Abstract

Social values represent desired end states of being or desirable behaviors such as self‐respect, warm relations with others, or excitement. These abstract social cognitions help shape product attitudes and through them guide overt behavior. Empirical research has supported this theoretical structure of values‐attitudes‐behavior, but only for a relatively few high involvement products. A sample of 323 adult women shoppers rated the importance of the nine social values from the list of values; reported their attitudes toward snack foods, convenience foods, and cooking; and described purchase frequencies for a variety of foods. The shoppers′ food attitudes were consistently associated with self‐reported food purchases. Moreover, ratings of several values were associated with attitudes toward snack foods and use of convenience foods, suggesting that social values may influence buyer behavior for low as well as high involvement products. The findings have implications for food marketers who want to promote their products more effectively, consumer theorists who want to understand the impact of values on consumer behavior, and public makers who would like to influence food expenditures by consumers.

Abstract

Purpose

The local food tourism in Pakistan is increasing rapidly, and it attracts scholars to determine the factors affecting local food tourists' buying choices. Particularly, the authors aim to investigate the role of food consumption values on predicting domestic tourists' attitude toward local food and its effect on the intention to try local food with the moderating effect of personality traits (neophobia and neophilia).

Design/methodology/approach

The authors tested the study model on 250 completed responses from local food tourists. They collected the data from three tourism locations (Islamabad, Rawalpindi and Peshawar) in Pakistan. Their study utilizes the consumption value theory within the limits of Pakistan's local food tourism.

Findings

The empirical findings show that consumption values, such as price, emotion, interaction, epistemic value, location value and variety value, effectively explain the domestic tourists' attitude toward local food. The authors further report that food neophilia strengthens the local tourists' positive reception toward the local food. However, food neophobia weakens the direction between local tourists' attitude toward local food and the intention to try local food.

Practical implications

This study provides insights pertaining to tourists' local food consumption values (LFCVs) to a local destination owner and marketing manager to strategically work on LFCVs that are crucial for domestic tourists to derive their intention to try local food. Practitioners should work on domestic tourists who possess food neophobia trait and enquire them for their rejection or avoidance of a particular local destination. This will enable practitioners to bring innovation and development in the local destination, which ultimately promote local food tourism.

Originality/value

This study is the first to incorporate the variety and local value in tourists' LFCVs to predict local tourists' attitude toward local food. Additionally, the authors contribute to local food tourism by empirically studying the moderating role of personality traits (food neophilia and food neophobia) to examine the direction between local tourists' attitude and intention to local food.

Abstract

Purpose

The purpose of this paper is to examine the impact of different food choice motives on attitude and, subsequently, the impact of attitude, subjective norm and perceived behavioural control on the purchase intention of Pakistani ethnic food, based on the food choice motives theory and the theory of planned behaviour.

Design/methodology/approach

Using an intercept survey, data were collected from 559 local tourists coming from different areas of the country, who visited Swat, Gilgit and Muree regions of Pakistan, and the data were analysed using SmartPLS software.

Findings

In terms of direct effects, mood, familiarity, natural content and price were found to be significant predictors for attitude, whereas attitude, subjective norm and perceived behavioural control were found to positively affect intention to purchase Pakistani ethnic food. In addition, attitude was found to serve as a mediator for the relationships between mood, familiarity, sensory appeal and price on purchase intention.

Originality/value

This study has shed some light on the food choice behaviour of domestic tourists opting for their own local cuisine in Pakistan, which is under-represented in the tourism and food research literature. We also tested an integrated model of food choice motives and the theory of planned behaviour in modelling purchase intention in the tourism perspective. The present study also adds to the existing literature on mediation by modelling attitude as a mediator between food choice motives and purchase intention in the context of a developing country.

Abstract

Food choice is influenced by a range of factors, including sensory attributes and beliefs about the nutritional value of the foods. It is difficult to determine the relative importance of beliefs about nutritional and sensory attributes to foods. It is necessary to examine these within an overall framework. The attitudes model developed by Fishbein and Ajzen is presented as a framework within which such comparisons can be made. It has been shown to be useful in a variety of studies of food choice. The relative importance of different types of beliefs can be assessed within this approach by examining the relationship between individual beliefs (or groups of beliefs) and either attitude or behaviour. In a number of studies sensory attributes have been found to be more important for table salt use, snack food consumption and consumption of foods contributing highly to fat in the diet. In the case of low‐fat milk consumption, however, nutritional beliefs were found to be more important than beliefs about the sensory attributes of the milks or their suitability for different uses.

Purpose

Given the importance of food wastes in households, the purpose was to identify the attitudes of young consumers towards the food sharing (FS) phenomenon in its cognitive, emotional and behavioral dimensions and to verify the reliability of the FAB (food sharing attitudes and behaviors) model, used as a research tool.

Design/methodology/approach

The study was conducted in 2021 using the computer assisted web interview (CAWI) method. The FAB model was based on the ABC (affect, behavior and cognition) model of attitudes, which includes three components: affect, behavior and cognition. Questions on the phenomenon of FS were scaled on a 5-point Likert scale. A total of 469 correctly completed forms were obtained. To assess the reliability of the FAB model the Cronbach’s alpha was used. In the statistical analysis SPSS Statistics 27 was used.

Findings

Young consumers have a positive attitude towards the idea of FS and the initiative of FS points. Gender is a significant factor in FS attitudes. The FAB model has proven to be a reliable tool for exploring consumer attitudes towards FS. A set of activities was proposed to promote the idea of FS on university campuses and among other potential stakeholders.

Originality/value

To contribute to the body of knowledge on FS, the authors proposed the FAB model. The results of this study are relevant for reducing food wastes; they promote sustainable food consumption and the European Green Deal (EGD).

Abstract

Purpose

Eating patterns around the world have changed considerably, including food choices and preparation. One of these alterations in food consumption patterns is an increase in desire for fast-food consumption, which has been associated with poor diet quality. In order to analyze consumers’ food consumption behaviors, it is necessary to account for psychological factors (e.g. attitudes) that shape behaviors. Thus, the purpose of this paper is to explore influencing factors on the attitudes of consumers in Isfahan City toward fast-food consumption, so as to understand why consumers use fast-food despite widespread knowledge of the negative health consequences.

Design/methodology/approach

The predominant paradigm of the present study was quantitative, in that it was a correlational survey. The population of this study consisted of consumers who lived in Isfahan city in June 2015. A total sample of 350 people was selected using convenience sampling. Data were collected through a face-to-face interview with the consumers using a researcher-made questionnaire. Analysis was conducted using SPSS (V20) and AMOS (V20) software and a set of correlation and differential tests.

Findings

The results revealed that “health consciousness” and “trust” are the main effective factors on the attitudes of the respondents. The results also revealed that the elder and married respondents have more positive attitudes toward fast-food consumption.

Originality/value

It is worth mentioning that fast-food has become an important part of the Iranian diet. These findings have both academic and policy implications. The results showed that the need for much more consumer education regarding fast-food and mass media could effectively be used. Further, the government should support and subsidize fast-food restaurants so that they may produce healthier food options.

Abstract

Purpose

The purpose of this paper is to understand how information revealed on organic food labels and perceived organic knowledge drive consumer trust and attitudes towards organic foods, which in turn together with subjective norm eventually influence subsequent purchase intentions.

Design/methodology/approach

The questionnaire surveys were administered to customers at four urban large-scale supermarkets and three health food stores at three major cities in Taiwan. In total, 693 valid questionnaires were obtained, yielding a response rate of 81.5 per cent.

Findings

Trust, serving as the antecedent of attitudes, significantly mediates the relationships between revealing information, perceived knowledge, and organic purchase intentions. Additionally, both attitudes towards organic foods and subjective norm significantly influence consumer organic food choices. However, the impact of perceived organic knowledge on consumer attitudes has been found to be insignificant, indicating that the increase in perceived knowledge cannot create positive attitudes towards organic foods. Thus, a focus on how to use knowledge to enhance consumer trust in organic foods is suggested as an effective marketing strategy for the organic food industry.

Research limitations/implications

The research findings support that trust and attitudes play the mediating roles linking revealed information and perceived knowledge with organic food purchase intentions. This result is consistent with previous studies, indicating that better organic labeling information and related knowledge perceived by consumers have critical effects on consumer trust in organic foods, which in turn will influence their attitudes and intentions to purchase organic foods. However, this study also found that perceived knowledge can generate positive attitudes only when trust can be firmly built. This confirms the essential role of trust in the process of consumer organic buying intentions.

Practical implications

First, providing credible labeling information by displaying how organic agricultural products are grown, processed, and handled, and the percentage of organic ingredients in a product is crucial to stimulate consumer trust and positive attitudes. Second, enhancing consumer trust by providing correct knowledge and credible information through diversified channels (e.g. TV, newspapers, magazines, web sites) to improve consumer organic knowledge has become the most important task for the government, organic food sectors, certifiers, and research institutions to develop positive attitudes towards organic foods. Finally, organic food sectors and marketers could use a word-of-mouth strategy and focus on promoting the benefits and accessibility of organic foods to the general public to raise the common acceptance of organic foods.

Social implications

Organic labeling has been considered an effective measure to help consumers obtain valid and trustworthy information in the organic food market, particularly for those with limited knowledge. Therefore, the government agencies not only need to take the responsibility to set regulations for organic food/agricultural products, but also need to set labeling requirements for these products. Based on these labeling requirements, the organic certifying agents can certify organic food/agricultural products by offering organic labels that contain clear information and represent quality to consumers.

Originality/value

This study incorporates critical factors based on related theories, including the antecedents and the outcome variables of consumer trust, to develop a more comprehensive model for better understanding of consumer organic choice behaviour. The research findings have provided implications and additional contributions to the existing theories as well as developed effective strategies for the development of the organic food market.

Purpose

The purpose of this paper is to enhance the understanding about the determinants of consumer food leftovers in out-of-home settings by taking a decomposed perspective on attitudes.

Design/methodology/approach

Data on 307 guests in a university canteen composing of stated measures for 12 beliefs, general attitude and behavioral intention and of visually estimated food leftovers are analyzed using exploratory factor and path analyses.

Findings

A factor analysis for belief statements derives three distinctive and potentially conflicting attitude dimensions: “Environment,” “Self-Interest” and “Resources.” Path analyses on their interrelation with general attitude, intention and behavior indicate that the dimensions have distinctive effects. Moreover, “Self-Interest” in contrast to the other two dimensions is correlated with situational perceptions about portion size and taste when these are included as direct determinants of leftovers.

Research limitations/implications

It is recommended to consider different dimensions of attitude when addressing food leftover behavior since these dimensions may not be well represented in a classical summary construct and since their relevance may differ depending on situational factors. Additional research is recommended to validate the results for more representative samples of consumers and to elaborate on the interaction of different attitude dimensions as potential source of attitude ambivalence which cannot clearly be determined from the existing data.

Originality/value

Past research on consumer food waste behavior models attitudes exclusively as a summary construct. This contradicts qualitative findings that individuals may hold conflicting beliefs about food leftovers.

Purpose

The purpose of this paper is to examine the moderating effect of uncertainty avoidance (UA) on the relationships among subjective knowledge, attitude toward Korean foods and dining out behavioral intentions (BI) of foreign residents in Korea.

Design/methodology/approach

A total of 247 foreign residents in Korea were participated through a street intercept survey at several locations in metropolitan areas of South Korea. Subsequently, the samples were divided into two groups (a low UA group and a high UA group) for multiple group analysis to examine the moderating role of UA.

Findings

The results of structural equation modeling showed that subjective knowledge and attitude toward Korean foods significantly influenced intention to visit Korean restaurants. Furthermore, multiple group analysis results showed that UA had a significant moderating effect as a cultural dimension on the relationships between subjective knowledge and BI, as well as between attitude and BI.

Research limitations/implications

This research has made the first attempt to account for UA in examining the relationships among subjective knowledge, attitude and BIs, especially for ambiguous situations where foreign residents who are new to the mainstream Korean food culture face challenges in visiting Korean restaurants.

Practical implications

The findings indicate that enhancing subjective knowledge about Korean foods should increase the probability of foreign residents visiting Korean restaurants, so restaurant marketers should consider subjective knowledge as they work to encourage foreign residents to try Korean foods. Furthermore, planning strategies for marketing to foreign residents should consider level of UA among foreigners.

Originality/value

This study first illustrates the value of considering the cultural trait of UA in examining dining out behavior at ethnic restaurants. The UA trait sheds light on how subjective knowledge helps predict attitude and dining out BI at ethnic restaurants.

Abstract

Purpose

By integrating the diffusion of innovation (DOI) theory, technology acceptance model (TAM), and social capital theory, the purpose of this paper is to: develop a model of consumer behavior and trial willingness toward nano-foods from product, consumer, and social perspectives; examine the effects of innovative features, consumer characteristics, and trust in authority on subjective perceptions (perceived trustworthiness and perceived benefit) as well as the social influence on attitudes toward nano-foods and trial willingness; examine the moderating role of product uncertainty on the relationship between these characteristics and subjective perceptions; and examine the effect of perceived benefit on perceived trustworthiness.

Design/methodology/approach

The results of the structural equation model (SEM), with nano-food knowledge data collected from 431 respondents, supported the research model and revealed the main effects hypothesized in this study and the moderating effect of product uncertainty. Simple slope analysis was further adopted to test the significant moderating effects.

Findings

The SEM results indicated that innovative characteristics (relative advantage, lack of observability, and novelty), consumer characteristics (perceived technology application), and social characteristics (trust in authority) affect perceived trustworthiness or perceived benefit. Social influence also has a direct effect on attitude toward nano-foods and trial willingness. Product uncertainty significantly moderates the relationship between characteristics (relative advantage and perceived technology application) and subjective perceptions (perceived trustworthiness and perceived benefit).

Research limitations/implications

With increasing numbers and kinds of nanotechnology products now being developed and sold, it is important to go further to determine consumer perceptions and attitudes toward these. This study, thus, applied the DOI, TAM, and social capital theory to examine this issue. However, other theories might also be used to carry out research from other perspectives. This study should, thus, be seen as preliminary, and it is hoped that more works will discuss consumer attitudes toward nanotechnology products in the future.

Practical implications

When a new nano-food is introduced, the current study suggests that food manufacturers use the description on the package as a communicative tool. Detailing the advantages of nano-foods on food packages might be a useful way to enhance trial willingness and to reduce the fears and insecurities related to the use of nano-related products. In addition, if food manufacturers could cooperate with organizations or individuals seen as having some authority in this area (e.g. nanotechnology researchers) in order to disseminate accurate information about nanotechnology and related food products, this might be an effective way to increase sales and profits.

Originality/value

This is the first paper integrating the DOI, the social capital theory and the TAM to empirically investigate consumer willingness to try nano-food products.
