Abstract

Popular soup kitchens multiplied rapidly during 2020 in Latin America in the Covid-19 context, seeking that those who do not have guaranteed food access achieve some predictability in their daily food intake. Managing these kitchens requires specific practices, such as organising goods, resources, services and actions that make food, health and personal hygiene viable, as well as the management and emotional care associated with care. The main objective of this chapter is to analyse the emotions associated with food in soup kitchens as a care practice that is configured as an interstitial practice and an affirmation of love and hope. For this, a virtual ethnography and virtual interviews were carried out with people participating in the organisation of soup kitchens in Latin America during the second half of 2020. We will focus on two aspects of our records: the registered groups' names and ‘logos’ and the photos of six countries that appear as ‘identifiers’ of the groups reported there.

To achieve this objective, the argument is structured as follows: (1) The relationship between love, interstitial practices and food is conceptually defined, (2) the methodological strategy used and a vision about bodies/emotions are synthesised, (3) the results of the empirical information are presented and (4) some traces of the emotions surveyed and their connection with love are outlined. It ends by emphasising it is necessary to continue investigating how the set of collective practices that elaborate day-by-day love.

Abstract

Purpose

The purpose of this paper is to identify the key determinants of back-of-house-based food waste in food service outlets. This case study focuses on Delish restaurants, a well-known restaurant chain in Canada, and aims to provide a clear understanding of food service procurement, kitchen practices, cost management, risk mitigation, menu design and technical literacy needs in hospitality. Some recommendations for future studies are also provided.

Design/methodology/approach

The authors chose an exploratory case study design to guide our investigation on restaurants and food waste, based on Yin’s (1994) argument that case studies are the preferred strategy when the “why” questions is being posed and when the focus is on a modern occurrence within a real-life context. Such a design is particularly appropriate for understanding the details and complexity of a phenomenon and its design (Stake, 1995). In this study, research data were collected through multiple points. A semi-structured questionnaire was designed and adopted to collect primary data. The objective of the empirical segment is not to test the applicability of the existing approaches, but rather to study conceptual nuances related to the presented model. A survey study was focused on formal interviews onsite, in two different food service facilities (Restaurant A and B).

Findings

When considering food procurement, supplier relationships were found to not be significant for food waste prevention. Company-wide agreements with specific suppliers prevented individual chefs from creating alterations in their ordering to prevent waste. Order shorting was a somewhat common occurrence. However, most employees did not identify portion size as a large driver of waste. This conclusion conflicts somewhat with studies in this area (Kantor et al., 1997). If there was waste on a plate, it is much more likely to be the starches, which are low-cost items as opposed to high-cost proteins.

Research limitations/implications

This research has its limitations, which present opportunities for future research. First, this case study is based on two case studies which have their weaknesses, especially in the reliability of data collection. In future, even though both restaurants had access to an earlier version of this case, a more structured analysis with performance indicators related to food waste would contribute to the internal validity of the study. The external validity of the proposed back-of-house-based determinant framework would benefit from being empirically tested with a larger sample, as the author cannot imply that this study’s findings are transferable to other food service operations.

Practical implications

From a managerial perspective, this study has merit. Arguably, the restaurant industry has a cumulative impact on the environment, economy and society as a whole. As more consumers in the Western world eat away from home, proper food management practices are desirable. Currently, few governments regulate or mandate measures to monitor restaurants’ sustainability claims and waste management. As consumer expectations change, the onus falls on food operations to validate and inform patrons on practices behind the scenes. Culinary kitchens are often not visible or accessible for some customers, or even obscure for others.

Social implications

Strategies undertaken by management and chefs are reactive as opposed to proactive strategies. The reactive strategies are only able to identify waste a week after it has occurred through inventory checks. From this point, it may be impossible to identify the cause of the waste to prevent it from happening in the future. In addition, attribution to the cause may be laid on the incorrect individual, which will further exacerbate the social learning of the staff as a whole. Proactive strategies undertaken before waste occurs are more effective.

Originality/value

It must be noted that most of the literature on food waste management in casual-dining restaurants does not cover the key challenges found in the food industry. Most noticeable in the review is that there are very few studies in the literature that include food waste management practices linked to distribution management. This area of interest within the hospitality industry has not been well-developed in recent years and requires more attention.

Abstract

Purpose

This article aims to outline the process of developing Codes of Practice and their content and assessment for eight hospitality industry sub-sectors in Abu Dhabi. This is the third article in a Worldwide Hospitality and Tourism Themes theme issue presenting a comprehensive government strategy for improving food safety management standards across the hospitality industry.

Design/methodology/approach

The research process gathered quantitative and qualitative data from industry visits, surveys, interviews, document analysis, focus groups and stakeholder workshops.

Findings

Standards varied across the industry, with distinct characteristics and patterns across the eight groups. Systems were most likely to be found to be in place within hotels. However, there were some issues with validation, documentation and particularly certification. In other sectors, there were lower levels of food safety management with some additional specific challenges. The baseline data identified, along with regulatory requirements based on international best practice, provided a detailed roadmap for outcomes to be achieved in the Emirate of Abu Dhabi.

Originality/value

The article brings together a theoretical and practical discussion of food safety standards within the hospitality industry, with a unique insight into a practical application in the Emirate of Abu Dhabi. It will be of value to practitioners, researchers, policy makers and other stakeholders involved in the food industry.

Abstract

Purpose

Foodborne disease remains a significant public health threat and cause for concern. Despite numerous studies indicating that the domestic kitchen is a high-risk area for foodborne illness, consumers believe it is low-risk. The type of food being prepared in the kitchen has drastically changed, with an increased use of convenience products, perceived low-risk products. Little is known about consumers' behaviours with convenience meals. Therefore, it is essential to understand actual and perceived food safety behaviours in their use.

Methodology

A mixed-methods approach using in-home observations and semi-structured interviews was undertaken with participants from the UK and the Republic of Ireland (N = 50). Observational data was summarized using descriptive statistics and an inductive thematic analysis was conducted to interpret the qualitative data.

Findings

In this study general food safety behaviours, such as handwashing, use-by date checking, as well as identifying obvious safety hazard were suboptimal. However, participants' convenience meal safety behaviours were as optimal as possible with the provided instructions. The qualitative data supported the participants' struggle with the provided on-packet instructions. They also displayed participants' uncertain perceptions around different products, for example if oven-products could be reheated multiple times, and varying levels of concern around meat and dairy products. Consumers urged for more detailed and clearer instructions with these products. Recommendations for producers are provided to enhance consumer experience with the use of the products as well as contributing towards ensuring consumer safety.

Originality/value

Mixed-methods approach investigating consumers' real and perceived food safety behaviours.

Abstract

Purpose

The purpose of this paper is to chart the development of new method of applying HACCP for the hospitality industry developed by the UK Food Standards Agency (FSA) in conjunction with the University of Salford. It is the fourth article in the second Worldwide Hospitality and Tourism Themes issue of the International Journal of Contemporary Hospitality Management presenting a new method of HACCP for the hospitality industry and proof of its utility.

Design/methodology/approach

The project utilised an action research methodology that involved an iterative process of development, piloting, evaluation and review conducted over a three‐year period. In total over 300 practitioners, researchers and stakeholders were involved in the process.

Findings

This was the first attempt, anywhere in the world to empirically develop a food safety management system for food businesses within the hospitality industry and prove that it worked. It remains the only adaptation of “classical” method that has been demonstrated to have utility and also contribute to improvements in food safety management. In particular, the output demonstrates that there are valid alternatives to the “classical” Codex method and that businesses can comply with HACCP principles without ever having to “hear” or “use” the HACCP jargon.

Originality/value

The new method has been extended and published as Menu‐Safe, a system that can be used for hospitality businesses of all types and sizes. Its shortened version, Safer Food Better Business (SFBB), has been developed. These products will be of value to practitioners, enforcement officers and educators as they attempt to improve the management of food safety across the industry.

Abstract

Purpose

The purpose of this paper is to study public acceptance of decontamination as a risk reduction strategy in meat production.

Design/methodology/approach

A representative survey of the Danish population (n=1,104) was conducted during September 2007. The survey included dimensions of assessment of decontamination techniques and background variables of socio‐economic status, food culture and safety profile. The data were analysed using latent class analyses, and subsequently the association of the predicted classes and background variables was analysed using bivariate analyses.

Findings

The analysis shows that in general members of the public do not agree with the practice of decontamination. There was, however, some variation in public rejection of the techniques. Four latent classes were identified: rejects decontamination (57 per cent), accepts decontamination (4 per cent), accepts techniques that are familiar in meat production (18 per cent), and accepts techniques known from processed foods (21 per cent). Variations in the distribution of the four classes in different population groups are identified.

Originality/value

This is the first study to provide in‐depth information on public perceptions of the decontamination of meat. It will be of value to the industry and other stakeholders, since some form of decontamination is likely to be a necessary element in future European risk reduction strategies designed to ensure the safety of meat and meat products.

Abstract

Purpose

The purpose of this paper is to examine the sanitation knowledge and practice of staff who work in restaurant kitchens and to suggest sanitation management plans and efficient ways to enhance sanitation knowledge and practice in the restaurant industry.

Design/methodology/approach

The survey research was conducted using a questionnaire composed of 73 questions in three areas of general information, sanitation knowledge, and sanitation practices. The respondents were selected from among kitchen staff working in restaurants that were both at least 198 m2 in size and listed in the Korean Foodservice Information database. The collected data were analyzed to identify the differences between sanitation knowledge and practices.

Findings

The results showed that the respondents were well aware of the importance of sanitation during food preparation and cooking whereas they had a relatively lack of personal hygiene. Age and education level of kitchen staff correlated with sanitation knowledge and practices, and kitchen staff working less than 12 hours per shift scored significantly higher in terms of sanitation knowledge than those who worked more hours per shift. Also, kitchen staff working in restaurant franchises showed higher levels of both knowledge and practice than those working in independent restaurants.

Research limitations/implications

A more diversified sanitation-training program should be developed on the basis of the characteristics of kitchen staff members and restaurant characteristics. As kitchen staff members themselves have identified change in perspectives on sanitation as the most important factor for improving practice levels, the training should not only transmit information but should be developed into a training method.

Originality/value

This research provides suggestions for how restaurant kitchens in South Korea can make progress in a situation where sanitation implementation is limited to the transfer of knowledge.

Abstract

Describes a study to measure the quality of service provided by food‐poisoning surveillance agencies in England and Wales in terms of the requirements of a representative consumer ‐ the egg producing industry ‐ adopting “egg associated” outbreak investigation reports as the reference output. Defines and makes use of four primary performance indicators: accessibility of information; completeness of evidence supplied in food‐poisoning outbreak investigation reports as to the sources of infection in “egg‐associated” outbreaks; timeliness of information published; and utility of information and advice aimed at preventing or controlling food poisoning. Finds that quality expectations in each parameter measured are not met. Examines reasons why surveillance agencies have not delivered the quality demanded. Makes use of detailed case studies to illustrate inadequacies of current practice. Attributes failure to deliver “accessibility” to a lack of recognition on the status or nature of “consumers”, combined with a self‐maintenance motivation of the part of the surveillance agencies. Finds that failures to deliver “completeness” and “utility” may result from the same defects which give rise to the lack of “accessibility” in that, failing to recognize the consumers of a public service for what they are, the agencies feel no need to provide them with the data they require. The research indicates that self‐maintenance by scientific epidemiologists may introduce biases which when combined with a politically inspired need to transfer responsibility for food‐poisoning outbreaks, skew the conduct of investigations and their conclusions. Contends that this is compounded by serious and multiple inadequacies in the conduct of investigations, arising at least in part from the lack of training and relative inexperience of investigators, the whole conditioned by interdisciplinary rivalry between the professional groups staffing the different agencies. Finds that in addition failures to exploit or develop epidemiological technologies has affected the ability of investigators to resolve the uncertainties identified. Makes recommendations directed at improving the performance of the surveillance agencies which, if adopted will substantially enhance food poisoning control efforts.

Abstract

Self-study in teacher education practices is rife with tensions revolving around self and its position in relation to teaching practice and research. In this chapter, I explore and demonstrate these tensions building on Schwab's practical orientation and following its developments in narrative research and self-study. In particular, I focus on the role of self-knowledge in my work as a teacher educator as it has featured in my own self-studies. To present this, I rely on relational teacher education, a framework that I have developed and has guided my living and teaching as a teacher educator. Overall, this progression will demonstrate my belief that self-study is a crucial vehicle for developing self-knowledge; however, it ought to be seen as a means for relational teaching practice and not merely as an end.

Abstract

Purpose

The purpose of this paper is to assess level of food safety knowledge and self-reported practices among Lebanese food handlers in Lebanese households and to identify the association between knowledge/practices and socio-demographic characteristics.

Design/methodology/approach

A cross-sectional study was conducted among 1,500 participants from different gender, age, area of residence, income, marital status and education. They completed a questionnaire of six questions about demographics, and 26 questions related to knowledge and self-reported practices in terms of food handling, storage, usage of kitchen facilities and personal hygiene subgroups. SPSS v23 was used for statistical analyses. Student t-test and analysis of variance were conducted. Significance level of 0.05 was used.

Findings

On average, participants scored 55.6±16.3, 51.3±25.7, 67.4±19.3 and 89.1±16.3 on food handling, storage, usage of kitchen facilities and personal hygiene, respectively, whereas the passing (score above 50 percent) rates were 64.5, 69.9, 90.5 and 99.1, respectively, for the different subgroups. Gender had significant (p<0.05) effect on food handling and personal hygiene; age, marital status and education had significant (p<0.05) effect on handling, usage of kitchen facilities and personal hygiene; area of residence had significant (p<0.05) effect on storage, handling and usage of kitchen facilities; income had significant (p<0.05) effect on handling and usage of kitchen facilities. Overall mean food safety knowledge and self-reported practices score was 63.8±12.6; passing rate was 86.2; gender, age, area of residence, education, marital status and income had significant (p<0.05) effect. Food safety self-reported practices and knowledge scores were significantly (p<0.001) related to a weak to moderate correlation coefficient (R=0.34).

Practical implications

The results confirm the need for ongoing educational initiatives to improve the relatively low food safety knowledge and practices among the Lebanese food handlers in Lebanese households.

Originality/value

No study has determined the food safety knowledge and self-reported practices of Lebanese food handlers in Lebanese households before.
