Abstract

Purpose

The present study analyses Khasi Food as an ethnic food to be promoted as a tourism product encouraging tourists to visit Meghalaya, India. The food tourists are primarily motivated to eat Khasi Food to provide authentic ethnic food experiences. Therefore, the purpose of the paper is to explore the willingness of tourists to eat ethnic foods and the consequent ethnic Khasi Food Experience (KFE).

Design/methodology/approach

This paper adopts a convergent triangulation approach. Statistical data analysis and thematic analysis were incorporated, and the combined results were compared to see if they converged to achieve the same objective or purpose, which is willingness to eat ethnic foods that influences KFE in the study area (selected villages in East Khasi Hills District and West Jaiñtia Hills District).

Findings

The converged findings from statistical analysis and thematic analysis indicate that tourists who visited the study area were willing to eat ethnic foods, which is Khasi Food and their willingness to do so has a positive influence on KFE.

Originality/value

To the best of the authors’ knowledge, this paper is original and the first of its kind because this study has not been conducted yet in the state of Meghalaya, India. This paper has an authentic value of projecting Khasi Food globally as a cultural and ethnic tourism product giving meaningful experiences to tourists and locals alike.

Abstract

The relationship between food and tourism has always been an increasingly important segment in the real worlds of hospitality, destination marketing and tourism development. However, only recently we have seen the acceptance of the growth in interest in gastronomic tourism as an academic field of study. Nowadays, there is a worldwide rise of concern for gastronomy and, specifically, for top gastronomy. The influence of gastronomy on tourism has provided new and exciting opportunities for major stakeholders in the tourism and travel industry.

This chapter focuses on the relation between Michelin-starred restaurants and luxury tourism in an attempt to understand the impact and influence of luxury restaurants in tourism. An evolutionary analysis of the literature and a Michelin-starred case study will be conducted with the aim of: (1) understanding Michelin star system and luxury gastronomy; (2) analyzing the potential link between top gastronomy and luxury gastronomy; and (3) listening to chefs' voices and perspectives on changes in consumer behaviour, perspectives and trends. Findings generated by this approach may help create innovative ways to address luxury tourism and hospitality.

Abstract

Purpose

This study aims to enhance the knowledge by offering perspectives from an emerging market by reviewing the existing literature on food tourism. This study applies a multimethod analysis, providing insights into the advancement of food tourism in India, the contributions, critical findings and emerging research themes.

Design/methodology/approach

The study adopted a multimethod analysis using descriptive, narrative and bibliometric analysis using VOSviewer to analyze research papers published on food tourism in India shortlisted from Scopus and Google Scholar.

Findings

Future research should focus on gauging the potential of food tourism in different regions of the country, applying theoretical frameworks that have not been used. “Culinary Diversity and Heritage,” “Sustainable and Responsible Food Tourism,” “Consumer Behavior and Food Tourism Experiences,” “Rural Development and Economic Impact,” “Technology and Digitalization,” “Stakeholder Collaboration,” “Food Safety and Hygiene” and “Policy and Regulation” were the identified future research themes. These findings are significant for emerging economies across the globe.

Research limitations/implications

This study summarized the progress of food tourism research in India, the contributions and emerging themes, supplementing the need to study food tourism in India. This study contributed methodologically to the literature by adopting a multimethod review combining descriptive, narrative and bibliometric analysis. Finally, by proposing ideas and constructs for future research, this study provides directions for future food tourism research from an emerging market’s perspective.

Practical implications

Findings will assist managers and stakeholders in comprehending the factors influencing tourists, destination marketing and branding, aiding in effective planning and executing food tourism strategies to promote destinations. The identified themes and keywords can help academicians and researchers dwell upon the emerging research themes in food tourism.

Originality/value

To the best of the author’s knowledge, this is the first study analyzing food tourism research in India adopting a multimethod analysis. The study provides an in-depth analysis applying descriptive, narrative and bibliometric analysis, highlighting the critical trends and research themes. A framework for future studies was also proposed.

Objetivo

El estudio tiene como objetivo mejorar el conocimiento al ofrecer perspectivas de un mercado emergente mediante la revisión de la literatura existente sobre turismo gastronómico. Este estudio aplica un análisis de múltiples métodos, que proporciona información sobre el avance del turismo gastronómico en la India, las contribuciones, los hallazgos críticos y los temas de investigación emergentes.

Diseño/metodología/enfoque

El estudio adoptó un análisis multimétodo mediante un análisis descriptivo, narrativo y bibliométrico utilizando VOSviewer para analizar los artículos de investigación publicados sobre el turismo gastronómico en la India preseleccionados de Scopus y Google Scholar.

Resultados

La investigación futura debería centrarse en calibrar el potencial del turismo gastronómico en las distintas regiones del país, aplicando marcos teóricos que no se han utilizado. “Diversidad culinaria y patrimonio”, “Turismo gastronómico sostenible y responsable”, “Comportamiento del consumidor y experiencias de turismo gastronómico”, “Desarrollo rural e impacto económico”, “Tecnología y digitalización”, “Colaboración de las partes interesadas”, “Seguridad e higiene alimentaria”, “Política y regulación” fueron los temas de investigación futura identificados. Estos hallazgos son significativos para las economías emergentes de todo el mundo.

Implicaciones teóricas

Este estudio resumió el progreso de la investigación sobre turismo alimentario en la India, las contribuciones y los temas emergentes, complementando la necesidad de estudiar el turismo alimentario en la India. Este estudio contribuyó metodológicamente a la bibliografía al adoptar una revisión multimétodo que combina el análisis descriptivo, narrativo y bibliométrico. Por último, al proponer ideas y constructos para futuras investigaciones, este estudio proporciona orientaciones para futuras investigaciones sobre el turismo gastronómico desde la perspectiva de un mercado emergente.

Implicaciones practices

El estudio proporciona un análisis en profundidad aplicando un análisis descriptivo, narrativo y bibliométrico, destacando las tendencias críticas y los temas de investigación. También se propone un marco para futuros estudios.

Abstract

Purpose

This paper aims to derive insights from Kongthong village, popularly known as the “whistling village,” a low-key rural tourism destination that has often gone under the radar. As an upcoming rural tourism destination, mothers create a unique tune for their children, ensuring that their identity remains unique. This is because the residents of Kongthong have two names: an official name and another in the form of a whistled tune. The primary objective of this study is to better understand the rural tourism activities at Kongthong and to explore the symbiotic relationship between indigenous cultural practices and holistic development through tourism.

Design/methodology/approach

The study uses an ethnographic approach wherein the researchers conducted in-depth interviews and group discussions. The study respondents are the village elders, youth, men and women across different age groups. The various governing bodies act as secondary data sources concerning tourism and development.

Findings

The study observes that rural tourism activities in Kongthong go hand in hand with understanding indigenous knowledge. The governing bodies and the local community are on the right path to achieving potential growth and preserving the village as a holistic rural tourist destination.

Originality/value

Rural tourism in Kongthong highlights the traditional practices of the Khasi community. Owing to this, Kongthong was nominated for the United Nations World Tourism Organization (UNWTO) best tourism village by the Government of India as it showcases local culture through social, economic and political elements at the destination that add value to a tourism product.

Altruism has long been a fundamental question motivating evolutionary approaches to behavior. Altruistic behavior is ultimately costly to the actor yet beneficial to the recipient and as such is not expected to be favored by natural selection. Its apparent commonness has led evolutionary thinkers into a wide variety of interesting areas of research, many of which are represented in this volume. Resource sharing ranks among the most basic of potentially altruistic acts. Notably absent among most other primates, humans have honed sharing to a fine art in behaviors as apparently simple as meat distributions from prey carcasses to elaborate feast making and gift giving (Mauss, 1924). Issues related to food sharing are at the center of much of the current research being done in HBE. In this volume, Frank Marlowe, Michael Gurven et al., and Bram Tucker each examine aspects of this problem.

Abstract

Purpose

The purpose of this paper is to outline the present status of various fermented foods and beverages across the globe and reviews on the microbiology and therapeutic effects of fermented foods.

Design/methodology/approach

Fermented foods play an important socio-economic role in developing countries as well as making a major contribution to the nutrition requirements of natural populations. These foods have attracted attention all over the world as foods that might promote longevity. The approach is based on observations of online research with respect to fermented foods and their origins, analysis of research papers in journals and systematic research on the microbiology and health benefits of fermented products.

Findings

In general, traditional fermented foods produced with indigenous practices throughout the world are made under primitive conditions, which result in low yield and poor quality. But since, these foods are not only traditional but also functional foods. They are experiencing a burst of popularity as health foods worldwide. The raw materials traditionally used for fermentation are as diverse as: fruits, cereals, vegetables, milk, meat, and fish. It is possible to obtain a large variety of different food products by selecting different raw materials, starter cultures, and fermentation conditions.

Originality/value

The paper offers a holistic view that would guide a reader to identify various fermented products and enlighten them about their therapeutic properties.

Although much lip service is paid to brotherhood in this country by preachers, teachers and politicians, the concept remains poorly understood. For the purposes of this article, the brotherhood ideal is defined broadly as behaviour among adult male human beings of the same generation, belonging to the same extended family, and living in a community, that ensures maximum well being and survivability of the entire family or community. In other words, it is behaviour that maximises the social welfare function of the entire family or community. A sisterhood ideal can be defined analogously, and group‐enhancing behaviour by family members of both sexes might be termed the brotherhood‐sisterhood ideal. Since this behaviour is learned gradually as the individual matures, it can be described as voluntary in the sense that it is not imposed by a legal authority external to the family.

Purpose

Social enterprises (SEs) have experienced unprecedented uncertainty due to COVID-19, and it has challenged the fundamental assumptions underlying the SEs. Little is known about the strategic response of SEs when their fundamental characteristics are being challenged. The purpose of this paper is to explore – how do SEs respond to a crisis caused by the pandemic?

Design/methodology/approach

This paper adopts a case study approach and reports the response strategy of impulse social enterprises (ISE) from India. Data were collected through interviews, Webinars and organizational reports. To analyze the data, the authors examined the fundamental assumption on SE that was challenged by the pandemic.

Findings

The response strategy of ISE is driven by social and substantive rationality focusing on the relationship with the community and doing what is good for them. The role of communication was vital in gathering support and resources to continue with their function. ISE adapted a mindset of mission agility and created an alternative market for its product.

Originality/value

This study highlights the response strategy of SE in an emerging economy like India, which experienced one of the stringent lockdowns. It is probably one of the few studies that examined the responses of SE under a crisis that challenged their fundamental attributes by adopting the framework of Bacq and Lumpkin (2021).

Abstract

Purpose

In this research paper, the authors delve into the ethnography and socioeconomic status of the Chenchu tribal community that resides in Telangana's Nallamalla forest. The authors also examine the initiatives undertaken by the government to create fair entrepreneurial opportunities while preserving their unique culture. Additionally, the authors analyse potential entrepreneurial and business opportunities using the environmental, social and governance (ESG) framework.

Design/methodology/approach

To gain insight into the current socio-economic development and living standards of the Chenchu tribal people, the authors conducted interviews in nine different villages with 177 individual respondents. Statistical analysis was then used to determine the relationship between business opportunities and their impact on socio-economic development based on the data collected.

Findings

The Chenchu tribal community has faced significant challenges, including vulnerability, poverty and debt. To promote the development of the tribe, it is essential to provide equal opportunities in education, healthcare and means of subsistence. The government has implemented various social and developmental programs to support sustainable development and entrepreneurial opportunities while preserving the tribe's unique culture and improving their education and standard of living. These initiatives are aimed at benefiting the entire community.

Practical implications

The Chenchu tribal people are eager for progress but hesitant to leave their forest homes and integrate into modern society. This creates challenges for efficiently implementing welfare programs. It is crucial to strike a balance between forest regulations and the rights of indigenous communities to ensure their protection and prevent any hindrance to development efforts.

Originality/value

To promote sustainable development and preserve tribal cultures, the government should implement various social and developmental programs. These programs should improve living conditions and socioeconomic development while exploring business opportunities. Maintaining these communities' unique identities while striving for progress is essential.

Abstract

This paper examines the importance of property rights in women’s empowerment in rural India. Arguments justifying the need for granting property rights to women are presented and the distinction is made between legal (formal) and customary (informal) rights. The ineffectiveness of legal right in absence of customary rights has been discussed. Customary rights also become ineffective due to other institutional impediments. These impediments have been discussed. The results of extensive field work in rural West Bengal and Orissa have been presented to illustrate the pattern of development process that poor rural women want and in which the property right is only one component, not the only component.
