Abstract

Purpose

This study aims to investigate the effect of healthy food advertising (HFA) in preventing obesity (measured using the healthy eating attitude and perceived self-regulatory success) through the meta-cognitive role of consumer wisdom (CW). The meta-cognitive role of CW to better promote healthy eating attitude and behavior is relevant and underexplored.

Design/methodology/approach

Data were collected from 310 young consumers through an online survey. Reliability and validity were established using confirmatory factor analysis, and hypotheses were analyzed through structural equation modeling using MPlus V8.3.

Findings

The results reveal that HFA has a positive influence on all dimensions of CW: responsibility, purpose, perspective, reasoning and sustainability. All dimensions but one augment a positive healthy eating attitude, but only responsibility and sustainability enhance consumers’ self-regulatory success. The findings show that HFA does not directly prevent obesity, but CW mediates the relationship between that advertising and obesity prevention. These findings show that CW establishes a mindful connection between HFA and obesity control.

Research limitations/implications

This research extends the theory of CW in the context of healthful eating and contributes significantly to the advertising, hospitality and obesity literature.

Practical implications

This study also has implications for multiple stakeholders, including consumers, restaurant operators, hospitality managers, brand managers, the government and society in general.

Originality/value

To the best of the authors’ knowledge, this study marks the first attempt to investigate the role of CW in preventing obesity. It is also the first study to examine the relationships of HFA with CW and a healthful attitude toward eating.

Abstract

Purpose

This study aims to test the utility of the theory of planned behavior (TPB) for explaining intention to eat a healthful diet in a sample of Southeastern US office workers.

Design/methodology/approach

Participants in a worksite nutrition study (n = 357) were invited to complete an online questionnaire including measures of TPB constructs at baseline. The questionnaire included valid and reliable measures of TPB constructs: behavioral beliefs, normative beliefs, control beliefs, attitudes toward behavior, subjective norm, perceived behavioral control and intention. Data were collected from 217 participants (60.8 per cent response rate). Confirmatory factor analysis and structural equation modeling were conducted to test the hypothesized TPB model.

Findings

The model fit was satisfactory (χ2 = p < 0.0001, RMSEA = 0.06, CFI = 0.91, TLI = 0.90, SRMR = 0.09). All structural relationships between TPB constructs were statistically significant in the hypothesized direction (p < 0.05). Attitude toward behavior, subjective norm and perceived behavioral control were positively associated with intention (R2 = 0.56). Of all TPB constructs, the influence of perceived behavioral control on intention was the strongest (β = 0.62, p < 0.001).

Originality/value

Based on this sample of Southeastern US office workers, TPB-based interventions may improve intention to eat a healthful diet. Interventions that strengthen perceived control over internal and external factors that inhibit healthful eating may be particularly effective in positively affecting intention to eat a healthful diet, and subsequent food intake.

Abstract

Purpose

Poor eating habits established during adolescence are likely to lead to negative long-term health consequences. The childhood obesity epidemic is a growing public health concern, largely attributed to obesogenic environments. This study aims to explore the multiple factors contributing positively or negatively to young consumers’ attitudes towards their food consumption.

Design/methodology/approach

In total, 42 11- to 13-years-old (24 men and 18 women) from three secondary schools in Wales participated in five focus group discussions. The process of thematic analysis resulted in several identified themes that influenced young consumers’ eating habits.

Findings

Extrapersonal factors compromised: education, peer pressure, parenting, availability and social media; and intrapersonal factors included: health consciousness, taste preferences, convenience and price consciousness. Contrary to previous research, the adolescent participants perceived their parents as more influential than their peer group, even during decision-making in the school canteen.

Practical implications

These research findings are beneficial for policy-makers working to develop an age-appropriate multi-factorial approach to promote healthful dietary practices amongst young consumers. For instance, increasing easily accessible food-to-go choices that are not only convenient to purchase and consume but also healthful could improve dietary intake.

Originality/value

A novel connection between peer pressure and convenience was discovered. Multiple factors contribute to young consumers’ attitudes towards food and their dietary habits.

Abstract

Purpose

The purpose of this paper is to report on a quantitative study of the food environment designed to measure aspects of support for healthy eating.

Design/methodology/approach

An ecological view of eating behaviour was taken by examining the food environment that surrounded a military population of interest. Food outlets (n = 34) were assessed using the Nutrition Environment Measures Survey in store (NEMS-S), Nutrition Environment Measures Study in restaurants (NEMS-R) and military Nutrition Environment Assessment Tool (mNEAT) instruments to determine how well food outlets supported healthy eating.

Findings

Despite better-than-average provision of healthy options on-base, the total environment surrounding the military base barely supports healthy eating. Average support to healthy eating was 45 per cent (NEMS) or 27 per cent (mNEAT) of support that could be measured. Individuals accessing this food environment would find few healthy alternatives, little information directing them to healthy choices and pricing and promotion that drives unhealthy eating behaviours.

Research limitations/implications

This study focused on one food environment; replication is recommended to establish foundation data for benchmarking outlets, and further develop these measures for Australian settings. Future studies may assess the media environment to further extend the ecological model used.

Practical implications

A method to measure the food environment is demonstrated which provides formative research insights for use when planning social marketing interventions. Consideration of these influences together with intra- and inter-personal influences offer the potential to better design social marketing healthy eating interventions, by addressing multiple levels within an ecological framework.

Originality/value

This paper answers calls for social marketers to consider the influence of the surrounding environment, using methods not previously used in Australian settings.

Abstract

Purpose

Increasing and maintaining the population’s consumption of healthful food may hinder the global obesity pandemic. The purpose of this paper is to empirically test whether it is possible for healthful sub-brands to achieve higher consumer behavioural loyalty than their less healthful counterparts.

Design/methodology/approach

The study analysed three years of consumer panel data detailing all purchases from five consumer goods categories for 15,000 UK households. The analysis uses best-practice techniques for measuring behavioural loyalty: double jeopardy, polarisation index, duplication of purchase and user profile comparisons. Each sub-brand’s healthfulness was objectively coded.

Findings

Despite the level of healthfulness, all sub-brands have predictable repeat purchase patterns, share customers as expected and have similar user profiles as each other. The size of the customer base, not nutrition content, is, by far, the biggest determinant of loyalty levels.

Research limitations/implications

Consumers do not show higher levels of loyalty to healthful sub-brands, or groups of healthful sub-brands. Nor do they buy less healthful sub-brands less often (as a “treat”). There are also no sub-groups of (health conscious) consumers who would only purchase healthful options.

Practical implications

Sub-brands do not have extraordinarily loyal or disloyal customers because of their healthfulness. Marketers need to focus on growing sub-brands by increasing their customer base, which will then naturally grow consumer loyalty towards them.

Originality/value

This research brings novel evidence-based knowledge to an emerging cross-disciplinary area of health marketing. This is the first study comparing behavioural loyalty and user profiles towards objectively defined healthful/less healthful sub-brands.

Abstract

Purpose

Food literacy is an emerging concept associated with the skills, capabilities and knowledge to prepare a healthy diet and make healthy food choices. This study aims to examine how a dietary gatekeeper’s intentions to prepare a healthy diet for their family, and the subsequent satisfaction that a healthy diet is achieved, is influenced by their food literacy and by barriers to healthy eating.

Design/methodology/approach

A two-stage cross-sectional study was undertaken with 756 dietary gatekeepers who completed a baseline (time 1) and a three-month follow-up (time 2) questionnaire. Partial least square-structural equation modeling was used to estimate relationships between gatekeeper food literacy, their demographic characteristics, socio-cognitive factors, time 1 satisfaction with the healthiness of the household diet and intention to provide a healthy family diet. The follow-up survey assessed subsequent satisfaction with the healthiness of the household diet and barriers to achieving it.

Findings

The results highlight the significance of the dietary gatekeeper’s food literacy in overcoming barriers to healthy eating and fostering increased satisfaction with the healthiness of the family diet. The research further highlights the influence of past satisfaction, attitude, subjective norms and perceived behavioural control. Several demographics factors are also highlighted as influential.

Research limitations/implications

The research offers new insights into the role of food literacy in the home environment including its influence on the dietary gatekeeper’s satisfaction with the family diet. The current model also provides strong evidence that food literacy can reduce the impact of barriers to healthy eating experienced by gatekeepers. The research has limitations associated with the socio-economic status of respondents and thus offers scope for research into different populations and their food literacy, younger and early formed cohabiting and the negotiation of food and dietary responsibility and on intergenerational food literacy.

Practical implications

The current findings regarding the impact of food literacy have significant implications for government agencies, non-profit agencies, educational institutions and other related stakeholders in their effort to curb obesity. Implications exist for micro-level programmes and actions designed to influence gatekeepers, family members and households and at the macro level for policies and programmes designed to influence the obesogenicity of the food environments.

Originality/value

The current study is one of the first to offer evidence on the role of food literacy in the home environment and its ability to overcome barriers to healthy eating. The research provides social marketers and public policymakers with novel insights regarding the need for increased food literacy and for developing interventions to improve food literacy in dietary gatekeepers.

Abstract

Purpose

Health literacy is a key international public health goal. Conceptualising health literacy as an asset highlights the importance of fostering a health literate youth for the benefit of future generations, yet research has predominantly focused on examining adults’ and older adolescents’ health literacy. This presents a gap for child-centred studies with younger populations. The purpose of this paper is to report the findings from a qualitative study that explored health literacy, in a nutrition context (i.e. nutrition literacy), from primary school children’s perspectives.

Design/methodology/approach

The study examined children’s experiences in accessing, understanding and interacting with nutrition information. In doing so, the research employed a socio-ecological framework to understand facilitators and barriers that can influence children’s nutrition literacy. Preadolescent boys and girls aged 11–12 years were invited to take part in the study. At the time of recruitment, students were attending one of three state government schools in a socioeconomically disadvantaged region of metropolitan South Australia. A series of focus groups and individual semi-structured interviews were conducted with 38 participants. Interview data were audio-recorded, transcribed verbatim and analysed using thematic techniques.

Findings

Children demonstrated that they accessed and interacted with a variety of sources of nutrition information. Nutrition understandings were derived from the home, school and media environments. Parents and teachers were cited as key influences on children’s interactions with nutrition information and children particularly emphasised the trust placed in their teachers as health “experts.” While the home and school environments emerged as potential settings to develop children’s nutrition literacy skills, the children’s narratives also alluded to potential barriers surrounding nutrition literacy.

Originality/value

This study provides further insight into children’s nutrition literacy. While functional nutrition literacy remains a fundamental starting point, children are interested in opportunities to develop more interactive skills, such as those related to cooking. Opportunities also exist to foster more critical competencies. This research thereby highlights the importance of more integrated strategies to promote nutrition literacy among this population group across multiple settings.

Abstract

Purpose

Childhood obesity is a serious health concern (World Health Organization (WHO), 2013) and advertising exposure is known to be a contributing factor (Institute of Medicine (IOM), 2006). In recent years consumers have expressed an increased interest in products appearing healthy and food companies have committed to changing their child-targeted marketing practices to promote a healthy lifestyle. The purpose of this paper is to examine depictions of physical activity in food advertising and assess how recognition of a promoted food’s healthy and unhealthy traits influences dietary selections among youth in Southern Arizona in the USA.

Design/methodology/approach

A content analysis of food advertisements aired during 2009-2013 (n=534 and 354, respectively) identified changes to child-targeted food marketing messages. A structured interview determined differences in recognition of “juxtaposed beliefs” (i.e. that are contradictory and both healthy and unhealthy e.g. connecting exercise with a food high in sugar) among younger children, five to six years of age (n=34) and older children, ten to 11 years of age (n=34). Children were offered snacks to determine how this ability to recognize juxtaposition related to their dietary selections.

Findings

There has been an increase in the frequency with which physical activity is depicted in advertisements for high-sugar foods. When presented with such advertising, a greater number of older than younger children recognized juxtaposed beliefs. Those younger children who showed recognition were more likely to select the advertised item, although this was not the case with older children.

Research limitations/implications

The findings from this research relate to children’s responses to advertisements for sugared cereal that depict physical activity and may not be generalizable further.

Practical implications

Children who are able to recognize both the healthy and unhealthy aspects of food are paradoxically likely to find it more appealing. Given the increased practice of associating high-sugar foods with physical activity in child-targeted food marketing, this raises concerns for nutrition education strategies, and the regulation of food marketing to children.

Originality/value

Little research has examined the depiction of physical activity in food marketing targeting children, nor children’s ability to recognize, and react to, juxtaposed beliefs regarding a product’s healthfulness.

Abstract

Purpose

To explore mothers’ attitudes to fast food companies’ use of toy premiums as a marketing technique.

Design/methodology/approach

Two focus groups and 12 individual interviews were conducted with 21 mothers of young children.

Findings

The mothers considered toy premiums to be a highly effective form of marketing targeted at their children. Such purchase incentives stimulate a constant barrage of requests that parents must manage.

Research limitations/implications

If parents are to successfully perform their role of food providers to address escalating rates of childhood obesity, they need assistance to counter‐balance the highly effective forms of marketing being employed by fast food companies.

Practical implications

The findings have relevance for public policy makers in their efforts to assess the impacts of various promotional activities targeted at children. They are also useful for food marketers as they suggest how product offerings may be differentiated to better meet parents’ preferences.

Originality/value

Very little research has examined parents’ attitudes to specific marketing techniques aimed at children. Understanding the impacts of these techniques on parents’ feeding practices is critical in obtaining an appreciation for how parents can better manage their children’s diets to address rapidly escalating rates of childhood obesity.
