Abstract

Purpose

This paper aims to evidence the importance of art professionals’ participation in experiential innovation processes, in particular for the gastronomic experiential services, likewise their support to maintain companies at the vanguard in a market of experiences.

Design/methodology/approach

Data are collected, in the first phase, through an elaborated questionnaire. In the second phase, a list of companies is created, based on the qualification that users give to the category “creative gastronomy”, in different online portals of restoration.

Findings

The authors found that art professionals are a strategic and differentiating element for companies that want to break away from the market and increase their revenues. The third part of the interviewed companies that innovate in services experience processes are conformed by multidisciplinary teams, some of the companies take into account the coalition of art professionals with kitchen professionals. This coalition has allowed the companies to increase its billing, stay at the vanguard of the market and more important to maintain their gastronomic experiences services.

Research limitations/implications

One of the main obstacles for conducting this research was observed when carrying out the surveys, as the concept of “team” in the studied sector is not understood as part of the daily administration.

Practical implications

The teams that have made this coalition type, and those that have teams of other specialized professional profiles, have increased their sales through the creation of gastronomical experiences. However, in this research, it is observed that, the companies that combine their teams and do a co-design work and co-development idea have been able to stay at the vanguard of the service and considerably increase their billing.

Social implications

Human resources, with their respective competitions, abilities, techniques and knowledge, are the fundamental base in this type of service. The creation of strategic relationships with other companies or individuals, for either managerial alliances or recruitment and disposition of multidisciplinary teams at the internal level, could be more natural and generate new business opportunities.

Originality/value

The contribution of the paper focuses on the analysis about art professionals’ (artists) role at the time companies decide to sell sensations and emotions to a new consumer profile.

Abstract

Purpose

Disruptive innovation theory has attracted the interest of researchers and practitioners across many areas, resulting in the development of new business models and strategies. Despite the increasing scholarly attention, its definition has not yet been understood, the understanding of the term “disruptive” and the complex nature of this innovation has provoked some misinterpretations, and the meaning remains ambiguous. To address this confusion, this article undertakes a critical review of disruptive innovation in an attempt at providing a solid theoretical grounding.

Design/methodology/approach

The review examines the key issues of published articles, identified after conducting a search in the Web of Science scholarly database. The analysis highlights the basic definitions of disruptive innovation, showing its evolution, types and its characteristics. This article also examines the behaviours adopted by the actors associated with disruptive innovation (i.e. incumbents, entrants and customers).

Findings

Overall, this article finds that disruptive innovation has its own elements to be identified, requiring an in-depth analysis to avoid confusing with other innovation approaches. The findings suggest that disruptive innovation affects businesses and sectors in varied and complex ways because customers from low-end market and mainstream market appreciate this innovation. Further, its impact on practice is huge and incites further efforts in establishing a stronger theoretical grounding.

Originality/value

Our research contributes on the evolution of this theory, helping to better understand the phenomenon of disruption and can be used for different types of research settings.

Abstract

Purpose

The purpose of this paper is to better understand the influence of total quality management (TQM) practices on incremental and radical innovation, examining the role of diverse cultural change as a mediator, particularly in firms where ever‐increasing competitive pressure demands a combination of quality and innovation.

Design/methodology/approach

From previous research on the influence of TQM practices on innovation, the paper proposes a model which is tested through a survey carried out on a sample of 72 Spanish firms that have been drastically hit by competition from Asian companies, achieving a 51.42 percent valid return rate.

Findings

None of the sets of TQM practices directly affects radical innovation, while all of them have a significant and positive relationship with incremental innovation. However, when the paper introduces cultural change as a mediating factor, the model's goodness of fit improves substantially, and all the relations are significant.

Research limitations/implications

The results reveal the power of cultural change to connect the diversity of the TQM practices and incremental and radical innovation. Further research is needed for a more comprehensive understanding of the role of cultural change in these relationships and to test the model in a longitudinal study.

Practical implications

Managers can use the potential inherent in TQM to stimulate a paradoxical cultural context that favours innovation. This is especially relevant for enhancing radical innovation.

Social implications

Given the extent to which TQM has been applied over the last 20 years, the social impact of this study is relevant, particularly in the current environment of economic crisis which calls for an increase in efficiency and innovation, adaptation and change.

Originality/value

The paper introduces a multidimensional analysis of TQM and a broad perspective of innovation. The paper also develops an original definition of cultural change made up of apparently contradicting values, including exploitation and exploration, and introduces it as a mediating variable in the TQM‐innovation model.

Abstract

Research and Development (R&D) activities and Open Innovation activities (OI) have been of crucial importance in Low/Medium Technology (LMT) sectors that are based on the innovation abilities of LMT firms. This article analyzes the links between OI activities and R&D activities in Catalan (Spain) LMT firms. First, we develop a model of how innovation is developed within LMT Catalan firms. By analyzing R&D and OI activities in LMT firms, we measure both internal and external activities of these firms. Secondly, we explore the effects of R&D activities and OI activities in the industrial sector, and then the effects of both in the market of the Catalonia region. Catalan LMT firms have unique opportunities in the innovation process, yet face some obstacles. The objective of this article is to advocate for bridges to be built between university research and public centers, and LMT firms in Catalonia. To define the current issue within the field of Catalan LMT firms, we sample 2008 to 2010 data from the Spanish National Statistical Institute (INE), Statistical Institute of Catalonia (IDESCAT), and the Organization for Economic, Cooperation and Development (OECD).

Abstract

Purpose

The main objective of this paper is to analyze the relationship between employees' propensity to innovate and cultivate entrepreneurial aspirations whilst working within an organization. This paper aims to contribute to a better understanding of this interrelation, reflecting from a theoretical point of view on the factors that influence innovative propensity and entrepreneurial intention of the paid employee working in a public sector organization and studying the role played by the opportunity cost.

Design/methodology/approach

A questionnaire survey was used to collect data from 149 employees working for a public organization. In order to verify the hypotheses proffered, two multiple regression analyses were undertaken.

Findings

The authors provide evidence that an understanding of the capacity that some employees have towards innovation offers an added tier of information and affords meaningful results. Their findings suggest that there is a positive impact of innovative propensity on entrepreneurial intention, and that it is stronger when combined with lower opportunity cost.

Research limitations/implications

The study contributes to the field of entrepreneurship being informative for researchers interested in the antecedents of entrepreneurial intention and can also be utilized to further research in the field of human resource management and retention practices within organizations.

Originality/value

This study contributes to the growing empirical literature on entrepreneurial intention from a perspective that has been hitherto largely overlooked: the employee's perspective.

Abstract

Purpose

The purpose of the paper is to expand on the existing theory of ambidexterity by analysing its implications for organisations that employ total quality management.

Design/methodology/approach

The analysis of relevant theoretical and empirical studies on ambidexterity and total quality management enables us to reflect on the common elements, facilitating factors and synergy that exists between both fields.

Findings

Thanks to the synergy between its principles and practices, total quality management can act as a platform in creating an ambidextrous context, in addition to generating ambidextrous management capabilities and ambidextrous organisational skills. However, no relationship has been found between the application of TQM and structural ambidexterity.

Research limitations/implications

An analysis of existing studies has enabled the extraction of some proposals which could be used in future research.

Practical implications

The synergy between TQM principles and practices, their disparate influence on ambidexterity, the range and depth of applying TQM principles and practices – above all those that are included in a human context and the opening of new markets – means that these factors are key elements to bear in mind for those organisations that wish to maximise the potential of TQM in order to foster ambidexterity.

Social implications

Given the extent to which this type of management has been applied over the last 20 years the social impact of this study is relevant.

Originality/value

This study opens up a new line of research into ambidexterity and, despite the subject having been analysed extensively in conceptual and empirical terms, until now its relationship with total quality management has yet remained unexplored.
