Abstract

Purpose

The potential for the foodservice industry to be part of a public health strategy has led to a new understanding of this sector’s role in a wider interdisciplinary health environment. The purpose of this paper is to evaluate the influence of the foodscape on fruit and vegetable choice by staff in a higher educational setting.

Design/methodology/approach

Foodscape mapping of fruit and vegetable provision on campus was conducted to provide context. Two focus groups with staff and two interviews with foodservice managers took place to gain depth of understanding. Thematic analysis was conducted to allow for pattern and meaning to emerge.

Findings

Results demonstrate two main overarching themes; personal influence and food operator influence that impact on fruit and vegetable choice. In addition connectivity, perceptions of freshness, food quality and display seemed to be strong categories emerging from the data. Interestingly, this research indicated that consumers were more likely to eat fruit and vegetables when part of a composite dish than if served separately.

Practical implications

Providing a positive foodscape to enhance availability of fruit and vegetables may be challenging but helpful towards health promotion. Nevertheless, no “nudging” can control choice made by individuals, responsibility for healthy selection must always remain personal.

Originality/value

Knowledge gained by this pilot study will add to the body of literature and evidence base for further research while contributing to foodservice strategies which may promote increased fruit and vegetable consumption.

Abstract

Purpose

The purpose of this paper is to evaluate consumers’ latent need to serve society by participating in “Go Green Revolution” and the contribution to proper disposal of waste and packaging of fruits and vegetables by the consumer and retailer.

Design/methodology/approach

The United Arab Emirates (UAE’s) regular customers comprise an expatriate population of 200 nationalities. Primary research attempted to maintain a ratio of this diversity.

Findings

There is low awareness of effects of disposal of fruits and vegetables and an urgent need for intervention by stakeholders.

Research limitations/implications

This research attempts to provide avenues for further scientific and academic research. Better methods of disposing and faster turnaround from waste to compost should be pursued scientifically. Academic research venues are available for researchers to study methodologies which can be used to educate people. Corporate, institutional and government awareness campaigns specific to disposal of fruits and vegetables should be researched further.

Practical implications

The paper attempts to analyse the levels of awareness of the general population with respect to disposal of fruits and vegetables. The landfills can be saved from the stench which usually encompasses the area, if fruits and vegetables can be disposed properly. The creation of compost at micro levels can help create a greener earth.

Originality/value

The research paper focuses on awareness of disposal of fruits and vegetables and its packaging, which is new in the context of the UAE.

Abstract

Purpose

More tailored interventions and campaigns are needed to increase fruit and vegetable consumption to recommended levels. The purpose of this paper is to explore which consumer groups exist based on both their fruit and vegetable consumption level and their health-related motive orientations (HRMO), and to compare the revealed consumer clusters regarding their fruit and vegetable product attribute importance.

Design/methodology/approach

In the Netherlands an online panel survey was carried out resulting in 1,296 respondents. The clusters based on HRMO and fruit and vegetable intake are profiled with respect to demographics and product attribute importance.

Findings

Cluster analysis revealed six homogeneous consumer clusters with different HRMO and fruit and vegetable consumption levels. In addition, these clusters show a different socio-demographic profile and differ in their importance ratings of fruit and vegetable product attributes.

Practical implications

The results show that health is a multidimensional construct suggesting that there is a need for addressing health in interventions and campaigns in a more tailored approach.

Originality/value

This study shows that the combination of both usage- and psychographic segmentation variables provide valuable and interesting information that give insights in addressing different target groups. Moreover, this study elaborates on previous research by showing that health is a multidimensional construct and that Dutch consumers differ in their HRMO.

Abstract

Purpose

The purpose of this paper is to assess the utility of rationalistic constructs for predicting fruit and vegetable intake in children. It was hypothesised that children's gain‐loss evaluations will predict their stage of uptake irrespective of important additional variables.

Design/methodology/approach

Over 200 pupils from a Derbyshire secondary school completed a cross‐sectional questionnaire assessing stages‐of‐change (precontemplation, contemplation, preparation, action, maintenance), gain‐loss considerations, prior consumption, self‐efficacy, and attitude.

Findings

Discriminant function analysis revealed self‐efficacy, attitude, and previous consumption as significant predictors of group membership for both fruit and vegetable intake. Group centroids indicated clear separation of earlier from later stages, and transitional from other stages. Gain‐loss appraisals failed to predict stage membership. Finally, 63.4 and 59.1 per cent of original grouped cases for vegetable and fruit consumption, respectively, were correctly classified. However, classification accuracy varied across stages.

Research limitations/implications

The sample was predominantly Caucasian and from a suburban area. Thus, the generality of these findings to children from other demographics is unclear.

Practical implications

Interventions promoting fruit/vegetable intake in children may lack efficacy if they emphasise possible outcomes (e.g. benefits) associated with eating these foods. Modifying opinions and suggesting easier ways to increase consumption may achieve better results.

Originality/value

Previous research has demonstrated the importance of gain‐loss considerations in adult's stage of fruit/vegetable intake. The current paper extends this literature to children; it appears rationalistic constructs play a negligible role in children when considered within the context of other variables.

Abstract

Purpose

The purpose of this paper is to determine compatibility groups of different fruits and vegetables that can be stored and transported together based upon their requirements for temperature, relative humidity, odour and ethylene production. Pre-cooling which is necessary to prepare the commodity for subsequent shipping and safe storage is also discussed.

Design/methodology/approach

The methodology used in this journal is an attempt to form clusters/groups of storing together 43 identified fruits and vegetables based on four important parameters, namely, temperature, relative humidity, odour and ethylene production. An agglomerative hierarchical clustering algorithm is used to build a cluster hierarchy that is commonly displayed as a tree diagram called dendrogram. The same is further analyzed using K-means clustering to find clusters of comparable spatial extent. The results obtained from the analytics are compared with the available data of grouping fruits and vegetables.

Findings

This study investigates the usefulness and efficacy of the proposed clustering approach for storage and transportation of different fruits and vegetables that will eventually save huge investment made in terms of developing infrastructure components and energy consumption. This will enable the investors to adopt it for using the space more effectively and also reducing food wastage.

Research limitations/implications

Due to limited research and development (R&D) data pertaining to storage parameters of different fruits and vegetables on the basis of temperature, relative humidity, ethylene production/sensitivity, odour and pre-cooling, information from different available sources have been utilized. India needs to develop its own crop specific R&D data, since the conditions for soil, water and environment vary when compared to other countries. Due to the limited availability of the research data, various multi-criteria approaches used in other areas have been applied to this paper. Future studies might be interested in considering other relevant variables depending upon R&D and data availability.

Practical implications

With the increase in population, the demand for food is also increasing. To meet such growing demand and provide quality and nutritional food, it is important to have a clear methodology in terms of compatibility grouping for utilizing the available storage space for multi-commodity produce and during transportation. The methodology used shall enable the practitioners to understand the importance of temperature, humidity, odour and ethylene sensitivity for storage and transportation of perishables.

Social implications

This approach shall be useful for decision making by farmers, Farmer Producer Organization, cold-storage owners, practicing managers, policy makers and researchers in the areas of cold-chain management and will provide an opportunity to use the available space in the cold storage for storing different fruits and vegetables, thereby facilitating optimum use of infrastructure and resources. This will enable the investors to utilize the space more effectively and also reduce food wastage. It shall also facilitate organizations to manage their logistic activities to gain competitive advantage.

Originality/value

The proposed model would help decision makers to resolve the issues related to the selection of storing different perishable commodities together. From the secondary research, not much research papers have been found where such a multi-criteria clustering approach has been applied for the storage of fruits and vegetables incorporating four important parameters relevant for storage and transportation.

Abstract

Purpose

The purpose of this paper is to evaluate the difference in antioxidant contents of pre‐packed fresh‐cut and whole fruit and vegetables as sold in the market.

Design/methodology/approach

Samples of pre‐packed fresh‐cut fruit and vegetables as well as whole produce were collected from the market in Muscat and Oman, and analyzed for vitamin C, lycopene and total carotenoids. Analysis of variance was carried out to determine the level of statistical differences between fresh‐cut and whole fruit and vegetables.

Findings

In both fruit and vegetables, vitamin C contents are higher in whole than fresh‐cut produce, with greater reductions in vitamin C contents of fresh‐cut vegetables than fruit. In both fresh‐cut and whole fruit, lycopene content is 30‐36 times higher in watermelon than the contents of other fruit genotypes studied. Similarly, total carotenoids content of watermelon is six to 21 times higher than other types of fruit studied. Both lycopene and total carotenoids content are higher in whole than fresh‐cut fruit, except in pineapple fruit. In both fresh‐cut and whole vegetables, lycopene content of carrot is three to four times higher than cucumber, and four to six times higher than celery. Implications of these results on public health policy are discussed.

Originality/value

Previous studies on quality of fresh‐cut produce are based on controlled experimental studies using samples of produce from the same batch to compare fresh‐cut versus whole produce. However, consumers in retails stores often have to make a choice between pre‐packed fresh‐cut or whole (un‐cut) produce, which are not usually from the same source or batch. It is therefore essential to understand the differences in nutritional value of whole and pre‐packed fresh‐cuts sold in the market.

Abstract

Purpose

Several cross‐sectional studies reported that breakfast skipping and a poor consumption of fruits and vegetables are associated with overweight and obesity‐related morbidities. In this respect healthy eating habits such as regular breakfast and a sufficient intake of fruit and vegetables are two important items to prevent childhood and adolescent obesity. The purpose of this study is to determine the breakfast frequency and the fruit and vegetable consumption in Belgian adolescents.

Design/methodology/approach

A cross‐sectional study using pupils contacted by nurses in schools during an information session about female hygiene. On that occasion all pupils (boys and girls) completed a questionnaire concerning their eating habits. Subjects were boys (n = 1390) and girls (n = 3610) between 12 and 15 years of age from the main three educational programmes (general, technical and occupational programme).

Findings

Socio‐economic status significantly influenced breakfast frequency with differences between the highest educational programme (general) and the lower technical‐ and occupational programmes. The use of daily breakfast was respectively 67 versus 49 and 48 per cent for the boys and 60 versus 42 and 39 per cent for the girls). For both sexes breakfast frequency decreased when comparing age groups from 12 with 15 years of age respectively from 67 to 55 per cent for the boys and from 61 to 47 per cent for the girls. Half of the subjects who declared to have overweight (self‐image) did not take breakfast at a regular base. Twenty six per cent of the boys of the French speaking part and 19 per cent of the boys of the Flemish speaking part of Belgium declared to take only one or less than one portion of fruit and/or vegetables a day. For the girls the reported intake of one or less than one portion of fruit and/or vegetables was respectively 20 and 16 per cent. Only 13 per cent of the French speaking boys and 10 per cent of the Flemish speaking boys reported an intake of four or more fruits and/or vegetables a day. The percentage of girls reaching an intake of four or more a day was 15 per cent for the two language regions. Fruit and/or vegetable intake was influenced significantly by the educational programme and by the educational level of the mother. In conclusion, healthy eating habits among girls and boys in Belgium (as estimated by breakfast frequency and fruit and/or vegetable intake) are rather poor. These habits are influenced by age, educational programme, self‐image and educational level of the mother.

Originality/value

In the light of these findings action should be taken to improve the eating habits among Belgian children to prevent childhood obesity.

Abstract

Purpose

Young adults frequently engage in sub-optimal dietary behaviours, such as inadequate intakes of fruits and vegetables and excessive consumption of take-out meals. Theory-based interventions are suggested to promote dietary change. The transtheoretical model is an example that stages an individual’s readiness to change behaviours as precontemplation, contemplation, preparation, action and maintenance, and includes a series of processes that help people move between stages. The purpose of this study is to investigate whether self-reported usual dietary intakes of fruits and vegetables and take-out foods differ by reported stage-of-change.

Design/methodology/approach

Cross-sectional data from 250 overweight young adults, aged 18-35 years, who enrolled in a lifestyle intervention to prevent weight gain are analysed. Participant’s stage-of-change for increasing fruit and vegetable intakes and reducing take-out foods is determined using staging algorithms. This is compared with self-reported dietary intakes over the past month using a food frequency questionnaire. Differences in intakes and variety by stage-of-change are compared for fruits, vegetables and take-out foods.

Findings

Take-out foods differed between stages (p < 0.0001), with lower weekly intakes in action (309 g) and maintenance (316 g) compared with preparation (573 g). Daily fruit intakes and variety scores varied by stage-of-change (p < 0.0001), being highest for action and maintenance (261 g and 263 g, respectively, and variety scores of 1 and 2) compared with precontemplation, contemplation and preparation (all = 100 g and 0 for variety). Daily vegetable consumption and variety scores differed by stage (p = 0.009 and p = 0.025, respectively) being highest for action/maintenance (204 g and 2 for variety) versus precontemplation and preparation (<110 g daily and Variety 1).

Practical implications

The finding of no differences in intakes between precontemplation, contemplation or preparation stages implies that the adoption of the dietary behaviours is not a continuum but a move from pre-action to actioning the target intakes. This means that for planning health promotion and dietary counselling, assigning people to the three different pre-action stages may be unnecessary.

Originality/value

This study is the first to examine the congruence of self-reported readiness to change behaviour with dietary intakes of take-out foods as well as variety of fruit and vegetables in overweight young adults.

Purpose

The purpose of this paper is to investigate the effects of the Cancer Society of Lower Saxony’s school-based nutrition education programme “5-a-day for kids”, designed to increase children’s fruit and vegetable consumption. Intervention: the programme included three parts (each 45 minutes): education-based classroom session; food knowledge in a local supermarket; and practical vegetable snack preparation. Additional promoting information materials for parents were provided.

Design/methodology/approach

A pre-/post-test research design was used for the evaluation. In total, 1,376 pupils (age 7-14, 51 per cent female), their parents and 69 teachers of 35 schools in Lower Saxony participated in the study. The fruit and vegetable intake was measured with the KiGGS-Food Frequency Questionnaire.

Findings

A Wilcoxon signed-rank test was used to determine the change in fruit and vegetable consumption over three measurements (baseline, one month, three months). No significant positive effect of the intervention was observed with the applied method for the daily intake of fruit and vegetables, neither at month 1 nor at month 3.

Research limitations/implications

A 135 min school-based intervention does not seem to increase children’s fruit and vegetable consumption. To enhance its effectiveness, the programme may be improved by adding a longitudinal classroom component, extensive parental involvement and/or distribution of free fruit/vegetables every day.

Originality/value

This is the first evaluation of a 5-a-day-intervention in Germany.

Goes on to outline current understanding of antioxidants and the role they have in preventing or stemming disease processes. Explores factors which determine consumption of fruit and vegetables across all social groups, before considering in detail the impact of inadequate income. Considers the relationship between smoking, low income and fruit and vegetable consumption and notes that despite increased antioxidant requirements smokers on low income exhibit lower levels of consumption. Rejects the notion that such purchasing patterns are irrational in the circumstances and concludes that a national healthy diet policy, particularly one which increases the consumption of fruit and vegetables, cannot be dissociated from social protection.
