Abstract

Purpose

This paper is intended to be the first in a series addressing food safety in the fresh produce chain, with particular emphasis on the contributing factors that lead to farm‐based safety breakdowns.

Design/methodology/approach

A desktop study of recent outbreaks and recalls that have occurred in the USA and EU was undertaken with a view to determining the produce items implicated and factors causing the emergence of outbreaks. The question “A call for HACCP on farms?” is explored.

Findings

Minimally processed fresh‐cut produce represents a particular challenge to food safety. The research has highlighted the need to mitigate risk at all stages but with specific emphasis at the pre‐farm gate stage. A more comprehensive and integrated approach to risk management is arguably needed. A call for HACCP on the farm or farm food safety management system may be warranted in future if fresh produce outbreaks continue to rise. However, further research is needed to establish the guidelines of HACCP adoption at the farm level. At present, the rigorous adoption of GAP as a pre‐requisite and the practice of HACCP‐based plans is a good indicator of the importance of pre‐harvest safety.

Abstract

Purpose

The purpose of this paper is to develop an integrative model where perceived competence, perceived warmth and “clean green image” of an exporting country are drivers for Chinese consumers' trust in food quality and food safety, which in turn predict their willingness to buy fresh fruit from this country.

Design/methodology/approach

Participants (N = 1,583) from the three metropolises in China were surveyed on their perceptions of the competence, warmth and clean green image of seven contrasting exporting countries and their trust in quality, trust in safety and willingness to buy fresh fruit imported from those countries.

Findings

Results support the proposed integrative model, explaining 39%–55% of the variance in willingness to buy. Clean green image was the strongest predictor of willingness to buy through enhanced trust in food quality. The effects of country competence and warmth on willingness to buy through trust in food safety and quality varied with exporting country.

Research limitations/implications

The integrative model and findings of this study can help agri-food industries develop an in-depth understanding of Chinese consumers and to develop targeted strategies to increase willingness to buy through improving consumer trust in food quality and safety.

Originality/value

This study extends the country image framework which previously only consisted of human characteristics (i.e. perceived competence and warmth) by incorporating environmental characteristics (i.e. clean green image) in examining consumers' willingness to buy imported fresh fruit.

Abstract

Purpose

The purpose of this paper is to facilitate the successful adoption of traceability technologies, such as blockchain, into food supply chains and facilitate the understanding of the barriers and enablers to their uptake by channel members' needs so that appropriate enabling strategy can be put in place.

Design/methodology/approach

In this paper, an integrated framework involving five components was used as the methodology: (1) diffusion of innovation theory, (2) the innovation concept, (3) the business structure-conduct-performance paradigm, (4) legitimacy and (5) trust was developed and assessed for validity through interviewing 21 channel members, including distributors, wholesalers, Internet retailers and traditional retailers associated with a global fresh produce company's supply chain in China.

Findings

Barriers negatively framing channel members' attitudes and decisions included a perceived lack of need owing to fresh produce having a short shelf life and being of low value and risk. However, the importance of traceability and the need for effective food recalls were not always understood among channel members, and distributed trust innovations were also suppressed by their lack of compatibility with the Chinese hierarchical culture.

Originality/value

To date, channel members' perception of innovations in food supply chains has not been considered in light of the components proposed in the integrated framework. The adapted framework used in this study ensured a comprehensive assessment of channel members' attitude and motivations toward traceability practices.

Abstract

Purpose

The fresh food supply chain industry faces significant challenges in risk management because of the complexity, immature development and unpredictable external environment of imported fresh food supply chains (IFFSCs). This study aims to identify specific risk factors in IFFSCs, demonstrate how these risks are transmitted within the system and provide an analytical framework for managing these risks.

Design/methodology/approach

A total of 15 risk factors for IFFSCs through extensive literature review and expert consultation are identified and classified into seven levels using interpretive structural modeling (ISM) to demonstrate the risk transmission path. Fuzzy Matrice d’Impacts Croises-Multiplication Appliance Classement (MICMAC) analysis is then used to analyze the role of each factor.

Findings

The interactions of the 15 identified risk factors of IFFSCs, classified into seven levels, are visualized using ISM. The fuzzy MICMAC analysis classifies the factors into four groups, namely, dependent, independent, linkage and autonomous factors, and identifies the relatively critical risk factors in the system.

Research limitations/implications

The findings of this research provide a clear framework for enterprises operating in IFFSCs to understand the specific risks they may face and how these risks interact within the system. The fuzzy MICMAC analysis also classifies and highlights critical risk factors in the system to facilitate the formulation of appropriate mitigation measures.

Originality/value

This study provides enterprises in IFFSCs with a comprehensive understanding of how the risks can be effectively managed and a basis for further exploration. The theoretical model constructed is also a new effort to address the issues of risk in IFFSCs. The ISM and the fuzzy MICMAC analysis offer clear insights for researchers and enterprises to grasp complex concepts.

Abstract

Purpose

With the rapid development of fresh food e-commerce, sustaining customer loyalty is becoming critical for fresh food e-tailers (FFE) to be competitive. This study aims to investigate how to sustain customer loyalty of FFE in China.

Design/methodology/approach

A comprehensive literature review leads to the development of a conceptual model using the American customer satisfaction index (ACSI). This model is then tested and validated through structural equation modelling (SEM) of the survey data in China.

Findings

The study reveals that trust and perceived product risk significantly affect customer loyalty. It states that trust is significantly influenced by customer satisfaction and perceived product risk. Furthermore, the study shows that perceived risk of online shopping does not significantly influence customer trust and loyalty.

Originality/value

This study is the first in China for exploring how to sustain customer loyalty of FFE. The findings are significant for FFE to develop customer loyalty by formulating appropriate policies and strategies.

Abstract

Purpose

The purpose of this paper is to demonstrate the relationship between food preservation and reducing consumer waste is of value in developing sustainable meal options. The research reports insights into Austrian marketplace for frozen and fresh foods that have been obtained from a consumer survey.

Design/methodology/approach

The consumer survey methodologies indicate how preservation can change meal planning and lower food waste across frozen and fresh and ambient food purchases using freezing preservation methods.

Findings

The results show food waste can be reduced by six-fold when frozen foods are compared with fresh foods.

Research limitations/implications

This study highlights the requirement for a greater understanding of the probability that specific foods will be wasted with respect to the frequency of purchase. This is a limitation of the current study that has been investigated by other researchers.

Practical implications

This research has enabled the identification of different food waste amounts for different food product categories. The data presented could be used to guide food product development so that less consumer waste is produced.

Social implications

The research suggests a decision matrix approach can be used to can guide new product development and a model of this matrix is presented so that it may provide fit-for-purpose food preservation options for consumers.

Originality/value

This paper will continue to highlight the overlooked value of food preservation during processing and manufacturing of foods and their preparation in households.

Abstract

Purpose

The purpose of this paper is to deliver a structured literature review of existing literature on agri-fresh food supply chain quality (AFSCQ) over a period of 23 years (1994 to mid-2016) and provide a platform for practitioners and researchers trying to identify the existing state of work, gaps in current research, and future directions in the field of AFSCQ.

Design/methodology/approach

The existing literature is classified on the basis of several classes like number of publications per year, journal-wise publications, studies across various countries, growth of empirical research, data analysis methods or tool used, issues related to supply chain quality as well as performance measurement (with respect to entity of analysis, level of analysis and element of exchange).

Findings

Most of the research publications discuss issues in developed countries, while relatively lesser publications are available on issues in developing countries. Hence, larger opportunities in the field of AFSCQ are available in developing countries. Empirical research is also growing in the field of AFSCQ. Largely research publications make use of “case study” research approach and “statistical analysis” as a quantitative tool of research. The literature is also categorized under the various issues of supply chain quality such as sustainability management, information management, logistic management, collaboration and coordination management, strategic management, demand management, inventory management, food safety, performance management, supply chain integration, supplier management, quality management, etc. It was found that in the majority of articles, information management, sustainability management, and logistics management are very critical issues as far as AFSCQ is concerned. Performance measurement of agri-fresh food supply chain is also on a growing stage. It is also an integral part of AFSCQ.

Originality/value

Most of the prior reviews are concentrated on a particular issue as production and distribution planning for agri-foods, temperature monitoring, corporate and consumer social responsibility, traceability system and ignore the wider perception. There exists a necessity of having a detailed review to cover up all the issues in AFSCQ. This review fills this gap in the extant AFSCQ literature.

Purpose

The purpose of this paper is to investigate access to grocery retailing in Nantes, France.

Design/methodology/approach

The spatial distribution of all grocery retailers in Nantes was mapped. Socio‐demographic data as supplied by INSEE was mapped for Nantes, and these data used to determine areas of poor access to healthy food, e.g. fresh fruit and vegetables retailing.

Findings

There are six areas of Nantes which appear to have both poor physical access to grocery retailing and a socio‐demographic profile which suggests people living there may have difficulties in travelling to remote shops. These six areas generally do not coincide with the officially‐recognised ZUS deprived areas of Nantes.

Research limitations/implications

Data on obesity and related medical conditions were absent from INSEE, limiting the analysis that could be performed. The data were also liable to errors such as MAUP and ecological fallacy; however, the spatial detail was sufficient for meaningful conclusions to be drawn.

Practical implications

Previous food and dietary research in France has concentrated on economic factors mediating diet. There has been less research on spatial access to food and any correlations with areas of poverty or areas with other populations, e.g. pensioners, who may find travel to remote shops difficult. This research investigates these spatial linkages. Officially‐recognised areas of poverty in Nantes (ZUS areas) are not the areas presenting the most problematical physical access to healthy food retailing, therefore research based on financial aspects alone may miss some areas of difficult food access.

Originality/value

The spatial patterns of food access in Nantes, and the implications for targeting research and policy initiatives to these areas, have not previously been researched.
