Abstract

Purpose

The purpose of this paper is to investigate food retailers food waste reduction practices in Germany. The focus is on selling and redistributing agricultural produce with visual impairments and other surplus food items. In addition, drivers and barriers regarding the implementation of both waste reduction practices are explored.

Design/methodology/approach

In total, 12 in-depth interviews with managerial actors in the food retail sector and a food bank spokesperson were recorded, transcribed and analyzed through a qualitative content analysis.

Findings

In contrast to organic retailers, conventional retailers were reluctant to include agricultural produce with visual impairments in their product assortments, due to fears of negative consumer reactions. Another obstacle was EU marketing standards for specific produce. All retailers interviewed engaged in redistribution of surplus food. Logistics and the regulatory framework were the main barriers to food redistribution.

Originality/value

The present study adds to the existing body of literature on food waste reduction practices as it explores selling produce with visual impairments and elaborates on the legal background of food redistribution in German retail. The results are the foundation for providing recommendations to policy makers and charitable food organizations.

Abstract

Purpose

This chapter highlights factors, such as stakeholder engagement and changes in operating processes, which can enable retailers to implement an alternative approach to recovering and redistributing fresh surplus food.

Methodology/approach

A successful fresh surplus food redistribution program was identified as part of a larger research project on food waste and redistribution. The “Buon Fine” program of a large Italian retailer (Coop Lombardia) was described by two senior executives who were interviewed for four hours using a semi-structured questionnaire. Collected information was triangulated with corporate reports and other publications.

Findings

Coop Lombardia implemented an expanded supply chain by cooperating with municipalities and food aid organizations. Such a process differed in important ways from the traditional “food bank” model. The latter organizations collected and distributed surplus food to disfavored populations.

Originality/value

The findings of this chapter will help senior executives of retail trade companies to improve the sustainability of their supply chain and help policymakers address food poverty to improve food security in their territory.

Purpose

Drawing on an ethnographic research study, developed in three different food assistance initiatives (FAIs) operating in Portugal, this article seeks to explore the elements that characterize them and the main organizational challenges they face.

Design/methodology/approach

Participant observation was carried out in a surplus food redistribution charity, a soup kitchen and a social supermarket, and semi-structured interviews were conducted with supervisors of these FAIs. The study followed an inductive coding strategy, and a thematic analysis was developed.

Findings

The main results point to an appreciation of the initiatives and the role they play, but they also highlight the existence of several challenges, mainly related to: 1) difficulties in accessing sources of funding, 2) the absence of an intervening state and 3) a scarcity of resources that allow a thorough assessment of their activities and services provided, which weakens the public image of these responses.

Originality/value

The development of food assistance in Europe has a long history. Over the past few years, this sector has grown significantly. Nowadays, it is possible to identify several realities around emergency food provision. However, this heterogeneity has not been sufficiently explored in the literature. In addition, there are few studies that report on the variety of initiatives that coexist in Portugal and establish a comparison between them. The current paper intends to overcome this gap by seeking to understand the main models of food assistance operating in the country.

Abstract

Purpose

The purpose of this paper is twofold: first, to explore the complexities of regularly implemented as well as irregularly occurring – sometimes improvised – instore logistics processes related to products which are declared unsaleable; and second, to identify the challenges and opportunities in managing instore logistics processes related to unsaleable products in grocery stores.

Design/methodology/approach

The authors apply an embedded case study approach. Within each case, i.e. dominant store format, the authors investigate the instore logistics processes of 32 retail and wholesale stores and focus further on those processes related to products declared unsaleable. The case study research methodology comprises in-depth interviews with store and category managers, point of sale observations and secondary data research.

Findings

The authors identified four different specific instore logistics processes depending on the residual product value of unsaleable products. The analysis of these processes suggests that establishing more efficient return, disposal, recycling, and most importantly, redistribution processes leads to various benefits such as cost savings, more effective and efficient operations, better use of resources and waste reduction, while at the same time supporting charitable institutions and people in need.

Originality/value

The contribution of this research are: first, to provide a better understanding of different ways of seeing and handling unsaleable products; and second, to reveal the significant importance of focusing on instore logistics beyond the point of sale with respect to the economic, ecological and social benefits to retailers, wholesalers and their stakeholder groups.

Abstract

Purpose

This paper explores the nature and operations of the supply chain that serves disadvantaged groups. With the increasing reliance on supplementary food provision through food aid, the authors seek to emphasise efficiency and sustainability in these supply chains.

Design/methodology/approach

Semi-structured interview data from 32 senior managers and experts from both commercial and food aid supply chains were abductively analysed to develop a relationship-based map of the food chains that serve disadvantaged groups.

Findings

Disadvantaged groups are served by a hybrid food supply chain. It is an interconnected supply chain bringing together the commercial and the food aid supply chains. This chain is unsurprisingly plagued with various challenges, the most critical of which are limited expertise and resources, operational inefficiencies, prohibitive logistics costs and a severe lack of collaboration.

Originality/value

This study identifies the currently limited role of logistics companies in surplus food redistribution and highlights future pathways. Additionally, the authors present useful actionable propositions for managers, practitioners and policymakers.

Abstract

Purpose

With the launch of mobile applications to reduce food waste, this study reviews scholarly articles to answer the questions: (1) What research topics are extensively discussed in relation to food waste mobile applications (FWMA)? (2) How do these applications impact food waste and food poverty? (3) At which stage of the supply chain are digital applications employed?

Design/methodology/approach

This paper conducts a systematic literature review of scholarly articles on the topic of mobile applications and food waste to answer three research questions.

Findings

The article provides a definition of mobile applications to reduce food waste. Most published studies on mobile applications are from developed countries. Over half of the applications address procurement and consumption along the supply chain. The applications are categorized by food saving method and used in studies on innovation management, platform relations and performance, the supply chain activities impacted and platform acceptance.

Research limitations/implications

The articles and applications analyzed suggest more quantitative studies. A wider range of cases in diverse cultural settings is needed, as well as analyses of the factors influencing the development, performance and market acceptance of platforms.

Originality/value

This study is the first study to systematically review the relevant scholarly contributions related to mobile applications, an innovative practice that helps reduce food waste. It allows making an initial progress report on the research carried out.

Abstract

Purpose

The purpose of this paper is to enhance the understanding of motives behind corporate giving and at finding out whether and when operational efficiency plays a major role in the case of surplus food donations by food supply chain companies.

Design/methodology/approach

A multiple case study methodology has been applied considering a sample of 16 food sector companies operating in Italy. Three cases have been analyzed in-depth to highlight the contextual factors that make cost savings possible and donations sizeable and regular.

Findings

The results show that the willingness of companies to reduce operational costs plays a relevant role in managerial decisions concerning the recovery and donation of unsold food, although to different degrees across the supply chain stages.

Originality/value

The paper shows that not only strategic and moral motives, but also economic efficiency concern plays an important role in the managerial decision-making process pertaining to surplus food donations.

Purpose

This study examines the relationships between the sizes of Coop Alleanza 3.0 retail outlets and indicators (in value) of surplus food (SF), real food donation (FD) and potential food waste (FW) from 2013 to 2019.

Design/methodology/approach

Retail outlets were grouped by size class and geographic macro-area. The authors adopt a procedure composed of Kendall's tau-b coefficient with ties (ttest) and the coefficient of determination (R²). The authors studied bread, pastries, fruits and vegetables as representative food categories.

Findings

Among the hypermarket group (Emilia-Romagna Region and those in group with Apulia Region), the study found the t-test with many high negative relationship and related R2 high. Results showed that size significantly influenced the trends of the indicators for the food categories analyzed. This allowed the authors to hypothesize the presence of inefficiencies in these groups.

Originality/value

From a practical point of view, the procedure can provide Coop Alleanza 3.0, with a dashboard to analyze surplus food management (SFM) progress within its retail groups. This can provide a warning signal (WS) to trigger a management control system. If necessary, it can lead to corrective measures, such as internal optimization, by adopting appropriate work procedures. In this sense, the procedure is scalable and transferable at the international middle and micro-scales. This approach facilitates the transition to a retail circular economy transition.

Abstract

Purpose

This research aims to explore retail managers' views on how food waste (FW) management activities contribute to sustainable value creation and how the customer value proposition (CVP) for a given food retailer interacts with their approaches to FW management.

Design/methodology/approach

A three-stage exploratory qualitative approach to data collection and analysis was adopted, involving in-depth interviews with retail managers, documentary analysis of multiple years of relevant corporate reports and email validation by seven major UK grocery retailers. Thematic content analysis supplemented by word similarity cluster analysis, two-step cluster analysis and crisp-set qualitative comparative analysis was undertaken.

Findings

FW management practices have been seen by retail managers to contribute to all forms of sustainable value creation, as waste reduction minimises environmental impact, saves costs and/or serves social needs, whilst economic value creation lies at the heart of retail FW management. However, retail operations are also framed by CVP and size of a retailer that enable or inhibit the adoption of certain FW management practices. Low-price retailers were more likely to adopt practices enabling them to save costs. Complicated cost-incurring solutions to FW were more likely to be adopted by retailers associated with larger size, high quality and a range of services.

Originality/value

This study is the first of its kind to empirically explore retail managers' perception of sustainable value creation through FW management activities and to provide empirical evidence of the linkages between retail CVP and sustainable value creation in the context of retail FW management.

Abstract

Purpose

As food aid is still for a great part dependent upon the donation of food surplus and as the number of persons relying on food charities is increasing, it is important to further investigate which donation system responds best to the needs of the beneficiaries. The purpose of this paper is to investigate the needs regarding the format and content of the food parcels in a selected social service in Ghent, Belgium. The “format” relates to how the food parcels are distributed, the “content” to the usability of the food products and whether additional products currently not offered are required by the beneficiaries.

Design/methodology/approach

The research is based on a qualitative study at a selected food charity in Ghent, using a semi-structured in-depth interview with 30 respondents who receive food parcels.

Findings

The food parcel beneficiaries report the need for freedom of choice regarding the offered food products (format). Fixed food parcels should be avoided. Also a need for more vegetables, milk, fresh (halal) meat and meat products was expressed (content), even though the charity purchased a great deal of additional “standard” food products to provide nutritious and varied food parcels. It should be further investigated whether other donation systems such as social groceries or restaurants meet the needs of the beneficiaries to a greater extent, or whether certain adjustments such as purchasing even more standard food products are possible to uphold.

Originality/value

To the authors’ knowledge this research is one of the first scientific studies addressing the needs of food parcel receivers in Belgium. It forms a basis for investigating which type of food donation answers best to the needs of the beneficiaries in Belgium or in other countries.
