are being promoted in rural farming communities. However, there extent to which VSLA contributes to the acceleration of agricultural practices, such as SAP, remains little explored in existing literature. The objective of this study was to quantitatively assess the impact of VSLA on the intensity of adoption of SAPs.

Design/methodology/approach

This study used cross-sectional data from 376 farming households in the East Gonja district of Ghana. An Endogenous Poisson Treatment Regression (EPTR) was applied to correct for self-selection bias that might emanate from both observed and unobserved differences in household characteristics.

Findings

The empirical results indicated that farmers' engagement in non-farm economic activities, ownership of land and size of agricultural land under cultivation positively and significantly influence the intensity of SAPs adoption. Moreover, participation in VSLA improves the adoption of SAPs, and that VSLA-participants adopted about three more SAPs than they would have if they did not participate in VSLA.

Practical implications

This study re-affirmed the significance of VSLA in rural farming communities and recommend that it should be promoted as an alternative to formal financial services to enhance financial inclusiveness, and consequently boost the uptake of SAPs.

Originality/value

In the search of literature, this study is the first to estimate the impact of VSLA on adoption of SAPs. The use of EPTR helps to bring out the true treatment effects of VSLA on SAPs.

Abstract

Purpose

The major objective of this research work was to evaluate various physico-chemical characteristics, such as, chemical composition, antioxidant capacity, objective color and texture profile analysis (TPA) of the wheat flour/chickpea flour (CF) blends, so that nutritious baked products could be consumed by the type-2 diabetic persons.

Design/methodology/approach

Wholegrain wheat flour (WGF) and white wheat flour (WWF) were substituted with CF at 0 to 40% levels. These wheat flour/CF blends were analyzed for proximate composition, the prepared dough and baked breads were tested for objective color, antioxidant capacity as trolox equivalent antioxidant capacity (TEAC), malondialdehyde (MDA) and total phenolic content (TPC) and TPA.

Findings

WGF had the highest TEAC (117.42 mM/100g) value, followed by WWF (73.98 mM/100g) and CF (60.67 mM/100g). TEAC, MDA and TPC values varied significantly among all the three flour samples.

Research limitations/implications

Inclusion of whole chickpea (without dehulling) flour in such type of blends would be another interesting investigation during the future research studies.

Practical implications

These research findings have a great potential for the production of these baked products for human consumption on an industrial scale.

Social implications

Production of breads using wheat flour and CF blends would benefits the consumers.

Originality/value

Production of Arabic and pan breads using wheat flour and CF blends would, therefore, combine the benefits of both the needed proteins of plant origin and the health-promoting bioactive compounds, in a most sustainable way for the consumers.

Abstract

Purpose

The purpose of this paper is to review phytochemical potential of acacia and its associated health advantages. Acacia a moderate-sized, deciduous tree and recognised as health-promoting species because of availability of essential bioactive components. The bioactive compounds such as tannins, flavonoids, alkaloids, fatty acids and polysaccharides (gums) present in the plant parts of acacia, namely, bark, leaves, flowers, fruits, twigs and seeds, have medicinal value and thus are used to overlay the formulations of plant-based drugs and value-added foods.

Design/methodology/approach

Major well-known bibliometric information sources such as Web of Science, Scopus, Mendeley and Google Scholar were searched with keywords such as “nutrition value of acacia”, “bioactive compounds”, “health benefits”, “processing and safety” were chosen to obtain a database of 1,428 papers. The search considered papers in the English language from the past 18 years of publication in journals (2004–2022). The article selection process consisted of the screening of titles and abstracts, based on inclusion and exclusion criteria. Articles that did not have acacia components as a study objective were taken into consideration for exclusion. A final database of 87 scientific sources was made after sorting and classifying them according to different criteria based on topic relevance, country of origin and year of publication. Articles with other random descriptors were also searched to complement the discussion of the results obtained.

Findings

The literature reflected that acacia contains all necessary phytochemicals like polyphenols, flavonoids, terpenoids, glucosinolates, alkaloids and carotenoids along with essential macro, micro-nutrients. Furthermore, processing methods such as soaking, cooking, roasting and dehusking significantly reduced the anti-nutritional factors present in acacia seeds of different species. This review also focused on the processing methods that are used to eliminate or lower down the anti-nutritional factors from the seeds. Previous findings related to acacia plant parts with respect to food development are explored and mentioned.

Originality/value

This review emphasised mainly on recent studies that had been reported on ethnomedical acacia plants therapeutically, commercially and exponentially for further studies to increase the utilisation in food processing.
