Abstract
The aim of this study is to understand the diverse ways in which gastronomy and heritage are related and how this specifically applies to tourism in the city of Tainan, Taiwan and their traditional snack food. Interviews conducted with local food commodity experts in Taiwan generated in-depth insights into distinctive cultural traditions and particular historical circumstances well beyond the immediate producers and consumers. Four issues emerged from these interviews: the concept of what constitutes traditional food, modifications in the method of food production, the role of traditional food within society, and historical inheritance through mass media promotion. The drive toward innovation, when opposed by the force of tradition, can indirectly sustain the configuration of cultural heritage which can be expressed through food as the art of gastronomy.

Abstract
While there has been increased attention to emotions and institutions, the role of denial and repression of emotions has been overlooked. We argue that not only the expression and the feeling of emotions, but also their control through denial contribute to stabilize institutional orders. The role denial plays is that of avoiding the emergence of disruptive emotions that might motivate a challenge to the status quo. Reflecting on the example of the livestock industry, we propose a theoretical model that identifies seeds for change in denied emotional contradictions in an integration of the cultural-relational and issue-based conceptions of organizational fields.

Abstract
The purpose of this paper is to revitalize consumer socialization as a topic of study by presenting a critical review of the concept. The aim is to advance our current understanding of conceptual issues and to outline issues and directions for future research. Consumer socialization can be better understood by studying its multidisciplinary roots and by critically reviewing its definition and meanings. It is suggested that the scope of consumer socialization be expanded to encompass life-long consumer socialization, different life events and spheres of consumption, dialogs, negotiations, and translations, as well as the socio-cultural context in which socialization occurs. In order to capture the complexity of consumer socialization and to maintain the field of consumer socialization as a vital research area, there is a need to rethink both the theories and the methods used. Researchers are encouraged to expand the use of socio-cultural theories and ethnographic methods. Interdisciplinary research is also recommended, allowing a multifaceted pluralism in the study of consumer socialization.

Abstract
This chapter examines why the political collapse of Russia and Germany in the end of the First World War resulted in massive expropriation of private property in Russia and consolidation of private property in Germany. This historical divergence is explained by the different measure of coercive capacities of the provisional governments and, consequently, their different ability to withstand the assault of the radical Left during the periods of turbulent political transitions. The measure of coercive capacities was determined primarily by support of the army, which, in turn, was contingent upon the provisional governments’ decisions to negotiate peace and exit the war.

Abstract
This contribution explores the demand side of gastronomy tourism, in particular the characteristics of travellers who are driven by their gastronomic interest. Such ‘passionate tourists’ gain a number of experiences from gastronomy within their holidays, and these ranges from enjoyment to socialization and learning. Regardless of their motivation to travel, gastronomic experiences are often taken in conjunction with other activities available (especially those related to culture). Practical implications for destinations include improvements in thematic offerings (both in terms of variety and authenticity), cross-marketing activities and promotion. In doing so, they need to become aware of the diversity of consumption patterns of these tourists.

Consumption is a way of communication whereby consumers express, position or/and differentiate themselves within their society or affiliated groups. A great part of consumers’ lives are spent on various purchase activities, and many would be eager to understand the factors underlying those behaviours.
This chapter primarily deals with the cultural, social, psychological and personal factors that affect consumer behaviour. Each of these factors in relation to consumer behaviour is discussed in detail. The types of consumer buying behaviours and the consumer decision-making processes then provide the fundamentals of the topic along with their relevance to Turkish consumers.

Purpose
Food insecurity and hunger are found to have important adverse mental health effects, and have been of particular interest to epidemiologists and public health scholars. The primary goal of the present study is to expand our understanding of the mental health effects of food insecurity by assessing gender-based disparities among a nationally-representative sample of U.S. adults.
Methodology/approach
Using data from the combined 2011-2012 and 2013-2014 cycles of The National Health and Nutrition Examination Survey (NHANES) (N=11,539), we estimated multiple ordinary least squares and binomial models using adult food insecurity measures and self-reported gender as main predictors of depressive symptoms and alcohol use.
Findings
Our results demonstrate that food insecurity is associated with depressive symptoms but not alcohol consumption. Additionally, we found an association between food insecurity and increased psychological distress among women relative to men. In contrast, no evidence of a difference in the association between food insecurity and alcohol use was observed across the two genders, indicating that experiences of food insecurity are particularly salient for psychological health among women.
Implications and originality
These findings add to the growing literature that household food insecurity has serious mental health consequences, and extend this work by clarifying ways in which gender accounts for differences in the association between food insecurity and psychological and behavioral outcomes.

Abstract
Purpose
In this chapter, we draw on health lifestyle, human capital, and health commodity theories to examine the effects of educational attainment on a wide range of individual dietary behaviors and dietary lifestyles.
Methodology/approach
Using data from the 2005-2006 iteration of the National Health and Nutrition Examination Survey (n = 2,135), we employ negative binomial regression and binary logistic regression to model three dietary lifestyle indices and thirteen healthy dietary behaviors.
Findings
We find that having a college degree or higher is associated with seven of the thirteen healthy dietary behaviors, including greater attention to nutrition information (general nutrition, serving size, calories, and total fat) and consumption of vegetables, protein, and dairy products. For the most part, education is unrelated to the inspection of cholesterol and sodium information and consumption of fruits/grains/sweets, and daily caloric intake. We observe that having a college degree is associated with healthier dietary lifestyles, the contemporaneous practice of multiple healthy dietary behaviors (label checking and eating behaviors). Remarkably, household income and the poverty-to-income ratio are unrelated to dietary lifestyles and have virtually no impact on the magnitude of the association between education and dietary lifestyles.
Originality/value
Our findings are consistent with predictions derived from health lifestyle and human capital theories. We find no support for health commodity theory, the idea that people who are advantaged in terms of education live healthier lifestyles because they tend to have the financial resources to purchase the elements of a healthy lifestyle.
