Abstract

Purpose

The current study sheds light on non-human object agency by drawing illustrative examples from a case of horse/horsemeat, and thereby captures the ways in which living and non-living animal entities have shifting effects and/or intentions in relation to human entities within heterogeneous networks of cultural resources and practices.

Methodology/approach

Leaning on the post-human approach, the case of horse/horsemeat provides an illustrative empirical entry point into exploring how by looking through the lenses of object agency one can deconstruct the prevailing anthropomorphism-based dualistic views of living and non-living domestic animals as subjects or objects.

Findings

The paper argues that by contemplating both the living horse and non-living horsemeat as ontologically shifting and co-constructive entities in relation to human subjects, we are able to elaborate the contradictions and convergences of object agency that appear in living and/or non-living co-consuming units.

Social implications

The study showcases important aspects of animal welfare, addressing the effects of shifting from a human-centred perspective to a post-human view on equality between various kinds of entities.

Originality/value

This paper contributes to the discussions of non-human object agency, addressing the issue from the perspective of an animal entity, which enables participating in deconstructing dualisms such as subject and object as well as living and non-living. In particular, it highlights how in the case of an animal entity, agency may emerge in terms of effects and (some capacity of) intentions both within living and non-living entities.

Abstract

Purpose

Drawing on food consumption research and human-animal studies, this paper aims to explore how the meanings related to a living horse may be transferred to those of horsemeat. This is accomplished by constructing a nuanced understanding of how different semantic meaning categories of accepting/avoiding consuming horsemeat relate to each other.

Design/methodology/approach

The current data are collected from various sources of media discussions, including online news, online discussion forums, blog postings and printed articles, generated in Finland after the year 2013. The data are analysed applying Greimas’ (1987) semiotic square to open up the semantic meaning categories appearing in the media discussions.

Findings

The semiotic square shows that the meanings of horsemeat arise between the binary oppositions of human-like and animal-like. In this structure, the category of human-like makes eating horsemeat impossible, whereas the category of animal-like makes horsemeat good to eat. The main categories are completed and contrasted by the categories of not human-like and not animal-like. They represent horsemeat as an acceptable food, but only after certain justifications.

Research limitations/implications

The data are based on Finnish media texts, and therefore, the identified categories are interpreted in this specific cultural context.

Originality/value

The current semiotic analysis adds to the existing food consumption research by shedding light on the cultural barriers that make something edible or inedible. By so doing, the findings present a more nuanced and dynamic understanding of the horse as a special kind of meat animal and the justifications for eating horsemeat. Consequently, the findings offer new insights concerning changing food consumption behaviours into a more sustainable direction, pointing out the hidden meanings that influence this process.

In January 2013, Irish authorities were the first to uncover the year's first food sourcing scandal: horsemeat sold as beef on supermarket shelves. It was not long before regulators and retailers realized the problem was truly a continental one. The incident involved French exporters, Luxembourger production facilities, Cypriot and Dutch meat traders, British and Swedish retailers, and Romanian horsemeat. Food service providers and retailers were forced to test beef products to ensure they were horse-free, pulling products that contained traces of equine meat. British supermarkets alone disposed of an estimated 10 million “beef” burgers in the wake of the scandal.

This case is an example of the challenges of managing the complex global supply chains that make up the modern food industry. In this class discussion, students will use concepts from management, economics, and public policy to assess the damage of this event and to analyze strategies for preventing similar incidents in the future.

Abstract

Purpose

Consumer confidence in the European food industry has been shaken by a number of recent scandals due to food fraud and accidental contamination, reminding the authors that deliberate incidents can occur. Food defence methods aim to prevent or mitigate deliberate attacks on the food supply chain but are not a legal requirement. The purpose of this paper is to discuss how proactive and reactive food defence practices can help prevent or mitigate malicious attacks on the food chain and also food fraud, food crime and food safety. The authors look at how food defence differs from food safety and how it contributes to food supply chain integrity.

Design/methodology/approach

Food defence has been the focus of two different EU FP7 security projects, EDEN and SNIFFER. Food industry stakeholders participated in workshops and demonstrations on food defence and relevant technology was tested in different food production scenarios.

Findings

Food industry end-users reported a lack of knowledge regarding food defence practices. They wished for further guidelines and training on risk assessment as well as access to validated test methods. Novel detection tools and methods showed promise with authentication, identification, measurement, assessment and control at multiple levels of the food supply chain prior to distribution and retail.

Practical implications

The prevention of a contamination incident, prior to retail, costs less than dealing with a large foodborne disease outbreak. Food defence should therefore be integral to food supply chain integrity and not just an afterthought in the wake of an incident.

Originality/value

It is argued that food defence practices have a vital role to play across the board in unintentional and intentional food contamination incidents. The application of these methods can help ensure food supply chain integrity.

Abstract

Purpose

Social media has become an important part of daily interpersonal communication in contemporary society. The purpose of this paper is to explore the attitudes of UK consumers by identifying the hidden information in tweets, and provide a framework which can assist industry practitioners in managing social media data.

Design/methodology/approach

Using a large-scale dataset of tweets relating to the Horsemeat scandal of 2013, a comprehensive data analysis framework, which comprises multidimensional scaling and sentiment analysis, alongside other methods, was applied to explore customers’ opinions.

Findings

Making jokes in social media was a main trend in the tweets relating to Tesco during the Horsemeat scandal. Consumer sentiments were overall negative and burgers were the most mentioned product in the week-long period after the story broke. The posting of tweets was correlated with the timing of news coverage, which indicates that the traditional media is still crucial to public opinion formation.

Practical implications

This paper presents a progressive tweet-mining framework that can serve as a tool for academia and practitioners in crisis management. The proposed framework indicates the significant importance of timely categorising the topics, identifying the sentiment of tweets and understanding the changes of consumer opinions over time in a crisis.

Originality/value

The research presented in this paper is one of the limited social media research to focus on a UK food fraud issue and adds to the limited body of literature investigating consumer social media use from the side of industry practitioners.

Abstract

Purpose

This case study follows the history of the personal and experiences, viewpoints, and attitudes of the key actors from both parties over the period of setting up and implementing a primary authority partnership. It is one of a series research papers and case studies that study approaches to improve compliance with public and private regulations through cooperative and collaborative approaches. The paper aims to discuss these issues.

Design/methodology/approach

It is a grounded qualitative study of what a number of individuals said in the course of a number of interviews. The aim and objectives being to obtain, from the key actors, their personal viewpoints, attitudes to and experiences of the partnership. Unlike some grounded approaches the research was based on the priori themes of cooperation and collaboration using semi structured interviews. At one stage, because of difficulty of access to the key actors caused by major re-development of the company, questionnaires replaced interviews.

Findings

The authors found that barriers to achieving a successful partnership included an initial reluctance, by all parties concerned, to cede some of their management autonomy to others and experiences of uncooperative behaviour between the public and private sectors in the past. They were largely overcome as the implementation of the project progressed resulting in improved food safety compliance management based on mutual trust. Other benefits for Preston City Council were immediate cost savings for Preston City Council in their use of human resources. For E.H. Booths, Ltd no initial cost saving was made, but there is potential longer term savings to be made through better risk based targeting of resources. These benefits only being made possible by the collaborative effort and support from all parties and individuals involved.

Originality/value

On its own this case study research is limited by its size and scope but the emerging topics and findings highlight the difficulties and barriers faced in setting up partnerships between public regulators and businesses. Therefore, the results can be of value to similar studies and other areas where cooperation, collaboration, partnership, and co-regulation are significant contributory factors to successful compliance strategies.

Abstract

Purpose

In 2012, the European food industry was hit by a food fraud: horsemeat was found in pre-prepared foods, without any declaration on the package. This is commonly referred to as the “horsemeat scandal”. The purpose of this paper is to investigate consumers’ preferences across Europe for a selected ready meal, ready to heat (RTH) fresh lasagne, to consider whether the effects of potential food frauds on consumers’ choices can be mitigated by introducing enhanced standards of RTH products.

Design/methodology/approach

An online survey was administered to 4,598 consumers of RTH lasagne in six European countries (Republic of Ireland, France, Italy, Spain, Germany and Norway), applying discrete choice experiments to estimate consumers’ willingness to pay for enhanced food safety standards and highlight differences between countries.

Findings

Many similarities across countries emerged, as well as some differences. Consumers in Europe are highly concerned with the authenticity of the meat in ready meals and strongly prefer to know that ingredients are nationally sourced. Strong regional differences in price premiums exist for enhanced food safety standards.

Originality/value

This research adds relevant insights in the analysis of consumers’ reaction to food fraud, providing practical guidelines on the most appropriate practices that producers should adopt and on the information to reduce food risk perception among consumers. This would prove beneficial for the food processing industry and the European Union. The survey is based on a representative sample of European consumers making this the largest cross-country study of this kind.

Abstract

Purpose

In acknowledging the reality of climate change, large firms have set internal and external (supplier oriented) targets to reduce their greenhouse gas emissions. This study aims to explore the complex processes behind the evolution and diffusion of carbon reduction strategies in supply networks.

Design/methodology/approach

The research uses complex adaptive systems (CASs) as a theoretical framework and presents a single case study of a focal buying firm and its supply network in the food sector. A longitudinal and multilevel analysis is used to discuss the dynamics between the focal firm, the supply network and external environment.

Findings

Rather than being a linear and controlled process of adoption implementation outcomes, the transition to reduce carbon in a supply network is much more dynamic, emerging as a result of a number of factors at the individual, organisational, supply network and environmental levels.

Research limitations/implications

The research considers the emergence of a carbon reduction strategy in the food sector, driven by a dominant buying firm. Future research should seek to investigate the diffusion of environmental strategies more broadly and in other contexts.

Practical implications

Findings from the research reveal the limits of the control that a buying firm can exert over behaviours in its network and show the positive influence of consortia initiatives on transitioning to sustainability in supply networks.

Originality/value

CAS is a fairly novel theoretical lens for researching environmental supply network dynamics. The paper offers fresh multilevel insights into the emergent and systemic nature of the diffusion of environmental practices in supply networks.

Abstract

Purpose

The purpose of this paper is to examine the recent horsemeat scandal in European markets. The paper is primarily interested in how this scandal has festered and what perhaps ought to be done to ensure consumers get what they feel they should be getting. It also attempts to identify the lapses that have created the basis for this to happen.

Design/methodology/approach

The paper mainly draws on reports in the media and discussions generated following the scandal to assess the issues under consideration. It also looks at the issues surrounding the global supply chain environment and provides solutions on how to strengthen the weak links in the meat supply chain.

Findings

The paper finds that the scandal has damaged consumer confidence in the industry's ability to regulate itself. It notes that pinpointing risk has become a difficult struggle as retailers are often inundated with data, and suppliers, for lack of time, have become reluctant to “waste time” completing check-lists and audits. The paper maintains that there is the urgent need for adequate inspection and a means to incentivise the food industry to police itself much better. It recognises that lack of visibility and a lack of direct influence over suppliers further down the supply chain have led to distinct problems within the food industry.

Originality/value

The paper contributes to an ongoing discussion that has been of considerable concern to many consumers. Its importance lies in the fact that it suggests important measures, which, if implemented, could help in ensuring the elimination of fraud in the food chain.

Abstract

Purpose

Supply chain fraud is a significant global concern for firms, consumers and governments. Evidence of major fraud events suggests the role of supply chain structures in enabling and facilitating fraud, as they often involve several parties in complicated networks designed to obfuscate the fraud. This paper identifies how the structural characteristics of supply chains can play an important role in enabling, facilitating and preventing fraud.

Design/methodology/approach

The research follows a theory elaboration approach. The authors build on structural holes theory in conjunction with a multiple case study research design to identify new concepts and develop propositions regarding the role of network structure on supply chain fraud.

Findings

This research shows how structural holes in a supply chain can create advantages for unscrupulous firms, a role we call tertius fraudans, or the cheating third. This situation is exacerbated by structural ignorance, which refers to the lack of knowledge about structural connections in the network. Both structural holes and structural ignorance can create information gaps that facilitate fraud, and the authors propose solutions to detect and prevent this kind of fraud.

Originality/value

This paper extends structural holes theory into the domain of fraud. Novel concepts including tertius fraudans, structural ignorance and bridge collapse are offered, alongside a series of propositions that can help understand and manage structural supply chain fraud.
